Spring Peepers: Heard, but not seen

by Kara McIntosh They are one of the first harbingers of spring – the ongoing chorus of loud, high pitched peeps coming from our wooded areas and grassy wetlands.

Although they sound like sleigh bells, they are the mating calls of tiny male frogs called Spring Peepers (Pseudacris Crucifer).

Heard more often than they are seen, this frog is tan or light brown, but its most identifiable characteristic is the darker “X” across its back.

It is very small, an adult Spring Peeper measures only between one and 1.5” long, the size of a paperclip.

Spring Peepers overwinter in fallen leaves, under logs and behind loose tree bark.

They survive by allowing much of their bodies to freeze during the cold months, emerging from hibernation early in the spring to breed.

During the breeding season, the frogs congregate in temporary pools of shallow water left by melting snow and spring run off.

The louder and faster a male sings, the more likely he is to attract a mate.

Like most frogs, the Peeper’s vocal sac expands and deflates like a balloon to create their call, but their sac is huge and expandable to almost the size of their entire body.

The resulting chorus of peeps begins to fill the air at dusk and lasts throughout the evening, all through the spring.

Females will lay between 800 and 1,000 eggs that are attached to vegetation, just under the water’s

In the summer, the Peepers move into forested and shrubby habitats where they stay close to the ground despite their toe pads for climbing. The average lifespan of a Spring Peeper is three years.

The Spring Peeper is a nocturnal carnivore that feeds mostly on small beetles, ants, flies and spiders. Their natural predators include larval beetles, snakes, skunks and other frogs. Possibly the biggest threat to this species, however, is the destruction of their wetland habitat through urbanization or agricultural development.

The way we were

Views in and around Creemore Summer is so close, we can almost taste it.

After a long and cold winter – soul numbingly so at times – who isn’t eager to catch some rays, breathe the lilac scented air and feast on seasonal foods? It’s when you crave lettuce and sun-warmed tomatoes right off the vine and go to the extra effort of carting half the refrigerator onto the back deck instead of dressing the burgers inside.

Not sure why, but food tastes better when eaten outdoors. That’s a fact. It is true of urban patios and rocky shoals on Georgian Bay. Summer nights on the deck naturally translate into more family time, away from the television.

There has been a developing interest in gardening, knowing where our food comes from. And there is something therapeutic about digging into soil and connecting one’s bare feet to the earth.

After a long, cold winter, we emerge pale and doughy from our parkas to absorb some vitamins not sourced from a plastic bottle. When we grab for a snack, chances are it’s green and comes in packaging of its own making. With each day, our mental and physical health improves.

Creemore is always a vibrant community, at any time of year, but these days, people strolling down Mill Street have an extra spring in their step and are eager to raise their sun kissed faces to their neighbours with an unspoken invitation to stop and chat.

The shops and cafés are filling with people who have their motorcycles and bicycles out of the garage for the first time and are, as if by magnetic pull, drawn into the hills and are spit out into this quaint village.

In this special edition of The Creemore Echo we are celebrating spring, outdoor living, eating local and some extra time with family and friends.

We have had a lot of fun putting this edition together and we hope you will forgive our departure from providing the news and views in and around Clearview (the regularly scheduled news portion of this newspaper will return next week).

The secret to eating well – get your weekly veggies

by Joan VanDuzer Sign up for a CSA (Community Supported Agriculture) weekly vegetable share. There are many farmers who depend on these sales – money up front for the farmer is a huge asset while nature is doing its job, and money from other sources hasn’t begun to come in.

To eat well, you have to have good food in the house. Sounds simple, but it requires thinking ahead.

Last year for the first time, I became my own CSA member and it made a big difference in my eating habits. Every year, our farm signs up many members (last year it was 55) and it never occurred to me to have my own weekly box. I always thought I could go out and pick what I needed when I needed it. But, did I do it? Not often and not regularly. Most of the time, I ate what was handy, which was not always the good stuff.

