She perfected her culinary techniques working with some of Barcelonaʼs top pastry chefs, such as Jordi Butron, Xano Saguer, Walter Volt and Ricardo Martinez, and expanded her horizons working in countries such as Spain, France, Belgium, and Italy, before eventually landing in Canada in 2003. Since then, Chef Herrera has made her name known across the country. A former Top Chef Canada and Top Chef Mexico star, Chef Herrera has been featured in several TV Shows such as Breakfast Television and Morning Live, and magazines such as , Post City, Blog TO, and Toronto . Sheʼs also appeared as a judge on MasterChef Canada. She is a Gold Medal Winner for Canadaʼs Great Kitchen Party and has participated in multiple Food and Wine festivals national and internationally. And despite her success, Chef Herrera is not one to rest on her laurels. She successfully runs to restaurants in



different parts of Canada. Milpa, in Calgary, is a Mexican small plates restaurant and cocktail bar. The Milpa website reads “Mi Casa es Tu Casa” — a showcase of Chef Herreraʼs efforts to bring the flavours of home to every dish she serves. She also owns Tecolate, in Toronto, alongside her sister and business partner. She is also building a line of hot sauces, under the Tecolote name.

For over 20 years, Chef Charlotte Langley has been making waves in the seafood and hospitality industry, earning accolades for her culinary ambitions alongside her relentless sustainability advocacy efforts.
The Prince Edward Island native chef is an entrepreneurial powerhouse, first as the founder of craft-tinnedseafood brand Scout Canning and more recently with her newly launched food and innovation fund, Langley Foods. While rising in the business ranks of Canadaʼs CPG industry, Chef Langley continues to embody the warmth and hospitality the East Coast is famous for. She is focused on giving families the opportunity to share honest, good, and responsible food at their dinner tables.
Chef Langley says her passion for food reflects her passion for life. “Iʼve always been full of energy and curiosity,” she says. “And have always believed that food is love, magic, and can be used as an act of dedication and commitment to the stewardship of our planet and its people.”
Growing up near the water, Chef Langley was inspired by the chefs, fishers and farmers she would see every day. She would often visit her grandfather, a fellow food entrepreneur and the inspiration behind Langley Foods, at his office, seeing the processing plant, meeting employees, and sharing in the cooking

detail on weekends.
“Itʼs through my family that I was compelled to be in the food industry, and that I was drawn to learn, grow, and more importantly, connect and share my passion with others,” she says. “I came naturally to this space and have been very inspired and hopefully inspiring along the way.”
In the years that followed, Chef Langley honed her culinary skills, with
a particular focus on elevating seafood. She worked in some of the countryʼs most recognized restaurants, including C Restaurant, The Whalesbone Oyster House, Catch and Rodneyʼs catering. In 2014, Chef Langley was compelled to revive the preservation traditions of coastal fishers and give the modern home cook access to deliciously crafted and responsible seafood by elevating the practice of seafood canning.
Charlotte spent six years perfecting the tinned fish recipes as a passion project, while highlighting fishermen and other domestic suppliers committed to responsible seafood harvesting and sourcing. And since 2020, kicking off with Scoutʼs Craft Can line, Chef Langley has been working to expand the audience for seafood by making it tastier, more convenient, and responsibly sourced.
“Those six years were filled with extensive planning, product development, market research, and overcoming various obstacles to finally realize the vision I had for a sustainable seafood brand,” Chef Langley said in a 2023 Canadian Business article.
Today, Scoutʼs line of tin seafood is carried in more than 4,000 stores across Canada and the U.S. Among her line of products are PEI mussels (sourced from PEI, naturally), Atlantic Canadian lobster that is MSC Certified Sustainable), Rainbow trout, and a series of Seafood Snacks featuring Chili Crisp, Zaʼatar and Chile Jalapeño flavours.
“Scout Canning and Langley Foods both stand as a testament to my commitment to the health of our oceans and our planet,” explains Chef Langley. “My mission is to provide consumers with responsibly sourced, delicious and nutritious food while minimizing our environmental footprint.”
Complimenting her work with Scout, Chef Langley has been the Marine Stewardship Council (MSC) Chef Ambassador in Canada since 2017. The globally recognized non-profit sets the worldʼs leading standard for sustainable fishing and aims to end overfishing so oceans can remain healthy and continue to produce nutritious, wild seafood. As the Ambassador, the MSC gives Charlotte the platform to speak and share her passion for advocacy on the grand stage. She has been instrumental in raising awareness for the organization and its mission while educating audiences across Canada and the US to buy, cook, and enjoy seafood sustainably.

Chef Langley is also a champion of mental health and wellbeing for her colleagues and peers, supporting groups such as Not 9 to 5, a global leader in mental health advocacy and education for the hospitality and culinary industry. She also aligns herself with other nonprofits such as Sistering and A Better Life Foundation, and actively pursues partnerships with companies and brands that have an eye towards making a positive impact on the planet.

