DINING OUT My wife and I love to support locally-owned restaurants around town. Our daughter recently turned two and we are discovering the art of dining with a toddler. The rare opportunity to dine out is a big deal for us both. We have our favorite spots, but there is always some debate. However, we never miss the opportunity to try out a new restaurant.

Sunday brunch is our favorite time to dine out. As we started our search for the best new restaurants, we grabbed brunch at 8te, pronounced like the number. I was sold the minute we walked in.

From the creative light fixtures to the Corpus Christi skyline covering the back wall, I knew they were in. We sat across from some people we knew and shared life stories between bites of cheesy tater tots. You could get a feel for the thought and planning the owner put into the whole experience.

In 2005, Driscoll Children’s Hospital began taking the artwork of their patients during the holidays and choosing one of those precious little drawings to turn into a sterling silver charm.

I don’t want anyone to think of us as a “food” magazine, but we love showcasing our amazing Coastal Bend restaurants and dishes for two reasons. First, who wouldn’t want to eat all of the delicious food in this issue? Second, and most important, is that food brings us together. Great restaurants and great food create lasting bonds between families, friends, and communities.

Personally, I think it’s very important for all of us to support the local chefs who venture out to open new restaurants around the Coastal Bend. There are a growing number of clever new eateries opening their doors, and we hope the pattern continues. We showcase just a few of these in this month’s issue. Our hope is for you to discover a new favorite spot highlighted in this feature and to enjoy some good food and good times around the table.

Bart Braselton

Bart Braselton is the Executive Vice President of Braselton Homes, the Coastal Bend’s oldest and largest Homebuilder and Neighborhood Developer. Born and raised in Corpus Christi, Bart is the third generation of Braseltons building in the Bay Area. Bart, a graduate of Leadership Corpus Christi Class 18, has served on numerous local community and business boards.

Presently, he serves on the Board of the Community Development Corporation, as well as the Chamber of Commerce. Additionally, he serves as Chairman of the Coastal Bend GreenBuilt Council, and President of the Board of the Corpus Christi Business and Job Development Corporation.

Q&A with

JULIANA CARLISLE

Local All-American Quarter Horse Congress Reserve Champion would have to be winning Reserve Champion in the Novice Amateur Horsemanship this October at the All American Quarter Horse Congress out of 118 entries. The Congress is the largest single breed horse show in the world. My horse and I have faced several challenges this year so it felt amazing to make a comeback and do so incredibly well. Chuy aka KM BosHotInvestment is one of the most talented horses I have ever ridden. He is always honest in the show pen and he has so much heart.

When did you first develop your passion for horse riding?

The first time I rode a horse by myself I was 4. We were on a family vacation in Colorado and I insisted on having my own horse. My feet didn’t even reach the stirrups, but I rode that horse all over the trails. I was fearless.

From that day on, I begged my dad for a horse. I fell in love with them. I got my first horse when I was 10. His name was Choco and he was an 18-year-old ex-team roping horse. A year later, I got my first show horse and I was hooked.

What do you love most about riding American Quarter Horses?

How are American Quarter Horse Competitions different from rodeos?

I love the bond that you form with your horse. The way it feels to connect to a 1200 pound animal and become a team is indescribable. I also love how much fun showing is and all of the amazing people that you meet. My show family is my second family. We are a pretty tight community.

Showing American Quarter Horses differs from rodeos in the events that are offered. There are still team roping, calf roping, and barrel racing events. The other events include both English and Western disciplines. I show in the Western disciplines in which the horses are much more collected and naturally move slower. I only show in mounted events.

Any advice for someone just getting started?

What events do you participate in?

The classes that I show in are Western Horsemanship, Western Riding, Western Pleasure, and Trail. Western Horsemanship is a set pattern with cones in which you have to execute certain set maneuvers at each cone. Western Riding is a pattern in which you cue your horse to do flying lead changes. Western pleasure is a class ridden on the rail and judged on the horse’s natural collected movement. Trail is a pattern set with poles and obstacles.

You have to walk, trot, and lope the horse over the poles and the horse’s feet cannot touch or hit any of the poles or obstacles.

What aspects are competitors judged on?

Depending on the class, competitors are judged on their equitation, the horse’s movement, the precise execution of the pattern, and the overall appearance of horse and rider.

Where do you travel to compete?

I travel all over the United States to compete. I show in Texas, Oklahoma, Tennessee, Ohio, Las Vegas, Arizona, and Missouri to name a few places.

Describe one of your favorite memories or accomplishments?

One of my favorite memories

My advice is do not give up or get frustrated. If you make a mistake, learn from it and move on. There is another horse show next week, next month, and next year. Champions are not made over night. I have had to practice and learn a lot of lessons along the way to get to where I am. The best feeling in the world is when all of those hours of practice pay off. Thank God every day for the opportunity you have to do what you love.

Dee and Gene Schade were both in banking when Gene started selling gold coins out of a briefcase in the ‘70s. By 1981, Dee Schade left the banking world behind to manage Casa de Oro Jewelers full time. In the beginning, they wholesaled 14k gold jewelry, gold coins, and precious metal bullion. Since then, they have evolved into a more diversified retail jeweler, opening the doors to their current location in 1989 and began selling to the public in 1995. In 2005, the Schade’s were approached by The Auxiliary to Driscoll Children’s Hospital to help create an angel charm from a patients drawing for “Project Artwork.” Today, Casa de Oro donates all labor and materials for the charms with 100% of sales proceeds going directly to The Auxiliary. The Auxiliary’s work at Driscoll Children’s Hospital is a vital part of keeping the hospital an affordable healthcare facility for children in need. This year’s charm is a beautiful angel relief and was designed by a patient named Josh who recently passed away from leukemia.

