BETTER-FOR-YOU
BAKING
THIS HOLIDAY SEASON
During the holidays, it is easy to veer from a heart healthy diet and lifestyle. This can be made even more challenging when it comes to desserts. After all, who can say no to delicious baked goods from friends and family? When it comes to baking your own treats at home, incorporating a soft, non-hydrogenated margarine can help make cookies soft and chewy. Becel Buttery Taste margarine is made with a blend of oils, including canola and sunflower oils, and contains 80 per cent less saturated fat than butter. It also has no artificial colours, flavours, or preservatives.
This holiday season, try this simple and delicious cookie recipe as your first step towards better-for-you baking:

FESTIVE
HOLIDAY COCKTAILS
The holidays are a time for celebration, packed with parties and intimate gatherings. Make your next party an event to remember by crafting cocktails in tune with the season. Get creative with the warm spices and seasonal flavours in these delicious recipes.
HOT BUTTERED RYE
CANDY CANE COCKTAIL
Fight cooler temperatures with warmer drinks. This alternative to traditional hot buttered rum combines whisky with hot water and ginger liqueur in a heat-safe glass or mug. Use your Vitamix machine to create a decadent topping made with heavy cream and a touch of maple syrup. Garnish with a sprinkle of nutmeg.
Candy canes are only available on store shelves once a year, so take advantage of every chance you get to indulge in them. Perfect as a dessert cocktail, this sweet treat combines vanilla rum, white chocolate liqueur, and peppermint schnapps. Add a shot of each to a cocktail shaker full of ice, shake well, and strain into a chilled martini glass. Garnish with a candy cane or crushed candy cane rim.
GINGERBREAD MARTINI Gather some friends at your next holiday party to make gingerbread houses while you sip on gingerbread martinis. Prepare the martini glasses by chilling them in the freezer, then dip the rims in ginger liqueur and crushed ginger snaps. In a martini shaker filled with ice, combine ginger liqueur, vanilla citrus liqueur, coffee-flavoured rum, and a little honey and heavy cream. Shake well and pour. Garnish with a dash of cinnamon or nutmeg.
SPARKLING CHAMPAGNE SMOOTHIE Nothing says celebration like champagne. For a fun twist on a holiday toast, whip up a quick sparkling champagne smoothie. Combine your favourite fruit - fresh or frozen strawberries and peaches are yummy options - with yogurt and a pinch of nutmeg in your Vitamix machine and blend. Pour into toasting flutes, top with chilled champagne, and mix gently to combine. Cheers! www.newscanada.com

Dear The Wine Ladies,
ASK
A small group of us have recently started up a wine club and take turns hosting tastings. Next month is our turn and we would like to offer a selection of wines made with different grape varieties. The more details the better, as we plan on doing a blind tasting at the end of the evening. We are responsible for the white wines and wondered if you could recommend three that might improve our chances of success in identifying them. - Chris
THE WINE LADIES Q&A Dear C hris,
It sounds like a great evening! Here are three wines that will be quite discernable in their aromas and on the palate. SAUVIGNON BLANC would be a superb first choice as the aromas and flavors are very distinctive. Select one from New Zealand where they tend to be very aromatic and crisp with gooseberry, citrus, grapefruit and slightly herbaceous flavours. The next choice could be a full-bodied, oaked CHARDONNAY from either California or Australia. These wines provide a great contrast to Sauvignon Blanc both in their flavor profile and texture. The texture of these wines will be creamier or heavier in weight, similar to homogenized milk, while the lighter bodied Sauvignon Blanc might feel more like 2% milk, much lighter in weight. You’ll also be able to detect a dose of oak in the nose (maybe read the label to verify aged in oak, as most are) and a hint of toast. The aroma will be more of tropical fruits such as pineapple, as opposed to the zesty citrus. The final choice that we would recommend is a RIESLING. Opt for one from the Mosel or the Rhine, as Germany is the birthplace of this incredibly seductive, versatile varietal. These wines tend to be light, fruity and delicate, expressing fresh apple and pear in the nose, along with a suggestion of petrol and lime. They are very aromatic, have great acidity, due to the cool climate and are very full flavoured. These three varietals should provide enough drama in the glass to not only seduce your tasters, but also allow them to gain some confidence in identifying wines blindly.

