Burning Bridges - Removal of the Collingwood Street Bridge began on Tuesday. Some of the 100-year-old metal will be rehabilitated and incorporated into the new concrete, two-lane bridge. Substantial completion is expected by the end of the 2015 construction season.

Belly Ice Cream Company relies on Miller’s Dairy cream

By Kara Macintosh Shelley Westgarth of Belly Ice Cream Company came up with the idea for her new business in the middle of a sleepless night. She was a chef at Huntsville’s Deerhurst Inn, expecting twins, and needed to tweak her career path. Within a few weeks, she had rented kitchen space and was selling her handcrafted ice cream at farmers’ markets in the Muskoka area.

About the same time as she was getting going with Belly, John Miller was also gearing up at Miller’s Dairy.

After seeing his glass bottled milk in a store and then drinking it, Westgarth knew she wanted to be able to use Miller’s dairy in her ice cream. It took a couple of years before the partnership came together, but as of this season, Miller’s is the exclusive dairy supplier to the Belly Ice Cream Company.

“There are a million reasons why we only use Miller’s Diary, but most importantly it feels right and good to support this family farm that produces the best quality dairy around. Miller’s grows their own feed, I know the farm is spotless and they treat their cows well.” said Westgarth.

For Belly Ice Cream, the relationship with Miller’s started as a supplier based one, but over time it has developed into more of a joint venture.

About once a week, the cows are

milked at Miller’s in the morning, the dairy blends Belly’s custom 14 per cent ice cream base, pasteurizes it and sends it up to Huntsville in the afternoon.

In a busy week, Belly uses up to 500 litres of Miller’s base cream in their ice cream production.

According to John Miller of Miller’s Dairy, “The partnership with Belly gives us a steady market for our high quality cream which we otherwise have a surplus of. Because our cream is the

base ingredient in Belly Ice Cream, it has broadened our ability to bring Miller’s cream to the consumer market.

It’s a great joint venture for both of us. “ The ice cream is handmade in a 3000 square foot production facility in Huntsville and uses a base recipe of Miller’s fresh 14 per cent cream base and vanilla. From there, Belly adds mostly locally-sourced, highquality ingredients to come up with flavours such as Apple Crumble, Basil

Gelato, Chocolate with Garden Mint and Muskoka S’mores. There are 16 flavours available at retail stores across Ontario, but at their own Huntsville “Scoop Shop” they do informal market research by testing out new flavours on the Muskoka tourists. The most popular one or two might get turned into a staple flavour for the following season.

Westgarth has recently hired a sales broker to help with plans for national distribution and Miller is working on approval by the Canadian Food Inspection Agency for his Creemore plant. “We’re moving in a national direction together” said Miller.

This will be a big jump in Belly’s business, “the quality of the ingredients will remain the same and the ice cream will continue to be made with Miller’s dairy and by us here in Huntsville, but we will have to make the production process more streamlined and efficient in order to handle a larger distribution network. It’s very exciting” said Westgarth.

Belly Ice Cream is available in Creemore at the 100 Mile Store and Foodland. John Miller recommends the Wildberry Cheesecake or the Chocolate Dipped Strawberry adding that “we’ve always known that jersey milk and cream have an outstanding flavour, but mixed with real, quality ingredients such as berries or chocolate, this ice cream is really outstanding.”

An open letter to Jim Wilson, MPP

Please communicate Mulmur Howdy Folks: I hate to sound like a broken record but when will the Mulmur Council learn that the internet service in Mulmur is terrible? Please communicate by other means for local folks, like through the local community boards?

On the website only, Mulmur Township Council is asking for input from the residents regarding the Dufferin County taking over the 10th Side Road from Mansfield to Prince of Wales Rd. and transferring back to the municipality the Prince of Wales Rd. from Primrose to the 10th Side Road.

While I appreciate the opportunity to comment I think it would be prudent if the Council would tell folks how they might be impacted by the change so we could make informed comments.

My first question of concern is will the takeover then permit truck traffic on the 10th Side Road other than the current local truck traffic only? Does

the county plan on fixing the corners and shoulders of the road that are too soft and regularly wash out and cannot withstand heavy truck traffic? How will the county support and maintain safe operation of agricultural implements and other farm equipment on the winding and dangerously hilly road?