The charms are $18 and can be purchased online or in person at the Driscoll Children’s Hospital gift shop, or Casa de Oro Jewelers.

Although the store had very different beginnings 35 years ago, it still continues to prosper and thrive by being diverse and adapting to industry changes. Today, the store carries a wide variety of fine jewelry, diamonds, gemstones, minerals, gifts, supplies and equipment. Also, they can create custom high-end jewelry and have the ability to repair just about anything made of metal. Bryan Tucker, their resident Graduate Jeweler Gemologist, is a master at his craft and the Schade family feels very blessed to have him on their team, for over 15 years.

Terry and Stefany plan to continue the Schade legacy that Dee and Gene have created in the community, of building trust, providing customer education, and making everyone feel right at home. Stop by for a visit and have a steaming mug of hot chocolate this winter season.

Luckily, the New Life Refuge Ministries (NLRM) of Corpus Christi is looking to change all of that.

nxiously looking around, the shy pre-teen with “Daddy” tattooed on the back of her neck and bruises on her arms, is greeted by an older man. The girl: a victim of human sex trafficking. The man: a profiteer, exploiter, and abuser. They met on the internet.

Female trafficking victims are first prostituted around the age of 12 to 13 years old.

“In one month there were 625 children being sold in online sex ads in our state,” reads the ‘South Texas At Risk’ brochure of New Life Refuge Ministries (NLRM) of Corpus Christi. This all-volunteer, faith-based organization, headed by Executive Director, Minta Moore, strives to build awareness of human sex trafficking through education. Partnering with Communities in Schools of the Coastal Bend, volunteers provide information to Junior High and High School students on the types of tricks that traffickers use and signs that a friend or fellow student is possibly being lured by a trafficker.

Most people might guess that drug dealing is the largest criminal industry in the world. But many may not know that human trafficking is the 2nd largest and the fastest growing. January is National Human Trafficking Awareness Month and NLRM has several fundraising events planned: a tennis tournament at

CC Country Club, Julian Gold fashion show, and an annual gala ‘The Celebration of Courage.’

The vision of NLRM is to “provide a safe haven” and healing for young female survivors of human sex trafficking. Construction is underway for New Life Refuge Home of Hope, a cottage style home for underage victims. “A REFUGE where, through trauma counseling, lifeskills training, schooling and therapies such as art, equine, and drama; beauty can come from ashes,” states NLRM vision. “This is a tremendous need,” for these young girls, explains Moore. “They’re getting raped 10, 20, 30 times a day, they’re getting beat up, they don’t know when they’re going to eat again; they live in a constant state of trauma that creates special care needs,” says Moore.

A Worthy Grant

Minta Moore, Executive Director of NLRM, was nominated by local Insurance agent Jim Johnson and won a $10,000 grant from the Royal Neighbors of America (RNA). Only 10 awards are given each year by the RNA. Executive Vice President Chris Sistrup traveled to the Coastal Bend October 24th to present the grant to Minta Moore. That Saturday was national “Make a Difference Day.” This surprise check presentation was strategized and planned by Michelle Hilliker of RNA, Gaye White, district director for state representative Todd Hunter and Sheri Henneberger, Port Aransas Chamber of Commerce communication manager and Jim’s finance. They were charged with the task of setting up the travel, securing media partner KIII-TV and getting Minta to the TV station. to NLRM. Moore visits the coffee shop weekly; occasionally operating the espresso bar as one of the baristas.

Funds from here along with various fundraising events in Corpus Christi have produced $160,000 of the needed $300,000 for the Home of Hope, but Moore’s expectant faith has her “trusting for the rest,” she said.

One woman’s mission to raise money to build a safe haven for underage girls victimized by human sex trafficking has burgeoned into numerous educational and outreach events. Human Trafficking Intel training at Del Mar College for local law enforcement, teaching the ‘Trap of the Trafficker’ at local detention centers and providing outreach at The Boys & Girls Club and local strip clubs; all pursuits in preventing entrapment.

Many girls “get lured into the life at an early age” and then get stuck with feelings of unworthiness where their mindset is “no one will want me,” explains Moore. The necessary healing can begin at the future Home of Hope.

Celebrating youthful vision and creativity through Art WORDS: Madeline Schmidt

According to research, students who study the arts perform better in the classroom and on standardized tests. They are also less likely to drop out of school. Even further, an arts education can help students develop the self-discipline, cooperation, and self-motivation necessary for high achievement in school and their future. Flint Hills Resources and Art Museum of South Texas are dedicated to helping our youth envision a bright future and develop the discipline and creativity to achieve their dreams.

The Visionarios Youth Art Contest allows students grades 1-12 an outlet to express their creative side.

This year’s theme focuses on the integration of art into the STEM core curriculum. Students compete in categories including wet media, dry media, digital and photographic media. Their artwork is exhibited in the Art Museum galleries.

Winners and their families are recognized at an annual awards banquet.

This year’s theme of art integration is an approach to teaching in which students construct and demonstrate understanding of core curriculum through an art form. Students engage in a creative process that connects an art form and another subject area and meets evolving objectives in both.

The STEM curriculum stands for Science, Technology, Engineering, and Math. It was developed in response to a shortage of qualified professionals in the American workforce in the STEM fields.

Initiatives were created to integrate curriculum in the disciplines of Science, Technology, Engineering and Mathematics at an early age thus expanding their education and preparing them for the workforce of tomorrow. According to the Department of Education, “Technology helps us communicate; Math is the language; Science and 34 the bend magazine

Engineering are the processes for thinking; all this leads to Innovation.”