BLESSED TRINITY
PILGRIMAGE On Sunday, October 30th, Blessed Trinity walked 10km in our annual Pilgrimage. The Pilgrimage was started by a group of Priests called the Holy Cross Fathers over fifty years ago. Notre Dame College School in Welland was the first of the eight high schools to take part in this event. Currently, all eight of the Niagara Catholic District High Schools and their respective family of schools Intermediate students walk the Pilgrimage.
The Pilgrimage is Blessed Trinity’s biggest event each year with the theme this year being “Where’s the Love?” Students, staff and community members pledge money. Students also receive distinct Pilgrimage shirts if they raise over $50. All of the money goes to support the impoverished community of Las Pajas in the Dominican Republic. The people of Las Pajas are living in extreme poverty and each year we donate anywhere from $12,000 to $20,000 to drastically help improve their living conditions. We have given over $200,000 dollars to Las Pajas over the years and provided them with clean water, concrete floors for houses, education and many other important needs. This year, it looks like Blessed Trinity has raised $16,000 and we thank all our family of schools students from Saint Joseph, Our Lady Of Fatima, Saint John, Saint Mark and Saint Martin who also participated and raised over $1,650 for the cause. This year four of our elementary schools also carried a spectacular cross, which each school made and which will be displayed in each of their respective schools as well.
Blessed Trinity did not always host its own Pilgrimage. From 1994 to 2002, our students were bused to St. Francis High School where we ended up walking with three Catholic high schools in St. Catharines. Blessed Trinity started its own Pilgrimage in 2003 under the approval of then Principal Mr. Dan Di Lorenzo and this year marks our 14th annual celebration.
Overall, the Blessed Trinity Pilgrimage is changing the lives of many people in Las Pajas for the better. Great job Thunder and a huge shout out to PILLERS for their generous contributions of sausages and hot dogs for all of our walkers.

School Life SOUTH LINCOLN HIGH SCHOOL
South Lincoln is pleased to be sharing selections of “ STO R I E S F RO M S O U T H ” written by Grade 9 Students SOUTH LI N C O LN H I GH S C H OOL I S LOVI N’ T H OS E BOOKS ! - by Tara Metzke At South Lincoln High School there is a very important program called “Book Love”. It is a program that gets students reading more to improve their reading abilities so that when students get to college or university they can succeed in their academic lives. “Book Love” is a mandatory reading program where everyone at the school reads for 10-20 minutes in MSIP class and they read after all of their work is done in all of the other classes. The students keep track of the number of pages and books they have read. “Book Love” gets students out of their phones and into their imagination. As the librarian, Mrs. Whitehead said, “it is interesting to find out what the readers like to read, how they connect the book to real life situations, and I think it is interesting to find out about their lives out of school”. “Book Love” is very important according to Mrs. Burns who said, “This program gets readers and nonreaders at the school reading more and it gets them prepared for all of the reading they will need to do in college/university (which is a lot!)”. CAYDE N ’ S K I LLI N G I T - by Clayton Beamer South student Cayden Lapcevich was named the youngest Canadian professional auto racing champion ever, this past in September. Cayden is racing in the Canadian Nascar Pinty’s series which is also known as Cascar. He has been racing Cascar for about 2 years. Cayden races all summer long and travels all over Canada such as Barrie, Peterborough, Saskatoon, Antigonish and even Charlotte, North Carolina.
SOUTH LINCOLN IS VERY PROUD OF YOU, CAYDEN - KEEP IT UP! SO U TH R O CKS GIZMO ! - by Hope Pattison South Lincoln High School teachers earned a School Leadership Award for placing in the top 20 schools in Ontario for Gizmo usage. Gizmos are a set of online, interactive tools that help students understand concepts in math and science. “Gizmos really helps kids understand difficult math and science concepts,” quoted Ms. Green. CA MP MEDEB A - by Madison Sly Every year at South Lincoln High School grade 9 and 10 students go to Camp Medeba, in Haliburton, Algonquin for 3 days for a trip that brings the students together by doing fun and challenging activities. Most people who go to this camp come out saying “I’m closer with these people then I was when I first came here”. Which is the point of this trip, to gain trust from new friends and to enjoy doing it. A few of the activities the students participate in is high ropes, high swing, Jacob’s Ladder, canoeing and kayaking, and small teamwork activities. The students also gain more responsibility. You need to be up early in the morning to make it for 8:00 am Breakfast, meaning you need to make sure your whole cabin is up and ready to go for the day. The separate groups also need to help setup and cleanup for each meal. IMP O R TA N T DATES NOV 17 Mid-Term Report Cards Distributed NOV 18 PD Day NOV 26 Smithville Santa Claus Parade

