Quick lamb wraps

A tasty lunch treat made with stirfried lamb strips and served in tortillas or flatbreads with a dollop of minty Greek yoghurt.

Serves 4

Preparation time 10 minutes

Cooking time 7 minutes

Ingredients

• 2 tsp sunflower oil

• 2 cloves garlic, peeled and finely chopped

• 375g lean lamb stir-fry strips or lean lamb leg steaks, cut into 5cm strips

• 100g mushrooms, cleaned and finely chopped

• 2 tbsp freshly chopped flat-leaf parsley

• 2 tbsp freshly chopped mint

• 100g cooked rice

• Juice of 1 lemon

• Salt and freshly ground black pepper

• 6 tbsp reduced-fat Greek yoghurt

• 1-2 tbsp prepared mint sauce

• 8 flour tortillas or flatbreads

To serve

• Avocado and rocket salad (optional)

Method

1. Heat the oil in a large wok or pan and cook the garlic and lamb strips in batches for 3-4 minutes until brown.

2. Add the mushrooms and cook for 2-3 minutes. Stir in the herbs, rice, lemon juice and season with salt and freshly ground black pepper. Heat for 1-2 minutes.

3. To assemble the wraps, place the flour tortillas on a clean work surface. Mix together the yoghurt and the mint sauce. Spread a dessert spoon over each tortilla and top with a large spoonful of the filling.

4. Fold up to make a neat roll, secure with a cocktail stick, if required, and serve immediately. Remove the cocktail stick before eating.

5. Serve the wraps with an avocado and rocket salad, if liked, or salad of your choice.

LIVING WITH DEMENTIA

Corstorphine News

In the last edition of the Corstorphine Grapevine I mentioned many things happening in Corstorphine.

Since then, The Corstorphine Fair on 6th June was a great success, welcoming thousands of people to St. Margaret’s Park for an enjoyable family day out. Many local groups and organisations both support the event and raise well needed funds for their work. Hopefully, before the next Fair in two years’ time, the Council will support local Fairs and Gala Days, instead of causing them endless headaches over licensing and other issues.

I also encouraged readers to check out The Corstorphine Trust and Astoria Centre websites, which I did and not only enjoyed a fascinating talk on How to Sleep Better by Richard Wiseman in the Dower House, I joined a group on an interesting Historic Walk in Corstorphine Village. The concert in the Astoria Hall by the Applebeggars sold out and a packed hall enjoyed a great night out.

After 13 years, at last work has started on the site of the old Corstorphine Public Hall which went up in flames in 2013. I took this photo as I watched firefighters try to stop the blaze. Fortunately, no one was hurt or injured. The site has been a local eyesore for over a decade.

I would like to thank everyone who has helped me raise funds for Prostate Scotland and Sunflower Scotland from concerts I have organised and through the purchase of my book The Mayor of Kalymnos. I am pleased to announce a second expanded edition, including a part 2 called Return to Kalymnos, will be published in August and there will be a book launch in Corstorphine. Full details will be on the website. www.themayorofkalymnos.com

The Corstorphine Lit (The Literary and Geographical Society) will start its next session of monthly talks and presentations on Monday 7th September in St. Ninian’s Church Hall at 7.45pm with a talk from well-known Tai Chi instructor Harriet Devlin, about two pioneering women. One who was in the Norwegian resistance opposing the Nazis, before becoming the first western woman Tai Chi instructor. There will then be monthly talks until December. Watch out locally for details on posters. Everyone is welcome, and at the first talk, there is a membership discount, if you would like to join the Lit for a year and be added to their mailing list. WOMEN PIONEERS OF TAI CHI CHU’UAN

The story of 2 contrasting but remarkable women. Both were living in Shanghai in 1949, both were dancers, both had had traumatic times during World War II and both were the first non-Chinese teachers of the Tai Chi Chu’uan - Sophia Delza teaching at the Carnegie Hall in New York and Gerda Geddes at The Place, Centre for Contemporary Dance in London.

The speaker, Harriet Devlin, is the daughter of Gerda Geddes and currently teaches Tai Chi at the Conan Doyle Centre and at Murrayfield Church Hall.

Are you well or just not sick?