Adding Art into the equation only enhances students’ understanding of the STEM concepts.

The Visionarios Contest uses the acronym STEAM, which adds Art as an important part in educational development. The Arts encourage creative thinking and problem solving that in turn produces the innovation that the STEM program seeks to create.

by January 22nd at 5 pm. Students are allowed to enter with their parent’s help and should be inspired by the student’s own interpretation of The Art of Science…Technology, Engineering, and Math.

Goodwill is often synonymous with compassion, kind deeds, and giving back. Our local Goodwill stores provide jobs and job training year round for residents, but it’s the GOOD in Goodwill that embodies the significance of the holidays: An abundance in giving.

You clean out a closet, free-up space in your attic and rifle through the garage, producing a sizeable pile of underused items. ‘One man’s trash is another man’s treasure’ - such as books to be read again, jewelry and clothing to be re-worn, furniture conditioned for a newlywed or college student and household items and tools that haven’t outlived their usefulness. Donating these items to Goodwill is giving back. It’s easy to just throw unwanted items away, but collecting, bagging and transporting them to a Goodwill donation station may help more people than you think. But Goodwill provides so much more than just selling used items to offer affordable goods.

Your donation helps create jobs for those who may otherwise have a hard time finding one - troubled teenagers, ex-offenders, homeless, veterans, people with disabilities, and more.

“I think he is ready to go to work without me,” says Meghan Wommack, Goodwill Case Manager and Tyler’s supervisor, job coach, and mentor. Once Tyler graduates from the WAT program, the assistance continues with placement services where an advocate makes sure his application is in order, and he is prepared for an interview. “We want to make sure he gets the job and keeps the job,” explains Wommack. Job coaching is provided at the new job if needed, and follow-ups are routinely met to determine from both employee and employer how Tyler is proceeding.

Tyler’s nametag is clipped to his jean pocket, at 6’ 3” he hangs a shirt on the rack. He locates empty clothes hangers, sends damaged clothing to salvage, and assists a customer. Tyler Stepp, a 19-year-old graduate of Rockport High School, who is autistic, works five hours a day at the Goodwill store in Corpus Christi.

Tyler participates in the Work Adjustment Training (WAT) and Personal, Social Adjustment Training (PSAT) program. He works as part of a three-person team, and it comes with its own set of challenges.

“We get stressed about keeping up with our team; but we apologize and forgive each other and try to do our best,” says Tyler. A work day includes some classroom time learning about budgeting, dressing properly, punctuality, and proper speech. Now at the end of his four-month training, his two favorite parts of the job are “meeting new people and helping customers,” explains Tyler. His goal is to get a job at Wal-Mart and possibly go to college to study welding or art.

Tyler creates Anime pencil sketches in his free time and helps care for his 2-year-old sister.

Wommack is also in charge of the Yes! Camp (Youth Employment Summer Camp) where at-risk youth work at Goodwill for two weeks. They receive job training, learn to write a résumé, conduct mock interviews, practice appropriate workplace behavior, conversation and attire. Many participants are referred to the program by the Neuces County Detention Center or a high school Truancy Officer. A Goodwill employee for 32 years, Leonor Briones helps train the Yes! program campers in sorting household items and entrusts them with a life philosophy: “I make them aware that you have a life and you give thanks to God that you have a job,” says Briones.

Collector’s items, sports memorabilia or items of higher value are culled from the Goodwill stores and posted on the website. Manager Stacy Younger was a one-woman show, sorting, collecting, photographing, posting and shipping items for sale. But now in her third year, she manages ten employees and runs two shifts. “They are learning a new skill set to be relevant in the workplace,” says Younger. AbilityOne Program

This is a federal state-setaside program for federal contracts, designed to specifically employ people with severe disabilities. One example of this is the Document Destruction services provided on site at the Port Avenue Goodwill Store. Documents are shredded for local IRS, banks, offices or individuals. Employees must pass security measures to work in this department.

Customers can stay and watch your documents as they are destroyed on the spot, according to Majorie Boudreaux, Goodwill VP, Marketing and Fund Development.

Large bales of paper are bundled and sold to a vendor as pulp for recycled paper. Boudreaux proudly explains this is just another avenue Goodwill provides to decrease items usually doomed for the landfill.

Volunteer Income Tax Assistance

Goodwill conducts a résumé workshop for inmates at Neuces County and the Work 2000 Program provides homeless persons with clothing, soft skills training, employment placement and 180 days of retention services.

“The intention behind this program is to get them employed, but also so they can get stable housing,” says Boudreaux.

D’LISH FOODS Nicole Kindzirsky dreamt of joining the food industry.

The Early College Programs Coordinator, Kindzirsky had no prior restaurant experience. Recruiting her mom, the two successfully dabbled in catering out of her home kitchen. Her word-of-mouth cooking endeavor blossomed into a food truck business the day her husband surprised her with a truck. Bought through Johnny’s Lunch Boxes, Kindzirsky’s truck features family recipes of Asian fusion with Filipino flavors. In addition to food, Kindzirsky also offers cooking classes. “We’ve just had such a great response with my sushi class,” says Kindzirsky. While she loves cooking, her favorite part of having the food truck is greeting the customers. She relishes when she’s asked to surprise someone when taking an order. Orders are custom made, so patrons enjoy having something special made when Kindzirsky is not too busy. “People aren’t aware that you can get honest, true restaurant quality food out of a food truck,” Kindzirsky explains. While she enjoys her time with the food truck, Kindzirsky sees growth in her future. “We definitely see taking D’lish Foods and creating an entire brand off of it,” she explains. Catering, a co-op, brick and mortar store, they are all expansion plans for the future.

