CELEBRATE APPLE SEASON
WITH THIS SWEET & SAVOURY RECIPE Apples are at their sweetest and juiciest this time of year, making them perfect for snacking or using in autumn-inspired dishes. But have you thought of adding them to your pasta?
This easy recipe brings the taste of the season to your table with the unexpected combination of harvest flavours and perfectly al dente linguine. It's sure to become a fall favourite. Kids will love making meal prep extra special by picking the apples at a local orchard to create your own family farm-to-table experience.
BARILLA CARAMELIZED APPLE, PUMPKIN + BACON
DIRECTIONS S T EP 01

Preheat oven to 425°F (215°C). Combine olive oil, apples, pumpkin, thyme, and bacon in mixing bowl. Place on non-stick baking sheet and bake for 25 to 30 minutes, until apples are caramelized and pumpkin is soft.
Serves: 8
Cook pasta according to package directions; drain, reserving 1/2 cup pasta water. Place pasta and pasta water back in saucepan over medium heat. Add apple mixture and scrape all ingredients from baking sheet into pasta. Toss and heat through; season to taste.

SAVOURYSWEET APPETIZERS WELCOME GUESTS
Creamy, buttery brie is always a crowd-pleaser. Warming brie helps bring out its flavour, while pairing it with Canadian apples is a great way to combine some of the best that harvest season has to offer. This appetizer recipe has decadent maple-bacon flavouring that is unique enough to serve when entertaining and easy for any host to prepare. All the ingredients can be found at your local Walmart, making this dish a cost-effective appetizer that's sure to please.
BAKED BRIE
WITH MAPLE-BACON APPLES Serves: 6
INGREDIENTS • 1 apple, unpeeled, cored, and cut into thin wedges • 2 slices thick-cut bacon, cut into 1/2-inch pieces
DIRECTIONS STE P 01
Cut apple into thin wedges. Heat a medium frying pan on medium-high. Add bacon and cook 3 to 6 minutes or until crispy. Remove from pan using a slotted spoon. Drain on paper towels. Remove and discard half of fat from pan. STE P 02
Add apples to bacon fat in pan. Reduce heat to medium-low and cook while stirring often, about 6 to 10 minutes or until apples are very soft. Add reserved bacon and 1 tbsp maple syrup.

Preheat oven to 350°F (175°C). Line a pie dish with parchment paper or aluminum foil. Place brie on top of foil and poke holes in it with a skewer. Spoon apple mixture on top. Bake until cheese is very soft, about 10 to 15 minutes. Drizzle with remaining maple syrup and sprinkle with chives. Serve immediately with crackers.

Dear The Wine Ladies, Last week I had a wine that reminded me of pears so much in the taste and smell, that I wondered if pears were used to make it, or at least added to the wine.

Is this possible? If not, how is it that so many wines are described as having tastes and smells of such a variety of fruits and other foods? I’ve heard of blackberries, plums and even blueberries, not to mention one that really threw me - green peppers! Are there any wines that smell like grapes? - Erica
THE WINE LADIES Q&A Dear Erica,
We are pretty sure there are many people out there who are wondering the exact same thing. There is actually a logical explanation for how someone might recognize a variety of familiar smells, such as pears, when it comes to the aroma of a wine. All foods and drinks are made up of a complex combination of molecules, some being more aromatic than others. Scientists have been able to identify some of these molecules and have discovered that if present in a certain food and wine, a similar smell can be detected. Take pears for example - According to “Editions Jean Lenoir” creator of 3, it’s been demonstrated that hexyl acetate, one of the typical compounds found in pears, is responsible for the scent of a pear found in wine. Green peppers, sometimes detected in the aroma of Cabernet Sauvignon or Cabernet Franc, also shares a similar compound called methoxy-2-isobutyl-3pyrazine. The most recent discovery was the peppery character that is often detected in wines such as Shiraz from Australia

or Syrah from Rhone. Australian researchers detected a trace of a peppery molecule in Shiraz wines and discovered the same molecule in ground white pepper. This peppery character in Shiraz grapes can be identified as a chemical called rotundone. This is all fascinating information, which explains why winemakers consider winemaking a blend of both science and art.

