She had been at the shelter for a while, and her time there was running out. Thankfully, she was rescued and given a second chance to live out her senior years in a loving home. Athena is described as sweet, smart, inquisitive, playful, friendly, and calm. She is extremely loyal and bonds with her family quickly. She loves to explore her environment, relax with her trusted people, and play fetch and tug of war! Athena is shy with new people and requires proper introductions. She does not enjoy the company of other animals and is leash reactive. She much prefers to spend her time in a backyard instead of going for walks. Despite all that’s been going on, people’s love for the fun, fright and delight of Halloween was as strong as ever this year. Everywhere you looked, kids and parents were dressed up in costumes and could be seen around town taking in the sights and sounds including all the hair-raising, terrifying yard decorations. Homeowners took it upon themselves to keep the spirt of Halloween alive as front yards were transformed into ghostly cemeteries complete with gravestones, skeletons and monsters. Ghosts swung in the breeze from tree branches as coloured lights illuminated all the ghoulish decorations. With the convergence of a full moon, a blue moon, daylight saving time and a pandemic, Halloween 2020 will truly be one to remember.

This booze-less option is made with sugar-free ginger ale flavoured sparkling water and naturally sweetened with honey syrup and pomegranate juice. The result is a subtle, sweet and spiced sipper you’ll want to make all season long. If you want to add alcohol, try a splash of white rum or vodka.

"Use it to sweeten coffee, tea or sparkling water, or brush over cake layers before icing to keep the cake extra moist."
Sparkling Ginger Pomegranate
MOCK TAILS INGREDIENTS
FOR THE SPICED HONEY SYRUP • 4 black peppercorns • 3 whole cloves • 1 each cinnamon stick and star anise • 1 piece (about 3 inches/7.5 cm) fresh ginger, sliced • 2/3 cup (167 mL) honey
Drink Tip Refrigerate in sealed jar or airtight container up to one week.
FOR THE MOCKTAILS • 1 1/2 cups (375 mL) ice cubes • 1 cup (250 mL) 100% pomegranate juice • 1/2 cup (125 mL) spiced honey syrup • 1/2 cup (125 mL) PC ginger ale flavour sparkling water • 4 sprigs fresh rosemary • 8 pieces crystallized ginger (optional)
DIRECTIONS STEP 1. TO MAKE THE SPICED HONEY SYRUP, combine peppercorns, cloves, cinnamon stick, star anise, fresh ginger, honey, and 1 cup water in a small saucepan. Bring to a boil; reduce heat to a simmer and cook 10 minutes. Discard star anise. Let cool to room temperature. Discard peppercorns, cloves, cinnamon stick and ginger. STEP 2. TO MAKE THE MOCKTAILS, divide ice among glasses. Pour 1/4 cup pomegranate juice and 2 tbsp spiced honey syrup into each glass. Top with sparkling water, dividing evenly. Stir to combine. STEP 3. Garnish glasses with rosemary sprigs. RBG’s historic Rock Garden transformed under the cover of darkness for an exclusive adult-only Halloween celebration. Royal Botanical Gardens’ adult-only Halloween celebration RBG After Dark: Boos and Brews, held October 29 was completely sold out. The Rock Garden was transformed into a breathtaking colour-drenched light show of purples, greens and yellows. Due to the challenges presented by COVID-19, the party was offered at two time slots and ticket sales were limited to 100 at a time to allow for plenty of social distancing. Witches, scarecrows and other creatures were spotted enjoying Nickel Brook’s craft brews, nibblies and other treats in the autumn nightscape. Music from DJ Lovejoy was piped through the entire area. The whole evening was quite spook-tacular!

I LOVE Chicken Schnitzel, it’s one of my favourite guilty indulgences. No guilt with this one. It is baked, full of good nutrients, loaded with flavour and is a sure winner each time! Quinoa flakes replace the traditional breadcrumbs and can be found in any whole foods store. Make it with the Chopped Tomato Garlic Bruschetta Mixture or not! Either way, you will love it! Serves 4-6
Ingredients
Directions STEP 1. Preheat oven to Broil. Arrange the rack to second from the top position. Line cookie sheet with foil and spray with the coconut oil spray. STEP 2. Mix together in a medium size bowl Quinoa Coating ingredients, place in shallow dish. Place egg in another shallow dish, place flour in a third shallow dish. Arrange dishes so that flour is first, then egg, then coating. STEP 3. Dip each pice of chicken in flour, shake off excess. Dip in egg, then coat in Quinoa Coating mixture. Lay coated chicken piece on oiled cookie sheet. Repeat with all the chicken. STEP 4. Lightly spray each piece of chicken with oil). STEP 5. Broil for 3-5 minutes, flip pieces over, broil for 3-5 more minutes. 14

STEP 6. Serve with Tomato Garlic Bruschetta mixture. STEP 7. To make the Tomato Garlic Bruschetta mixture: Season the tomatoes with salt and put them in a colander to drain for 5-10 minutes (or longer). Transfer tomatoes to a bowl and fold in remaining ingredients, season with salt and freshly ground pepper.
Make Ahead Tip The chicken can be floured, egged and coated, placed on a sheet of wax paper and either stored for the day in the refrigerator or frozen uncovered as is. Once frozen, the chicken pieces can be stored in a zip-lock bag. Allow the chicken to defrost uncovered in the refrigerator for a few hours or overnight before brushing with oil and broiling.