Our society has come to a place where people are beginning to comprehend that you can’t get well solely by treating symptoms and sickness. Wellness interventions are aimed at returning the body to a state of health and balance. Illness is seen as a state of adaptation of the body that is caused by stressors. Unfortunately, these stressors are common daily events in our lives such as chemical stressors (the air we breathe, foods and drinks we consume etc), mental/emotional stressors and physical stressors (falls/ bumps, car accidents etc). It is the role of the Chiropractor to help coach their patient to better health habits through educating them to minimise their exposure to these potential stressors in order to attain and maintain balance and health.

Five FActors oF HeAltH

1. Posture It’s pretty simple. When the spine is properly aligned with its natural curvature and the entire body (from the ears to the shoulders to the hips, knees and down to the ankles and feet) is in balance, we maximize spinal health and avoid poor posture-related conditions. Ideal posture creates ideal balance; it also optimises breathing and circulation.

2. NutritioN Balanced eating means taking in the amount of nutrients your body needs for optimal functioning, when your body needs it, and no more. Unbalanced nutrition in either direction causes your body to work harder. The key is to get the right amounts of macronutrients (carbohydrates, proteins and fat) and micronutrients (vitamins and minerals) in the right balance so that your body can function.

3. rest Many people don’t realise what an important part sleep plays in our overall health. A lack of sleep or poor-quality sleep can increase the risk of high blood pressure and heart disease. Studies also have found that the less people sleep, the more likely they are to be overweight, develop diabetes and prefer eating foods high in carbohydrates

and calories. Our body also rejuvenates itself during our deep-sleep cycles. A good night’s sleep helps protect us from getting sick and speeds recovery when we are sick.

4. e xercise Whether you’re in good health, rehabbing a recent injury, or have arthritis, osteoporosis or another chronic condition, there can be benefits of having an appropriate exercise regime. Remember to speak to your health professional first so that you can work together to design an exercise programme that is right for you.

5. HealtHy Nervous system Did you know that your existence depends on the trillions of signals travelling every second between your brain and your body? These signals can be ‘short-circuited’ or interfered with by improper motion or position of the bones of your spine. When these ‘short-circuit’, so do you. This is where Chiropractic comes in. Chiropractic works with your body and its amazing ability to keep you healthy. It’s simple, safe and scientific and many health-conscious people are making Chiropractic part of their lifestyle.

Accessing Defibrillators in an Emergency

In a cardiac emergency, always call 999 immediately. The call handler can direct you to the nearest, specifically, the 24/7 accessible defibrillator and provide the keypad code to unlock the cabinet if necessary.

Using an Automated External Defibrillator (AED) is designed to be simple and safe, even for those with no training, as the device provides step-by-step voice instructions. When you open an AED, it will guide you through the process, which is designed to be used in conjunction with CPR.

4. 3.

Call for Help & Start CPR: If someone is unconscious and not breathing, call 999 (or local emergency number) and begin CPR immediately.

Turn on the Defibrillator: As soon as it arrives, turn it on (or open the lid).

Attach the Pads:

1. Remove all clothing from the patient’s cheast (cut if necessary).

2. Dry the chest if it is wet.

3. Peel the pads and apply them to the bare skin, following the pictures on the pads.

4. Placement: One pad on the upper right side of the chest (below the collarbone), and the other on the lower left side (below the armpit).

Analyze the Rhythm: The device will tell you to stop CPR and not to touch the patient while it checks the heart rhythm.

Deliver a Shock:

1. If a shock is needed, the device will say “shock advised”.

2. Ensure no one is touching the patient and press the orange flash button, if prompted. Some devices are fully automatic and will deliver the shock for you. 1. 2.

Continue CPR: Immediately resume CPR after the shock is delivered (or if no shock is advised). Continue until help arrives or the person shows signs of life.

Citadel Arts Group Comes to Corstorphine

Although based in Leith, Citadel Arts Group delivers heritage and live theatre projects all over Edinburgh. Since returning to Corstorphine where she grew up in the 60s, Citadel Artistic Director Liz Hare has been rediscovering the rich history of the area. She recently compiled ‘Corstorphine and Beyond’, an illustrated book of living memories and some stories of the more ancient history of Corstorphine.

Contributors to the book include older residents who meet in both the Old Parish Church and St Ninian’s, as well as groups from Corstorphine Community Centre on Kirk Loan and the Astoria Centre across the road. They generously shared their stories of the many local shops that used to line St John’s Road, the local market gardeners including Mr Mollison who served in the Home Guard posted in the zoo on Corstorphine Hill. He often spoke of seeing the White Lady under the old sycamore tree. The book briefly tells her tragic story.

