HEALTHY FLOURLESS CHOCOLATE WINTER ALE CAKE PREP TIME: 10 minutes COOK TIME: 20-25 minutes SERVING SIZE: 8

INGREDIENTS • 1/2 CUP (170 g) Grass-fed Butter or Coconut Oil • 4 OZ. (115 g) 70% Dark Chocolate • 2 Large Eggs • 1/4 CUP (85 g) Cocoa Powder • 3/4 CUP (180 mL) Honey • 1/4 CUP (60 mL) Granville Island Brewing's Lion's Winter Ale • 1 TSP (5 mL) Vanilla • PINCH of Salt

DIRECTIONS • Preheat the oven to 375°F (190°C). Grease an 8-inch springform pan generously with coconut oil or butter. • Melt the dark chocolate and butter together, stirring until completely smooth. You can use a double-boiler for this, or you can melt the chocolate into an oven-safe bowl in the oven for about 4 to 5 minutes. • In another small pan bring the beer and vanilla to a soft boil. Reduce to low and slowly add in the beer mixture, then the chocolate and butter mix until well incorporated. Combine with cocoa powder, honey, and eggs. Whisk well until a smooth batter forms. Pour batter into the greased pan, smoothing the top with a spatula. • Bake for 20 to 25 minutes, until the centre looks firm. Allow to cool in the pan for 15 minutes, then remove from the sides - you'll appreciate the spring-form pan in this step. Allow to cool completely before serving. THN www.newscanada.com

REPAIR DEAD SPOTS Early in the fall, repair dead spots in the lawn by digging straight down and as deep as necessary to remove all soil containing the roots. Fill the hole with a loamy topsoil and tamp down to level with the turf. Seed the area with a mix that matches your existing turf grass. Cover it with hay or newspaper shavings to protect against birds. Water regularly while the seeds germinate and sprout.

LEAVES ARE YOUR BIGGEST ASSETS After they fall off trees, they break down to create essential nutrients that feed your plants. Dig a big hole and pile them in. They'll break down eventually and give you wonderful leaf mould for mulching in the spring. >>>

PREPARE THE BEDS Combine one part blood meal, one part bone meal, and one part wood ash to scatter over bulb beds for beautiful blooms come spring.

PLANT NEW TREES Fall is the ideal time to plant a deciduous tree - the soil is still warm and holds oxygen that will encourage root growth. Plant your new addition about six weeks before the deep frost. Be sure to prepare a hole large enough, about five times the width of the root ball. Retain the soil you remove from the hole and use it as backfill to allow your new tree to adjust to its natural soil as quickly as possible.

ADD LIGHTING Add a little lighting to extend the beauty of your garden through the winter months. Light pale trees such as birches with back floodlighting. • 2 tbsp (30 ml) large Flake Oats • 2 tbsp (30 ml) each Pumpkin Seeds and coarsely chopped Peanuts • 2 tbsp (30 ml) Brown Sugar MUFFINS

• 1 cup (250 ml) all-purpose Flour • 3/4 cup (175 ml) Whole Wheat Flour • 1 1/4 cups (300 ml) Granulated Sugar • 1 tbsp (15 ml) Baking Powder • 1 1/2 tsp (7 ml) Chinese Five-Spice Powder • 1/2 tsp (2 ml) Salt • 1 cup (250 ml) Unsweetened Canned Pumpkin • 1/2 cup (125 ml) Peanut Oil or Vegetable Oil • 1/3 cup (75 mL) Water • 2 Eggs • 1 tsp (5 ml) Vanilla • 1/3 cup (75 mL) Peanut Butter

Prep time: 15 minutes Baking time: 22 minutes Makes 12 muffins

DIRECTIONS •

Preheat oven to 375°F (190°C). Lightly grease a muffin pan. Combine oats, pumpkin seeds, peanuts and brown sugar in a small bowl, then set aside.

• In a large bowl, stir flours with sugar, baking powder, five-spice powder and salt. In a medium bowl, whisk pumpkin with oil, water, eggs and vanilla. Then whisk in peanut butter. Pour onto flour mixture and stir just until combined. Mixture will be quite thick. •

Spoon batter into prepared muffin pan and sprinkle with topping. Bake for about 22 minutes, or until a tester inserted in the centre comes out clean. Let cool in pan for 5 minutes then transfer to a rack to cool completely.