Knowing that another box was coming, made me eat what was in the box sooner rather than later. There were vegetables that I had never bought (Chinese cabbage, fennel, bok choy, etc.) but there they were.

The boxes had what the garden produced that week.

However, the farm managers had put recipes in with the produce so I was encouraged to try new things.

In the summer months I double up on fresh vegetables and reduce the meat. This change in balance is satisfying and in fact will save you money.

You can find CSA producers in your area by looking up the Ontario CSA website or checking out your local market. Memberships are limited so best to sign up early. Pick-up is usually at the farm or at a market.

Avoid the blackflies with oven skillet steak creemore dish

Well I guess all of us are breathing a big sigh of relief that spring is finally upon us.

The daffodils have been lighting up everyone’s fields and gardens. Our Canada goose family has returned to the pond for nesting.

Hikers are starting to phone for B&B reservations and we can finally take the dogs for a walk without Elaine COLLIER snowshoes or ski jackets!

The Creemore Farmers’ Market is about to open and that, to me, will mean spring is in full sway. Time to put the comfort meal slow cooker away for a while, and turn my thoughts to lighter (but still fulfilling) fare.

During our forest walks, we even found a few new wild leek patches, which were an unexpected spring pleasure. If I told you where they are hidden, I would have to kill you – just kidding! Nothing beats a freshly pulled ramp with its peppery, garlicky, oniony flavour.

I also learned from John Millar of Tin Roof Global (isn’t Facebook great sometimes?) that the wild leek’s forest companion, aka the trout lily, is also edible.

While everyone would agree that a steak fresh off the backyard barbecue is one of life’s pleasures right about now, unfortunately blackfly season is upon us. Not everyone wants to stand around outdoors barbecuing their dinner

Cast iron skillet steak salad 1 8-ounce strip loin steak Montreal steak spice – or your favourite spice blend 2 teaspoons extra virgin olive oil 1 green leaf lettuce 1 small clamshell package baby spinach 1/2 English cucumber 1 small container grape tomatoes 1/2 red pepper 1/2 cup stilton cheese, cubed (optional) Dressing: 3 tablespoons red wine vinegar Juice from 1/2 lemon 2 cloves garlic, minced 1 tablespoon Dijon mustard 1/2 teaspoon honey 1/2 cup regular olive oil Pinch of salt Freshly ground black pepper to taste Preheat oven to 350°F. Whisk all the dressing ingredients together and set aside. Please note that this may be more dressing than you need, but any left over can always be refrigerated and used another time.

Thoroughly clean all the vegetables for your salad and buried in a cloud of blackflies, while these pesky creatures figure out which delectable part of your anatomy they are going to bite into for their dinner!

This week I am going to share with you my patented method of preparing a steak in a cast iron skillet, which allows you to stay indoors well away from the bug wars.

Rather than a fried steak, which can easily dry out, my oven method produces a juicy steak every time.

It’s also how they generally finish off cooking meats in restaurants.

pat dry. Slice grape tomatoes in half, Sprinkle very lightly with sea salt and let sit for 5 minutes - I find this brings out the tomato flavour better. Tear leaf lettuce into bite size pieces and place in a large salad bowl. Next, add the baby spinach to the bowl. Chop the English cucumber into bite size pieces and the red pepper into thin strips. Top the salad greens with the cucumber, tomatoes and red pepper.

Preheat your cast iron skillet on high and make sure your kitchen fan is on. When the pan starts smoking, use a silicon brush to quickly coat the pan with a small amount of oil. Add the steak to the skillet and sear for 4 minutes. Turn steak over, and then carefully place skillet in the oven. Cook for another 5 minutes or so for medium and 10 minutes for well done. The oven cooking times are approximate and will vary based on the thickness of the strip loin and how rare or well done you like your meat. Remove skillet from the oven. Place steak on a cutting board, tent it with aluminum foil and let it rest for 5 minutes.