Today, Chef Langley is focused on Langley Foods — a Food and Beverage Innovation Fund that is uniquely structured to bring small, independent startups that are focused on Sustainability, Responsible packaging and created with the ethos of People and Planet, under one umbrella. “Think of it as a room full of innovators and experts in food and beverage, lever-
aging each othersʼ knowledge, passion and relationships to drive new products to market,” she explains. “You could call it an incubator for good, good for you and good for the planet too.”
The key to her success has been a continued desire to share her knowledge and food, but also to learn from others.
“Through my journey as a chef, entrepreneur, and advocate for a better culinary world, Iʼm dedicated to continue creating unforgettable moments for everyone who shares my passion for food, sustainability, and the beauty of our oceans, waterways and planet.”

Born in Cordoba, Veracruz-Mexico, Chef Elia Herrera brings the flavours of her home country to every dish she creates.
The owner of two successful restaurants, along with a line of hot sauces, sheʼs built an admirable reputation in Canada for her refined culinary technique and masterful approach to ingredients.
Chef Herrera was inspired to pursue the culinary arts by her grandmother, Luz Del Carmen Dominguez de Herrera, and mother, Elia Del Carmen Herrera Dominguez. “My grandmother started a catering business when she was 16,” she explains. “She was a pioneer in the industry, cooking for all levels of clientele.”
Chef Herrera remembers her grandmother recounting tales of cooking meals for celebrities, presidents and ambassadors — from governors of Mexico to kings of Spain. “She shared her expertise and passion for food with me,” says Chef Herrera. “And her knowledge spanned beyond Mexican food — she knew all about international cuisine as well.”

Beyond business know-how, Chef Herrera recognizes the importance of community and giving back, working with organizations such as Second Harvest, Canadaʼs largest food rescue charity. She also works with Eat the Beat, an event that supports women through the challenges that come with a breast cancer diagnosis. She believes like any good recipe, success is the product of good ingredients. “Passion, dedication and extensive knowledge have led me to where I am today,” she says.

Thoughwe deserve to be celebrated 365 days a year, Women’s History Month and International Women’s Day are welcome reminders of how far we’ve come, yet of how much we still need to do to reach gender equity We could be angry at the disparity in the number of female vs male chefs in Canada, share our disappointment about the dramatic difference in roles with 70 per cent of women occupying lower-ranking positions (and lower-paying jobs) compared to their male counterparts in the hospitality industry
With the arrival of the Michelin Guide, we could point out the under-representation of female chefs leading star-studded establishments on the Toronto list… but we won’t be doing that. Instead, we will vote with our wallets this month, purposely opting to eat at female chef-driven restaurants and making a point to buy from women-powered food brands at the supermarket. These small steps implemented year-round, are simple yet delicious ways to change the narrative, kickdown stereotypes and open doors for the next generation of female trailblazers.

PEAR AND FRESH VEGETABLE SALAD ROLLS
INGREDIENTS
• 1 cup (250 mL) baby spinach leaves
• Half an English cucumber, cut into long, thin strips
• 1 large carrot, grated or cut into a fine julienne
• 1 red bell pepper, cut into long thin strips
• 2 firm pears, such as Anjou, sliced julienne style
• Herbs – several sprigs fresh basil, cilantro leaves, fresh mint or green onion
• 12 rice paper wrappers
• Your favourite peanut sauce or sweet chili sauce for dipping (optional)
INSTRUCTIONS
1. Prepare all of the vegetables first and place them in small dishes around your work area. Julienne the pears last to delay browning, and place them at your workstation as well.
2. Moisten one rice paper wrapper by running it under cold water for about 5 seconds on each side. While the skin is still firm, transfer it to your work surface. Do not allow the skin to get too flexible before you place it on your work surface or it will be difficult to work with.
3. Fill the roll by layering several spinach leaves across the center, leaving about one inch of open space on both sides. Top with the sliced vegetables, then the pears, and finally with choice of herbs.
4. By now the wrapper will be pliable. Starting at the bottom, carefully roll the summer roll up like a burrito, wrapping the ends in about halfway through your roll. Place the completed roll on a platter, and repeat the process until you are out of ingredients.
5. Note: Do not stack the rolls, as they can become quite sticky. Once all of the rolls are completed, slice them on a diagonal with a serrated knife, arrange, and serve with your favourite dipping sauce if desired.

