4 WAYS TO BRING THE FAMILY TOGETHER FOR MEAL TIME Between work and school commitments, it can be difficult to carve out time to sit down and enjoy a home-cooked dinner as a family. But spending this time together is well worth the effort. In addition to offering an opportunity to bond, eating together and engaging in conversation can have a deep influence on children. TRYING TO FIND LOCAL FRESH FRUIT AT THIS TIME? By Jane Kabarguina

When you think that you can find nothing edible during your hike in the nearest forest anymore I will assure you that this is not true at all. It’s a great time to pick wild grapes! And this year the crop grew beyond expectation. "Why is that so exciting?" you may ask. The answer is simple—wild grapes take the crown for antioxidant content in the seeds, skin and the flesh of the grape. When I walk people through the Hidden Forest in King City to show where it could grow, I always ask if anyone in the crowd has cardio-vascular problems, diabetes, cognitive issues, serious eye disease, or just feels tired all the time. Usually by the time I finish with the names of illnesses, everyone raises a hand, so everyone is handed a bunch of wild grapes to taste. The grapevine has the largest amount of polyphenols (about 60-70% of total bioactive grape compounds) which are mostly found in seeds. One of its polyphenols is called resveratrol which has different therapeutic effects

like anti-oxidative, anti-carcinogenic, antimicrobial, antiviral, anti-aging, anti-inflammatory, anti-diabetic, cardioprotective, hepatoprotective, and neuroprotective activities. Furthermore, it has extensive nutritional values and usages. I would not suggest eating a lot of wild grapes right away simply because of its taste, especially if you are not used to something that is tart. This is why most people prefer to boil or steam grapes before making juice or wine out of them. I am not the biggest fan of cooking grapes because most of its medicinal qualities will fade off after the temperature rises above 40C. And this is exactly the reason why I prefer to collect wild grapes in November – they could already experience the frost and become sweet! Another healthy trick that I love to do is throw a few grapes into the bottle of water to release these antioxidants and boost some energy— hand-picked and absolutely free. PREPARE A TIMELESS HOLIDAY CLASSIC EVERYONE LOVES An old-fashioned family favourite, this peanut brittle is bound to become a tradition in your household. This recipe makes homemade candy simple and delicious. Just be sure to watch the pot and keep organized, as brittle can go from perfect to burnt quickly.

Classic Peanut Brittle Ingredients: • 3/4 tsp (4 mL) baking soda • 1/2 tsp (2 mL) water • 1/2 tsp (2 mL) vanilla • 3/4 cup (175 mL) granulated sugar • 1/2 cup (125 mL) water • 1/2 cup (125 mL) light corn syrup • 2 cups (500 mL) peanuts • 2 tbsp (30 mL) butter Instructions: 1. In a small bowl, stir baking soda with 1/2 tsp (2 mL) water and vanilla. Set aside. 2. In a medium saucepan stir sugar with 1/2 cup (125 mL) water and corn syrup. Set over medium heat, stirring occasionally until mixture turns a light golden colour and reaches 240°F (120°C) on a candy thermometer, about 7 minutes once boiling. 3. Stir in peanuts and butter. Continue cooking, stirring continuously until mixture turns a deeper golden colour and reaches 300°F (140°C) on a candy thermometer, about 2 to 4 minutes once boiling. 4. Remove from heat and immediately stir in baking soda mixture until light and foamy. Then quickly turn onto a lightly-buttered baking sheet, spreading as thinly as possible. Let stand until hardened, about 1 hour. Break into large pieces.

Prep time: 5 minutes Cook time: 10 minutes Makes: 12 servings

Tip: If you don't have a candy thermometer, you can use a small bowl of very cold water to test as you go. Before starting your peanut brittle, fill a small bowl with very cold water and add an ice cube. Refrigerate until ready to use. To test if temperature has reached 240°F (120°C), spoon about 1/2 tsp (2 mL) of brittle mixture into your bowl of cold water. Using your fingers, gather mixture. It should squish together to form a soft ball. If not, cook a bit longer while watching carefully, then test again. To test if temperature has reached 300°F (140°C), spoon about 1/2 tsp (2 mL) of brittle mixture into the ice water. It will crack into hard threads. www.newscanada.ca

According to Angelo Miranda, Seneca’s Director of Major Capital Projects, sustainability was a top priority when planning for the expansion. “Energy efficiency and environmental sustainability have always been goals for this project,” said Miranda. “We are hoping to be certified LEED Gold in the Canada Green Building Council’s Leadership in Energy and Environment Design [LEED®] rating system.” Sustainable practices have been built into every aspect of the plan. For instance, Seneca plans to use reclaimed water in