While steak is resting, pour dressing over salad and toss to coat well. Serve out salad onto two dinner plates. Cut meat on the diagonal as thin or as thick as you like. Lay half of the sliced steak on top of each salad. If desired, sprinkle cubed stilton on top and serve immediately.

Serves 2.

So this method works well during the worst of the bug season as well as in the winter when your barbecue might be buried under 10 feet of snow...

Combining a smaller individual portion of steak with a light, healthy salad is a different twist on the usual meat and potatoes repertoire.

If you happen to have any wild leek

greens left or a leaf or two of trout lily, finely chop and sprinkle them over the salad for a kick of extra flavour. I hope you enjoy this initial segue into summer!

Hidden treasures revealed Get a rare glimpse at eight splendid private gardens during the Purple Hills Arts and Heritage Society’s garden tour.

Hidden Treasures, the theme of this year’s tour, will be open to ticketholders on Saturday, June 27.

The exact gardens, located in Clearview and Mulmur, are revealed to those who purchase a ticket. Organizers promise a range in gardening styles infused with the personalities of their creators. From vineyards to veggies and sculpture to barn ruins, each garden is bursting with creativity and provides the perfect retreat.

The Hort Park at Station on the Green will act as the starting point. The

Creemore Horticultural Society has tended the garden, off Creemore’s main street, since 1925. The garden is home to the fountain created by sculptor Ralph Hicks, called Children’s Dress-up Dance, and Ernest Herzig’s sculpture, Harmony.

Gardens will be open to those with tickets from 10 a.m. to 4 p.m., rain or shine. Tickets go on sale May 16 and cost $20. They will be sold at the Creemore Farmers’ Market each Saturday until the day of the event.

Creemore blooms in June The Creemore Horticultural Society is sending a crew around town at the end of June to check out the talents of local gardeners.

Creemore gardeners are encouraged to make sure their beds are looking their best for the third annual Creemore Blooms.

From June 22-26, a panel of three independent assessors will pick the best front gardens based on curb appeal, maintenance, use of colour, shape and texture, balance, selection and use of a focal point. Extra points

will be awarded for those gardens that complement the style of the home.

There is no need to enter the contest, all of Creemore’s gardens will be assessed in the first round.

Prior to the final judging, members of the Horticultural Society will create a long list of Creemore’s top 15 gardens. Those gardeners will be asked permission for the judges to go onto the property if necessary.

The top five gardens will be announced and the gardeners will be presented stakes to display.

Thriller, filler and spiller

by Trina Berlo When it comes to gardening, keeping things simple is the key to making it fun.

With more than 20 years in the nursery business, Katie Dawson says she is seeing more and more people taking a back-to-basics approach to gardening, opting for perennials and vegetables.

Dawson also seeks out plants -Katie Dawson that have interesting foliage, giving the garden lasting texture, while waiting for those pops of colour. It helps to play with contrasting colours, says Dawson.

Ornamental grasses can be very effective in the garden because they give height and texture but also like the heat and won’t wilt.

There is a trend toward the cottage country garden, incorporating the tried-and-true standbys that grandma used to grow. Sometimes there are new twists on the old classics, with growers hybridizing new colours.

“People are happy with a general mix, as long as there is something blooming all the time,” she says. “People love things that are easy. Everyone is busy. You want gardening to be fun and not a chore.”

While the gardens are trending towards perennials people are using annuals in container planting. Pots and hanging baskets can be used effectively as focal pieces at doorways and on decks. Think thriller, filler and spiller when composing a container, says Dawson.

The thriller is the central plant, maybe something with some height, in the middle, then add a plant variety with bulk to fill out the container and finally, add a trailing vine-like plant that will spill down. For example, a tall ornamental grass, with petunias and a sweet potato vine makes a nice combo.

Customers can either buy the plants individually and arrange them at home or Dawson will start planters in the greenhouse early in the season to give them a jump start so they have already filled out when its time to put them outside.