Typical Day in the Life of a Food Truck: The process starts several hours before the event. The first stop is at the local grocery store to buy fresh produce, meat and all other necessities. Prepping the food is the next step, before driving off to the location of the day. When the day comes to an end, all remaining food must either be donated or disposed. Finally, it’s time to clean the food truck and hit the road before starting a new day.

The MIX Grill is all about experimentation, both with recipes and equipment. “We always change it up; there’s no set way to do anything,” says owner Carlos Ramirez. Running The MIX Bar and Grill downtown for two months in 2014, Ramirez saw that 80% of sales were food. Desiring to cut down on overhead costs and to be mobile, he bought a prior snow cone/concession truck on New Year’s Day 2015, closing the bar in the process. Ramirez, who has been in the restaurant business for about 15 years, enjoys having a large, versatile menu. “I think that’s the best part about having a food truck, is just being able to change up the menu to whatever you want to do,” he says. While he occasionally parks outside the Southside Cantina, Ramirez is mostly involved in different events. “Food trucks are probably inspected way more [than restaurants] because they inspect you at almost every different event,” he explains. As with other food trucks, Ramirez stocks fresh produce and supplies daily, with anything not used disposed of or donated that evening. “It’s constantly fresh, it’s constantly original, it’s constantly something different,” says Ramirez.

Benjamin Carrizalez bought a former CCISD delivery truck and outfitted it as a food truck, with some equipment coming from former local restaurants.

Opening for business in November, 2014, he serves authentic, traditional Mexican food with a twist along with some Asian-fusion offerings. With a limited restaurant background, he’s learning as he goes. “It’s been an experience learning the whole restaurant business, especially since it’s mobile,” says Carrizalez. Working with partners and family, Carrizalez focuses on maintaining a mobile food truck that participates in events and doesn’t stay parked in one spot. Carrizalez also loves doing catered events. Kitchen manager, Samantha Battista, explains the appeal of food trucks, “You can see the whole kitchen, you see the whole line, you see your food being prepared.” In addition to being able to visualize the food preparation process, ingredients are usually fresher, as they must be purchased almost daily. “The food’s usually fresher; our food is all fresh,” Battista explains.

CALLIE’S CAJUN Callie and Gary Ford entered the food truck business as a means for self-employment. “Callie and I were tired of working for other people,” explains Gary. A former smokehouse trailer was their first vehicle used to introduce Callie’s New Orleans cajun-inspired food to the Santa Fe, New Mexico, area in 1999. After spending twelve years in Santa Fe, they relocated South.

Seeking a warmer climate and access to a beach, they moved to Corpus Christi in 2011. “Corpus seemed like just a real nice choice,” Gary says. “Real close to the water, great climate and great people.” Before heading South, the Fords traded in their trailer for a bus. A friend was auctioning off several old airport shuttle buses, and the food truck was purchased for one dollar.

“It was a mess,” Ford recalls, chuckling.

Repairing and rebuilding the food truck themselves, the Fords had Callie’s Cajun Food Truck up and running after 3 months. Their food truck contains a six burner range with an open flame and oven, large commercial refrigerator, commercial freezer, microwave ovens, deep fryer, and sink. The Fords usually park in front of the School of Science and Technology, Tuesdays through Saturdays, from 4:00 pm until they run out of customers. They also participate in special events, such as A La Mano, at which time they offer kid-friendly fare. Married for almost 20 years, the Fords have spent 16 of those in the food truck business. “We both like cooking and we both like eating,” Gary says.

The Double “Outlaw” Burger

Mark Beeston’s 34-year background in the corporate restaurant world more than prepared him for operating his Rockport-based food truck. “I’m a full-blown certified restaurant,” Beeston explains.

After deciding to open his own food truck, Beeston and his wife settled in Rockport since they, “Love the fact that it has everything here or it’s near-by, but it has a much more relaxed feel.” Beeston, whose trailer was built in a Georgia factory to his specifications, has been serving his personal recipes since 2014. “Everything is fresh and from scratch,” he explains. Initially envisioned as a part-time endeavor, the popularity of the food truck grew the business into a five-day-a-week event. “We keep very busy and I have an absolute blast doing it,” Beeston says. He enjoys grilling burgers outside on the porch attached to his trailer. “I get to visit and talk and kind of play with my guests when I’m out there cooking,” he says. “It’s really about fresh, great food and fun.” Beeston parks in front of Drifter’s Resort, Tuesday through Saturday, from 11:00 am to 7:00 pm. He also participates in Rockport Market Days the third Saturday of every month.

It’s spelled “8TE” and pronounced like the words “eight” and “ate.”

“I’m a sucker for puns and a play on words, and in my culture (born and raised in CC, but my family is Chinese) the number 8 is very lucky,” explains owner Megan Datlee.

Naturally, she figured she should be open from 8am - 8pm to keep with the theme. So for 12 hours a day, delight in this new local restaurant that has a focus on American dishes with a modern twist. Inspired by casual cafés found in bigger cities, the team at 8TE is ready to offer Corpus Christi a fresh spot for locals and visitors to enjoy! They pride themselves in being as homemade and from scratch as possible. Only open a few months now, Datlee always felt that Corpus was lacking a casual spot like 8TE. When given the opportunity, she knew she wanted a place with simple, classic food that didn’t encourage customers to over-analyze or scrutinize dishes too seriously. Creating the menu herself with this in mind, she then added in her love for industrial interiors with a bit of shabby chic. To pay homage to the local economy, Datlee sources her large selection of beer and wine from Texas craft beers and Texas made wines. She’s always trying to cycle in new Texas breweries/beers for customers to try. Datlee completely believes good food should be without any crazy techniques or theatrics. “In good food we trust.”