The 10th Side Road is the most direct route through Mulmur to Hwy 89, Hwy 24 and Hwy 10, and to the Base Borden Road, there will be a great deal of increased traffic.

Mulmur Township must have an agreement with the county that protects the Mulmur residents from this huge increase in traffic. The 10th Side Road was never designed for this type of traffic and perhaps Mulmur should go back to the reports when the county downloaded it in the first place?

Dear Jim: I first came to know you when I was starting a brewery and you were vying for MPP. You’ve come a long way since.

I congratulate you for your achievements.

It’s my opinion, that in the last two provincial elections, your party has been amateurish in the extreme. Each time your would-be premiers have shot themselves in the foot – first time with an inciting Catholic School Issue, the second by promising to eliminate 100,000 jobs. If you’re going to have to do that sort of thing, you do it after you’re elected. Not before.

This time around please consider positions that have ground swell appeal and meaning. I suggest: 1. Legislation that would reduce hand gun possession significantly.

Residents of Ontario, in general, are aghast at the random killings plaguing our streets. Hand guns have claimed 146 victims this year to date! I suggest legislating that possession or owning a hand gun has an automatic penalty of $25,000 and 6 months in jail. This issue resonates with urban voters where Tories need to gain traction.

2. Instead of costly subsidization of industry to protect jobs, take a note of the 25 states in the US that have invoked ‘Right to work’ legislation. The

1. Ontario is becoming the new Greece! While the Liberals have their heads in the sand, the provincial debt has become blown to over $300 billion.

That’s over $20 thousand for every man, woman and child in Ontario, compared to the worst state in the US at $4 thousand per capita. Each year the Liberals have added a deficit of approximately. $13 billion. It takes approximately. $10 billion, and climbing, just to service it. To say nothing of the disastrous $1.6 billion subsidy for green energy incentives. And a long list of other financial fiascoes.

2. I’m sure you have your own list to add to the above.

For every potential voter’s sake, get someone to teach Patrick Brown to have a more engaging presence on TV. A little charm goes a long way. Maybe a smile.

I would like to support the provincial Progressive Conservatives, but not until they show they’re more with it. Don’t shoot yourselves in the foot again.

No parking signs could help protect Lavender Falls from visitors

By Trina Berlo Lavender Falls is perhaps one of the area’s worst kept secrets.

Many people have heard about it but know it is located on private property so they stay away.

Others go anyway.

The problem for landowners Allan and Esther Wargon lies in the volume of trespassers and the abuse they have endured.

They are asking the townships of Mulmur and Clearview to install no parking signs on the townline shared by both municipalities where there is access to the falls with the intention of giving the police a concrete way of deterring trespassing by issuing tickets.

This month, in response to a letter from Allan, Clearview Township Mayor Chris Vanderkruys, with the support of councillors, asked that staff look into the request and report back.

The Wargons have been trying to deter people from trespassing on their property for decades and they say the abuse from angry visitors is getting worse.

They say they have been threatened with violence, their property has been vandalized and five dogs have been killed, one having been shot.

Allan bought the waterfall as part of a 50-acre parcel of land on the Noisy River in 1964. Since then, and later with Esther, he has been working to preserve the natural environment around the falls.

“It is a very special part of the world. They don’t make any more waterfalls,” said Esther adding that the 60-foot waterfall was once a sacred place for the Native people who spent time in the area.

In the 1960s visitors to the falls were rare and those who came were respectful and left the site as they found it but then a Bruce Trail map including directions to the falls was published without permission.

Allan said the Bruce Trail committee

apologized for the error but it was too late, hundreds of people were coming to the falls insisting they had the right to be there.

The foot traffic took a toll on the area; trees toppled and one side of the falls caved in, say the Wargons.

Garbage and broken beer bottles were left behind.

Then a man died. He fell over the falls while drunk, prompting an investigation. Police issued warnings and charged people with trespassing but it is difficult for officers to make the one-and-a-half-hour trek to the falls and back to the road.