AMAZING SUMMER ADVENTURE BOOK LAUNCH

This whimsical story follows the Butler children Zack, Andrew and Emily on their summer vacation and what happens one day when they discover a baby elephant in the bushes. Like three little McGivers they use whatever is available around them to try and get the baby elephant reunited with his mother at the circus that just pulled into town. Author Bruce Butler’s inspiration to write this book are his grandchildren who provide him with endless story ideas. He quotes “Life imitates Art - Art imitates Life”. Illustrator Kary Shalatski, the Butler children’s aunt, brings the characters to life with her vibrant, whimsical illustrations, especially in the baby elephant’s expressions. In late September, our grade nine students and senior student leaders spent three days and two nights at Camp Buccaneer - held at Cave Springs in Beamsville. This is an opportunity for our senior students to impart their wisdom and BDSS traditions, on our incoming class. The BDSS traditions of inclusivity and activity are represented in full force by these amazing students in such a beautiful, natural setting. Students from all program pathways, including Specialized School to Work and Specialized School to Community fully participate in camp activities and collectively develop the sense of community that serves our Buccaneers well as they move through their secondary school years. WELCOM E B AC K , B U C CA N E E R S ! Grade nine students will have the opportunity to participate in “Take our Kids to Work day” on November, 2nd. Parents and guardians are encouraged to keep an eye out for the associated paperwork. It is a wonderful opportunity for all students to experience the workplace and begin to develop ideas about their future pathway. Students at BDSS will be carrying home preliminary reports on October 18th - keep an eye out for them! Students will receive one page for each of their classes, and in addition to learning about your student’s achievement, you will get valuable information about their classroom performance on the learning skills - Responsibility, Organization, Independent Work, Collaboration, Initiative, and Self-Regulation. These are critically important factors in each student achieving to their full potential. As a follow-up to this report, families are encouraged to attend BDSS on the evening of October 19th from 6:00 pm - 8:00 pm. Beginning in November, BDSS will go live with SchoolCash online - a convenient system for paying all school-related costs and easily signing off on forms. More information will follow to allow each family to easily register and take advantage of this amazingly convenient service.
BUCS ON TH E F I EL D In keeping with tradition, our Bucs athletes are competing successful in a variety of sports in the NRHSSA. Our exemplary student athletes are currently competing in Golf, Girls’ Basketball, Boys’ Volleyball, CrossCountry, Field Hockey, and a combined Football team with South Lincoln High School and Grimsby Secondary. More sports are on the way in the near future - stay tuned!

SECONDARY SCHOOL As a Catholic School community, we continue to help out people who need assistance and promote the importance of social justice and stewardship in light of gospel values. Our Safe Schools Team and Sky Pilots are also heavily involved in ensuring that our students are feeling comfortable in the school and that they have an outlet to go to if they are feeling overwhelmed. Meanwhile, our beautiful chapel is open daily for quiet reflection, but more importantly on Fridays at 7:30 a.m. for mass beginning in October. Our Sky Pilots under the direction of Ms. Davis continue to be key contributors of our faith by delivering the word of the Lord at school masses and through daily prayer and reflection. The student body is always taking time out of their daily lives to volunteer at places in our community such as the Grimsby Benevolent Fund and Albright Manor to name a few. Christian community service hours are a mandatory component in all of the Religion courses from Grades 9 through 12.

