Look for lobster tail skewers that are prepped for you and ready to grill, so you don’t have to worry about the messy business. Whip up the pickled red onion ahead of time to get these tacos in your belly even faster.

LOBSTER TACOS

WITH FENNEL SLAW + CRUSHED POTATO CHIPS

Prep Time: 30 mins | Cook Time: 25 mins

INGREDIENTS

FOR THE PICKLED RED ONION

• 1 small red onion, thinly sliced

• 1/4 cup (60 mL) cider vinegar

• 1 1/2 tsp (7 mL) granulated sugar

• 3/4 tsp (4 mL) each coarse salt, black peppercorns and mustard seeds

FOR THE TACOS

• Half fennel bulb, cored and very thinly sliced

• 3 tbsp (45 mL) mayonnaise

• 1 tsp (5 mL) grated lemon zest

• 1 tbsp (15 mL) fresh lemon juice

• 1/4 tsp (1 mL) granulated sugar

• Pinch (0.5 mL) each salt and black pepper

• 3 tbsp (45 mL) chopped fresh chives, divided

• 1 pkg (200 g) PC lemon and butter grilling lobster tail skewers

• 4 corn tortillas

• 4 to 6 plain thick-cut or kettle-cooked potato chips, lightly crushed

RECIPE TIP

The leftover pickled red onion will keep in your fridge for up to two weeks. Use in salads and sandwiches –you can even use the pickling liquid in salad dressings and savoury cocktails.

DIRECTIONS

STEP ONE

FOR THE PICKLED RED ONION:

Pack red onion snugly into 1-cup (250 mL) canning jar with tight-fitting lid. Bring vinegar, sugar, coarse salt, peppercorns, mustard seeds and 1/2 cup (125 mL) water to a boil in small saucepan. Carefully pour mixture over red onion; cover with lid and screw on band to seal. Let stand at least 20 minutes. You can make this ahead and refrigerate for up to two weeks.

STEP TWO

FOR THE SLAW: Stir together fennel, mayonnaise, lemon zest and juice, sugar, salt and pepper in bowl. Stir in 2 tbsp (30 mL) chives. Set aside.

STEP THREE

Preheat grill to medium. Oil grill. Arrange lobster skewers, shell side down, on grill. Cook, lid down, 22 to 24 minutes, turning once, until opaque throughout. Remove lobster meat from shells and skewers. Cut each tail into four pieces; keep warm.

STEP FOUR

Grill or pan-fry tortillas over mediumhigh heat, turning once, until slightly puffed and lightly toasted; 30 seconds to 1 minute. Transfer to serving plates.

STEP FIVE

FOR THE TACOS: Top tortillas with fennel mixture and lobster, dividing evenly. Top each with 1 tbsp (15 mL) drained pickled red onions. Sprinkle with remaining 1 tbsp (15 mL) chives and the potato chips, dividing evenly. newscanada.com

SAY GOODBYE TO STAINS

GRASS: These stains contain a pigment that sticks to clothing fibres. The secret is to act fast, soaking the stain in cold water as soon as possible. Once the garment is really soaked with water, use a cleaning agent like white vinegar or rubbing alcohol to treat the stain.

RED WINE: With a wine stain, it’s all about the dab - rubbing the stain can set it further. Dabbing complete, apply salt liberally to the stained area, let it dry and then wash with cold water and a mix of detergent and baking soda.

LIPSTICK: Kiss away lipstick stains by pretreating with a solvent-based stain removal product (or a bit of liquid detergent). Allow the stain remover to work for at least 15 minutes and then wash the garment in the hottest water possible for the fabric – be sure to read the care label.

SAUCES: Can’t eat pasta without spilling tomato sauce on your top? Simply apply dish detergent to the stain and rub with an ice cube. Once the

stain has faded, blot it with a clean cloth soaked with vinegar and wash as usual.

OIL AND GREASE: Start by covering the stain in baby powder or cornstarch as quickly as possible – the powder will soak up much of the grease or oil. After about 30 minutes, dust off any excess powder and give the garment a wash on the hottest water-setting possible for the fabric.

THE OFFICIAL ARRIVAL OF SPRING SEEMED LIKE THE PERFECT TIME TO SHOWCASE THIS BRIGHT AND FRESH SPACE WE DESIGNED ON… YOU GUESSED IT – SPRING BOULEVARD!

The waterfront location served as the perfect inspiration for this top-to-bottom renovation, which we lovingly “gutted” and redesigned to suit this blended family who call it “home.” We literally dug into the main floor, which included the living room, dining room, kitchen, pantry, laundry room and the principal bathroom. Our firm designed, furnished and styled the home to make the family – and all the guests they hoped to host in the near future – feel right at home. Here’s how this project came together.

As with all busy families, this one had design priorities, one of them being

entertaining. The hosts-with-the-most needed a home that would welcome residents and guests alike, with a cool, casual aesthetic that has become our design firm’s signature style.

The property already had great bones, which gave this project a solid start. Working alongside our client’s construction team, we were able to pitch the ceilings which gave the main level much needed extra height, light and an overall airy vibe.

The outdoor view was a natural focal point for the main-floor living areas, so we laid out the home with the windows in mind, ensuring to leave sightlines free and clear to enjoy the ever changing seasonal views.

We warmed up the space with wood tones and working with a neutral colour palette. The off-white wall colour was a perfect

Charm is a key characteristic of any modern farmhouse-inspired space. It is also in the eye of the beholder. In this case, we used a combination of Tongue and Groove on the walls and ceilings for texture, and “heritage” and artistic elements that spoke to the homeowners, and made a statement with an exclamation point! Our neutral backdrop served as the perfect blank canvas for personal touches, such as chunky dark-stained wood furniture, a gallery wall of black-andwhite family related historical photos from the area and black-iron light fixtures throughout, which instantly draw the eye and speak to the home’s classic yet contemporary style.

The kitchen is a hub in this home, so this was a focus for the homeowner and design team alike. We prioritized function, with materials and finishes that would stand the test of time, both in terms of aesthetic trends, as well as from a durability standpoint.

With storage space consistently on the must-have list, we knew adding a pantry/bar area would be a great use of space and ultimately, a no-brainer for this family of six. So, we borrowed a little “extra” space from the adjacent tandem garage, to create a convenient and organized walk-in pantry, dubbed “The Speakeasy.”

The homeowners loved the finished spaces, which as a designer, is always my ultimate goal.
