WARM UP YOUR FALL WITH THESE APPLE CIDER RECIPES Autumn is often a time of cold, grey weather. Fortunately it is also apple harvest time, and the season for keeping warm with comforting food and drinks. Enjoy reassuring recipes for body and soul featuring Green Mountain Hot Apple Cider Mix in K-Cup pods for the Keurig system, which combine fall pleasures to perfection.

Onion Soup with Apple Cider Ingredients: • 1.5 kg (3 lb) onions, thinly sliced • 2 shallots • 60 mL (4 tbsp) olive oil • 1 Green Mountain hot apple cider mix K-Cup pod • 1 L (4 cups) beef broth • 1 L (4 cups) chicken broth • 15 mL (1 tbsp) dried thyme • 6 slices Parisian bread • 750 mL (3 cups) Emmental cheese, grated • Salt and pepper to taste Instructions: 1. In a saucepan, heat the olive oil over medium heat, add onions and shallots and stir. Cook for approximately 20 minutes or until the onions are caramelized. Lower heat as required. 2. Brew 125 mL (4 oz) of Green Mountain hot apple cider. 3. Deglaze onions and shallots with the Green Mountain hot apple cider. Make sure you scrape the juices from the saucepan. 4. Add broth, thyme, salt and pepper. Reduce heat and let simmer for 30 minutes. Meanwhile, place the slices of bread on a baking sheet and put it in the oven at 200°C (400°F) for about 10 minutes. 5. Pour the soup into 6 bowls. Add a slice of bread and grated cheese to each; then broil.

Hot Apple Cider with Dark Rum Ingredients: • 30 mL (1 oz) dark rum • 1 Green Mountain hot apple cider mix K-Cup pod • 1 cinnamon stick • Apple slices to decorate Instructions: 1. Brew 250 mL (8 oz) of Green Mountain hot apple cider. 2. Pour the dark rum in the hot apple cider. 3. Place a cinnamon stick and apple slices in the mug to decorate. DO YOU LOVE DELICIOUS DESSERTS CLOSE TO HOME? By Jane Kabarguina

You won’t find anything new until you get out and explore your community. The reason I moved to King City however, was not to explore what it had to offer, but to enjoy the calm and the quiet of the trees surrounding my property. But when five of my yoga students told me about this guy who bakes pies not far away from me, I had to try them. And I don’t go around trying any pie because my mom is the Queen of pastries. She could easily open up a bakery if she wanted. You could ask anyone. Fully intrigued, my daughter and I decided to visit the Country Apple Orchard Farm located on 16th Sideroad. We didn’t go for the apples; we went straight for the pies, specifically the strawberry rhubarb pie. The two of us finished the pie without

leaving it to anybody else in the family (which consists of two more sweet-tooth’s). We had to go back and find out why this family-run apple orchard bakes such high quality European-style pies. Lawyer-turned-chef-extraordinaire Roman Moskaltsov began his baking career back in Russia. He began administering a big restaurant in Vladivostok and then went to the Service and Technology College for four years. He came back to the same restaurant, but now as a cook making sushi and desserts. When he came to Canada he went to Liaison Culinary College for another two years. He worked at Sparrow restaurant, Shinook and finally was invited as a chef to McMichael Canadian Art Collection. He created the menu and cooked for celebrities such Steve Martin and others.

Unfortunately, the job of the chef was so overwhelming that at such a young age he got major health problems such as flat feet, high blood pressure, headaches and lower back issues. And thus Roman turned to farming! Of course, he could not give up his passion for cooking. Roman experimented with a few types of dough until he finally got satisfied with a traditional style of English short crust, not over-mixed and flaky dough. He bakes 400 pies a week and recently added 200 more pies during the weekend. I asked him if his health problems went away with changing occupations. Well, blood pressure normalized, headaches are gone, but the rest are still there. My suggestions to him were very simple. For the feet – take your shoes off and do a grabbing movement with the toes, emphasizing on the knuckle of big toes. And for the lower back – bend your knees while standing, place your elbows to your knees and drop your head, gently relaxing the spine. Since some of his health problems went away,I am sure he will work to get rid of the remaining ones. And with that I hope that he will find more inspiration. Hopefully, he will let me try some new recipes.

