We used to drink Valpolicella quite a few years back and recently came across one you mentioned on one of your shows Negrar Ripasso, which we very much enjoyed. I’d like to know a little more about this wine and the region. Thank you Wine Ladies! - Jackie
THE WINE LADIES Q&A Dear Jackie, Vino from Veneto... love the wines, love the region! Valpolicella is a wine that comes from the region of Veneto, located in the north east of Italy, home of the “big gun” Amarone and Romeo and Juliet!
The methodology of “ripasso” is an ancient wine making technique used for centuries in Valpolicella wineries, which gives the wine more structure, body and fuller flavour. How? Ripasso” literally means “re-passed”. After the fermentation process when producing an Amarone (which uses grapes that have been dried for several months.) the same skins of those dried grapes are then used for the production of Valpolicella Ripasso. These dried grape skins add body, character, complexity and a boost of alcohol strength. The Negrar Ripasso Valpolicella Classico is dark ruby red in colour, is seductive in the nose with lush blackberry and black licorice notes and a hint of spice Full bodied, velvety smooth, rich and with a good finish.
When a Valpolicella is classified as a Classico and done in the ripasso method, the wine reaches new heights in flavour, texture, body and aromatics! The designation of “classico” requires the grapes to come from the original Valpolicella production zone which was later adjusted in 1968. The great majority of grapes used are the same as for Amarone, the Corvina, Molinara and Rondinella varietals although small percentages of a few others are permitted.

Negrar is a cooperative winery founded in 1933 and located in the Classico area of Valpolicella. With 210 farmers/ partners producing typical grapes for Vapolicella on a surface of 530 hectares, they are one of the major producers of Amarone, Valpolicella and Ripasso wines.

My greatest satisfaction is having successfully dealt with or attempted to deal with each issue to everyone’s satisfaction.
2. WHAT IS THE BEST ADVICE YOU'VE BEEN GIVEN? In my public life – Never take yourself too seriously. Always make sure your public life does not interfere with your private life.

6. WHO OR WHAT INSPIRES YOU? I was in a barber shop many years ago and was complaining about something when one of the guys said to me “if you don’t like it, do something about it”. That inspired me to run for office. Democracy may never be right but you can continuously work at it and engage each other.
DEMOCRACY MAY NEVER BE RIGHT BUT YOU CAN CONTINUOUSLY WORK AT IT AND ENGAGE EACH OTHER.
7. WHAT IS YOUR FAVOURITE MOVIE OF ALL TIME? I really enjoy the old County and Western Movies, especially John Wayne movies.
8. WHAT MAKES YOU LAUGH? What really makes me laugh are wise jokes, good humour and slap stick comedy. I especially enjoy watching the old shows I Love Lucy and Petticoat Junction.
9. WHAT’S YOUR FAVOURITE VACATION SPOT? As a family we would become gypsies for a month in the summers and drive our house trailer all over Canada and the United States. A special vacation was a dinner cruise in the South Pacific (Hawaii) with my wife on June 28th, it was our 50th anniversary.

The highlight was the turning of the final tally, which surpassed the initial goal, of $1,002,312! Most of us have seen or eaten (or tried to make) cauliflower pizza crusts, mostly yielding unsuccessful results. They don’t taste great and definitely do not resemble pizza at all. You can stop at this one! You will most likely fool the pizza lovers at your table. It even picks up like pizza! You can make this completely gluten-free if you swap the spelt flour for a gluten-free flour such as chickpea flour, gluten-free oat flour or an all-purpose gluten-free flour.

• 1 small cauliflower, florets only, 4 finely riced level cups* • 1/2 cup (60gm) spelt flour (or any flour you like) • 1/2 cup (40gm) almond meal/flour • 1 egg, beaten • 1/2 tsp garlic powder • 1 tsp kosher salt • 1/2 cup (60-65gm) finely grated mozzarella cheese • 2 tbsp olive oil
Preheat oven to 500˚F and place the oven rack on the second from the lowest position. Heat a cast iron flat top sheet or a cookie sheet (lined with foil if you wish) in the oven as it preheats. STE P 02
Measure 4 cups of riced cauliflower* in a microwave safe bowl. Microwave on high for 4 minutes, stopping halfway to toss. When cool enough to handle, squeeze the liquid out of the cauliflower using paper towels. Allow the cauliflower to cool a little before adding the egg and cheese.

