Savour la dolce vita. Scan to be inspired

INGREDIENTS

• 3 Tbsp butter

• 1 onion, diced

• 500 g mushrooms, sliced

• ¾ tsp dried thyme

• ¾ tsp salt

• ½ tsp pepper

• Pinch red pepper flakes

• 4 garlic cloves, minced

• ¼ cup white wine, cooking sherry, or lemon juice

• 2 Tbsp corn starch

• 3 cups vegetable broth

• 1 Tbsp Dijon mustard

• 2 tsp soy sauce

• 500 g baby potatoes, halved

• 1 (540 mL/19 oz) can white beans, drained and rinsed

• ½ cup coffee cream

• ¼ cup finely chopped parsley

INSTRUCTIONS

 Place a large Dutch oven over medium-high heat. Add the butter. Once melted, stir in the onion. Sauté for a few minutes until softened. Add the mushrooms, thyme, salt, pepper, and red pepper flakes. Cook, stirring often for about 7 minutes, until the mushrooms have released almost all of their liquid. Stir in the garlic and white wine. Cook for another few minutes until most of the liquid has been absorbed.

 Add the cornstarch and stir to coat the vegetables. Pour in the vegetable broth, Dijon mustard, and soy sauce. Add the potatoes and bring to a boil. Cover, and simmer for about 15 minutes, stirring frequently.

 Once the potatoes are tender, stir in the white beans and cream. Simmer, uncovered, for about 10 minutes, until the stew has thickened. Stir in the parsley and season to taste with salt and pepper. If you find the stew too thick, thin with a bit more broth or cream. The stew will thicken more as it sits so you may need to thin with cream or broth when reheating. Serve with crusty bread.

AMANDA RAY

Cooking with Place, Purpose, and a Sense of Home Chef

For Chef Amanda Ray, cooking has never been separate from family, place, or responsibility. Long before professional kitchens and national accolades entered the picture, her education began in a farmhouse kitchen in Queensville, where her mother grew up. The family later moved to Newmarket, where Amanda spent much of her time learning alongside her grandparents, and where food was both sustenance and ceremony. | PHOTOGRAPHY BY AMY BUCK

Her grandparents were farmers, and the rhythms of planting, harvesting, and gathering shaped family life. In her grandmother Doris’s kitchen, Amanda cooked and baked alongside her sister and cousins, absorbing lessons that had little to do with recipes and everything to do with care, patience, and feeding people well. Food was how the family connected, how stories were shared, and how work became joy.

That sense of food as a daily anchor followed her home. Her mother, a gifted home cook, prepared meals for the family while raising two daughters. When Amanda was a teenager, her mother returned to York University to complete a degree in Anthropology and Women’s Studies, while her father worked long hours as an English professor at a private boys’ school in Aurora. With both parents stretched thin, Amanda and her sister stepped into the kitchen more often, cooking meals not as a hobby, but as a necessity. What could have felt like pressure instead became empowering. The repetition built confidence, the responsibility built independence.

This was before food television became a cultural juggernaut. Amanda’s early inspiration came not from glossy

competition shows, but from quieter, instructional voices. She watched The Urban Peasant with James Barber. His belief in simple ingredients, solid technique, and unfussy pleasure mirrored what Amanda already knew from home. Chefs like Emeril Lagasse and Jacques Pépin offered a window into professional cooking rooted in passion and precision. Together, these influences formed a foundation that still guides her work. Amanda went on to study Culinary Management at George Brown College, pairing her education with handson experience in Italian restaurants

throughout York Region. Those early jobs sharpened her technical skills and reinforced the importance of discipline and consistency. But it was clear that to grow, she needed to be closer to the energy of a larger food scene. She moved to Toronto, ready to test herself.

In 2001, Amanda joined Oliver & Bonacini Hospitality, a move that defined the next chapter of her career. Over the years, she worked at some of the group’s most respected restaurants, including Auberge du Pommier and Canoe, eventually becoming Chef de Cuisine at Biff’s Bistro. Each kitchen added a new

layer to her understanding of leadership, service, and scale.

