Dear Readers . . .

That was a very special Christmas in the Valley, for many reasons.

Once again, the people in the village never cease to impress us with their dedication, and enthusiasm, even in the face of a pandemic. Many, many individuals, businesses and volunteer organizations came together to pull off a wonderfully successful modified tree lighting event on Dec. 4 and a stationary parade on Dec. 5, complete with a visit from Santa Claus at the Creemore Log Cabin. There is an astounding amount of behind the scenes collaboration that goes into putting these events together, even more so this year – as well as a little bit of blind faith, and the pay off is the smiles on children’s faces and community members waving to one another as they meet neighbours they haven’t seen enough of this year. We have shown that we can adapt and still come out as a strong community. All of the events were extremely well organized and felt very safe.

Thank you to all of the advertisers who have continued to use The Echo to reach the community and spread a little holiday cheer.

Thank you to all of our contributors who sent us a recipe for this Christmas Greetings edition and to Paul Vorstermans who shared a few photos.

Although we may not be able to travel near and far to see family this Christmas we can take comfort that we have a loving community that is, in many ways, a big family of its own. We wish you all a relaxing and safe holiday, in the company of close family.

Lingonberry Spice Cake

by Cat Flack I’m not much of a baker. I have my stand-by tested and true recipes that I go to time and time again.

The Swedes love their cardamom; this delectable flavor shows up in so many recipes. I was thrilled to receive some in my latest installment of spices from the Gorgeous Spice Company, so I went straight to my Swedish baking book and found this great recipe that my grandmother used to make. I hope that you will enjoy it as much as I do. If you are fresh out of lingonberries you can use any other favorite jam, I like the tartness of lingonberries, cranberries or even gooseberries.

Preheat oven to 350°F 7 tablespoons of butter 2 eggs 11/4 cups of dark brown sugar 2 teaspoons of cinnamon 1.5 teaspoons of cardamom 1 teaspoon of ginger 1.5 cups of flour 1 teaspoon of baking soda ½ cup of buttermilk ½ cup of lingonberry preserves.

Grease and flour a 1.5 liter (6-cup) loaf pan. Melt the butter and let it cool. Beat the eggs and sugar until light yellow and very thick. Combine the dry ingredients and add alternately with the buttermilk, butter and preserves. Pour into the prepared pan.

Bake on a low oven rack for about one hour. Enjoy with a nice strong cup of coffee.

2/3 cup chopped nuts (walnuts, almonds, cashews, or pecans) 2 tbsp butter 1 cup corn syrup 1/2 cup brown sugar 1 tsp vanilla 2 eggs Mix together and spoon into pastry shells. Bake at 425°F for 15-20 minutes or until nut mixture is puffy and pastry is golden.

Tomato Soup Spice Bread

by Herald the Library Dragon Preheat oven to 350°F Grease loaf pans or casserole dish.

1 can tomato soup 2 tbsp of vegetable oil 2 tbsp of milk Combine soup mixture and set aside.

1 1/3 cup of flour 1 tsp of baking soda Pinch of salt 1 ½ tsp of baking powder Sift ingredients together. Then add: ¾ cup of brown sugar 1 ½ tsp each of cinnamon and nutmeg 1 cup of raisins ½ cup of walnuts Add sugar and then stir in the remaining ingredients.

Add soup mixture.

Pour into greased leaf pans.

Bake for 55 minutes.

Eat cake warm with a nice big glass of cold milk.

(Good anytime of the year - not only during the holiday season).

Sinfully Good Egg Nog

6 egg yolks 1 (5oz) can sweetened condensed milk ¼ cup white sugar 1tsp vanilla extract 1 quart milk 6 egg whites ¼ tsp nutmeg Rum to taste In large bowl beat egg yolks until they are thick and light. Gradually stir in condensed milk , sugar, vanilla and milk.

Beat egg whites until stiff then fold into milk mixture.

Add rum to taste, garnish with nutmeg.

Warm Red Cabbage Salad

by John Smart This is a very simple recipe that anyone can prepare in your favourite Crock-Pot or a large saucepan.

Several years ago, Jean was going to make her lovely cabbage rolls and I was asked to go to Creemore Foodland and purchase a head of cabbage. A couple of weeks went by before she could find the time to actually prepare the cabbage rolls and discovered that I had mistakenly bought a red cabbage instead of green one.

As a result of my error, this tasty red cabbage salad was born.

1) Start with equal parts of red cabbage, onions, and apples. Normally I use half of a medium or small red cabbage, 3 medium white onions, and 3 medium (I prefer Royal Gala) apples.

2) Chop each of ingredients into small or medium bite size pieces.

3) Add all the ingredients into a Crock-Pot or large saucepan/pot containing a small amount of extra virgin olive oil or avocado oil.

4) On medium low heat, slowly cook the ingredients until they are soft. Occasionally mix the contents with a large spoon so that all the ingredients blend together.

5) I always serve this salad warm as a tasty side dish with turkey, beef or chicken.

Hope you find this warm red cabbage salad enjoyable. Serve with sour cream.