THE POST James and Susan Gonzales found inspiration for their new restaurant, The Post, from their travels across the United States. “When my husband and I travel, we love nothing more than to indulge in great food and drinks.

And during these travels, we saw a change in the food industry- there was a push for a gastropub,” explains Susan. A gastropub is a British concept: A pub that specializes in high-quality food, with a condensed menu.

These menus are designed to be enjoyed in a communal setting and each dish, well it may read as a side dish, is in larger portions and meant to be shared (alongside a cocktail or beer of course!). The concept and execution was not something that happened over night, but over the course of a couple of years. The goal is to support other locally owned businesses such as the weekly Downtown Farmer’s Market, where Chef Robert Flores buys many locally-grown produce and ingredients. Flores also has a great relationship with several locally owned vendors and farmers. With its outstanding Lamar Park Shopping Center location, the Gonzales family saw that it was lacking a place for food and drinks, a place that one could come to after shopping to relax with a glass of wine or cocktail while enjoying time with friends of family.

The Post was named in honor of the original use of the location- the Lamar Park Post Office.

It was converted into a retail spot years ago, but they loved the history of the space and couldn’t be happier to be opening here. What can you expect to eat? American Fusion! Corn Dog Batter Fried Shrimp, Philly Cheesesteak Eggrolls, and Funnel Cake Fries are just a few little starters.

THE GONZALES’ USED THE POST OFFICE AS THE INSPIRATION THROUGHOUT THE ENTIRE RESTAURANT - EXPOSED BRICK WALLS, CONCRETE FLOORING AND BAR TOP, AND EXPOSED RAFTERS IN THE CEILINGS. THEY EVEN RECYCLED OLD RAILROAD TIES FROM THE LOADING DOCK LOCATED ON THE SIGN, AND EXPANDED THE LOADING DOCK INTO A BEAUTIFUL OUTDOOR PATIO.

Taphouse and Grill This “industrial-chic elite sports bar” attracts the sports fans, the car enthusiasts, and the foodies alike! Owners Shawn and Sandy Etheridge and Chad and Kimber Gorczyca guarantee to provide a unique dining and entertaining experience, with two Corvettes at the center of it all. The perfectly running Corvettes (‘70 & ‘77) hoisted over the bar were bought by Shawn and Chad, but as the story goes, their wives said “sell the cars, make room for the bar!” As all good business men can find a solution to any problem, they decided to keep their cars and display them; hence the name Stingrays. “We love watching people’s reaction when they notice the cars. Sometimes people don’t notice them until they read the menu.” Their black drum comes from a local fisherman and most of the menu ingredients are made in house, such as their pizza dough, and all sauces and dressings.

Plus, the brick wood-burning oven is a great conversation piece. Great food, friendly service and the best brews at the beach are here for you! They also love their customers and describe it as a “thrill to talk to them when we bring their food or drinks!” As Manager Dawn Dickinson says, “When there is a hot game on, the energy from the fans is electrified. It’s a site to see and be part of.” Bring the kids and your pets – their patio is pup and Pampers friendly!

Angry Marlin Restaurant & Palapa Bar Reinventing an old space, this flavorfully-colored new restaurant promises that there’s NO way anyone can miss it! Ricky Nichols and Glenn Williams, the owners and masterminds behind this new island restaurant, are attributing their years of restaurant experience and love of the sea to the future successes of the Angry Marlin. “I have wanted to open this concept since 2007 so that The Island would have a restaurant that offered a true island experience, much like I experience every time I have visited the Florida Keys,” Nichols says. The main focus of the restaurant is to offer a dining experience that will encompass about four different concepts at one location. This way, each guest has something to occupy their whole evening, whether it’s dining inside or having a drink in the lounge, or dining outside in the beautiful landscaping, then moving out into the cigar lounge for an after-dinner drink and a cigar, or going to watch the live entertainment and dance on the other side of the property. For extra authenticity, the dishes are made from scratch, and the Chef/Owner Williams incorporates some great southwest items such as Green Chile, Hatch Chile, and a blue corn flour tortilla. Belly up to the bar, as the bar top changes as often as the island sunsets!

Described as Rockport’s premier dining experience, owners Lou and Valerie Manendez and son Lou, III, or just simply known as ‘Third,’ say they pride themselves on serving only made-from-scratch fare. Friends and family were always coming over - dinner at the Manendez house was too good to miss. They were encouraged to open the restaurant, but to do it as homey and refined as possible.

The Groove is an open kitchen concept, with eclectic dining and a boutique ambience. Specializing in prime steaks, prime seafood and wood-fired pizzas, there’s a little something for every discriminating craving. Nothing in the restaurant is ever frozen, and they made a

conscious decision not to invest in a fryer. Fish is delivered daily, and their number 1 best seller is the Chilean Sea Bass. They often use the wood fire pizza oven to bake the fish, giving it a very special sear.

This is a classy place with special attention given to every detail from the live music, to spectacular recipes, to the hostess and wait staff in black apparel. Every night, the owners like to walk around to each table, introduce themselves, and make sure all is to their guests’ liking. The best compliment Lou says he’s ever received is when a guest told him “For a minute, I forgot I was in Rockport.” Perhaps small in size, they are BIG in service and flavor.

The bright neon “Open” sign invites you to step in and enjoy the good, fuss-free food. Serving up specials nearly every single day for lunch and dinner ensures you’ll always have the variety that IS the spice of life. Owners Mike and Bob Lynch opened The Grille in March of 2015 on a tiny budget and lots of elbow grease. They sold their restaurant in Bandera to move back to the Coastal Bend and be closer to most of the grandchildren. Mike had just taken a brief hiatus from “chef-ing” after the birth of his youngest daughter, so it seemed like a good time to have a meeting of the minds. The Grille is based on a concept and menu that Mike’s parents have used on and off since he was about eight years old. With a few additions from Mike like the specialty burgers, jalapeño bottle caps, and cheese steak omelette, at The Grille, you’ll find great, American cafe food at a low price. Try a burger, because the patties are handmade from scratch, as are their soups.

