Rockin’ for The Rosemary Foundation

The roof was raised and staff at The Rosemary Foundation were rocked last month when local group The Zig Zag Band raised more than £5000 at a charity gig at Selborne Village Hall.

The local band, which was also celebrating its tenth birthday, played covers all night on Saturday, 10th November to a packed house. Jeremy Mitchell, general manager of The Rosemary Foundation said: “The Zig Zag band was absolutely fantastic. They raised money for us by asking people to sponsor tunes to perform.”

Bedales School is hosting The Magic of Christmas, a concert by the Emsworth Concert Band, on Saturday, 15th December, raising money for the foundation, among other charities. Tickets are available from One Tree Books in Lavant Street, Petersfield.

The Rosemary Foundation offers a “Hospice at Home” service in Petersfield and surrounding communities, providing nurses for home visits to patients in the latter stage of life-limiting conditions. The service is provided at no cost to patients but the foundation receives no government or NHS funding, relying solely on the generosity and support of local volunteers and fund-raisers.

DONATE YOUR UNUSED FOOD THIS WINTER AND CHANGE LIVES WITH A REVERSE ADVENT CALENDAR… Winter can be a hard season for everyone, but it’s particularly difficult for many local families who struggle to make ends meet and have no idea where their next meal will come from. Here at The Directory Group, we want to help those in need, and we’re hoping you’ll join us in providing local families and food banks with food boxes this year. Last year we collected 150 reverse advent boxes, let’s see if we can top that this year! Just a few jars and tins from your cupboard will make a huge difference in providing a reverse advent calendar.

WHAT IS A REVERSE ADVENT CALENDAR? Unlike the chocolate advent calendar we see at Christmas, reverse advent calendars are designed to give something back to those less fortunate.

Each day, you add a non-perishable food item to the box/basket until you have 24 items ready to donate to those less fortunate.

HOW TO TAKE PART? Taking part is simple. All you need is a sturdy box/basket, and then each day leading up to Christmas you add a new item. The idea is that you add 24 items, just like an advent calendar.

WHAT TO INCLUDE? When planning your box, think of staple foods that will feed a family.

Items such as tinned and jarred food (including meat), pasta, rice, biscuits, UHT milk, baby formula, fruit juice, and anything else that has a long shelf life (no fresh goods please).

Once your box is completed, drop off to our office at 1 Viceroy Court, Bedford Rd, Petersfield GU32 3LJ, or we can arrange to pick it up if you can’t get to us. DONATE YOUR UNUSED FOOD THIS WINTER AND CHANGE LIVES WITH A REVERSE ADVENT CALENDAR… Winter can be a hard season for everyone, but it’s particularly difficult for many local families who struggle to make ends meet and have no idea where their next meal will come from. Here at The Directory Group, we want to help those in need, and we’re hoping you’ll join us in providing local families and food banks with food boxes this year. Last year we collected 150 reverse advent boxes, let’s see if we can top that this year! Just a few jars and tins from your cupboard will make a huge difference in providing a reverse advent calendar.

WHAT IS A REVERSE ADVENT CALENDAR? Unlike the chocolate advent calendar we see at Christmas, reverse advent calendars are designed to give something back to those less fortunate.

Each day, you add a non-perishable food item to the box/basket until you have 24 items ready to donate to those less fortunate.

HOW TO TAKE PART? Taking part is simple. All you need is a sturdy box/basket, and then each day leading up to Christmas you add a new item. The idea is that you add 24 items, just like an advent calendar.

WHAT TO INCLUDE? When planning your box, think of staple foods that will feed a family.

Items such as tinned and jarred food (including meat), pasta, rice, biscuits, UHT milk, baby formula, fruit juice, and anything else that has a long shelf life (no fresh goods please).