Hermit Cookies

by The Old Lady Who Lived in a School

(Perfect for sheltering in place during a pandemic) 1 cup shortening 2 cups brown sugar 2 eggs 3 ½ cups flour 1 tsp baking powder 1 tsp baking soda ½ tsp salt 2 tsp cinnamon 1 tsp nutmeg ½ cup sour milk 1 cup walnut pieces 2 cups raisins 1 cup chopped dates Thoroughly cream shortening and sugar. Add eggs and beat well. Sift dry ingredients. Add to creamed mixture alternately with sour milk. Add nuts and fruit. Drop by heaping teaspoons onto greased cookie sheet. Bake at 375°F for about 1012 minutes. Makes about six dozen.

Nuts & Bolts

by Avening Bill Here’s a savoury holiday favourite.

It makes a lot but, it doesn’t last long!

4 cups pretzel sticks 2 cups Cheerio cereal 2 cups Shreddies cereal 2 cups Rice Chex cereal 2 cups Crispix cereal 4 cups salted peanuts Sauce: 2 cups melted butter 3 cloves minced garlic 3 tbsp Worcestershire sauce 1 ½ tbsp celery salt 1 tsp onion powder 1 tsp parsley 1 tsp paprika ½ tsp cayenne powder Preheat oven to 250°F. Combine pretzels, cereal and peanuts in large roasting pan. Combine sauce ingredients in a 4-cup glass measuring cup and mix well. Pour the topping mixture over the nuts and bolts and stir very well with a large wooden spoon Place in oven and bake for 1 ½ hours, stirring every 30 minutes. Store in an airtight container and race your family to the bottom of the container.

What I’ve learnt since the first time I baked these

by Auntie Willetta 1 cup salted butter, softened ¾ cup brown sugar 1 teaspoon vanilla 1/8 teaspoon salt 2 ½ cups all purpose flour ½ cup each red and green whole candied cherries 1 cup slivered almonds Cream butter and sugar together until well blended.

Add vanilla and stir in. Add flour and salt and mix until well blended. Finally, add the candied fruit and nuts and fold them into cookie dough. Form dough into rolls as large or as small as you like.

Wrap tightly in food wrap, and refrigerate overnight.

Preheat oven to 375°F. Using a sharp knife, slice the rolls into individual cookies – try to aim on the thin side. Place on a greased or parchment covered cookie sheet for 10 minutes. Remove from oven and let cool for 10 minutes on the sheet, then place cookies on a cooling rack.

Shortbread Cookies

½ cup cornstarch ½ cup icing sugar 1 cup sifted all purpose flour 1 cup butter at room temperature.

Whip butter with an electric mixer.

Sift flour, icing sugar and cornstarch together.

Mix ingredients until soft dough is formed.

If dough is very soft chill in the refrigerator for 30 minutes. Make dough into small balls about one inch in diameter. Place on an ungreased cookie sheet.

Flatten each cookie with a fork dipped in flour.

Bake in a 300°F oven for 20 to 25 minutes.

1 cup melted margarine 1 ¼ cup brown sugar 1 egg 1 1/3 cup flour ½ tsp cream of tartar ½ tsp baking soda 1 tsp vanilla ½ cup chopped maraschino cherries ½ cup chopped walnuts Combine brown sugar and margarine, add egg and beat well. Add cherries and nuts. Add sifted dry ingredients and vanilla. Chill. Heat oven to 450°F, reduce to 300°F. Drop in small spoonfuls on ungreased pan. Frankie’s Shortbread from Bonnie MacPherson As the Scots say, “All ye need is cold butter and strong hands!”

2 cups flour ½ cup cornstarch ¾ cup icing sugar ½ pound salted butter Mix dry ingredients. Cube butter, and cut it into dry mixture until everything is the consistency of rough oatmeal (pea-sized clumps). Don’t over process. Mixture should be powdery, but clump when pressed together. Pack fairly firmly into an oblong pan about an inch thick. Refrigerate for about 10 minutes then prick all over the top with a fork.

Bake at 325°F for about 45-55 minutes. Cut while hot, and sprinkle with a shocking amount of sugar. Most falls off. The baker gets to try one piece when it’s still warm, and can gift some to their significant other.

A favourite of Sara Hershoff 1 1/2 ounces reposado tequila 1/2 ounce​creme de cassis 1/2 ounce​lime juice 6​ounces ginger beer Pour the tequila, cassis, and lime juice into a cocktail shaker filled with ice. Shake well. Strain into a collins glass filled with fresh ice. Top with ginger beer.

Cranberry Martini

A favourite of Natalie de Ruiter 1.5 fluid ounce of vodka ½ fluid ounce orange liqueur ½ fluid ounce dry vermouth 3 fluid ounces cranberry juice 1 cup ice cranberries Combine vodka, orange liqueur, vermouth, cranberry juice, and ice in a cocktail shaker. Shake vigorously to chill. Pour into martini glasses, and serve. Garnish with cranberries.

2 oz vodka 1 oz dill pickle brine 1/4 oz hot pepper sauce 1/3 oz fresh lemon juice 3 dashes of Worcestershire sauce 3-5 oz Clamato juice Sea salt Lemon pepper Celery salt Celery flakes Dill weed Dip rim of the glass upside down in sea salt, lemon pepper, celery salt, celery flakes and dill weed. Fill the glass halfway with ice. Add vodka, pickle brine, Sriracha sauce, fresh lemon juice, Worcestershire sauce and Clamato. Stir and garnish with dill pickle spear or dilly bean.