As we head towards the winter break, it is incredible to take a step back and reflect on some of the incredible things that BDSS students have accomplished so far in the first semester of 16/17.
ATH LETIC S
Cayden has dreamed of getting where he is now from when he was young. Cayden says, “it’s been something I’ve dreamed about in the stands watching my dad and uncle race”. Cayden is keeping the legacy living, all the way from his Papa Joe Lapcevich, Jeff Lapcevich, to Cayden, “It’s a family sport, it’s something we live for,” Cayden says. It is a sport that you have to make commitments to, to make it all play out right even if it includes going all over the place to compete to try and win races. But Cayden won’t give it up, Cayden is starting a very successful racing career from winning seven national quarter midget championships to winning 3 times in the Canadian Nascar Pinty series in 2016.

BDSS Athletes have been incredibly successful so far - athletes in Girls’ Basketball, Boys’ Volleyball, Field Hockey and Golf representing their schools exceptionally well. In Cross-Country, Owen Konkle, Shannon Swinson, Brian Knechtel, Jessica Tillmans, Adam Holstein and Zach Carrier finished well enough to proceed to the SOSSA meet, with Konkle, Swinson, and Knechtel making it all the way to OFSAA in Port Hope, Ontario. Our Girls’ Sevens Rugby team got off to an incredibly successful start, winning the Welland Centennial tournament over a closely matched team from Lakeshore Catholic. Congratulations, BUCS - BDSS athletes have not only a tradition of excellence, but also of representing
their school community exceptionally well.

SECONDARY SCHOOL R EMEMB R A NC E DAY A SS E M BLY This November 11th marks the 15th annual Remembrance Day celebration run by the Canadian and World Studies Department under the direction this year of Mrs. Maida with the assistance of the Drama, Music and Art Departments and Dance team. The celebration will take place in Blessed Trinity’s gymnasium. It is meant to honour the fallen soldiers and to respect the soldiers that are fighting for our freedom and rights as Canadians every day.
Remembrance Day has been an ongoing anniversary since November 11th, 1919 - exactly one year after World War I. World War I ended at 11:11 am on November 11th, therefore, each year at this time on this day, we have a moment of silence to honour the soldiers and veterans. This year is the 97th annual Remembrance Day in Canada. It started as an observance to respect the people that died and the people that returned home from battle, no matter their emotional or physical scars. In the past, special guests such as our local mayors and school board officials have attended our assembly. We extend an invitation to the people of our school community to share in this moment with the Blessed Trinity family with celebration beginning at 8:30 am.
LA C LASSE DE F R AN ÇAIS Les classes de français sont vraiment occupées cette année!! For those of you who do not speak French, that means “the French classes have lots going on this year.” Some of the activities include, competitions, field trips, and more! One of the competitions is the Brock Niagara Contest. In this contest, the participants will compete in speaking, listening, reading, and writing activities. This competition is in May at Brock University for students in Grades 11 and 12. The Grade 10 and 11 students have already participated in a field trip to Niagara Falls at the Paris Crepe Café. The café has an authentic French environment, a French cuisine, and the owner of the café was originally from France. This trip is fun and beneficial to the French students by getting real life experience in a French setting. The French class has many wonderful opportunities for those who wish to pursue second language learning. Vive le français!
C O-C U R R IC U LAR ACTIVITIES As of this year, all sports are regulated by the Niagara Catholic Athletic Association (NCAA). Blessed Trinity offers many co-curricular opportunities for students. This includes a wide variety of sports within the athletic program. During the fall season, Blessed Trinity places a spotlight on Girls’ Basketball, Boys’ Volleyball, Football, and Cross Country. The Junior Football team currently have a record of 4-1 and the Senior Team is currently 3-3.