There is a fair amount of their ingredients sourced from around Texas, but they look forward to moving toward true Farm to Table dinners. The Lynchs would like to give a special thanks to Justin Butts with Four String Farms, Downtown farmer’s market, and Corpus Christi Aquaponics!

ummer in Corpus Christi by the Bay is always perfect, and a wedding in the Summer by the Bay is even better. The Corpus Christi Yacht Club was the perfect setting for the beautiful wedding of Melissa and Marvin.

Original plans for this wedding were designed to be at the Town Club. Last minute arrangements had to be made to move to a new venue just days before their big day. Transferring the design details to an outdoor and windy venue was the task of the Wedding Designer/Planner JoAnne Howell of Oh Goodie Designs + Events.

The ceremony was now set on the patio under garden style lights wrapped in greenery and vines. Gold chivari chairs with custom printed ceremony fans lined the patio with an aisle plush full of blush colored rose petals and candles lead the way for the Bridesmaids as they took their places in front. The darling flower girls with their floral wands with draping ribbons, and ring bearer with his water color fabric banner proclaiming “Here Comes The Bride,� made their way down 64 the bend magazine

by Ed Sheeran as the Bride made her way to her Groom.

The sweet ceremony concluded with the Bride and Groom recessing down the aisle as guests tossed their paper airplane programs toward the happy couple. The Groom is stationed in California as an Air Force Captain so the custom designed paper airplanes were a special surprise.

After the ceremony, the guests and wedding party enjoyed a cocktail hour on the patio with Mariachis serenading the guests and new couple. Once dinner was served, the guests moved to the formal dining room and enjoyed their dinner service. Lush florals with blush peonies, garden roses and trailing greenery sat in gold compotes. We raised a glass with a champagne toast as the newlyweds cut their cake.

After dinner, the guests moved to the restyled patio for an evening of dancing and fun under the garden lights. The summer breeze and harbor lights made the perfect backdrop for our dancefloor. Guests, hot from dancing in the summer heat, were treated to fresh raspberry sorbet with mint. As the evening progressed and the fun was unstoppable, servers then passed fruit flavored ice to refresh the guests. So much fun was had that the party went deep into the night and the dancing could not be stopped.

Once the Bride and Groom left the reception to downstairs, they were greeted by guests with an array of ribbon wands, wedding trumpets and bubbles as they exited the venue. It was truly a lovely evening and a start to a beautiful new life together. An amazing weekend full of love and laughter as family and friends gathered from as far as Germany and all parts of the country to celebrate.

Many family traditions were celebrated as the two families came together.

he small Saltillo tiles resemble a sophisticated red carpet, leading to a home of history and decades of high-class owners and guests. The green bronzed antique door knocker takes you back to the ‘30s, when the prestigious estate was born.

Sometimes an address says it all, and Ocean Drive certainly doesn’t need much explaining. Famous American standup comedian, actress, singer, dancer, and voice artist stayed at the home with Dr. Shoemaker for 4 nights at one point while she was in town for a show. Best known for her eccentric stage presence, self-ridiculing humor, unique hair and clothes, and one-of-a-kind laugh, what Dr. Shoemaker notably recalls is the princess cut 50 carat diamond ring that adorned Diller’s finger. After her stay, she sent Dr. Shoemaker a plaque that reads “Phyllis Diller Slept Here.” This plaque hangs on the door of the suite she stayed in.

The downstairs in the main house features a private wine cellar. The home sits at 20 feet above the water, the highest elevation on the Texas coast, which enabled the home to include a rare basement. There are less than half a dozen homes in the Coastal Bend that can boast having a basement.

Hugged by wooden walls and the smell of a fresh wine cork, this is a subterranean bistro-style space that is perfect for romantic dinners.

Dinner parties are a dime a dozen in this residence, where guests would begin in the wine cellar with some cocktails, and perhaps a charcuterie board, while the chefs and wait staff prepared the main course upstairs. Then the dinner guests would come upstairs and dine in the formal dining room while the team then prepared the third floor library for dessert and after-dinner drinks! This progressive dinner party arrangement is just one of Dr. Shoemaker’s favorite memories in the home.

In 1997, Dr. Shoemaker decided that it was just too big of a home to have all to himself, so he began running it as the Ocean Drive Bed and Breakfast! The estate couldn’t scream “entertain” louder. The main house includes three suites: The Lone Star, Caribbean, and Capetown. Each comes with its own bathroom and living room. Expansive living, formal dining, chef ’s kitchen, and a third floor eagles nest office/ library are also a part of the main home. Balconies surround the home providing the sought after panoramic views of the Corpus Christi Bay and skyline. The guest house has two private entrance suites, The Marquesa and Key West suites and comes fully appointed with living areas, full kitchens, two and a half baths, high ceilings, dry sauna, breakfast room, and attached garage with four additional parking spaces.

That makes for 5 total handsome suites, and the home itself is adorned with memorabilia throughout. Signed and autographed photos of athletes and celebrities, safari keepsakes, historic reminders, and even dresses deck the halls and rooms.

Between 1997 and 2009, the B&B played host to many celebrities as it was the perfect “off the map” escape. No one knew they were there.

