HONEY FENNEL and GRAPEFRUIT GLAZED CHICKEN PREP TIME: 1 hour 30 minutes SERVES: 4 to 6
INGREDIENTS
DIRECTIONS
• 2 Florida Grapefruits
• Pre-heat oven to 350°F. Place chicken into a roasting pan and set aside.
• 1 whole fresh Organic Chicken
• Toast fennel seeds and pepper in a small pan over high heat for two to three minutes until fragrant.
• 1 TBSP Fennel Seeds • 1 TSP Black Peppercorns • 1/2 TSP Coarse Salt
• Transfer to a mini food processor. Add salt and garlic powder and pulse until granular.
• 2 TSP Garlic Powder
• In a small mixing bowl, stir together spice mixture, 1/4 cup grapefruit juice and honey. Drizzle chicken with half the glaze, reserving the rest for basting.
• 1/2 CUP Honey
• Slice second grapefruit into thin rounds and place on top and around chicken. • Roast for 1.5 hours until golden brown and internal temperature reaches 165°F. • Re-glaze after 45 minutes. • Serve with pan juices if desired and a side of roasted fennel. THN www.newscanada.com

CHIPOTLE CHICKEN & BLACK BEAN
CHILI
This chili is perfect for a fast weeknight meal. It comes together in under 30 minutes. It’s full of protein and no added fat! For vegetarians you can replace the chicken with a 1-2 lbs of extra firm tofu. If you want to make this a super healthy complete meal, serve it with some quinoa on the side.
CHIPOTLE CHICKEN AND BLACK BEAN
CHILI
Serves: 4-6 Notes: Freezes well. If you want it a little thinner, add a little more water.
INGREDIENTS • 1 1/2 lbs Ground Chicken (or 1-2 lbs of extra firm tofu - for vegetarian version) • 3 cans Black Beans, drained and rinsed • One 14 oz can of Tomatoes, chopped or half 28 oz can • 1-2 small Chipotle Chilies from the can with the adobo sauce • Half Red Onion, finely chopped • 1 1/2 tbsp Chili Powder • 2 tsp Ground Cumin • Kosher Salt G ARN IS H & TO SE RV E

DIRECTIONS STE P 01
In a large heavy bottomed pot, brown chicken, add about ½ tsp salt. Using a wooden spoon, break up the meat as you brown it. Brown until it is no longer pink - about 5 minutes. STE P 02
In the meantime, in a blender or food processor, puree the tomatoes, chipotle chilies and half the black beans. STE P 03
Once the chicken is cooked, remove from the pot to a bowl (leaving the oil behind). STE P 04
Add the red onion to the pot and a little more salt and sauté until soft and translucent. Add the chili powder and cumin, toast for 30 seconds or so. STE P 05
Add the contents of the blender, to the pot. Put 1 cup water in the dirty blender, swish it around and add that water to the pot. Add the remaining black beans (the ones left whole) and the cooked chicken to the pot. STE P 06
Cook for about 10-15 minutes. STE P 07
Serve with a squeeze of lime, minced red onion, avocado, cilantro and tortillas (and shredded cheese if you like).