GRIMSBY
SECONDARY SCHOOL This year our Family Studies Department is hosting a Guest Chef Series for our students. Local chefs volunteer to share their expertise with Grimsby Secondary students. Specifically, Grade 9 students work side by side with each guest chef to either learn a skill or create a locally inspired soup. Being involved, learning firsthand, observing a craft and absorbing all you can makes it easier to determine what is important and what you wish to commit to for life! The Chefs who are contributing to the fall lineup are Chef Greg Willis a private chef, Chef Ron Benoit from the SuperStore, Chef Laurie Didyk-Mindorf from Station 1 Coffeehouse and Chef Andy Robertson from de la Terre. We thank them for agreeing to share their expertise with our students. Students at GSS are always finding ways to give back to the community. On Thursday, October 6th, Griffin Chusing, along with our Students Aware Club, held the “GO GRIFFIN GO!” walk for The Labatt Family Cardiac Centre at Sick Kids hospital in Toronto. Griffin has been a patient at Sick Kids for over 8 years and asked if his school could help him give back. Students Aware jumped at the chance to help a fellow student with his fundraiser with the goal to raise $1,500. In the end, our students and staff exceeded Griffin’s goal and raised $1,600 to support this cause. Hallowe’en saw the “WE SCARE HUNGER” event. Students collected non-perishable food items for the Grimsby Benevolent Fund (GBF) in their homeroom classes and many students dressed up in costumes and went door-to-door on Hallowe’en night asking for donations to add to what they had collected. In December, we will have our annual food drive for GBF and many of our classes will be involved in the “Adopt a Family” programme, providing food and gifts for GBF to distribute to families. Our Student Supports Team is comprised of our Guidance, Student Success and Special Education Resource staffs. This team provides a wide variety of supports to meet the individual needs of each of our students. A few of the ways they do this are highlighted below.
18 • C O M M U N I T Y C A P T U R E D . C A
In October and November, the Guidance Department staff are meeting with all of our potential graduates to ensure they are on track to complete the graduation requirements by June. Busloads of students have attended the University and College Information Fairs and our staff have hosted a grad assembly filled with important information for each student. They are also spending time with each student answering questions and providing support with regard to university and college applications and scholarship and bursary applications. Did you know that every year across Canada, thousands of dollars in scholarships and bursaries are not awarded because students do not know about them? We are working to change that! Graduates and their parents can refer to the Graduate Resources on the Guidance webpage of our website to find all important dates, links to eInfo-university information, college websites, apprenticeship information and scholarship requirements. Our Student Supports Team also connects students with peer tutors. Students who feel like they could use extra support in any of their classes may request a peer tutor through the Student Supports Team. The student will be matched with a tutor who is strong in their specific subject area of need. The student and the tutor make their own schedule. A peer tutor’s role is to provide clarification to support understanding of key concepts of the course. Being a peer tutor is a rewarding experience that helps the tutor consolidate their knowledge and feel good about helping someone else. Here at Grimsby Secondary School the peer tutoring initiative has resulted in many success stories. More exciting learning opportunities in the fall include the visits by the grade 8 classes from our Grimsby Family of Schools. They experience “A Day in the Life of a Grade 9 Student” and then return a few weeks later on the evening of November 29th with their parents/guardians to share their learning and ask questions about grade 9 at GSS. As always, opportunities abound for all at Grimsby Secondary School!