The book’s lavish illustrations mainly come from the archives of Corstorphine Trust held in the Dower House. Liz writes, “Moving to Corstorphine in 1954, my parents, Highland and Mary Rigg, were fascinated by the history of this area. They were loyal supporters of the ‘Lit’ – the Corstorphine Literary and Geographical Society. I’m really pleased that some of my father’s photos of Corstorphine feature in the book, ‘Corstorphine and Beyond’.” The book was launched in May in the Community Centre and there are still some copies available priced £7 from lizhare@blueyonder.co.uk.

Entertainment at the launch was a performed reading of Hilary Spiers’ play, ‘The Seed that Never Dies’ about the first Scottish School of Gardening for Women, located on Clermiston Hill.

On July 5th at 2pm in the Dower House in St Margaret’s Park, Citadel Arts Group will present another performed reading of plays, inspired by stories from ‘Corstorphine and Beyond’. Murrayfield man, Richard Peoples has written short plays about the Corstorphine Witch Hunt and Christian Nimmo, the White Lady, and the afternoon will end on a lighter note with Bill Haddow’s play about the amalgamation of Corstorphine into the City of Edinburgh. As with Leith, not everyone welcomed this merger. Tickets for this event cost £5 and can be reserved from lizhare@blueyonder.co.uk.

In short

Classic and contemporary short story collections are perfect for reading while round the pool, on the beach or simply enjoying a summer break.

You Like It Darker by Stephen King

These 12 delightfully dark miniatures from master storyteller Stephen King once more mine his uncanny ability to unnerve, disturb and terrify. “You like it darker? Fine, so do I,” he writes in the afterword to this collection of stories that delve into the darker part of life – both metaphorical and literal.

The Collected Stories of Katherine Mansfield by Katherine Mansfield

From a writer widely regarded as helping to create the modern short story, this edition of The Collected Stories brings together all the tales Katherine Mansfield had written up until her death in 1923. They range from the early, satirical stories set in Bavaria, through the luminous recollections of her childhood in New Zealand.

Stories To Make You Smile edited by Fanny Blake

From a hilarious race against time to a moment of unexpected eavesdropping, from righting wrongs in rural India to finding joy in unlikely places, this collection of feelgood stories, penned by ten bestselling novelists including Jenny Éclair and Richard Madeley, is rich in wit and humour. The writing is guaranteed to lift your spirits and warm your heart.

The Paper Menagerie and Other Stories by Ken Liu

This collection is a stunning mix of sci-fi, fantasy and deeply human storytelling that invoke the magical within the mundane. The title story alone is worth the cover price –tender, magical and quietly devastating. Award-winning Ken Liu is one of the most original and thought-provoking short-story writers of his generation. These 16 stories comprise his first collection of work.

Interpreter of Maladies by Jhumpa Lahiri

Elegant, atmospheric and quietly transporting, these are stories of love, distance and identity that feel like mini holidays in themselves. British-American writer Jhumpa Lahiri’s prize-winning debut collection explores the lives of Indians in exile – of people navigating between the strict traditions they’ve inherited and the baffling new world they must encounter every day.

Star struck

Interest in astronomy is skyrocketing as stargazing becomes easier and more accessible. Many people are fascinated by spectacular events such as the Perseids meteor shower, the Northern Lights and supermoons. Social media has also encouraged this trend, with astronomy-related content attracting millions of followers online. For example, the charity Astronomy UK now has over 26,000 Facebook members, having been founded by a single amateur stargazer ten years ago. Stargazing requires very little equipment or expertise. Anyone can observe the night sky if they find a dark area away from light pollution and clouds. Smartphone apps such as Star Walk, Sky Safari and Stellarium help users identify stars, planets and constellations. Aurorawatch UK also alerts users to Northern Lights displays.

Stargazers are advised to allow their eyes to adjust to the darkness for around thirty minutes and to avoid bright phone screens or torches, although red-light torches are useful. Helpful information is available on websites such as Go Stargazing, UK Astronomy and BBC Sky at Night magazine. Those wishing to explore further can use binoculars, telescopes or join astronomy societies. Many organisations now promote astro-tourism by creating dark-sky sites and organising events. Popular locations include Exmoor – the first International Dark Sky Reserve - and Hadrian’s Wall, while festivals and private stargazing experiences offer memorable opportunities for people to enjoy the wonders of the night sky. You can find the best clear-sky locations at www.darkskydiscovery.org.uk