Blessed Trinity students take part in a Thanksgiving food drive and Christmas toy and food drive for families in our community whom may not be able to give their children a plentiful Thanksgiving dinner and/or a Christmas gift and Christmas dinner. Finally, the Catholic Church has a program entitled “Rite of Christian Initiation for Adults” (RCIA) for adults who were not raised in a Catholic community or home and want to become Catholic and join the community. The doors are open to anyone in the community and the RCIA would most definitely accept you into the Church family with open arms. There is a meeting at St. Joseph’s Parish in Grimsby on October 5th if interested.
PILGR IMAGE 2016 As we enter into the fall, the students and faculty of the Blessed Trinity community are preparing for their 13th Annual Pilgrimage - a 10km charity walk held on the last Sunday of October (October 30th) to raise money for the vulnerable Las Pajas, Dominican Republic. This year’s event begins at 9:00 a.m. in the school gym with a community mass lead by the Pastor of Saint Joseph Parish. Last year, the monies raised totalled $16,000, but this year our faith community is setting their sights on $20,000. This will be accomplished through the continued participation of the feeder schools (Saint Mark, Saint John, Saint Edward, Saint Martin, Saint Joseph and Our Lady of Fatima) as well as Blessed Trinity itself (with the renewed focus of Gr. 12 involvement), alumni, sports teams and the parents and siblings of those attending. All monies raised are used to improve the lives of the citizens of Las Pajas; an impoverished sugarplantation village in the Dominican Republic. So far, we have helped Las Pajas by expanding their small, over-crowded school and equipping it with computers, sponsoring upwards of 15 students for their post-secondary education, buying land for them to grow their own food, helping to buy their water tower to keep their water clean and finally providing beds for their elderly. Mrs. Moretuzzo, head of the Pilgrimage committee explains our goals for this year, “Since our focus is on education, we will continue to support the scholarships, in addition to providing/expanding on the basic needs for children to attend school” - If interested in attending or donating for this meaningful and important event, please contact Blessed Trinity administration. B LESSED TR IN ITY EQAO & OSSLT PR EPAR ATION Each year Grade 9 and 10 students feel extra pressure as they prepare for taking the EQAO and OSSLT tests. EQAO is a math related provincial test and the OSSLT is an English based test required for graduation across the province of Ontario. Grade 9 math students will write the EQAO at the end of their designated math semester. The test is based off of the government math curriculum for Grade 9. Mr. DeLuca, the Program Chair for Math at Blessed Trinity suggests that “students should prepare by completing
practice booklets prior to EQAO and can also prepare by attending extra math help after school.” Last year, the results from Grade 9 Academic Math were 85% and for Grade 9 Applied Math 50%. Both of these results are above the board and provincial average. In Grade 9, students also write a practice OSSLT test, but it is only to help prepare them for the test in Grade 10. This year for the Grade 10 students, the OSSLT will be written online on October 20th. Ms. Lanthier, the English Program Chair, is worried that the “online literacy testing will be a challenge for Blessed Trinity students because it will be the first time that this test is written on line.” Given the advice from our school advisors, preparation is the key to success! Let’s go Blessed Trinity and beat last year’s results of 95% success for first time writers.
BLESS E D TR I NI TY M U S I C The accomplished crew at Blessed Trinity’s music program have a lot going on this year including various performances, concerts and competitions. The multi-award winning program houses many different clubs and ensembles entailing orchestral concert band, jazz band, choir and our infamous drumline. Blessed Trinity Music has had success in many competitions all over the province! In February 2016, our concert band took a gold standard rating at the Golden Horseshoe Music Festival with the jazz band taking a silver standard rating on the same day. Also, in May 2016, the Blessed Trinity concert band went to Ottawa for a National competition where they took a silver standard rating. Not only can you join the many programs Blessed Trinity music has to offer, but you can also take classes as electives. The different types of classes are instrumental, vocal, and guitar. In instrumental class, you can choose from instruments like: the clarinet, the flute, saxophone, trumpet, and many more! BLESS E D TR I NI TY C O - C U RRI C U L A RS Currently at Blessed Trinity our full gamut of extra curricular sports are in action! We have many fall sports including cross country, football, golf, basketball, tennis and volleyball. JUNIOR & SENIOR FOOTBALL Junior and Senior football kicked off their season in the new NCAA league with a senior game on Thursday, September 22nd against Denis Morris. It was an intense game and our team played hard both defensively and offensively, but the boys were unable to pull out the win losing 15-0. The Junior football team also began their season, but successfully defeated the Junior Reds with an amazing effort. GIRLS JUNIOR & SENIOR BASKETBALL The Blessed Trinity Girls basketball coaches have compiled an amazing Junior and Senior team and are already on the court training hard in preparation for their seasons. Tuesday, September 27th was the Senior team’s opening game. The Junior girls team began their season on Thursday, September 29. “I am very excited for this season. We have a very talented and hard working group of young girls” said coach Mr. Di Pasquale.
CROSS COUNTRY The Cross Country team is already running up a storm here at Blessed Trinity! Coaches Mr. Vrataric, Mr.Gambale and Mrs. Wilson, as well as the 32 cross country runners are working hard training for their upcoming meets. Their first competition was Tuesday, September 27th. “I am very excited for this season. We are training very hard this year and we hope to be very successful” said Ilena Ricker-Singh, a member of the cross country team. VOLLEYBALL The volleyball teams have also been very busy with our Senior Boys entering a tournament at the University of Waterloo and performing very well. This year’s boys volleyball teams plan on being very competitive in the new NCAA league. Also, do not forget about the upcoming winter co-curriculars such as the ski and snowboard club, girls varsity hockey, boys senior hockey and swimming. SECONDARY SCHOOL As semester 1 begins for another year, students are settling into their classes and beginning to work on new credits. We begin another semester of learning that will be enhanced by the myriad of opportunities available to our students inside and outside of the classroom. Fall sports are well underway and we are looking forward to some great competition throughout the season. Seven of our boys make their way to South Lincoln High School to practice and play football each afternoon. The athletes are busy with volleyball, basketball, tennis, golf and rowing, to name a few of the fall sports. Our Grade 9 students and senior student mentors spent three great days at Camp Eagle near Haliburton at the end of September. They experienced a wide variety of activities and got to know each other better. Our Eagles mentorship program will continue throughout the year. Each student in Grade 9 will be part of a group of students who meet regularly with a senior student mentor. This is one of the many ways we assist with making successful transitions from Grade 8 to Grade 9. Students have presented ideas for some new clubs this fall including tabletop gaming, a cheer squad, beginners curling and learning sign language. They have written proposals and found staff advisors for their

