5 Garden-to-table erbs are the perfect way to freshen up your garden and dinner plate. A few minutes is all it takes to pick up some herbs at the store and start an edible garden that will add a seasonal kick to your meals.

This herb tends to grow well in containers as well as in the garden. Whether it's Italian or broadleaf parsley, it's best to plant towards the end of May to avoid late-season frost. It pairs well with all red and white meats and tastes especially good with cucumber, avocado or carrots.
Another easy grower, mint is best raised in a planter on your patio or in a submerged pot in the garden since it proliferates easily. Maintain your mint by thinning regularly and nipping buds. Lamb, chicken and salmon are all sensational with it, but pairing with watermelon, asparagus or snow peas will really blow you away. There's also nothing like fresh mint in your mojito on a hot summer day.
chives This easy-to-care for herb grows abundantly without maintenance and the taste is sure to impress the young gardeners in your family, who can snack on it during cool summer evenings. Chives' peppery flavour is the perfect finish for steak, chicken or lamb and they go marvelously well with potatoes, green peas or radishes.
rosemary This is an excellent choice for container gardening since it appreciates its own space. Be sure to avoid overwatering and provide appropriate separation from other plants to keep the leaves free of mildew. Lamb, pork, beef and turkey are great candidates for a few sprigs, as are squashes, leeks and sweet potatoes.
thyme Another low-effort herb to plant, keeping in mind that thyme likes alkaline soil and full sun. Many people will use this plant as a fragrant ground cover. With a little pruning in the spring and summer, yours will turn out great and its nuanced flavour and aroma will pay dividends in the kitchen. aking fish in parchment allows for the flavours to really concentrate. The steam helps to make a perfect sauce and the cleanup is minimal! I often make this when I need an easy dinner for 2 or 4.
Ingredients 3/4 pound of skinless rainbow trout or salmon, one piece 2 zucchinis, spiralized or 2 cups prespiralized zucchini
Directions Step ONE On the work surface, lay the sheet of parchment paper lengthwise. The piece of parchment should be about 4 times the length of the fish. Step TWO Using the lower half of the parchment paper, lay down the spiralized zucchini (this will be the â€œbedâ€? for the fish). Tuck about half the tomatoes slices and half the red chili rounds in the zucchini noodles. Drizzle with 1 tbsp of the oil, about 1 tsp of the balsamic, sprinkle with salt and pepper.
1/2 of a fresh long red chilli, sliced in rounds 6 campari tomatoes, each sliced into 3-4 rounds 1/2 bunch of asparagus, ends removed and stalks cut in half 1 tsp sea salt, divided Freshly ground black pepper to taste 2-3 tbsp extra virgin olive oil 1 tbsp aged balsamic vinegar
Step THREE Lay the fish fillet on top of the spiralized zucchini and tomato bed. Step FOUR Drizzle a small amount of the oil on the fish and season with salt and pepper.
Serving Suggestion: I like to serve this over a bed of brown rice, quinoa, or millet.
Distribute the remainder of tomatoes, red chili rounds and all the asparagus spears on top of the fish. Step SIX Drizzle the contents of the package with the remainder of the oil, balsamic vinegar, salt and pepper. Step SEVEN Fold the upper half of the parchment paper over the vegetable/fish mound (you should leave enough space around the food to allow the air to expand and circulate). Starting from one corner, make a fold in the parchment, staple that fold together. Make very tight, closely overlapping little folds starting from one corner and work your way around, towards the opposite corner. Fold the last fold over itself and staple this fold to itself and then a few of the folds along the parchment paper. Place the package on a cookie sheet and bake for 20-25 minutes. Step EIGHT Cut the package open and either slide the contents onto a plate or serve directly from the open parchment (you can cut away the top flap and staples).

pick the best cuts of meat To prepare the best dishes, you need to start with the right cuts of meat.
Always look for pieces that have some marbling to them. Fat serves two purposes, adding both flavour and moisture to the meat.
As it melts, fat moisturizes the meats. When the drippings hit the hot coals underneath, you add a different level of flavour. brine your meats Dry-brine your steak by sprinkling kosher salt over each side, then put it on a wire rack and let it sit in the fridge for two hours prior to cooking. 1/2 tsp of kosher salt per pound of meat is a good ratio. Pork and chicken can be wet-brined for a couple of hours in a simple brine of 4 liters of cold water, 3/4 cup of kosher salt and 2/3 cup of sugar. To increase flavour, add herbs and spices. >>>

This versatile rub is great on all your classic barbecue meats and is especially good on beef. It's also a great base if you want to develop your own rubs; simply add other ingredients like cumin, sugar, coriander seed, chili powder and ground thyme.
try the reverse sear technique Cook slowly and then finish on a hot grill to ensure you have tender, flavourful and eye-catching meat. Thomson calls this the reverse sear, and it's a technique that is starting to catch on.
