Restaurant serves up signature dishes

Waste management facility public meeting dates set

by Trina Berlo The County of Simcoe has announced dates for public engagement sessions relating to its proposed solid waste management facilities.

County council approved a recommendation to move forward with the siting process for both the organics processing facility (OPF) and materials management f acility (MMF) at its August 25 meeting. Additional consideration is being given to locating both facilities on one site.

Clearview Township is being considered as a site for the organics plant only so if both facilities are to be located at one site, it would be out of the running.

A county-owned property at 1637 Fairgrounds Road North (landfill site 42) is one of seven sites identified by the county as a possible locations for facilities that will process compost, waste and recyclables in the county, rather than sending it out of the area.

Five of the shortlisted sites, located in Springwater Township and OroMedonte, would accommodate both facilities.

A meeting will take place at the Stayner Arena on Tuesday, Oct. 20.

There will be two sessions; from 2 p.m. to 4 p.m. and 6 p.m. to 8 p.m.

The format will include a formal presentation taking place at 2:30 p.m. and 6:30 p.m. followed by a Q-and-A. “Input from our residents, especially those from within the municipalities where these facilities may reside, is extremely important,” said Warden Gerry Marshall. “We look forward to receiving everyone’s feedback and are excited to collectively work with one and all towards a greener future with the very best services possible.”

Meetings are also scheduled next month in Springwater and OroMedonte.

GNE looking for representatives The Great Northern Exhibition is looking for representatives for its annual ambassador competition at this year's fall fair on Friday, Sept. 25.

The ambassadors represent the Great Northern Exhibition at many different conferences, parades, meetings, and other community events. They will have a number of opportunities to enhance their agricultural knowledge, meet new people, and further their public speaking skills.

The senior ambassador division is open to those between the ages of 18-23

by August 2016. The junior ambassador division is open to everyone in Grades 6-8 during this coming school year.

Males and females are welcome in both divisions.

The junior ice dance team started skating in Stayner and Creemore and now represent Canada on the International Circuit.

Whitley and Graham, who train at the Mariposa School in Barrie, have just returned home from competing in Latvia where they placed seventh. They are realizing their dreams but they need the support of their fans.

Doors open at 9:30 a.m. and the party is from 10 a.m. to 11:30 a.m. There will be raffle prizes and a 50/50 draw. Dress comfortably and bring a water bottle.

Doors re-open at landmark dining establishment

by Trina Berlo The Sovereign is back in business.

The new owner, Cyndie Gordon, in partnership with chefs Chris Wegener and Shaun Elliot, is keeping with the popular Creemore restaurant’s roots.

Gordon, also the owner of Victorian Values, said she was the first waitress hired at the restaurant when it was opened by Asta and Geza Csanyi in 1979.

“It has been a place where our family has eaten for 35 years,” she said. “I didn’t want to see the restaurant fade into the sunset.”

The Gordons were among Creemore’s earliest settlers and once owned the feed mill.

The Sovereign, said Gordon, is an original landmark fine dining establishment on Creemore’s main street and its closing earlier this year offered not only a business opportunity, but also a chance to resurrect the restaurant to which she has an emotional attachment.

Gordon said people will recognize the traditional European fare such as Wiener Schnitzel, cabbage rolls, Hungarian goulash and chicken paprikash made using the recipes developed by the Csanyis.

New menu items are being added each week. The restaurant, with the new name of Sovereign Bistro and Grill, is currently open for dinner

but there are plans to add lunch and brunch on the weekends.

The Sovereign Bistro and Grill is located at 157 Mill Street.

Seniors' housing project still needs funding The team behind the Creemore seniors housing initiative would like to thank its generous and enthusiastic supporters as it provides an update on the project’s recent developments.

Every aspect of this important project must be carefully considered, and the focus must be on long-term success.

The dog days of summer have come and gone and we only have one more kick at the can this weekend before it really starts to feel like fall.

With September comes back-to-school, backto-work and back-to-routine which comes with its ups and downs.

For people with school-age children comes the dreaded return of the packed lunch, a stressinducing task for most parents. But a little routine is probably good for everyone with its regular bedtimes and return to extra curricular activities for both children and adults.

Although we live in a summer paradise, surrounded by hills and the lake nearby, there is much to look forward to as the season changes.

Fall promises a full lineup of events and activities against a beautiful backdrop.

With September comes the launch of The Village and I, a book of portraits and stories about 11 local people. The book, coordinated by Sara Sniderhan and Rina Barone, will be unveiled at an event at Avening Hall on Sunday, Sept. 19. The next weekend is the fall fair at the Great Northern Exhibition. Sept. 25-27 marks the 160th annual fall fair, which is not to be missed. There are many ways to take part in the fair; Enjoy a thrill ride at the midway, take in a tractor pull, visit the animals or compete in one of the many categories that celebrate rural life. There are dozens of competition categories, from quilting to preserves.