In the last few years, there has been a resurgence in the popularity of growing vegetables at home, all stemming from the organic and eat local movements, says Dawson.

The vegetable plants at Cut and Dried Flower Farm are never sprayed.

Dawson uses biological controls to target certain pests when necessary.

People are growing the staple veggies with a particular interest in heritage tomatoes, of which the farm has 10 varieties.

Dawson works with her husband Chris Martin, together they also own and operate Complete Outdoor Services.

Their eldest daughter Roslyn is working on the farm on weekends and the boys, Daniel and Ben, can be seen at the Creemore Farmers’ Market on Saturdays.

by Trina Berlo Sitting by a crackling fire, beverage in hand, as the sumptuous smoky scents of a charcoal grill waft through the thick air… This is spring and with it come the joys of outdoor living and cooking.

It is the time to slow down, take advantage of long days, and light up the barbie.

Blacksmith Tubo Kueper says there has been a resurgence in the popularity of cooking with charcoal.

He and his son Tyler do custom metalwork at their home-based business near Lisle, Iron Butterfly Blacksmithing. Lately, they have seen an increase in interest in specialized charcoal grills such as spaduch barbecues – Italian style kebab grills that are long and narrow – and cowboy grills – a large round grill with a rotating cooking surface.

Because their creations are handmade, everything is one-of-a-kind and built to last for generations.

“People are getting wise with their money, buying quality,” said Tubo He learned the art of metalworking from his father, who had an auto body shop in Alliston. In 1960, he purchased the family farm, which used to produce tobacco, but is now buzzing with creativity.

The metal work is done on site using a coal fired and propane forge and welders, sometimes incorporating wood.

Their furniture is made incorporating unique cuts of wood, showing off its natural character. Large slabs of hardwood are transformed into kitchen cutting blocks or coffee tables with metal casters.

In addition to taking the indoors outside, people are also bringing the outdoors in, incorporating wrought iron and other rustic elements into the home. The Kuepers have seen a demand for barn door trolleys as people are incorporating sliding barn doors to home interiors.

Herbs&Things

by Trina Berlo Chubby Checker for aches and pains, Patsy Cline for cold and flu and Perry Como for headaches.

These are just a few of the superstar singers of yesteryear whose names have been assigned by Marie Boyce and John Durston to their herbal teas.

The herbs have been grown in the garden, on the bank of the Mad River, behind John and Marie’s Emporium since 1996 when they bought the Mill Street property.

Marie walks through the garden naming plants and easily rhyming off their healing qualities.

She and John won’t be at the Creemore Farmers’ Market this year, for the first time in 18 years but their shop will remain open. They have been at the market since opening day, selling handmade herb based products under the Herbs n’ Things label.

Some of the herbs are made into ointments, essential oils, lozenges and sleep pillows. Others are dried, using a homemade dehydrator powered by light bulbs. Culinary herbs like sweet marjoram, spearmint, apple mint and lemon verbena, are sold in whole leaf form to keep the goodness in and retain the flavour, says Marie.

Some are blended into remedy teas – skullcap for stress, chamomile to help you sleep and stinging nettle as a general tonic.

Marie combined chamomile and apple mint to make her very first tea blend called “simply wonderful”, a bestseller to this day. An interest in herbal remedies spurred Marie to learn more about growing her own plants and blending herbs by taking seminars and reading books.

Everything new can be old again

by Trina Berlo A coat of paint can give new life to old furniture.

With the right paint, a little technique and some help from Laurie Severn, everything can be given that oft-desired vintage charm.

Severn carries milk paint and runs workshops at her new Creemore store, Heirloom 142.

Milk paint, says Severn, is what our grandparents and great grandparents would have used. Made of chalk, milk protein, clay, limestone and mineral pigments, the just-add-water paint powder mix is organic, biodegradable and without VOC (volatile organic compounds). Severn carries milk paint made by Homestead House Paint Company, a Canadian company that also makes the Miss Mustard Seed branded colours.