School Life groups and then advertised the time and location of their meetings. Many of our groups and intramural sports happen during the lunch hour at a variety of places around the school. Student Council continues to organize activities for the students including Spirit Days that add fun activities to the lunch hour for all students. Their first dance was held at the end of September following Camp Eagle. Great fun was had by all. Our student body also continues to give back to the community in many ways. In October we will have Griffin’s Walk to raise money for the Cancer Centre at Sick Kids Hospital and it won’t be long until we are involved in the Grimsby Benevolent Fund’s Adopt a Family program. Our Guidance Department has arranged to take students to Toronto to participate in the University and College fairs this fall as our Grade 12’s begin finalizing their plans and deciding which school(s) the wish to apply to for next year. Finally, our Drama department will be running auditions for the Improv Team and the SEARS Drama Festival production for this year. At the beginning of November, students and staff from the Drama department will head for New York City to experience life on the Broadway stage. Grimsby Secondary School continues to be a busy, exciting place for students and staff alike and we look forward to another year of learning both inside and outside the classroom.
SOUTH LINCOLN HIGH SCHOOL GO BE A R S G O! Back to school means back to some amazing extra and co-curriculars at South Lincoln! Our full complement of sports, including boys’ football and volleyball, cross country, girls’ basketball and field hockey are all up and running. With over half of the school involved in sport, South is the place to be for athletic action! The chess team also had its first foray this month with great results. Our Grade 9 Day was a fun filled, messy afternoon of exciting team building games lead by our incredible seniors and the JUMP mentors, headed up by a thriving student council. Our Terry Fox Day run is fast approaching with the goal of reaching $3,500 this year. If we reach that goal, South Lincoln will have directly contributed $30,000 to cancer research in our storied history. The College Street Cubs will be joining us as we walk through Smithville, raising awareness about this devastating disease. We are looking forward to the school play starting up in November as well as new initiatives from student council including a Halloween dance on Oct 29!

Our roster of 42 athletes are gelling, working hard, and becoming a team with hopes of a title on November 10th, 2016. Looking forward to seeing everyone as they cheer on the boys!

SOU TH LIN C OLN B EAR S F IELD H OC KEY The South Lincoln Bears Field Hockey team is off to a terrific start! With over 20 girls on the team, everyone is getting the opportunity to play this exciting, fast paced sport! We are currently 1-2 with a win against Laura Secord and two heart breakers (1-0 each) to Simcoe and Eden. Our two tournaments were hugely successful - we went 3-1 in both! The team is comprised of students from grade 9-12 and we are loving our short, intense, two game a week season! Come out and see the Bears on the pitch!
LIB R AR Y N EWS The library at SLHS has been a leader in the DSBN by introducing students to new technologies and changing ideologies. The old stereotype of a library as quiet space is completely shattered. The new learning commons focusses on collaboration, creativity, innovation and opportunity. SLHS library is a hub of activity. Class visits reached over 2,500 students. A new maker space has been developed for students to use. It has a green screen, MAC computers and iPads. Students will be able to develop and shoot their own productions. We held an open makerspace day. Check out our twitter feed to see all the amazing pictures. Students are also engaged in the book love program. The library is supporting this program by purchasing new books based on student’s choices. Each student is encouraged to submit their reading material preferences. This is very successful with students signing out over 900 items in eighteen days.

Over a semester, Co-op students develop their employability and job-specific skills, while gaining workplace experience in a sector of interest to them. Co-op placements also assist our students in earning requirements for the Specialist High Skills Major (SHSM) designation and in making informed decisions for their postsecondary education and career goals.
