Our Autistic daughter Rachel graduated from high school in 2016. At first we didn’t know what was next, but thankfully we learned about One Step Beyond, Inc. here in the Northwest Valley. Now, Rachel goes to her program each weekday. Members at One Step Beyond are able to choose several classes with topics of interest or areas to develop skills. Just a few of the options include culinary, science, band, Special Olympics, trivia, math, and many others that give members fun and educational opportunities, and some even vocational training so they can obtain employment. Several times a month there are after hours events where members can choose to participate in social events such as attend movies or have a bingo night or a themed dance. They also have an annual trip out of town to encourage independence!

The holidays are the most demanding time of the year! Because of those demands, we often are overwhelmed and are short with those we love the most. This season, make it a point to choose your words with care— especially when you’re emotionally and physically exhausted. If we take man as he should be, we make him capable of what he can be.” In her book called Balcony People, Joyce Landorf Heatherley differentiates between two types of people: balcony and basement. Basement people evaluate others. With their critical judgments of people’s words and actions, they tear away at others’
souls. Balcony people, on the other hand, affirm others. They cheer others on and energize them with their affirmations. Here’s a tough question: Are you a balcony or basement person? Never forget, you have the power to encourage someone to achieve greatness. There are people in your life that need you to believe in them—your children, spouse, employees and even your boss. How to stay on track during the holidays
The holiday season can be an indulgent one, full of cookies, candies, heavy meals and eggnog. While no one wants to rein in the fun during the merriest time of year, there are simple ways to keep your health on track this season. A bit of balance may be what works best! Stick to routines To the best of your ability during this hectic time of year, attempt to stick to routines that promote wellness. Set a bedtime and honor it. Hit the gym. Meditate. Do whatever it is that keeps you grounded and feeling your best. Drink up Many people associate dehydration with the warmer months. In winter weather, however, it can be especially easy to forget to stay well-hydrated, especially when you’re indulging in alcoholic beverages at all those holiday parties. Remember,
water doesn’t need to be the only source of hydration you think about this season. Soups and purees made from hearty winter vegetables, as well as citrus fruits do the trick, too, and their nutritional properties can help keep you healthy in winter. Make substitutions Other healthful substitutions you can make this holiday season include topping pies with greek yogurt instead of cream and using apple sauce in place of oil and nut flour instead of white flour in baking. Be mindful The holiday party circuit can be dangerous when it comes to making nutritious choices. When you enter a party with a buffet set-up, it can be tempting to reach for the richest foods first. Before indulging in the canapes and Swedish meatballs, try filling up a plate with crudité first. While you’re doing so, get a good look at all the options available. A joyful holiday season doesn’t mean you must pack on pounds or feel under the weather. By keeping your health on track throughout this indulgent time of year, you can start 2019 with your best food forward.

December 4, 1956 The “Million Dollar Quartet” convenes at Sun Studios in Memphis, Tennessee, in an historic impromptu jam session. December 5, 1945 Five U.S. Navy torpedo-bombers take off from Florida on a routine training mission over the Atlantic Ocean. Forgiveness requires an apology Sure, we’d all like a heartfelt apology from the person who hurt us. Your job is to ask for an apology, if you are comfortable doing so. Just understand that your ability to forgive is not dependent on anyone else’s words or actions. Forgiveness is not a one-time event Particularly for deep-rooted injuries, meaningful forgiveness can take years to achieve. But we can always begin the process of forgiveness and deal with the resurgences of anger as they arise. Forgiveness doesn’t mean you have to like the person Forgiveness demonstrates your character; it is not proof of another person’s. You don’t have to trust the person—or even like them—to forgive them. Forgiveness requires confronting the person Often, it is best to directly address the person who hurt you. This allows you to articulate how the person’s words or actions have affected you, which may provide a psychological release. If you do not feel safe approaching the person, however, do not put yourself in a dangerous situation. Learning to forgive may be the single most important thing you can do to grow in your relationships and while it can be hard, it can also lead to more joy. HANUKKAH TRADITIONS
In another allusion to the Hanukkah miracle, traditional Hanukkah foods are fried in oil. Potato pancakes (latkes) and jam-filled donuts (sufganiyot) are particularly popular in many Jewish households. Other Hanukkah customs include playing with foursided spinning tops called dreidels and exchanging gifts.
A look at Jewish customs
The Hanukkah celebration revolves around the kindling of a nine-branched menorah, known in Hebrew as the hanukiah. On each of the holiday’s eight nights, another candle is added to the menorah after sundown; the ninth candle—the shamash (“helper”)—is used to light the others. Jews typically recite blessings during this ritual and display the menorah prominently in a window as a reminder of the miracle that inspired the holiday.