While at Canoe, she staged abroad at Hôtel Crillon le Brave, a Relais & Châteaux property in Provence. Under the guidance of Head Chef Philippe Monti, she cooked rustic Provençal cuisine and taught cooking classes, immersing herself in a regional food culture deeply tied to land and tradition. The experience reinforced something she already believed: that great cooking comes from knowing where you are, respecting what grows there, and mastering the techniques that allow ingredients to speak clearly.

In 2017, Amanda relocated to Montreal with Oliver & Bonacini to help open Bar George and the Le Mount Stephen Hotel. As Executive Chef of Le Mount Stephen Hotel + Events, she

led large teams while building on her thoughtful, ingredient-driven approach. That same year, she was crowned Ontario Regional Champion at Gold Medal Plates, winning the Ontario regional championship in November 2016 and competing at the Canadian final in Kelowna in March 2017. The recognition affirmed her position as one of Ontario’s top chefs and reflected not only her technical skill, but her calm, steady presence in the kitchen.

Despite her success in major cities, the pull of home eventually became impossible to ignore. In 2021, Amanda returned to Ontario, choosing Prince Edward County for the next stage of her culinary career as Executive Chef of the Drake Devonshire. She had long admired the Drake brand, attending 86’d nights at the Drake Hotel in Toronto as a

young cook and following its evolution closely over the years. Through those experiences, she came to know founder Jeff Stober and Bill Simpson, whose outreach ultimately prompted her to consider the move back to Ontario and apply for the role. The opportunity felt less like a leap and more like a natural continuation of a relationship already rooted in shared values around food, culture, and community.

Beyond the restaurant, Amanda has long been an active participant in the broader culinary community. She has cooked and collaborated at events such as Toronto Taste, Canadian Chef’s Congress, Brickworks Picnic in support of Slow Food, and What’s on the Table benefiting The Stop Community Food Centre. She has also appeared as a guest chef at Mission Hill Winery’s Epicurean Dinner

and at Michael Stadtlander’s Eigensinn Farm, experiences that emphasized generosity and shared learning over ego. Education and mentorship play a central role in her work. She has been a featured chef at the Royal Winter Fair, taught culinary classes at Loyalist College, served as a judge for the Garland Canada Culinary Competition, and participated in events such as Montréal en Lumière. In Prince Edward County, she supports local charities through fundraising dinners, including work with The Hub and Reaching for Rainbows.

One of her most personal initiatives is the annual Barn Burner Charity Hockey Game and Culinary Event, now in its sixth year. Held each February as part of the Drake Devonshire Cup Hockey Tournament, the event brings together 30 chefs from top restaurants in Toronto and Montreal. They compete on the ice for the Drake Cup while local chefs prepare food rink side. Proceeds support the Wellington Storehouse Food Bank. After the game, the chefs return to the Drake Devonshire to cook a Canadianinspired dinner rooted in seasonality and collaboration. The event blends hockey and food while reinforcing Amanda’s belief that cooking can be a powerful tool for community care.

Looking ahead, her calendar remains full, but intentionally so. She will serve as guest chef for a fundraiser dinner

at the County Food Hub, a not-forprofit organization supporting food entrepreneurs, education, and access. The Drake Devonshire will host a series of seasonal events, including a Victoria Day patio launch, a summer garden party at Littlejohn Farm in Picton, and a continuation of guest chef wine dinners that bring together talent from Toronto and Montreal. The goal is connection, not spectacle.

At this stage of her career, Amanda Ray is less interested in chasing trends than in deepening roots. Her cooking reflects a lifetime of quiet lessons: feed people well, know where your food comes from, and show up for your

community. It’s the same philosophy she learned in her grandmother’s kitchen, now expressed with the confidence of experience.

For those who want to follow her work, Chef Amanda Ray can be found at @chefaray, alongside the ongoing projects and events of @drakedevonshire. Her story continues to unfold not in grand declarations, but in steady, meaningful meals shared with purpose.

BURRATA WITH ROASTED KABOCHA SQUASH, PESTO & SPICED NUTS

This recipe succeeds in a balance of flavour and texture. The natural sweetness of the squash, glaze and honeycomb is offset by the addition of the herbaceous pesto and zesty vinaigrette. Finally, the creaminess of the burrata and crunch of the spiced hazelnuts complete the contrast of sweet and savoury. A wonderful appetizer or side dish.