“The police have always been good, they do what they can but they can’t do much,” said Allan.

That is why they are asking for noparking signs and even a tow zone. It would allow the police to issue tickets at the road.

The Wargons are hoping for cooperation from Clearview Township.

In the past, said Allan, the township has tried to exploit it as a tourist destination without taking any responsibility for its conservation.

At one point, there was a proposal from the Ministry of Natural Resources to purchase the falls and open it to the public as Lavender Falls Provincial Park but while there was money for acquisition, there was no money to pay for conservation through monitoring.

With the increased popularity of handheld GPS units and sharing information online, the problem is only getting worse and the Wargons are looking urgently for a solution.

There could be 20 people or more at the falls on a weekend, maybe 5,000 visitors over the course of a year, estimates the Wargons.

Just recently, two buildings on the Wargons’ property sustained more than $2,000 worth of damage.

“The issue of trespassing is old hat, it has been going on so long,” said Allan. “The issue is what are the councils going to do about it?”

In The Garden, 2015

By Dorothy Shropshire For many centuries various cultures have believed that balance and harmony within is necessary for maintaining good health, both physically and mentally. Our technological world alienates us from each other regardless of how closely we are linked. We constantly find ourselves striving to create inner peace in our personal lives.

We feel a sense of serenity in our “gardens”– whether a few pots on the window sill, containers on a deck, a wildflower meadow or the full expanse of a lovingly tended garden bed stretching into the distance. These sanctuaries provide us with still space for reflection and withdrawal from the demands of our busy lives.

The magical powers of nature are enhanced through our senses as we are persuaded to leave our daily tasks to look, touch and listen. We take note that creation, as wonderful as it may be, is delicately balanced.

There are many theories for the healing effect of gardens. Some believe that there is a relaxation connection with nature at work. Others derive a sense of well-being as they touch the good earth. Gardens present us with a constant cycle of growth and change where, through nature, we learn that some things wither and die and some are given the chance to begin again.

Spending time in our gardens, planting or weeding or sitting still in a quiet corner, brings us an awareness of the restorative, healing power of nature and the forgiving, freeing sensation of connecting with the earth.

The Quiet Garden at St. Luke’s Anglican Church, with its private seating areas, its native blooms, shrubs and trees and its unique concentric circles leading to the cross, provides a small place where we can spend time “being” and relax from the “doing” aspect of living; a haven where we are embraced by the natural world; a serene retreat where our desire to do something meaningful with our lives can be rekindled. It is a sanctuary providing a still space for reflection and a brief withdrawal from the daily demands of life.

Have you paid a visit to St. Luke’s Garden? Full of native woodland plants, coneflowers and roses that both excite and soothe, it is available and open to all. Follow the path to the Church and then veer left and pass through the cedar arch. Be at peace.

Artist from tiny hamlets goes big on cities

By Kara McIntosh Dunedin artist, Steve McDonald, has published his first book – Fantastic Cities: A Colouring Book of Amazing Places Real and Imagined.

An adult colouring book, it is filled with 48 pages of McDonald’s detailed cityscape drawings. From cities as diverse as Tokyo to Lunenburg, Nova Scotia to Amsterdam and Creemore, the book offers detailed aerials, mandalas and streetscapes that represent the unique characteristics of each location.

There are hundreds of nooks and crannies in which to lose both your pencil crayons and thoughts.

McDonald explains that he didn’t set out to create a colouring book when he started to focus his work on groups of buildings and aerial views of cityscapes.

“My daughters are always hovering

in my studio, offering their thoughts and suggestions. Looking at my cityscapes, they thought it would be fun to colour in the lines and shapes themselves. This is what planted the seed to do the book.”

His timing is perfect and Fantastic Cities has dropped right into an international frenzy around adult colouring books. Part of what fuels the trend is what many tout as the therapeutic attributes of colouring, that it helps relieve stress and decrease anxiety.

McDonald points out, that for him it’s more about the art and his exposure as an artist.