THE ART OF MAKING A PERFECT MATCH

| Great pairings are memorable. It is a universal feeling that is not bound by the wine world. With every great match, we all form a memory of a moment that is pure harmony. Perfection is the result of the balance and harmony of the senses. Aromas blend with flavour. Taste blending with touch and sight. There is a science to making a perfect match; we can all feel it when it happens.
Asuccessful pairing will enhance the dining experience, where you are munching on some chips while sipping Champagne on the couch or tucking into a world-class meal at a once-in-a-lifetime restaurant experience. Wine pairings can heighten flavours, aromas, textures and the qualities of foods.
While Sommeliers have the tricks of pairing down to an art, this skill is easy to learn. At the core of pairing are five basics that can aid in matching up whatever you are eating with glass that complements it.
1. You should always match acidity to acidity
2. Umami and bitter flavours amplify bitter wine notes
3. Salty foods make wine less bitter and more soft
4. Fatty foods need structured wines
5. Both spicy and sweet foods love sweet wines
These rules make it possible to play with food in a fun and unique way while also making it possible to understand why your favourite pairings work so well together. It is the reason why classic wine pairings work so well together.
Champagne goes with Oysters because of its match in acidity, and the bubbly structure of the wine is perfect with the slight fattiness of the oysters. Or even why Steak and Cabernet Sauvignon work. The fattiness of the meat needs the structure of the wineʼs tannins and spice. All of these subtle changes make it all work in harmony.
Diving into more complex pairings, you can follow the same rules to pair a Mushroom Shoyu Ramen with a Rosé wine like the Kechris Roza Retsina Wine. This unique Greek Rosé has a soft sweetness and effervescence that brings this dish to life by matching in acidity, helping define umami notes, providing a bit of structure, and aiding in a great finish.
Or even pushing the boundaries further by matching up a Caesar Salad with the B-Vintners Lone Wolf Cinsault. Despite being a red wine, this bottle has levity and a brightness of acidity to go with this salad. As well as just enough tannins to match and not force any bitter notes on the experience.

For 25 years, Colorectal Cancer Canada has been uniting people, connecting patients and their loved ones for support. As a patient organization, weʼve been working behind the scenes since 1998, pushing for innovation, new treatments, and shining a light on the importance of screening to raise awareness about colorectal cancer in Canada.
Even though colorectal cancer is highly preventable, more than 24,000 Canadians will be diagnosed with it this year. Currently, itʼs the 2nd leading cause of cancer death in both men and women combined. But thereʼs hope: caught in its early stages, it is 90% curable.
Generally, colorectal cancer spreads slowly, and can stay in the colon or rectum for months or even years. In the early stages, when itʼs easiest to treat, there might not be any signs. Symptoms such as blood in stool, diarrhea/ constipation, gas/bloating, weight loss, loss of appetite, fatigue, and anemia,

VISIT THE AUSSIE POLAR BEAR
UP NORTH
In the winter of 2013, a female polar bear named Liya gave birth to a cub weighing a little less than a pound, with pink skin and whisps of thin white fur. This cub, soon to be named Henry, was the first cub to be born in Australia in close to 30 years. Over the next two years, the energetic and enigmatic cub would delight Seaworld visitors and introduce them to a species that most southern hemisphere residents would never see.
At 2.5 years old, weighing almost 600 pounds, Henry was ready to separate from his mother just like it would happen in the wild and a new home was found for him at the Cochrane Polar Bear Habitat in Ontario, Canada. On the 7th of October 2015, following assistance from the Royal Australian Air Force, Henry stepped out of a transport crate and began
to explore his new environment in the world’s only polar bear sanctuary.
Eight years later, Henry roams 24 acres of northern Ontario’s boreal forest in spacious enclosures designed to allow him space and choice over his environment. He has found companionship in the Habitat’s oldest resident bear, Inukshuk, and has

formed a strong bond with dedicated care team. By far, his favourite aspect of living in Cochrane is the 10-acre lake which he has access to year-round for swimming in the summer and exploring as a frozen platform in the winter.

Follow in Harriet Tubman’s Footsteps on Maryland’s Eastern Shore

Experience deep-rooted history, breathtaking nature, colorful murals, charming towns, and delicious seafood in a place known as the “Heart of the Chesapeake Bay”.
What is it like to experience the life of one of the world’s most unlikely heroes, Harriet Tubman? Visitors have called exploring the place of her birth moving, powerful, and inspiring.
Born in Dorchester County on Maryland’s Eastern Shore, Tubman had everything against her: she was enslaved and illiterate, and thanks to a brain injury caused by an overseer, she was disabled. Today, in beautiful “Tubman Country,” you can see the places where she lived, toiled, and worshipped. Learn of the daring and ingenious escapes she led to bring friends and family from slavery to freedom — becoming a hero known worldwide.
Sites along the scenic road trip known as the Harriet Tubman Underground Railroad Byway include the riveting “Take My Hand”
mural, the Harriet Tubman Underground Railroad Visitor Center, and the 1800s general store where Tubman nearly died as a girl. Echoes of the stories that happened in these places still speak to us today.
The unspoiled landscapes around Dorchester County would have looked familiar to Tubman. For today’s travelers, they provide breathtaking backdrops, not only for stories from the past, but also for wildlife watching and stunning sunsets. The best spot to take in the natural splendor is the 30,000-acre Blackwater National Wildlife Refuge and its four-mile Wildlife Drive. Connect with the family-owned Blackwater Adventures and join a kayaking tour led by a guide who shares tales of the Underground Railroad (the secret network of places and people that Tubman and other freedom seekers used) or points out wildlife including bald eagles, egrets, and muskrats.
History abounds in Dorchester County. For a different take on the area’s history and nature, explore the vibrant art of the county’s Chesapeake Mural Trail.
With Dorchester County nearly surrounded by the Chesapeake Bay and other waterways, local seafood — crabs, oysters, and fish — is abundant and delicious. The culture of seafood harvesting has shaped life here. Get a taste on a paddle wheeler crab feast cruise with Choptank Riverboats.