International Women’s Day and the Calls that Cannot Wait

International Women’s Day is a time to celebrate the remarkable strength and resilience of women. Yet it is also a call to recognize the di cult realities many women face daily. For thousands across Ontario, safety and dignity are not distant ideals – they are immediate, pressing needs. This is where the work of the Assaulted Women’s Helpline becomes indispensable.

Each year, the Helpline answers approximately 50,000 crisis contacts via phone, text, and online chat. To put this in perspective, that’s the equivalent of an entire city – like Belleville – reaching out for help in a single year. Behind every number is a person seeking safety, reassurance, information, or simply a compassionate ear.

International Women’s Day reminds us that gender-based violence

is not an isolated issue – it is systemic. The Helpline’s approach embodies this understanding. Counsellors prioritize choice, autonomy, and respect, empowering callers to explore options and make decisions that re ect their lives, cultures, and circumstances. The work is not about directing – it’s about walking alongside.

You do not need to be in immediate danger to call. If you know someone who may need support,

PRIMATE SANCTUARY –THE ONLY MONKEY

SANCTUARY

IN CANADA

A baboon whose tail was injured because of frostbite.

A squirrel monkey whose mother died during childbirth.

A capuchin who was kept in a birdcage.

A baboon who was physically abused.

A macaque who was forced to wear baby clothes and a diaper.

These are some of the monkeys who call Story Book Farm Primate Sanctuary home.

Alfred was kept as a pet in an unheated barn where he suffered frostbite to his tail and feet. Unfortunately, his tail needed to be amputated but now he is warm and able to meet other monkeys of his kind.

Stevie was 36 hours old when he was brought to the sanctuary after his mother died so he could get the 24-hour a day care needed as a newborn.

Cheeko was used as an attraction in a tiny birdcage at a garden nursery. At the sanctuary he had the freedom to choose to stay indoors or go out and catch mosquitoes.

Bruno was kept at a roadside zoo where he was physically abused. He had no name. He lived alone in darkness with no access to fresh air and the outdoors. Now he recognizes his given name, is around monkeys and can sit in the sun or walk on grass whenever he likes.

Darwin was a pet when he was found in an IKEA parking lot. Many remember the iconic photo of Darwin as a baby but now, 13 years later, he is free from the restrictions of clothing and a diaper and is surrounded by other monkeys.

These are just a few of the stories behind the lives we care for at Story Book. We are currently home to 24 monkeys and lemurs who all share similar stories — either abandoned because they are no longer the cute, malleable babies that were acquired to be kept as pets or, because of lax regulations regarding the ownership and care of exotic animals, many are purchased and kept in terrible conditions at roadside zoos.

Unfortunately, there are many more monkeys who need a home where they are no longer afraid and where they have the freedom to make choices for themselves. Once they are rescued, they need somewhere to go but, unfortunately, the sanctuary is full. We have no more space to take in more who deserve a better life.

STEM Storytime Nurturing Young Minds Through Story

THE FOLLOWING IS A TRUE STORY...

Three-year-old Harper watched as the monarch caterpillar busily munched a milkweed leaf in her neighbour’s yard. “Tatterpillar!” she squealed and pointed at the caterpillar. “That’s right Harper, it’s a caterpillar. Can you see how it eats the leaf? It’s having breakfast,” her mom said. Harper smiled, “I had breakfast too!” “You sure did,” said her mom, “that caterpillar is very hungry!” Harpers eyes instantly lit up, “hungry, hungry tatterpillar!” she shouted. Her mom smiled; she could see that Harper was making a connection between a beloved story book — Eric Carle’s The very hungry caterpillar — and the caterpillar in front of her. She was pretty sure she would be going home to nd the book so she could read it to Harper at naptime.

THE VALUE OF STEM STORIES

Moments like this illustrate the remarkable power of STEM storybooks for young children. STEM storybooks have the power to weave scienti c concepts with engaging narratives that capture children’s natural curiosity and imagination.

Research has shown that narrative-based learning enhances science comprehension and retention. Children who read science storybooks develop stronger vocabulary, improved critical thinking skills, and increased con dence in approaching scienti c topics.