The paint can be used indoors and out, on almost any surface. Waxes, oils, stencils and brushes can be used to add texture and create a distressed look.

For those who want to skip the mixing, Heriloom 142 also carries a mineral based furniture paint by the same company, called Fusion.

The paint fits with Severn's love of all things vintage.

“It’s a passion turned into a business,” she says. “It’s fun to take a piece that is kind of ugly and transform it into something beautiful that really shines.”

She says she fell in love with the French country look while living in France.

Severn and her husband, Pierre Armengol, moved to Creemore from Andorra, a country on the border of France and Spain, where they lived for a decade. Before that, they lived in Paris for four years.

When Severn wanted to move back home to Canada, she and her husband located in Toronto and then spent a year looking for a place to set up a new retail location. High school students have fun while getting their hands dirty

by Kara McIntosh Mike Wheatcroft, a teacher at Stayner Collegiate Institute (SCI), speaks to his class of Grade 10 students, explaining what they need to get done.

He assigns some students to watering the hundreds of vegetables and herbs that are growing throughout the school’s new greenhouse.

Other students are asked to plant onions or transplant tiny seedlings from their trays into larger pots where they will grow until it’s time to re-plant everything outside later this month.

Once he’s finished speaking, he turns on the radio and Paul McCartney’s Live and Let Die fills the sunny, glass structure. Every single student goes right to work.

As I wander around the greenhouse, one of the students explains to me why he likes this new course. “It’s different in here, we learn a lot of things about many different plants and the different stages of growing. It’s hands on learning, we get our hands dirty and have fun.”

After practicing landscape architecture for more than 10 years, Wheatcroft became one of only a few green industries teachers in the Simcoe County District School Board (SCDSB).

The school received $450,000 for a new greenhouse from the SCDSB as part of their technology renewal program.

Another $50,000 came from a Ministry of Education Healthy Eating grant. Both grants have enabled Wheatcroft and SCI to offer the course this year to a full class of 24 students each semester.

“The healthy eating program money has allowed us to buy all the equipment and tools we needed to get going and combined with the greenhouse, it has become the backbone of our green industries program here at SCI,” says Wheatcroft.

Wheatcroft and his students have hit the ground running. The school has purchased soil, pots, seeds, watering cans, wheelbarrows, shovels,

They have planted hundreds of herbs and vegetables in their traditional greenhouse beds, but they also have six tower gardens where vegetables grow vertically that have been a huge success.

The green industries course’s primary focus is on growing food and providing sustainable green gardens, but it will also teach students about environmental science, horticulture, garden construction and science. So far, Wheatcroft has found his students to be very engaged.

greenhouse, learning with their hands and by doing the physical work. That’s how they learn best,” he says.

The school has developed working partnerships with a number of local organizations and projects within Stayner, all of which are within walking distance from the school.

They are working on projects with the community garden, the Horticultural Society, the food bank, the library and Stayner’s new Eco park.

They are growing seedlings and plants, helping plant trees, shrubs and vegetables.

As well, Wheatcroft says, “We will be cutting and planting a new outdoor garden at the school soon and we have plans to develop a composting and school beautification program.”

Each of the four elementary feeder schools – Byng, Clearview Meadows, Nottawasaga-Creemore and New Lowell – will be visiting the greenhouse this semester. Students from Kindergarten to Grade 8 will come to learn about growing plants, monitoring growth, water conservation and other areas of gardening that are within their curriculum.

Students are building and growing gardens as part of a school project that is extending to the community at large.

The project began with a group of parents who pitched the idea to parent council and school staff.

Juliette Reynolds said she visited Huntsville last summer where a friend had initiated a program called farmers in the playground.

“They were doing a lot of farmto-cafeteria, so the food that they were growing, they were eating it at school,” said Reynolds.

The program inspired Reynolds to reach out to her friends and a seed was planted. From there, it became a community project and a way to bridge a gap between the school and the rest of the community.