The Small Halls Festival will be from Oct. 1-4, when every community hall in Clearview Township will offer a weekend of entertainment. It will be hard to choose between comedy (including Ron James), live music, animals doing a number of whacky things, lots of good food and just a bunch of fun for all ages. But that’s not all.

On Saturday, Oct. 10, which is Thanksgiving weekend, The Horse, Hound and Harvest Parade will take place in Creemore. This year’s event will be a new twist on a local attraction and a very old tradition. For many years people have lined the streets to see members of the Toronto and North York Hunt as it rides to hounds. The parade has always been a low-key pass through town as a thank you for community support from the hunt to those people who enjoy seeing the hounds, horses and riders in their full regalia. Proceeds from the event are going towards the development of the Stayner Eco-park, which is located beside the sewage treatment plant, near Stayner Collegiate Institute. The area, which is currently under development, is known as a birding hotspot, with over 200 species of birds documented to date.

Penne with Grape Tomatoes and Garlic 1 pint grape tomatoes 2 - 3 large garlic cloves 1/4 cup extra virgin olive oil (EVOO) Sea salt 1/4 teaspoon fresh ground black pepper 1 cup finely chopped Vidalia onion 1/4 cup white wine 1 lb. dry penne pasta 1/4 cup grated parmesan cheese Chopped chives or green onions for garnish Slice garlic into very fine matchsticks. Add sliced garlic to EVOO and let sit for 10 minutes.

Cut grape tomatoes in half. Sprinkle cut sides with sea salt and set aside for 5 minutes. Tomatoes should start to “juice up” as the salt draws the moisture out. Pour half of the garlic infused oil into a small fry pan and heat to medium low. Once oil heats up, add tomatoes and black pepper, and slowly simmer them for about 10 minutes. Don’t move them around too much or they will turn mushy. Set

eating them raw. While this recipe is not your typical spaghetti Bolognese with its heavier sauce, it seems a perfect way to celebrate the season’s bounty in a lighter but flavourful way. I hope

In the meantime, bring pasta water to a boil and add 1 teaspoon salt.

Add penne and cook to al dente, usually about 12 minutes, stirring occasionally. While pasta is cooking, place the other half of garlic infused oil in a large fry pan. Over medium heat, add Vidalia onion and a pinch of salt; lightly sauté until soft but not brown. Add white wine to deglaze pan, and let the mixture burble away.

It should start to thicken and become almost syrupy by the time the pasta is cooked.

When pasta is done, carefully draw out 1 cup of pasta water. Drain pasta and add it to the onion mixture in large fry pan. Stir to incorporate, adding some of the pasta water only if necessary to help coat the penne. Add in tomato mixture and very gently toss to incorporate. Pour into a large pasta bowl and top with grated parmesan cheese and chopped chives. Serve immediately.

Serves 4 as side dish or 2 as a main.

Photographer publishes calendar

by Trina Berlo Creemore photographer Bryan Davies has released a 2016 calendar full of images of local landmarks, events and faces.

Davies produces a calendar most years but it has been a decade since he published one featuring scenes from Creemore, including Creemore Springs Brewery, the Creemore Log Cabin, the Toronto and North York Hunt’s Ride to Hounds and the Collingwood Street Bridge before it was disassembled last week.

Davies has been photographing Creemore since setting up shop in the village 12 years ago, under the moniker of Bryan Davies Photography.

He has worked in media for more than 50 years, having worked for Kortright Centre for Conservation as the resident nature photographer and multi media specialist.

He said photography has always been his first love, fanned by his grandmother, who bought him a Brownie Hawkeye camera when he was 12 years old.

For the last 14 years he has worked independently doing portraits and taking commercial and editorial assignments for area publications.

“I started out as a nature photographer but I love photographing people,” said Davies.

He is currently working on a book, a collection of 40 images called

Drivers beware

Police will be out on the roads this weekend, looking for distracted drivers. So far this year, 41 deaths have been attributed to distracted driving on OPP-patrolled roads and the number of collisions caused by distracted drivers is up 20 per cent compared to this time last year.

As of Sept. 1, the new set fine for distracted driving is $490 and three demerit points. If contested, drivers can be fined up to $1,000 upon conviction for inattentive driving. Police are serious about this deadly driving practise, and the OPP is hopeful that higher fines will help reduce the number of distracted driving-related deaths and collisions on Ontario roads.

Four ONroute Highway Service Centres now offer designated “Text Stops” where travellers are encouraged to stop and text in an effort to keep motorists from reaching for a cell phone while the vehicle is in motion.

Stayner Siskins have a new coach

by Alex Hargrave Stayner Siskins Junior C hockey club has a new coach after Clearview Township’s best homegrown hockey talent, Steve Walker, signed a oneyear contract with Adler Mannheim in the German Elite Hockey League.