The emotional connection formed with story characters creates lasting associations with scienti c principles.

For parents, caregivers, and educators, STEM stories o er opportunities for meaningful conversations. Reading together about the life cycle of butter ies or why leaves change colour can lead to questions, observations,

and further exploration. These experiences build not just knowledge, but also positive associations with learning itself.

STEM stories can also be a springboard for hands-on activities and inquiries. A story about shadows can lead to outdoor investigations, while one about forests could lead to an activity about designing a seed-planting device.

The Let’s Talk Science STEM Storytime series brings just such STEM stories to life. STEM Storytime is a weekly series for early years to grade 3 children that pairs with read-along stories with hands-on STEM activities. The STEM Storytime sessions can be watched in real time as well as accessed on demand. STEM Storytime is a fantastic way to help children develop literacy skills that are so important in early development.

THE TRUE STORY.... CONTINUED

Harper’s mom read the book again, and again, and again. Harper would make her read it every day for the next week. Not only that, but Harper also had to tell everyone she saw, from her dad to her mom’s friends about the hungry, hungry tatterpillars. It would be a STEM moment that neither Harper nor her mom would ever forget.

How Pharmacists Ease Access to Care and Create Capacity in Our Healthcare System

The expanded role of pharmacists improves patient access and increases healthcare capacity. OPA sees opportunities to expand that role even more.

Traditionally known as experts in medication management, Canadian pharmacists are playing an enhanced role in providing patient care. Over the past 15 years, their scope of practice has expanded to include administering vaccines, assessing and prescribing for minor ailments and, in some parts of Canada, helping with chronic disease management.

With some 5,000 community pharmacies across Ontario, where about one in five people are without a family doctor, this expanded scope closes some access gaps and creates capacity within the healthcare system. “Rather than going to the hospital emergency for lower acuity conditions like pink eye, patients can visit their local pharmacist who is usually just a short walk or ride away from their home,” says Jen Belcher, Vice-President, Strategic Initiatives, Ontario Pharmacists Association.

COMPREHENSIVE APPROACH NEEDED

While the role of pharmacy has expanded significantly across Canada, Ontario lags other provinces in letting pharmacists fully utilize their training and skills. Part of that has to do with the size of our province and

complexity of our healthcare system. “We need to ensure it can work within existing systems, but the result of this incremental, list-based approach is a slowdown of the rollout,” says Belcher. One example is immunization. “We started with just flu vaccines, then added some travel vaccines, and then COVID-19 once they became available,” she says. Each time a change is made, the government needs to go through the process of amending legislation or regulations, whereas a comprehensive approach that gets everything done at once would eliminate that need,” says Belcher.

OPA LEADING PHARMACISTS IN IMPROVING CARE

As the largest professional advocacy organization for Ontario pharmacy professionals, OPA supports the currently proposed regulatory changes that would authorize pharmacists, to assess and prescribe for more minor ailments, administer more public vaccines, and order lab tests. OPA are also advocating for some larger changes to the pharmacy scope of practice that would allow pharmacists to prescribe drug substitutions and vaccines. “Drug substitutions are common practice

in collaborative care settings like hospitals and a well-established area of pharmacy expertise,” says Belcher. “Giving pharmacists authority to substitute without a doctor’s authorization would help to speed up access to care, especially when there is a drug shortage. Similarly, being able to prescribe for vaccines that require a doctor’s prescription would alleviate another access barrier,” says Belcher. OPA is also advocating for pharmacists to play a more prominent role in chronic disease management.

If you’re unsure of what your pharmacist can do for you, you may not be taking full advantage of the care you could be getting. Belcher recommends going in and having a chat to learn more. “One of the most important things we can do as individuals is to try to keep ourselves healthy and avoid putting additional strain on the healthcare system,” says Belcher. This holds especially true during respiratory season. “Your pharmacist is an excellent resource to educate people on how to protect against vaccine-preventable illnesses and on whether your vaccines are up to date,” says Belcher.

In Ontario, pharmacy professionals are working harder than ever to support your health. Whether it’s prescribing you meds for a common ailment or providing thorough, holistic medication counselling, pharmacy is on the front lines of community healthcare.