For a time, Dr. Shoemaker lived there while it operated as the B&B. He says it was the “greatest lifestyle!” New sheets each day, food around the clock, it was like staying at the fanciest 5-star resort at your very own home!

The home isn’t the only appeal. The lushly landscaped grounds have a resort-sized heated pool and hot tub. Very few accommodations in the area offer the space and luxury in such a private and secure area providing first-class relaxation.

There had once been orchards, even a winery on the island, but in 1962, when legendary developer Carl Krueger purchased Frandolig Island it was bare, except for promise and potential. Imagine that your house had a large switch near the front door and when you come into the house, you flip that switch and every light in every room comes on. All light is either completely on or completely off. That doesn’t make much sense does it? Unfortunately, most conventional air conditioning systems installed in homes operate this way; the whole house either has to be cooled or heated and every room has to be the same temperature.

Most air conditioning systems deliver air to individual rooms through a duct system that is typically located outside of the air conditioned space. Air that has been cooled to 45 degrees will travel through a duct system that is located in a 140 degrees attic and then exits through ceiling grilles at 65 degrees. Out of all of the energy used to lower the temperature of the air, 20 degrees is lost before the air enters the home. f the 45% of Americans who make a New Year’s resolution, approximately 8% actually achieve their goal. “Resolutions are mostly nice ideas, and they fail because of the execution and the lack of willpower,” explains life coach and digital marketer Alex Karis. People are initially excited to make a change at the beginning of the year, and many of those who want to lose weight or stay fit and healthy join a gym in January. “We absolutely see an increase [in gym attendance] at the start of a new year,” says Sunny West, co-owner and NASM certified personal trainer at Island Fitness.

things.” Most resolutions are general: lose weight, get healthy, get organized. They lack a specific time oriented goal. Instead of resolving to eat more healthfully, for example, start by deciding to add in more greens. Determine at which meal the greens will be eaten, along with how much. ‘Eat salad’ should then be written on a schedule at the predetermined time every day. “Scheduling it makes it real,” explains Karis.

Creating a feeling of accountability for yourself by telling friends and family can often be very effective. “Because you put it out there in the world…you feel a sense of responsibility to completing [the new habit],” says Karis. The goal is to routinely practice the new habit until it becomes a natural part of daily life. Then, move on to the next small goal that helps bring about the accomplishment of the broader resolution. Once eating salad is second nature, determine the next small habit to practice to help reach the resolution of eating more healthfully.

Karis recommends enjoying the journey a resolution creates.“Then you’re conditioning yourself to enjoy the process of creating new habits,” he explains. Do this by establishing frequent rewards at milestones, such as the end of each week. If it is not possible to reach said milestone, it’s time to review and reflect. Make changes as needed so that the new habit is achievable. “In the end, consistency is key. If you do not see yourself in a year from now doing what you set out to do this week, then you may want to reevaluate your plan,” says West.

According to the New York Times, the average American will gain about 1 pound of body fat during the traditional holiday season from Thanksgiving through New Year’s. That may not sound like much weight until you start adding up the years. If you gain a minimum of one pound of body fat every year starting at the age of 20 that extra body fat could negatively impact your health by time you are middle aged.

If you are healthy enough to exercise, but are not yet fit, you may choose to do the Lower intensity program two times during the week and walk or ride your bike on the other days. Below are several different exercises, that, when paired together with the right intensity, length of work time and rest time, can stoke your metabolism and make you an efficient fat burning machine not only during the holidays, but any time of year!

EXERCISE 1. PLANK TO PUSH UP – Starting in plank position with your forearms on the ground and your palms up, turn your right palm over and press hard into the ground while maintaining a rigid posture throughout your body.

Next turn your left palm over and press your left hand into the ground while maintaining full body tension. Next repeat the process coming back down. Switch arms each time going up to push up position. Try and keep a straight line from you head to your heals without your hips rotating or rising into the air. Repeat for the desired amount of work time.

2. ARM BAND BENT OVER ROWS - Standing on a resistance band hinge over at your waist, soften your knees and push your hips back. With the band and/or handles of the band in each hand pull/row your hand back towards your ribcage and your elbows towards the ceiling. Lower hands

towards the ground and repeat for time. Repeat for the desired amount of work time.

3. IN AND OUT SQUATS – with your feet together step out with your left foot about shoulders width and squat until your upper leg is parallel to the ground, then return to your starting position and do the same thing with the right leg. Repeat for the desired amount of work time.

4. SINGLE LEG CONE TOUCHES LEFT LEG/RIGHT HAND - Standing with your feet next to each other begin to push hips back, soften your left knee and pick up your right foot. Reach your right heal as far back as it can go while reaching your left hand towards the cone. Touch the top of the cone and without losing balance return back to the starting position. Repeat for the desired amount of work time.

Building on a Dream:

Colston Family Wellness Center Unveils Expansion November 13, 2015 (Kingsville, TX) Four years ago, Kingsville resident Melissa Elliott realized her health had reached a critical point and she needed make a change for the better.

She began working out at the Colston Family Physical Rehabilitation and Wellness Center and now is thankful to have shed 162 pounds and have her life on track.

“I couldn’t be more grateful for this facility that has truly been my happy place,” Elliott said. “The staff has always provided support for me - they are awesome.”

After seeing so much success, Elliott now spends her free-time as an instructor at the gym to help others who may be in the same need of motivation.

Located at CHRISTUS Spohn Hospital Kleberg, the Colston Family Physical Rehabilitation and Wellness Center has become a destination in the Kinsgville community as a place to stay well in mind, body and spirit.

Now the Wellness Center has unveiled a fourmonth-long expansion to its second story, thanks to the generosity of the Bill Colston Jr. family and South Texas Charity Weekend donors.