MINI PUMPKIN CHEESECAKES SO GOOD GUESTS WILL WANT THIRDS (NC) Take the bite-sized dessert trend to the next level this Thanksgiving with a mini pumpkin cheesecake. This no-bake treat is perfect for getting the kids involved, and the budgetfriendly ingredients can be found at your local Walmart.

Mini No-Bake Pumpkin Cheesecakes Ingredients: • 3/4 cup graham cracker crumbs • 2 tbsp melted butter • 4 oz cream cheese, at room temperature • 1/4 cup granulated sugar • 1/4 cup pure pumpkin purée • 1/4 tsp pumpkin pie spice • 1/2 cup whipping cream • Mini chocolate chips (optional) Instructions: 1. Line a 24-cup mini muffin tin with paper liners. Combine graham cracker crumbs with melted butter and stir well. Divide between 24 liners, using about 1 tsp of mixture each. Use a small spoon or your fingers to press mixture into liners without pressing out the folds. Chill. 2. Using an electric mixer, beat cream cheese with sugar in a medium bowl until smooth and fluffy, about1 to 2 minutes. Beat in pumpkin purée and spice. Clean beaters and whip cream in a separate bowl until it forms stiff peaks, about 1 to 2 minutes. Fold whipped cream into cream cheese mixture. Spoon over prepared bases. Top with chocolate chips. 3. Stephen Ferritto for preparing, cooking, and serving two amazing soups on Saturday, October 1, 2016 at the Holland Marsh Soup Fest. Stephen’s creativity went above and beyond. He created two original recipes. His first soup was a home-made chicken and wild rice soup that required a two day preparation. Stephen's passion and excitement over this fresh, well-balanced dish was evident as he served a number of individuals on Saturday. All those who had the pleasure of tasting his soup expressed great contentment to this natural healthy soup. His second creation was a decadent delight of maple vanilla hot chocolate soup;

also made with all natural ingredients. Records were broken on repeat visits with one young man enjoying it seven times over - we think he liked it! Overall, the Rainmaker Team's participation in the Holland Marsh Soup fest was a huge success! The rain did not bother anyone and it was a perfect day for a warm cup of soup! We look forward to see what special recipes Stephen has in store for us next year.


CHECK YOUR ALARMS ON CARBON MONOXIDE AWARENESS WEEK

E

ducation around Ontario's mandatory carbon monoxide alarm law gets a boost in November with the second annual carbon monoxide awareness week. Introduced in 2015 when the law took effect, the campaign runs the first week of November. It's aimed at identifying a home's common sources of the deadly gas and taking steps to help keep families safe. The legislation requires homes of any age to have at least one working carbon monoxide alarm installed outside all sleeping areas if there is a risk of CO exposure. Ontario is the second jurisdiction in Canada to take steps to safeguard its citizens from carbon monoxide poisoning. The law is the result of a tragic carbon monoxide accident that occurred just before Christmas 2008. John Gignac, a veteran Brantford firefighter, lost his niece Laurie Hawkins, her husband, and their two children. A clogged vent connected to Hawkins' gas fireplace caused

carbon monoxide to seep back into their home. The family didn't have a CO alarm, so they had no idea they were in danger. The story made national headlines and brought attention to the growing number of carbon monoxide poisonings happening in Canadian homes. Gignac, who created and is executive director of the family educational foundation, says that in addition to installing and maintaining CO alarms, recognizing they don't last forever is equally important.

“For families that already have CO alarms installed, it is essential to check their age because if they were made before 2009, they must be replaced,” he says. “That goes for hardwired alarms, too. Sensors can become dirty and obstructed. Plus, technology has made significant advances. Today you can even buy “worry-free” alarms that have sealed lithium batteries that last 10 years from activation and never need to be changed.” Carbon monoxide can be emitted when fuels are burned

for energy or heat. According to the Hawkins-Gignac Foundation for CO Education, sources of carbon dioxide include the fireplace, furnace, water heater, appliances, and garage. Carbon monoxide is called the “silent killer” because humans cannot see, smell, or taste it. The only safe way it can be detected is with a CSA-approved CO alarm.
