Turkey, stuffing & mozzarella parcels With so many get-togethers, parties and celebrations throughout December, it’s the perfect time to bring out a signature Christmas canapé that you can whip up quickly and wow your guests with. These turkey, stuffing and mozzarella parcels are the perfect festive finger food and won’t take hours to make, meaning you can get back to the party!

The Method...

Lay the turkey breasts onto a foiled baking tray and season with salt and pepper. Sprinkle lightly with oil and cook for 30-minutes (or until cooked through). Once cooked, cut into bite-size squares and set aside. Make up your stuffing according to the packet details and set aside. Roll out your pasty into 10 x 10cm squares. You should be able to make 15 squares from your pastry.

Cut & Keep!

Using a pastry brush, lightly spread mustard and cranberry sauce onto each square, and then add the turkey pieces, a slice of mozzarella and stuffing on top.

Fold the four corners the pastry square into the middle to create your parcel, and seal by brushing egg across the top.

Transfer the parcels onto a baking tray and cook for 15-20 minutes at 200 degrees until the pastry is golden and puffed.

If you wish to freeze your parcels, simply put into a freezer bag before cooking, and take out to defrost the night before you wish to cook them.

Ingredients (to make 15 parcels) 6 large turkey breasts (or vegetarian alternative such as Quorn). 200g sage and onion stuffing (or vegetarian alternative such as mushroom stuffing). 250g of mozzarella 500g pre-made puff pastry (or roll your own) 3 tbsp of cranberry sauce 1 tbsp of English mustard 1 egg

The festive fusion of gingerbread combined with a traditional espresso martini The clink of celebratory glasses is one of the greatest sounds there is as you toast the festive season with your loved ones. You can truly wow your guests with this signature cocktail, which combines the sweet taste of gingerbread to complement the flavour of the coffee.

(makes two cocktails)

Cocktail shaker and strainer Ice cubes

50ml vodka (either traditional vodka, or a flavoured vodka such as vanilla or chocolate will give additional flavour)

25ml coffee liqueur 25ml of espresso

10ml of gingerbread syrup For decoration Coffee beans

Ginger biscuits (crumbled)

Begin by making an espresso, either with a coffee machine or by adding 20ml of water to 5ml of instant coffee. Set this aside to cool slightly.

Shake for around 30 seconds, and then strain into a chilled martini glass. Sprinkle a handful of coffee beans and crushed ginger biscuits onto the drink and serve. If youâ€™re not a lover of ginger but like the idea of an alternative espresso martini, why not swap the gingerbread syrup for vanilla, peppermint or orange? Youâ€™ll still get the lovely kick of coffee, but with a sweetness to suit your own preference!

Rockin’ for The Rosemary Foundation

The roof was raised and staff at The Rosemary Foundation were rocked last month when local group The Zig Zag Band raised more than £5000 at a charity gig at Selborne Village Hall. The local band, which was also celebrating its tenth birthday, played covers all night on Saturday, 10th November to a packed house. Jeremy Mitchell, general manager of The Rosemary Foundation said: “The Zig Zag band was absolutely fantastic. They raised money for us by asking people to sponsor tunes to perform.” Bedales School is hosting The Magic of Christmas, a concert by the Emsworth Concert Band, on Saturday, 15th December, raising money for the foundation, among other charities. Tickets are available from One Tree Books in Lavant Street, Petersfield. The Rosemary Foundation offers a “Hospice at Home” service in Petersfield and surrounding communities, providing nurses for home visits to patients in the latter stage of life-limiting conditions. The service is provided at no cost to patients but the foundation receives no government or NHS funding, relying solely on the generosity and support of local volunteers and fund-raisers.

DONATE YOUR UNUSED FOOD THIS WINTER AND CHANGE LIVES WITH A REVERSE ADVENT CALENDAR… Winter can be a hard season for everyone, but it’s particularly difficult for many local families who struggle to make ends meet and have no idea where their next meal will come from. Here at The Directory Group, we want to help those in need, and we’re hoping you’ll join us in providing local families and food banks with food boxes this year. Last year we collected 150 reverse advent boxes, let’s see if we can top that this year! Just a few jars and tins from your cupboard will make a huge difference in providing a reverse advent calendar.

WHAT IS A REVERSE ADVENT CALENDAR? Unlike the chocolate advent calendar we see at Christmas, reverse advent calendars are designed to give something back to those less fortunate. Each day, you add a non-perishable food item to the box/basket until you have 24 items ready to donate to those less fortunate.

HOW TO TAKE PART? Taking part is simple. All you need is a sturdy box/basket, and then each day leading up to Christmas you add a new item. The idea is that you add 24 items, just like an advent calendar.

WHAT TO INCLUDE? When planning your box, think of staple foods that will feed a family. Items such as tinned and jarred food (including meat), pasta, rice, biscuits, UHT milk, baby formula, fruit juice, and anything else that has a long shelf life (no fresh goods please). Once your box is completed, drop off to our office at 1 Viceroy Court, Bedford Rd, Petersfield GU32 3LJ, or we can arrange to pick it up if you can’t get to us. HOLIDAY INN WINCHESTER LAUNCHES MULTI-MILLION REFURBISHMENT Built just eight years ago along sustainable lines, the four-star Holiday Inn Winchester is planning a complete transformation of its internal public areas, and the creation of a new luxury Spa, with the project costing over £2 million. The refurbishment will begin in January 2019 and will be completed in a number of smaller phases that will enable the hotel to continue to provide its existing facilities of restaurant, bar, reception and lounge areas until the upper ground floor transformation is completed in April 2019. This will be followed by

the creation of a new Spa on the lower ground floor level that will be completed in July 2019. BUSINESS AS USUAL: Marc Solarz, the hotel’s General Manager commented: “It will still be business as usual at the hotel during the refurbishment, as our architects and designers have carefully planned a phased approach to the transformation, so we can still offer hotel guests and visitors the same facilities.” “We are all very excited about this new redevelopment of the hotel,” commented Sarah Waddington, Sales and Marketing Manager for the hotel. “The new look, layout and Spa will help to attract a much broader market to the hotel as there are very few facilities like this in the area.” “We are all loving the proposed interior design for the different areas, which incorporate lots of warm, rich and vibrant colours that reflect the South Downs landscape,” continued Sarah Waddington.

CELEBRATION AT HAMPSHIRE RECORD OFFICE Record Office building, which was opened by Her Majesty the Queen in November 1993. It is also the 30th anniversary of Wessex Film and Sound Archive.

Historic documents spanning 900 years, including one of the early Winchester Pipe Rolls, which are registered with UNESCO, were on display at a special evening celebration on 18 October, hosted by Leader of Hampshire County Council, Councillor Roy Perry, and Executive Member for Recreation and Heritage, Councillor Seán Woodward. Hampshire County Council’s Record Office was formally presented with the award of Archive Service Accreditation, by the Chief Executive and Keeper at The National Archives, Jeff James. Councillor Perry said: “This award comes during the year marking the 25th anniversary of this award-winning