Once your box is completed, drop off to our office at 1 Viceroy Court, Bedford Rd, Petersfield GU32 3LJ, or we can arrange to pick it up if you can’t get to us. Turkey, stuffing & mozzarella parcels With so many get-togethers, parties and celebrations throughout December, it’s the perfect time to bring out a signature Christmas canapé that you can whip up quickly and wow your guests with. These turkey, stuffing and mozzarella parcels are the perfect festive finger food and won’t take hours to make, meaning you can get back to the party!

The Method...

Lay the turkey breasts onto a foiled baking tray and season with salt and pepper.

Sprinkle lightly with oil and cook for 30-minutes (or until cooked through).

Once cooked, cut into bite-size squares and set aside.

Make up your stuffing according to the packet details and set aside.

Roll out your pasty into 10 x 10cm squares. You should be able to make 15 squares from your pastry.

Cut & Keep!

Using a pastry brush, lightly spread mustard and cranberry sauce onto each square, and then add the turkey pieces, a slice of mozzarella and stuffing on top.

Fold the four corners the pastry square into the middle to create your parcel, and seal by brushing egg across the top.

Transfer the parcels onto a baking tray and cook for 15-20 minutes at 200 degrees until the pastry is golden and puffed.

7.

If you wish to freeze your parcels, simply put into a freezer bag before cooking, and take out to defrost the night before you wish to cook them.

Ingredients (to make 15 parcels) 6 large turkey breasts (or vegetarian alternative such as Quorn).

200g sage and onion stuffing (or vegetarian alternative such as mushroom stuffing).

250g of mozzarella 500g pre-made puff pastry (or roll your own) 3 tbsp of cranberry sauce 1 tbsp of English mustard 1 egg

The festive fusion of gingerbread combined with a traditional espresso martini The clink of celebratory glasses is one of the greatest sounds there is as you toast the festive season with your loved ones. You can truly wow your guests with this signature cocktail, which combines the sweet taste of gingerbread to complement the flavour of the coffee.

(makes two cocktails)

Cocktail shaker and strainer Ice cubes

50ml vodka (either traditional vodka, or a flavoured vodka such as vanilla or chocolate will give additional flavour)

25ml coffee liqueur 25ml of espresso

10ml of gingerbread syrup For decoration Coffee beans

Ginger biscuits (crumbled)

Begin by making an espresso, either with a coffee machine or by adding 20ml of water to 5ml of instant coffee. Set this aside to cool slightly.

Shake for around 30 seconds, and then strain into a chilled martini glass.

Sprinkle a handful of coffee beans and crushed ginger biscuits onto the drink and serve.

If you’re not a lover of ginger but like the idea of an alternative espresso martini, why not swap the gingerbread syrup for vanilla, peppermint or orange? You’ll still get the lovely kick of coffee, but with a sweetness to suit your own preference!

For the mince mixture, add all the ingredients into a medium pot and bring to the boil and leave to cool at room temperature.

Heat the oven to 180oC. To make the pastry, cream the butter and sugar with the paddle attachment, on high speed.

With the motor running, add the egg yolk and mix until incorporated.

Lower the speed to 1 and add the flour. Mix until dough just starts to clump, but don’t over work it.

Turn the dough out onto a lightly floured board, and gently work to form a ball. Roll the dough out to 5mm thick, and cut into circles 8.5cm in diameter.

Line a muffin tray with the pastry discs and fill with mince mixture. Use a 5cm diameter star cutter to cut out stars of the remaining pastry and place on the mince pies.

Bake for 20 minutes or until lightly golden around the edges. Leave to cool completely and dust with icing sugar to finish.

Keeping employees motivated during the winter

1. Keep your door open

It may sound obvious but having an opendoor policy enables staff to feel more comfortable approaching their manager.

When staff feel they can talk to those in charge about concerns or uncertainty, there is less room for stress to build up, and everyone is on the same page.

2. Praise hard work

Whether it’s bringing in sweet treats or sending an email to the whole company recognising the hard work of employees, acknowledging when somebody is doing a good job is a great way to keep up morale and inspire hard work to continue.

