Frequently, drowning victims were not wearing personal flotation devices (PFDs). Make the numbers work in your favour: Wear your PFD. • Make sure you have enough PFDs and throwable flotation devices on your boat. • Select a PFD that is approved by the Coast Guard, Department of Transportation, or Department of Fisheries and Oceans. Water toys are not suitable substitutes. • Choose PFDs that properly fit you and your passengers. • Dry PFDs completely in a cool, ventilated area before storing them. • Avoid contact with oil, grease, or other substances that could deteriorate the PFD. • Check PFDs at least twice a year for mildew, broken straps, or hardening. Dispose of unserviceable PFDs, and replace them with new ones. Stay Alert And Navigate Safely With more boaters on the water than ever before, you must be prepared for any situation. • Be aware of the effects of boater's fatigue from the combination of sun, wind, noise, vibration, and motion of the water. • Always operate at a safe speed and be ready to react quickly in emergencies. • Know the water you are on. Carry charts of the area you are cruising. • Reduce speed when approaching areas that may be shallow. Consider using a depth device to determine water depth and provide warning of underwater hazards. • Watch for submerged rocks, logs or snags and other potential hazards. These and other underwater obstructions can often be spotted as a darkened area or shadow beneath the water's surface. Floating debris can be a sign that obstructions are close by. • Ask other boaters or marina operators of any known problem areas that may not be marked. • Understand and follow navigational markers and buoys. • Sailboat operators should watch for and avoid overhead power lines. • Leave alcohol at home. Alcohol use is a major contributing factor in recreational boating fatalities. Boating under the influence is also illegal in all states and provinces. Take Special Precautions With Personal Watercraft The number of personal watercraft (PWC) is more than 10 times greater today than in the late 1980s. With the number of people using personal watercrafts on the rise, injuries, and deaths associated with their use has also increased. • All riders must wear properly fitted PFDs, approved by the Coast Guard, Department of Transportation, or Department of Fisheries and Oceans. ■ KING LIVING

SURPRISING REASONS FOR EATING LOCALLY GROWN PRODUCE Canadians are wisely increasingly on the lookout for food that is grown or produced close to home — or at the very least, in the same country. And as soon as the warm weather hits, anticipation grows for the first fresh-picked berries, asparagus and corn. But while fruit stands and farmers markets often come to mind this time of year, did you

This allows for produce to be ripened for a longer period of time. Visit your local grocery store and look out for products that were grown near you to get that fresh and juicy flavour. Spend your summer outdoors at Seneca College By: Dimitri Perdicaris

T

he King community may know Seneca College, as a local post-secondary educational institution, but Seneca also offers a variety of outdoor activities and day camp options to keep families with children active this summer. Situated on the Oak Ridges Moraine, the forested lands and trails surrounding Seneca’s King Campus are “one of the best kept hiking secrets in Ontario,” according to the Ontario Trails Council. “We have 700 acres of forest, hills, meadows and wetland surrounding a 45 acre private lake and 17 kilometres of groomed trails,” said Kelly Mathews, manager of King Day Camp and the Seneca Outdoor Education

Centre. “Families in the community could easily spend an entire day hiking, picnicking, cycling, geocaching, bird watching, or running around the open space on our campus.” Mathews also said that Seneca’s King Day Camp is a simple solution for parents looking to keep their children active and engaged all summer. King Day Camp is a technology-free summer camp. Campers happily leave their cell phones and gaming devices at home and immerse themselves in nature for seven hours each day. “Our programs encourage continued learning outside of the classroom,” said Mathews. “Even though children are not in school during the summer, parents can feel confident knowing that our staff keeps the learning going throughout those two months, and does so in a safe and supportive environment.” At King Day Camp, such learning is achieved through experiential play which could include anything from shelter and raft building to survival activities and nature-based crafts. “Our programming is purposefully-designed to be appropriate for the developmental stages for children ages four to 16,” said Mathews. “We help youth learn and develop important life skills such as teamwork, leadership, citizenship and more. This positions them for success once they head back to the classroom in September.” One example of this is King Day Camp’s Leader in Training and Staff in Training programs which prepare teenage campers for future employment with the camp or elsewhere. By teaching the hard and soft skills needed for working with youth in the outdoors, campers can have fun while growing and developing as people – they also begin to understand what it means to be accountable. WEST COAST STYLE FISH AND CHIPS Ingredients • 4 lbs (2 kg) salmon fillet, skin removed • 4 medium-sized sweet potatoes • 2 cups (500 mL) flour • 1 tbsp (15 mL) ground black pepper • 1 tsp (5 mL) paprika • 1 tsp (5 mL) chili powder • 3 eggs, lightly beaten • Sea salt • Garlic powder • Olive oil • Lemon wedges • Vegetable oil • Tartar sauce or honey malt vinegar Instructions 1. Combine flour, pepper, paprika and chili powder in a large bowl. Carefully fold the beaten eggs into the dry mixture to create a smooth, thick batter.

2. Slice salmon into thin strips. Dip strips into the batter one at a time making sure to get a thick layer on each; use your hands if necessary. 3. If frying, heat a thick layer of vegetable oil in a deep frying pan. Place battered salmon strips into hot oil, being careful not to overcrowd. Turn occasionally, cooking until golden-brown, about 8 minutes. If baking, heat oven to 425°F. Brush olive oil on a baking sheet, then place battered salmon strips on sheet. Bake until salmon is cooked through, about 8-10 minutes. 4. To make the chips, preheat oven to 350°F. Cut the sweet potatoes into strips — thin strips for crispier fries and thicker wedges for softer ones. Place on aluminum foillined baking sheet and toss with olive

oil, sea salt and garlic powder. Bake for 10 minutes. Remove sheet, turn fries and place in oven for another 10 minutes, until fries have light brown edges. 5. Serve with a lemon wedge and tartar sauce or honey malt vinegar. Add a fresh green salad for extra veggies.