“A colouring book is a great way for so many more people to see my drawings which I believe stand on their own. It’s a little bizarre to be part of the adult colouring craze, but it enhances

my exposure. If the book helps to enable any sort of creativity for people and provides a way to decrease stress, then that’s a great feeling.”

Once McDonald is finished with all the press and interviews associated with this book, he will continue to draw and create, building his art into an evolving body of work. Some of the same drawings that are in the book will eventually end up on art gallery walls.

There are two more books in the works, coming out in Spring and Fall 2016. Fantastic Structures will be architectural and include buildings, monuments and bridges. The third book has a working title of Fantastic Collections and will feature drawings of things like toolboxes, medicine cabinets, piles of Lego and store shelves.

Published by Chronicle Books and with an initial print run of over 100,000 copies, Fantastic Cities has received a lot of positive attention. It’s been featured by Architectural Digest and The Atlantic’s web platform City Labs.

Yahoo World News is working on an online spot that may also run on TV. It has been named one of the best books of the summer by both Indigo and Amazon. Pretty impressive for a book that didn’t even officially launch until mid-August.

Reflecting on the process of making a colouring book, McDonald says, “All the attention is unexpected and awesome. There is less pomp than I’m used to as an artist, I don’t have to play the game, discuss the work standing in a gallery. This doesn’t seem as serious a project and to see how it has unfolded has been a riot. I’m having a lot of fun.”

Locally, McDonald is planning an opening and launch in September at Curiosity House in Creemore. During the party, there will be one of the large printed drawings for everyone to colour together.

McDonald’s work will be on display at Curiosity House Books art gallery from Sept. 5 until Oct. 4.

The opening reception is Saturday, Sept. 5 from 2 p.m. to 4 p.m.

The show closes with the Arts Festival where McDonald will be present for some fun interactive pieces.

The show will include large limited edition prints from the book.

During the show a large format print from the book will be left out as a community colouring project. Kids and adults are welcome to drop by any time to help colour the print.

Curiosity House Books now has copies of the book for sale and signed copies will be available during the show.

Rich baseball history continues in Creemore

PLANNED POWER OUTAGE FOR THE VILLAGE OF CREEMORE SUNDAY AUGUST 30, 2015 Hydro One has advised Collus PowerStream that a planned power outage has been scheduled between the hours of 06:00am and 10:00am on Sunday August 30th, 2015 to facilitate the safe repair to the M2 itself in 15 work locations to increase circuit reliability, and to install a new pole into the 44KV circuit. Peter Taylor of Dunedin took part in the Fatdog Ultra Marathon August 14 to 16. The race spanned 120 miles through British Columbia’s Cathedral, Manning and Skagit Valley Provincial Parks. With 28,500 feet of climbing the race is considered the 9th hardest ultra-marathon in the world by Outside magazine. Taylor placed 18th overall and was number six among the Canadians participating. 198 people attempted the race and only 99 were able to complete the run.

A broken record; local gal talks her way to the top

By Trina Berlo Creemore native Sue Maynard has broken the Guinness World Record for the longest uninterrupted live video webcast.

She and co-host Tim Rideout broadcast their online talk show, The Mind Reels, for 48 consecutive hours last November from the lobby of the InterContinental Toronto Centre.

The achievement was officially recognized by Guinness World Records this month.

Maynard and Rideout spent two days interviewing almost 100 guests to beat the existing record of 43 hours. “Our blog and podcast, The Mind Reels, has grown to be a kind of champion of Canadian film and television, among other things, and it was really an amazing experience to bring so many of those involved in that industry together for a weekend, to create something really special,� said Maynard in an email to The Echo.

Their guests included stars from Canadian film and television shows including Orphan Black, Lost Girl, Murdoch Mysteries, The Strain, Defiance, Bitten, Saving Hope, Degrassi, The Listener and Hannibal.

There were also a few musical performances, a representative from the MS Society of Canada, a therapy dog/actor, a sword-fighting demo, and two Skype chats, including one with feline internet sensation, Lil Bub. They also interviewed Anne of Green Gables star Jonathan Crombie before his death

Maynard said the broadcast marathon was “insane�.