3. Set achieveable goals

Knowing what employees what to get out of a job is very important to help set long-term goals. If an employee expresses a want for more responsibility

Are you hanging up a stocking on your wall?

You will be now with our DIY stocking instructions Nothing quite beats a handmade Christmas decoration, especially when the whole family s gets involved and makes something special. These DIY stockings are easy to make, can be personalised to your individual style, and will look stunning hanging along the fireplace!

Begin by drawing a stocking shape on a piece of cardboard. Depending on how large you want your final stocking to be, we recommend cutting a shape that measures roughly 20x50cm to make a medium-large finished product.

Transfer the shape onto your fabric of choice and cut out twice. Stitch the two shapes together either by hand or using a sewing machine (remember to leave the top of the stocking open so you can put your presents inside).

Once you have stitched the edges, take your faux fur and cut to the same width as your stocking, and either glue or sew to the top of the stocking.

The final step is to personalise your stocking to your own preferences! If you’re a keen embroiderer, you could use embroidery thread to stitch on your own snowflakes, or alternatively you could use other pieces of fabric to create a festive pattern. To hang your stocking, simply attach a piece of twine or ribbon to the top.

WHAT’S NEXT FOR WATERLOOVILLE TOWN CENTRE? Havant Borough Council stated in its Regeneration Strategy for 2018-2036: ‘Waterlooville has redefined its centre by consolidating its retail area into a more sustainable leisure-based offer. ‘Some tired buildings have been redeveloped into prominent residential and commercial buildings.

‘The severance of the road network between the new Major Development Area and the old town has been minimised. ‘Improvements to pedestrian and cycle routes and removal of barriers to movement has made Waterlooville a more walkable place and linked it with nearby residential areas.’

The renovation plan has been split into

three phases, details of which are currently confidential, but it has been confirmed that Waterlooville has been recognised as one of five key areas that needs regenerating.

Cllr Pike, cabinet lead for regeneration on the council, has held public meetings with the Waterlooville Events Team where residents have discussed the area’s future. He said: ‘The team do a great job bringing the community together to benefit businesses and people in the area.

I encourage all businesses to work together to encourage people to visit the town centre.

‘I’ve taken part in two meetings to discuss how Waterlooville needs to adapt to changes in retail shopping habits and how people wish to spend their leisure time.

‘Our new Local Plan is seeking to put in place policies that will encourage this change. ‘Waterlooville town centre is serving a rapidly-growing population as developments to the west of the town are occupied by new residents. I encourage businesses to take advantage of these potential customers and bring them into the town centre. ‘As a council, we are ambitious for our area, and our vision statements are bold and challenging. However, I believe we aresales@thedirectorygroup.co.uk realistic in what can be achieved.’

CO-OP SEVEN-MILE WALK IN AID IF ALZHEIMERS SOCIETY

THE WELLINGTON PUB BECOMES NUMBER 73 BAR AND KITCHEN In October, the scaffolding surrounding the building that was formerly The Wellington Pub in Waterlooville was removed, and it was revealed that the building would be transformed and re-purposed.

The building will be made into flats, and the ground floor of the former public house is now a bar a restaurant called Number 73 Bar!

On Friday 26th October, a memory walk was held alongside Portsmouth seafront to pay tribute to a colleague from Southern Co-op funeral home, who lost his wife to Alzheimers. The seven-mile walk was organised by Southern Co-op’s funeral homes in Waterlooville and the surrounding area.

Colleagues taking part in the walk raised money for Alzheimer’s Society after Funeral Assistant Rob Morey, based at Southern Co-op’s Leigh Park funeral home, lost his wife Gina in February.

Number 73 opened on the 9th November, and serves a wide range of Mediterranean tapas, pizza and cocktails. Number 73 also serve a variety of wines and craft beers, so there’s something for everyone!