Add the two flours, salt, garlic powder and stir well. Add the egg and cheese and work the dough with your hands so that it is all evenly distributed.
*to “rice” the cauliflower, place the florets in the food processor fitted with the steel blade. Pulse the cauliflower until it resembles rice.

Carefully remove the sheet from the oven, place it down on a heatproof surface. Brush the sheet with the olive oil. Spread the cauliflower mixture in a large oval, making a lip, like a “pizza crust edge.” I will spread it as much as I can with my hands (it is hot), then sometimes put a piece of parchment on top of the flattened cauliflower and using a rolling pin, roll over the parchment to make even thinner, then make a nice raised edge.

SECONDARY SCHOOL March Break has come and gone and the staff and students at CKSS hope it was a relaxing break to gear up for the home stretch of Semester 2. We have been busy making sure all of our students are engaged and learning so that they can continue to make the community around CKSS a wonderful one! Our wrestling team competed very successfully at the OFFSA tournament
of construction projects including building a roof, a wall and a window, as well as putting in a new door and working on various plastic and paper recycling projects. Working in partnership with community members and helping to provide students in the community of Ollantaytambo with a safe learning environment was an enriching experience for our CKSS students and demonstrated their active global citizenship. On Monday, March 27th, 88 year old Holocaust survivor Max Eisen spoke to students at Milton District HS. Mr. Eisen was only 15 years old when he and his family were deported to the Auschwitz death camp from Hungary in 1944. He lost his entire family at the camp and a total of 60 extended relatives to the Holocaust.

MAPLE SYRUP FESTVAL
@ TERRA COTTA CONSERVATION AREA
Terra Cotta Conservation Area held its annual Maple Syrup Festival during the month of March. There were many activities for the whole family such as demonstrations, a local vendor marketplace, wagon rides, magic and puppet shows and the popular taffy making. Delicious pancake breakfasts were served all day. Young and old lined up to get their Maple Taffy and sit by the open fire. In spite of the frigid temperatures many guests came out to enjoy a true Canadian experience.

heryl Antao-Xavier’s book of poetry Bruised But Unbroken takes us on a deep, soul searching journey through the ups and downs of life. As she reflects on her journey, at times heart-wrenching, we can’t help but reflect on ours. A thorough reading takes us away from the petty details of our lives and into our common humanity as men and women, parents, immigrants, Canadians, and people. From the many tributes to her adopted Canada and into distant cultures, we recognize our childhoods, our failures and successes in this contemporary and timely collection. Bruised but Unbroken is a revised version to encompass more of the Unbroken element, less on the Bruised, and according to AntaoXavier, written for bruised spirits trying to survive and move on. The book does that with themes of growth, nature, belonging, sadness, overcoming, and finally acceptance and love. It’s sprinkled throughout with Haiku and photos, and divided into sections of War and Peace, Vignettes of Life and Mind Shift.

Antao-Xavier, a Canadian by choice for twenty five years, describes herself as a learner with the goal of discovering new voices, new material and inspiration. Her publishing company In Our Words Inc. looks for diverse voices and new material. She’s helped many writers publish their debut work of poetry, fiction and playwriting. Her message to would-be poets is to let the expression come through. Show your experience and let the reader make up their own mind about it. Don’t hit the reader over the head with the message. Bruised But Unbroken is meant to be savoured, slowly, reflectively, as words leap from the page and bury themselves within us, changing the way we view our world forever. It’s a winter’s day prescription to slow down, reflect and ultimately, recognize in others, ourselves. In the words of Antao-Xavier’s poem Utopian Moments,
Beautiful wintery scene snow-covered world outside my window nestled in home comfort: a good book, a steaming beverage good company at a distance. This is my Utopia. This is how Bruised but Unbroken must be savoured.