Having done a lot of work to prepare for the event, she said she became ill just as the broadcast was to begin. “I was pretty sick for a while there, and wasn’t sure I’d make it through one hour, let alone 48,� said Maynard. “But I’d also done a lot of research into how to stay awake for long periods of time naturally, as opposed to just staying hopped up on sugar and caffeine. I have MS, and knew that my body was going to be unhappy with me anyway, so I made sure I had a lot of high protein foods on hand, and I drank a ton of water to stay hydrated. I actually got stronger after that first night, and was still feeling pretty good by the time I went to bed two days later.

She said breaking the Guinness World Record was a bucket list type of goal but now that she has it, she is prepared to defend it should it be beat by someone else. “It’s funny, too, when I went to bed finally, I was able to get a decent sleep, but my mind kept going over everything and coming up with what I would do differently next time. Even now that the record is officially in my name and I can cross it off the bucket list, it still feels kind of like a dream. One that I intend to make even bigger and better should the need ever arise for me to do it all again. Because I absolutely would – in a heartbeat,� she said.

Stephens, Barbara passed away peacefully on Thursday, August 20, 2015 at the Collingwood General & Marine Hospital in her 83rd year.

Barb, wife and best friend of husband Leonard. She will be forever missed by her children Arthur (Kris), Susan Van Derkruys (Peter), Katherine Stephens (Neil) and Kelvin. Cherished grandmother of Rene (Nicki), Erika, Katie (Mike), Erik (Liz) and Nicolaus.

A memorial service was held at Royal Canadian Legion Branch #397 in Creemore on Wednesday, August 26, 2015 at 1 p.m. with a Legion Ladies Auxiliary service at 12:45 p.m. If so desired, the family would appreciate donations to the Royal Canadian Legion Branch #397 as your expression of sympathy. friends at Station on the Green last Sunday as they celebrated her 100th birthday. Born on August 27 in England as Ruth Carmen she moved to Canada when she was 4 and a half years of age. Her family found their way to New Lowell Ontario where her father helped run the dairy. She lived in Creemore from 1933 to 1959 and then took up residence in Collingwood.

Family members Colleen Stamp and Wayne Barber, along with many more grand and great grandchildren still make Creemore their home.

Clearview Township (Stayner Administration office location) is seeking a full-time Planning and Development Technician.

Clearview Township (Stayner Administration office location) is seeking a full-time Director, Community Services.

Reporting to the Director, Community Services, the Planning and Development Technician is the primary contact (front counter, phone and email) for Planning services, responding to general inquiries from the public on matters pertaining to official plan policies, zoning and planning applications. The Technician also acts as Secretary to the Committee of Adjustment and is responsible for the administrative requirements of the Committee. Additional responsibilities include providing general administrative support to Planning services including preparing letters, preparing files, planning notices, circulations, researching files, records management, preparing agendas, minutes and maintaining planning development maps.

In preparation for approved residential development over the next few years, we are seeking a seasoned professional who is interested in making a significant contribution to the management and growth of our municipality. Reporting to the CAO, the Director, Community Services is a key member of the senior management team and is responsible for overseeing and managing the effective operations of Planning and Development services, GIS, Building and Recreational Facilities, including the development and recommendation of policies and longrange strategies to guide growth and development in the municipality.

The Director, Community Services oversees and manages all Planning Applications and ensures streamlined practices while promoting a high standard of customer service and public relations. In response to community development, the Director, Community Services will provide overall direction to the provision of sustainable Recreational Facilities for the current and future needs of Clearview Township.

Qualifications’ requirements include a College Diploma or University Degree in Planning, Geography or related discipline with a minimum of 3 years of related experience in Planning applications, including Committee of Adjustment processes. Candidates with an equivalent combination of education and experience may be considered. The successful candidate will possess competent knowledge of Municipal Government, Planning Act, Official Plan and Zoning By-Law, with excellent analytical, customer service, strong organizational and communication skills. Proficiency in computer skills (Word, Excel, PowerPoint and Outlook) is required and working knowledge and experience in GIS databases, terminology and methods is an asset.

Salary range offered for this position is $49,358 to $60,624 per year with a competitive benefits’ package including pension plan.