Find Your Sunshine in the Sebastian River Area, Florida

The best getaways restore you. Located along Florida’s spectacular Indian River Lagoon National Scenic Byway, the Sebastian River Area (SRA) invites you to slow down and reconnect with family, nature, history, and yourself. If you’re seeking warmth, beauty, and authenticity, SRA o ers a true Sunshine State escape without the crowds. Here, the promise is simple pleasures and authentic treasures.

This region’s story stretches back centuries. Indigenous peoples rst lived along these fertile waterways, followed by pioneers, shermen, citrus growers, and river captains who shaped life along the Sebastian River and lagoon. Their legacy lives on in preserved lands, working waterfronts, and a community that values simplicity, good food, and genuine hospitality. In Sebastian, history isn’t something you read about; it’s something you experience.

Traveling the Indian River Lagoon National Scenic Byway reveals sweeping vistas, quiet back roads, and access to one of the most biologically diverse estuaries in the Northern Hemisphere. Dolphins glide through calm waters, manatees dri near shore, and birds ll the sky. Every bend in the road o ers a reason to pull over, breathe, and take it all in.

The simple pleasures de ne Sebastian. Morning co ee pairs perfectly with a river sunrise. Days are spent kayaking through mangroves, hiking shaded trails, or casting a line from a dock. Evenings bring golden sunsets, warm breezes, and the easy comfort of a town that knows how to unwind, o en with live music under the stars along the waterfront.

For outdoor enthusiasts, the Sebastian River Area is truly world-class. Explore miles of trails at St. Sebastian River Preserve State Park, paddle pristine waterways, or bike scenic routes along the lagoon. At Sebastian Inlet State Park, surfers ride renowned Atlantic waves, anglers sh from jetties and bridges, and beachgoers enjoy unspoiled stretches of sand. Nearby, Pelican Island National Wildlife Refuge, America’s rst national wildlife refuge, protects bird rookeries that inspired conservation over a century ago.

Beyond the natural beauty, Sebastian’s charm lies in its authenticity. Locally owned shops,

waterfront restaurants serving fresh-caught seafood, community festivals, and live music re ect a way of life that values connection over commotion. Conversations are unhurried. Smiles are genuine. Time feels generous.

The Sebastian River Area doesn’t try to be ashy, and that’s exactly its treasure. Long before resorts and highways, these waters were traveled by Indigenous peoples, pioneers, and Spanish explorers. Just oshore, the legendary 1715 Spanish Treasure Fleet met its fate, leaving behind stories and artifacts that still surface today. This is authentic Florida, rooted in real history and preserved landscapes.

INSIDE EPIC UNIVERSE

Universal Orlando’s Most Ambitious Park Yet

Orlando Epic Universe officially opened in May 2025 as the newest and most ambitious theme park in the resort’s lineup. It marks the third theme park — and fourth overall destination — at Universal Orlando Resort in Orlando, Florida, and introduces five distinct, immersive lands built around beloved franchises, original storytelling and cuttingedge ride technology.

As a mom of teenage boys — both thrill-seeking enthusiasts — I’ve learned to embrace theme parks as a preferred vacation destination. With complete confidence, Epic Universe delivers an experience that places it among the best theme parks I’ve been to.

At the heart of Epic Universe is Celestial Park, the visually striking central hub that greets every guest with lush gardens, themed water fountains and inspirational design. This area

blends relaxation with excitement and acts as the gateway to the rest of the park’s lands. The standout attraction here is Stardust Racers, a dual-launch racing coaster that pits two trains against each other. Tip from my teens: the green track tends to be more intense with stronger airtime and dynamic elements, while the yellow track is slightly smoother and more balanced.

One of the park’s most anticipated areas is Super Nintendo World, where gamers of all ages can step into the colourful worlds of Mario, Luigi and friends. Here, the must-do experience is Mario Kart: Bowser’s Challenge, an augmented-reality dark ride that lets guests race against familiar characters with AR effects and competitive scoring. Another not-to-miss attraction: within a nested Donkey Kong Country area, the Mine-Cart Madness coaster inspired by classic rail-jumping gameplay.

