Dear friends and family,
There is enthusiasm in the air as we finish harvest and put yet another vintage to rest. Soon the vineyards will be tinted with swaths of yellow and orange and it won’t be long before vibrant green grass carpets the rows between the vines. While the Central Coast is captivating year-round, the lively hues and brisk weather of the changing season are especially festive, signaling that the holidays are approaching and celebration is always near. It is truly a lovely time to experience autumn in the vineyards and we invite you to enjoy a tasting on one of our heated patios in Paso Robles or Edna Valley.
Our cellar team is busy nurturing the new wines and preparing others for bottling, and we are excited to release new vintages of our club-exclusive wines in the tasting rooms this year. As we celebrate another bountiful harvest, we also look forward to recognizing the tenth anniversary of the Sextant Estate with a toast among our Sextant family, our loyal team and wine club members. You can expect to hear more from us in the coming months about how we will commemorate this historic occasion.

2018 PASSAGE, Founder's Collection

Exemplifying structure, depth, and body, the Sextant Passage showcases the breadth of diversity that Paso Robles can deliver. This wine is clean and crafted using New World methods and techniques, but we don’t stray too far from Old World traditions. Plum, blueberry, fresh honey and caramel notes combine with blackberry, Luxardo cherry and vanilla. A juicy mid-palate leads to a smooth tannin structure nicely balanced by bright acidity.

2019 ESTATE MERLOT, Flagship Series

This delicious Merlot opens with alluring aromas of raspberry, vanilla, star anise, and cinnamon. Flavors of ripe Ruby Red apple and cherry pie, along with hints of baking chocolate, unfold beautifully on the palate. The tannins are upfront but not overbearing and develop into a velvety finish.

2019 KAMAL CABERNET SAUVIGNON, Estate Grown Series

Complexity without complication – the 2019 Kamal brings our vineyard directly to your glass. It features range and depth, beginning with upfront aromas of ripe strawberry, potpourri, cedar and lavender. A riot of dark fruits follows, with acai berry and black plum most prominent. Traces of wet granite and minerality join the fray, while bright acid provides lift throughout. The crushed-velvet tannins are well structured and give way to a long finish.

2019 OCTANT BORDEAUX BLEND, Estate Grown Series

A Bordeaux blend full of grace and power, the 2019 Octant offers an indulgent and enjoyable journey in every glass. Intricate aromas of raspberry, blueberry and blackberry are layered with rich vanilla and hints of gingerbread spice. A sip reveals a satiny texture, with cranberry/raspberry upfront that transitions to juicy dark fruits on the mid-palate before finishing dry again. Sophisticated tannins and concentrated complexity bring extended aging potential.

SIMPLE MEATBALLS Pair with Sextant 2019 Kamal Cabernet Sauvignon

INGREDIENTS
1 Vidalia onion, diced
4 cloves garlic, minced
1 red bell pepper, cored, seeded and diced
2 cups plus 2 tablespoons, cold-pressed, extra virgin olive oil, divided
2 cups diced bread or breadcrumbs
2 large eggs
¼ cup ricotta cheese
½ cup grated Parmesan cheese
2 tablespoons chopped Italian herbs (like parsley, oregano and basil)
1 pound ground pork
Pinch of salt and pepper
Dusting of all-purpose flour, as needed
2 cups favorite tomato sauce
INSTRUCTIONS
In small saucepan over low heat, sauté onion, garlic, and red pepper in 2 tablespoons of olive oil. Cook slowly, covered, stirring occasionally.
In a large bowl, soak breadcrumbs in enough water to cover for 1 minute. Strain out excess liquid. In a separate large bowl, beat eggs, then add ricotta, Parmesan, sautéed onion mixture, and herbs. Mix thoroughly. Add meat and soaked breadcrumbs and mix with hands. Season with salt and pepper. Shape mixture into balls slightly larger than golf ball.
Preheat oven to 350°F. Dust meatballs lightly with flour. Spread tomato sauce in baking dish.
In large sauté pan over medium-high heat, heat remaining 2 cups olive oil. Working in batches, brown meatballs on all sides in olive oil. Once browned, transfer meatballs to baking dish. After sautéing all meatballs, discard olive oil, reserving any pan drippings or browned meat remaining in pan and add to baking dish. Bake for 20 minutes, until cooked through. Serves 4.
