am 18, a high school student, and I read about franchises the way other kids read about sports or entertainers. Not the legacy brands everyone can name, but the new ones that are being built right now, by founders who are still figuring it out in public.

What stands out is not the logos or the pitch decks. It is the nerve.

Starting a franchise brand is a special kind of courage because you are not just opening one location. You are choosing to teach other people how to replicate what you are building, while you are still building it. You are writing the playbook while the game is live. You are promising that your system will work in places you have never been, with owners you have not met yet, serving customers you have not talked to. That is risk, but it is also a vote of confidence in the future.

And that is why the most interesting new franchise brands are not only selling products or services. They are trying to solve real problems that sit in plain sight every day: trash that piles up, homes that get damaged, and a power grid that is shifting under our feet.

Williams’ career path is anything but conventional.

For 15 years, he worked as an independent film producer, managing projects from development through completion in an industry known for its creativity—and its volatility. Before stepping into producing, he honed his visual sensibilities as a set decorator, collaborating on commercials, music videos, events and short films alongside accomplished production designers and directors. Those years on set sharpened his eye for design and taught him how environments influence mood, storytelling, and functionality.

urfs Up has great news in store for 2026! We are rebranding and will launch a new website starting January 1, 2026. We have also built our infrastructure to include a board of directors, a fractional CFO and investment capital.

This article about Eric Roy’s better half ran earlier in 2025: I was raised by my grandmother who was a great cook. I spent countless hours helping her prepare meals for our home churches and a daycare center. Early on in our marriage Eric encouraged

me to go to culinary school because he felt as though l had a niche for cooking.

Eric's job often had him out of town business trips and one notable trip to Florida we were really impressed with their seafood restaurants and got to thinking this is something Chicago is missing.

We started talking of the possibility of opening our own seafood restaurant similar to the ones in Florida. We then begin thinking of items we wanted on the menu. I wanted something unique and decided the star of our show would be fried lobster.

Back in 2012 fried lobster crab legs and grilled seafood wasn't something that was served locally in Chicago. l often say we started a trend when creating our menu. Our fried green tomatoes and fried biscuits have been featured on news outlets and many television shows. We caught the attention of Fox 32 News, Chicago’s Best, Food on the Run and Signature on WGN. As well as bring a chef I'm also a hair stylist, being in the service business I'd say I'm very good a marketing for my two businesses. As a stylist l already have a loyal

clientele which in turn turns into my restaurant customers and some franchise owners.

The very first day Surf's Up opened January 20, 2012, one of the worst blizzards ever but our little restaurant was packed and busy the entire day. It was frightening and exciting all at the same time.

Facebook hadn't been out long but as l look back our post advertising our business must have gone viral because we were swamped the entire weekend despite the weather.

We learned the power of social media marketing back in 2012.

The timing was right, the feeds of our customers must not have been cluttered.

My advice for people thinking of opening a restaurant. Have reserve of funds, anything can happen in this business a few slow weeks can seem like the end.

So, the reserve is needed.

Know your demographic and choose high foot traffic areas.

Never stop advertising and posting. Stay current go to trade shows subscribe to trade magazines. Do everything to stay relevant in the minds of your customers. If possible, seek mentors that you can trust and have restaurant experience. Mentors can be of great help.

Eric and l plan to expand our brand across the country to more arenas (including an additional one inside Soldier Field), all the major airports and hopefully some area deals from Multiple unit owners.

When we got the contract for Soldier Field, we knew our hard work was paying off. The great thing about Soldier Field is our concept and offerings are so unique compared to the average stadium food. Our fried shrimp made with our own proprietary seasonings has garnered us many new Surf's Up customers.

Our hot markets are Nashville, Dallas, Houston, Austin, Atlanta, Charlotte, Orlando, Tampa, Jacksonville, Alabama, Las Vegas, Detroit, Cincinnati, and the state of New Jersey.

Currently, we are working on a prototype stand-alone store with a drive thru. This format will be available in 2025. We also will have our breading’s on grocery store shelves. Yes, soon you'll be able to dive into that Surf's Up flavor right in your own home.