One of my favorite memories of my childhood was waking up on Christmas morning to the sight of my Lionel train running around the Christmas tree. I immediately thought that it was the best Christmas ever! You see, as a boy it was all I ever wanted. The sight of the smoke bellowing out of the engine and the sound of the whistle accompanied by the chugging of the engine mesmerized me.

The trains are operated by train club members and, as with every railroad, the trains run on regular schedules— check the postings at R.H. Johnson Arts & Craft Center. It was then my passion for trains began. As a child, the sights and sounds were enough to hold my interest, but even now as an adult, I love the history trains represent. Participating in the SCW Model Railroad club in Sun City West is a highlight for me, because I have the opportunity to share my childhood passion with other train enthusiasts. Bake these goodies for a great treat
Santa Trash Cookies • 3/4 c. unsalted butter, at room temp • 1/2 c. sugar • 1/2 c. brown sugar • 1 large egg • 2 tsp. vanilla • 2 1/4 c. all-purpose flour • 1 tsp. baking soda • 1/4 tsp. kosher salt • 1/3 c. crushed potato chips • 1/3 c. crushed pretzels • 1/3 c. semi-sweet choc. chips • 3 tbsp. red/green sprinkles • Flaky sea salt, for garnish Directions Preheat oven to 350º. Line two cookie sheets with parchment. Cream together butter and sugars until light and fluffy, 3-4 minutes. Mix in egg and vanilla. In another large bowl, whisk flour, baking soda and salt. Add dry ingredients to wet and mix until smooth. Dough will be thick. Gently stir in chips, pretzels, chocolate chips and sprinkles. Make tablespoon size balls of dough. Slightly press them down onto the cookie sheet and sprinkle with sea salt. Bake until edges are just starting to get golden, 7-8 minutes. Remove from oven and let cool 2-3 minutes, then transfer to cooling rack to cool completely.

Candy Cane Cookie Sandwiches Ingredients for cookies • 1 c. sugar • 1/2 c. salted butter, softened • 1 large egg, (room temp) • 1/2 c. milk, (room temp) • 11/4 tsp. baking powder • 11/2 c. all-purpose flour • 1/4 c. cocoa Ingredients for frosting • 1 c.unsalted butter • 4 c. powdered sugar • 1/4 tsp. pure vanilla extract • water • 11/4 tsp. peppermint extract • pinch of kosher salt • Red gel icing color • 12 mini candy canes, crushed Directions Preheat oven to 375º. Line a cookie sheet with parchment. Using a hand mixer, beat sugar and butter until smooth. Add egg and milk and mix until well combined. In a separate bowl, whisk together baking powder, flour and cocoa, then add to wet ingredients and mix. Drop level tablespoons of cookie dough onto cooking sheet. Bake until edges are set and centers look mostly done, 6-8 minutes. Let cool. Make frosting: Beat butter until smooth. Add half the powdered sugar and mix until smooth, then add vanilla and peppermint extracts, 2 tbsp. of water and a pinch of salt. Mix until smooth. Add remaining powdered sugar and mix until smooth. Add red gel to color frosting. Spread frosting between cookies to make sandwiches. Place crushed candy canes on a plate and roll so candy canes stick to frosting on edges. WWW.THEGRANDSEASON.COM