The club plays out of Munich in Southern Germany.

Walker coached the Siskins for the past three seasons accumulating an impressive 80-27-6-7 win-lossovertime loss-shootout loss record.

Walker vacating the club’s coaching position is significant although he will remain as an adviser.

Through the use of the internet he has been helping the club and will continue to do so from overseas.

Filling his duties will be assistant coach Dave Rainford who spent two seasons on the bench with Walker.

Earlier in his hockey career, he won two OMHA championships with Collingwood.

Siskins general manager Richard Gauthier said, “Losing Walker will be a huge loss. It’s hard to replace a professional like that on and off the ice. Dave is going to do well. He’s got a good hockey mind and strong supporting staff.”

The 42-year-old professional is considered to be an icon in Berlin.

His number 27 was retired on

Boxing Day 2014 and hangs proudly at the Berlin Arena where he played 11 seasons, nine as captain for the Berlin Polar Bears.

In the German League, he scored 213 goals and added 379 assists, one point short of the 593 games played.

Walker’s signing made headlines in Germany especially in Berlin as he is heading to the Polar Bears archnemesis, Adler Mannheim.

Unfortunately, the Polar Bears didn’t have a coaching position available for him but would have liked to have had him. That doesn’t quite cut it though.

Walker is no longer a star player but a young coach trying to make a name for himself.

Mannheim signed former Owen Sound Attack coach Greg Ireland to be their head coach.

Walker’s knowledge of the German League and the sports relationship he had with Ireland made him an obvious choice to be named an assistant coach.

Mannheim made the announcement Aug. 5.

Greg Woodcroft, who played a number of years in Germany and was a seventh round pick by Chicago Black Hawks, is a returning assistant coach.

Walker spent 18 years playing as a professional hockey player.

Other notable accomplishments

include winning five German championships, one IHL title, represented Canada five times, scored on Maple Leafs goaltender Felix Potvin in one of the four exhibition games he played with the NHL’s Tampa Bay Lightning, and was Gordie Howe’s line-mate in Howe’s last professional game with the Vipers.

Not too bad for a kid who grew up wearing the Creemore Minor Hockey and Stayner Siskins colours.

The Siskins, by the way, are hosting a golf tournament Sept. 19 at Marlwood Golf and County Club, Wasaga Beach. $120 cost for 18 holes, cart, lunch, dinner and prizes.

The North Dufferin Baseball League final between the Ivy Leafs and New Lowell Knights is tied at 1-1 after each team won on the opposition’s field on the weekend.

Leafs’ Brad Grieveson threw for the 3-2 win Saturday in New Lowell and the next day his cousin Todd Gowan earned the 7-2 pitching victory at the short confines of the Ivy Park.

The playoffs resume in two weeks as teams are vying for a provincial championships across the province this weekend.

New faces at the library this fall

by Michele McKenzie As the summer season winds down and we here at The Clearview Public Library gear up for our fall/winter 2016 programming schedule, I would like to introduce you to some new faces that will be greeting you at our three branches in Creemore, Stayner and New Lowell.

Taylor Shewell is one of our extraordinary student volunteers who will be helping out throughout the upcoming school year. Emma Allen is remaining with us after her stint as our TD Summer Reading Programmer as casual holiday help. We hope to see Shannnon Lougheed again in the near future too. These three have been an invaluable addition to the library team over the summer vacation season.

We wish to welcome Helena Hayward, Beth Crawley and Maddie Donnelly who will be gracing the circulation desks on a regular basis starting in September. They will be joining the rest of the library ladies (Rita, Glenda, Janice, Mary Anne, Elizabeth, Elaine and myself) in

Speaking of programs, we will be making an appearance at the Great Northern Exhibition on Saturday, Sept.

26. In partnership with Curiosity House Books, we are presenting a book talk about The Temporary Bride: A Memoir of Love and Food In Iran by Jennifer Klinec at the Creemore Farmers’ Market as well on Saturday, Sept. 26.

Dan Freethy, a long-time employee at the Glen, arrived at work around 6 a.m. this past Thursday to find the building filled with smoke from a faulty compressor. After calling 911, Deputy Chief Roree Payment and his fire crew quickly arrived on the scene and extinguished the fire before any real damage occurred. We owe a huge debt of gratitude to Dan Freethy and the Clearview Emergency Response teams for preventing what could have been a major disaster for the village of Glen Huron.

Winchester, Jeffrey passed away suddenly at home on Monday, August 31, 2015 in his 51st year. Son of Frank and the late Gwen Winchester. Jeff will be forever remembered by his sisters Nancy Winchester and Jenni (Dave) Demanuele and his niece Emily. He will be sadly missed by aunts, uncles, cousins and friends. Memorial visitation will take place on Saturday,September 19, 2015 from 2 to 4 p.m. at Fawcett Funeral Home – Creemore Chapel.
