As we approach the end of 2020, many are beginning to reflect on what a strange year this has been. 2020 will certainly go down as the year with the most change and challenges for many people as we all deal with the ongoing pandemic in our own ways. Currently as I write this, we as part of Halton Region are in the Red Zone and have just been handed additional restrictions such as group gatherings down to 5 people limits. Things can, and do change almost daily, as numbers of COVID-19 cases increase in Ontario and around the globe. I am personally experiencing some COVID-19 fatigue and frustrations with the changing decisions at all levels of government. We as municipal decision-makers can only make decisions about our facilities and programming, whereas the greater decisions of zones and large-scale restrictions and gatherings are made by the province. We must all work together to support these measures and help reduce the cases of COVID-19. If the numbers do not start to go down then we are most certainly facing another lockdown in Halton Region which I fear could have detrimental effects on our local business community and economy. Talks of an approaching vaccine are very exciting and give us hope for some return to normalcy in 2021 but it will take time to implement and further time to achieve large-scale immunity. On a lighter note, we were able to celebrate Halloween this year in my neighbourhood by working within our small community to come up with a COVID-19 friendly and safe way for the children to still have an enjoyable experience. We had a starting and finishing line where the children paraded through the streets, socially distanced
and received one full bag of candy at the completion. All candy was handed in to the organizer one week before so it could be quarantined for 7 days before insertion into the bags. It was a different experience but the kids still had lots of fun being dressed up and the weather cooperated as well. Next challenge - Christmas time It is too early to know what the holiday season permissions will be but we can all assume that it will not permit the usual large family gatherings and travel that often dominates the Christmas season. We need to prepare for the virtual celebrations and try to embrace them. Try scheduled family zoom social meetings with games and refreshments to get the larger group together. These can be very fun and safe at the same time. No exposure risk to family members and no designated driver needed. There are many organizations that are helping to support the growing number of those in need as unemployment continues to rise through this pandemic. Please consider donating to the local Food Bank or Compassion Society this holiday season to help the many that are less fortunate and those that are new to this category because of the on-going economic crisis.

The Aldershot BIA did it again! On a chilly November 14th evening, they held a small tree lighting ceremony at Downsview Plaza. Santa and Mrs. Claus emptied Compassion Society food donations from cars driving by with Mr. Claus pausing here and there to pose for a masked photo. This year there were no horse drawn carriages, no musical entertainment and no vendors’ market but spirits soared at 5:40pm when the multicoloured lights popped on, illuminating the gigantic tree at Plains and Downsview that brings joy to so many passers-by. Aldershot BIA is grateful to their sponsors: Ward 1 Councillor Kelvin Galbraith, National Homes, Dr. Pedlar Dental Life, Organize Once Social, and Dominos Pizza Aldershot. Burlington honoured our nation’s veterans and fallen soldiers this past Remembrance Day with a sunrise ceremony in Spencer Smith Park and the usual observance at the Cenotaph at City Hall. Only a handful of people were invited to pay homage including veterans from Royal Canadian Legion Branch 60, Mayor Marianne Meed Ward, reps of the Burlington Teen Tour Band and a Colour Guard. All attendees were masked and socially-distanced during the ceremony. Although the public were encouraged to stay home and view the live-streamed proceedings virtually this year, Mayor Meed-Ward hoped that residents would come together in their hearts and commemorate those who have dedicated their lives to protecting us and our hard-fought freedoms.

uring the fall, the usually bright-yellow American goldfinch assumes "camouflage" colouring. This makes them unassuming, even when several of them descend at the same time on a feeder filled with sunflower hearts. With a nice autumn background, an up close look reveals the beauty of their brown, black and white feathers. These photos were taken with a Nikon 80-400mm zoom telephoto lens on a Nikon D850 body at a distance of 3 meters, while the photographer was covered with a camouflage pancho.

Chocolate Dipped
COOKIE with Candy Cane Crush!
INGREDIENTS FOR THE COOKIE • 1 1/4 cup unsalted butter at room temperature • 1 cup icing sugar, sifted • 1 1/2 tsp vanilla bean paste (or extract) • 1 1/2 cup all-purpose flour • 1/3 cup cornstarch • 1/4 tsp salt FOR THE CHOCOLATE DIP • 2 cups semi sweet chocolate chips • 1 1/4 cups crushed candy cane
DIRECTIONS FOR THE COOKIE STEP 1. Preheat the oven to 325 F and line 2 baking trays with parchment paper. STEP 2. Beat the butter and icing sugar until light and fluffy, about 3 minutes. Beat in the vanilla bean paste (or extract). It’s an important step to beat the butter and sugar well together when making shortbread - this ensures the shortbread will hold together and when you take a bite it will ‘snap’ and then melt away. STEP 3. In a separate bowl, sift the flour, cornstarch and salt and add to the butter, mixing until blended and soft. Spoon the dough into a piping bag fitted with a large star tip (or into a cookie press). Pipe cookies in to wreath shapes about 1 1/2 inches across onto the prepared baking trays and leaving an inch between each cookie. If you want a flatter cookie that spreads, bake right away. For a cookie that sits up and holds its shape, chill the piped unbaked cookies for 15 minutes before baking. Bake for 20 to 25 minutes, until the cookies just begin to brown lightly on the bottom. Cool the cookies on the trays before next step. FOR THE CHOCOLATE DIP
Chef's Tip You can also use white chocolate chips if you prefer, and if you fancy another type of crushed candy - go for it!
STEP 1. Place the chocolate chips in a shallow microwave safe bowl. Melt chocolate until most of the chips are melted then remove from oven and stir to melt all the chips. Do this until the chocolate is smooth and liquid, being careful not to boil or burn the chocolate. STEP 2. Dip the bottom half of the cookie into the chocolate, let some of the chocolate drip back into the bowl until there are no more drips, then place on a wire rack. STEP 3. Have another bowl of the crushed candy canes ready to sprinkle on to the wet chocolate. STEP 4. Repeat until all the cookies are dipped and sprinkled. Let cool completely on racks. Note: This is an Anna Olson recipe for spritz cookies that I use faithfully every holiday season, but I’ve added my own twist and sparkle with the chocolate and candy canes, which is a classic holiday combination.