Students have been building raised bed frames, preparing soil and planting a square-foot style garden.

Some of the plants will be getting a head start at Stayner Collegiate Institute’s greenhouse.

Reynolds said the hope is that by establishing the gardens, the school will be inspired to incorporate them into the existing curriculum.

She said there has already been a lot of enthusiasm from staff.

“So many people want this,”

said Reynolds. “Whenever I see a school with a garden, I think, they are progressive, they are doing something that really matters.”

O n Tu e s d a y s a n d T h u r s d a y s between 1 p.m. and 3 p.m. parent volunteers will be available to help students in the garden during allocated daily physical activity time.

During the summer months, students are encouraged to continue caring for the garden and certain community groups have offered to help.

The garden has received a commitment of a three-year donation from Jon Hogben of Jerrico Industrial Maintenance, who has children at the school.

The New Farm is donating soil and compost and others businesses are donating money and supplies.

Individual gardeners are encouraged to donate plants, so that the money can be earmarked for education programs and guest speakers.

Toward the end of the year, students will celebrate the first harvest and be given a chance to vote on what to name the garden. At that time, the Grade 8 students will plant a legacy fruit tree, a gift for their teachers and future students.

Farmers' Market opens Saturday

So sappy

Sapsucker has tapped into an ancient market.

The Flesherton based company’s from-treeto-table sap water sourced from Beaver Valley forests is now available at Creemore Kitchen.

Anyone who has ever snuck a sip out of a sap bucket during a visit to the sugar bush will know the product. It is water, pure filtered through the maple tree, that has been pasteurized and packaged. Sapsucker is being marketed as a sustainable and local alternative to bottled water and retails for $5.99 per litre.

Sapsucker is refreshing with a hint of vanilla and maple undertones.

Owned and operated by Charlene McGlaughlin and Nancy Chapman and their families, this year Sapsucker harvested sap from 10,000 maple trees to produce a limited amount of maple water. Just chill and serve.

It is on the menu at Creemore Kitchen and has even inspired one of Chef Caesar Guinto’s famous featured weekend doughnuts.

The Creemore Farmers’ Market opens this Saturday and although asparagus may be the only fresh produce in season, vendors will still have a lot to offer.

Almost 30 vendors have signed up to peddle their wares, including plants, fruits and veggies, hot meals, smoothies, baked goods, crafts, clothing, jewellery, woodworking, preserves, coffee, tea, honey, cheese, soap and treats for horses and dogs.

The market runs every Saturday until Thanksgiving, from 8:30 a.m. to 12:30 p.m. It is located at Station on the Green.

Stayner Chamber honours best in business The Stayner Chamber of Commerce handed out business awards at the Presidents’ Black and White Ball May 2.

The Thomas Stayner award, for volunteer of the year, went to Robert Walker, A&D Birdseed was named business of the year, Jim Dougall of Stayner Home Hardware was named employee of the year, Mark Gobuty of The Peace Naturals Project was named entrepreneur of the year, the new business award went to Grazia’s Italian Kitchen and Bakery, Creemore resident Judah Page was named youth of the year and Michael Gennings was presented the community builder award.

A president’s award was added this year.

The recipient is chosen by the Chamber of Commerce president, recognizing and honouring an individual, company or organization which, through involvement in business, professional association and community service, has had a significant impact on the town of Stayner and community.

President John Squire presented the award to the Clearview Fire Department Station 1 crew.

“It was difficult to pick just the one station as the whole group of volunteers are very deserving of this award,” said Squire.

Ode to Singhampton Ramp Romp The Ode to Singhampton Ramp Romp written by Florence Bremner in 1989 was sung for the first time at the 31st annual Ramp Romp at the Singhampton Community Centre on May 9. (Sung to the tune of Clementine.) The event is now a fundraiser for the hall.

In the village of Singhampton, There’s a ritual every spring.