Potterheads will make a beeline to The Wizarding World of Harry Potter — Ministry of Magic, set in a richly themed Parisian-inspired wizarding land. The main attraction, Harry Potter and the Battle at the Ministry, combines immersive storytelling with state-of-the-art ride systems that transport guests into a thrilling confrontation straight out of the wizarding universe. Tip from my teens: try the Butterbeer Crêpe, a warm French crêpe filled with Butterbeer cream, shortbread cookie butter and Bavarian cream.

For families and lovers of fantasy, How to Train Your Dragon — Isle of Berk offers a more storybook experience steeped in Viking lore. At the forefront is Hiccup’s Wing Gliders, a family-friendly flying coaster that simulates soaring with dragons, complete with scenic views and cheerful theming.

Finally, Dark Universe taps into Universal’s classic monster legacy, blending a spooky atmosphere with thrilling effects. The premier ride here is Monsters Unchained: The Frankenstein Experiment, a high-tech dark ride that features motion-based robotics.

Epic Universe hits the sweet spot for just about everyone, from big thrills to family-friendly fun. With its immersive lands, innovative rides and plenty of places to eat and explore, it’s easy to see why Epic Universe is a must-do Universal Orlando destination for 2026.

DISNEY DESTINY

A New Chapter in Disney Cruise Storytelling

Disney Cruise Line isn’t just adding another ship — it’s setting the tone for a new era. While it shares DNA with Disney’s newest generation of Wish class ships, Disney Destiny stands apart through its bold theme: the timeless clash between heroes and villains and the choices that define them.

Visually, Disney Destiny is more dramatic than earlier ships. From the moment guests step into the Grand Hall, it’s clear this ship is telling a different kind of story. Designed with dramatic lighting, rich colours and ever-shifting ambience, at the center is a commanding statue of King T’Challa, making it the first Disney ship with a Marvel character as its central figure. His presence signals a powerful shift in how Disney defines heroism, leadership and cultural storytelling.

Entertainment aboard Disney Destiny also pushes the envelope. Headlining the ship’s offerings is “Disney Hercules,” a brand new, Broadway-style stage production exclusive to the new ship. Inspired by the animated classic, the show features modern theatrical design and offers a fresh take on the hero’s journey — complete with humour, heart and the iconic Muses.

(Did you know? Disney Cruise Line’s rehearsal facility is located in Toronto. It features 19 state-of-the-art studios where performers practice live vocals, choreography, puppetry and stunts.)

Dining aboard Disney Destiny continues Disney Cruise Line’s rotational concept, but with even stronger storytelling woven into each experience. Pride Lands: Feast of The Lion King brings the music and flavours of the savanna to life, turning dinner into a rhythmic, immersive celebration inspired by

Simba’s journey. The atmosphere evolves as the meal unfolds, making it the quintessential “dinner and a show”.

Adult spaces are another area where Disney Destiny distinguishes itself. Lounges lean darker, moodier and more stylized, embracing villain-inspired flair and superhero sophistication. De Vil’s Piano Lounge channels Cruella’s fashion-forward attitude with dramatic décor and live music, while The Sanctum, inspired by Doctor Strange, offers a sleek, mystical retreat for cocktails and conversation.

As always, Disney Destiny offers imaginative, age-specific spaces designed to make kids feel like the heroes of their own adventure. Younger guests can explore the expansive Oceaneer Club, while tweens and teens have their own stylish hangouts — Edge and Vibe — featuring games, social spaces and supervised

freedom to connect with friends. Together, these thoughtfully designed spaces blend creativity, technology and Disney magic to ensure kids of all ages have exciting, memorable experiences at sea.

Ultimately, Disney Destiny isn’t about reinventing Disney Cruise Line; it’s about refining it. It takes what fans already love and layers it with deeper storytelling, richer design and more immersive experiences. For seasoned Disney cruisers, Disney Destiny feels familiar yet daring. For first timers, it sets a bold tone: this isn’t just a cruise… it’s a story, and you’re part of it.

Disney Destiny is now sailing from Port Everglades in Fort Lauderdale, Florida, on four- and five-night cruises to The Bahamas and Caribbean. For more information, visit disneycruise.com.