The new renovations provide even more opportunities for area residents to get in shape – including an indoor walking track, dozens of new workout machines and even a Re-Energize juice bar.

It’s all aimed at creating a healthier, more active community, said Karen Bonner, Vice President of

Philanthropy for the CHRISTUS Spohn Foundation.

“The Colston Family Physical Rehabilitation and Wellness Center is not only a gift for the Kingsville area, but it’s a gift for all of South Texas,” Bonner said. “We are grateful for our generous donors and community advocates who help strengthen our healing ministry each and every day.”

CHRISTUS Spohn honored the Colston family and South Texas donors with a special ribbon-cutting and blessing ceremony, which included gym members who too are transforming their lives.

Kingsville resident Benny Guerra didn’t even know he had experienced a heart attack a few years ago when he went to the Emergency Room, only to be told he needed to make major life changes to avoid future complications.

Now he is a regular at the Colston Wellness Center, and an inspiration to others.

“I just started coming in every morning and doing my workouts, and it was slow going at first, but then I really started noticing a difference in how I was feeling,” Guerra said.

Associates say Guerra and Elliot have become part of the CHRISTUS Spohn family, an example of how early intervention and a dedication to a healthy lifestyle can make a big impact.

“This really has been a blessing for me and my family,” Guerra said.

alking into Fillingood Bakery takes you back to your favorite French patisserie. Behind the counter, an inviting list of sweets, written in chalk, hangs over a glass case filled with gorgeous confections.

Claudia Hurt, the baker and owner of Fillingood, greets you with her warm voice as you sit down at a European-inspired table for two. She offers samples of freshly baked bread, elegant desserts, and her infectious smile. Hurt has the glow of one who spends her time doing what she loves.

We asked Hurt to share her expertise with The Bend by making her favorite holiday desserts. She gave us three incredible recipes that will impress even the most discriminating sweet tooth.

Hurt finds inspiration in nature, seasonal ingredients, and her love of Europe. She tops her melt-in-your-mouth sugar cookies with an elegant sugar lace snowflake that she meticulously renders by hand.

Of her food art, Hurt said, “It’s an art that’s getting lost. I want to preserve it.”

Plump, fresh figs top Bavarian crème in the fig tart created by Hunt’s team. We could no sooner snap a picture of this beautiful tart before a Fillingood patron snatched it up.

The underutilized persimmon finally gets its due as the main ingredient in Fillingood’s persimmon cake. This spongy, moist cake soaking in Bourbon sauce is generously topped with rich vanilla cream and crunchy pecan praline. The delicate persimmon flavor adds a bright note to this decadent treat.

Claudia also made us her favorite – a panna cotta infused with Madagascar vanilla beans. This velvety custard is so light, you will struggle to remember the flan of yesteryear.

“I would love for people to slow down and enjoy the simple things in life: spend time with their family, stop and smell the bread, connect with friends,” Claudia said. And she does, every day at Fillingood.

Shortbread Cookies with Royal Icing Ingredients: 4 sticks unsalted butter, room temperature 1 cup sugar

Pinch of salt 1 large egg 1 tbsp vanilla 4 cups pastry flour

Directions: With a hand or standing mixer, cream the butter and sugar together. Add salt and egg. Beat until absorbed. Scrape bowl using a rubber spatula. Add vanilla and flour until just combined. Do not over mix.

Chill dough.

Panna Cotta Ingredients: 1 cup milk 1/4 tsp gelatin 1 whole Madagascar vanilla bean 1/2 cup sugar

1 1/2 cup heavy cream or half and half, whipped Tart shells, baked and cooled

Directions: Soften gelatin with some of the milk.

Scrape vanilla bean and mix with sugar, distributing completely.

Reserve pod for a future use.

Preheat oven to 350°F. Roll out the dough and cut out shapes.

When custard is almost set (thick), fold in whipped cream in 3 stages, taking care not to deflate.

Bake in ungreased pan for about 10 min or until light golden in color.

Fill pastry bag with custard and use to fill tart shells.

Cool down before decorating.

Royal Icing Ingredients:

Fig Topping Ingredients: 1 cup sugar

3 1/2 cups confectioners sugar

3-4 drops, lemon juice, freshly-squeezed

1/3 - 1/2 cup milk or water

Water, as necessary

Hint of vanilla Blue gel color

Directions: Mix all ingredients, holding back some of the liquid, until no lumps are visible.

Add enough liquid to see a ribbon trail in the glaze. Decorate top of cookie.

Expert Tip: You can also use melted chocolate. Trace figure on parchment paper and pipe with chocolate then freeze.

Directions: Heat sugar on medium high heat.

Add enough water until mixture resembles wet sand. Add lemon drops.

Let melt. Stir and make sure the color is all the same across the pan.

When it reaches light gold color, add figs and cook slightly. Do not overcook figs or they will break.

Strain, cool down, and add as topping for tarts.

Persimmon Cake with Bourbon Sauce & Carmelized Pecans Ingredients: 1 1/2 cup persimmon purèe 1 1/2 cup allpurpose flour 1 1/2 tsp baking powder

Sift together flour, baking powder and soda, cinnamon and salt.

1/2 tsp cinnamon

1 cup unsalted butter, melted

In a separate bowl, whisk milk, cream, purèe and sugar on medium speed. Add egg and beat on low and mix until combined. Mix in butter.

Fold in flour mixture by hand.

1/2 cup whole milk

Butter and flour 5” cake pans.

1/2 cup heavy whipping cream

Fill 2/3-3/4 and bake on 350°F about 20 minutes, or until the center is set.

1 1/4 cup brown sugar

While cake is still warm, add the bourbon sauce.

1/2 tsp baking soda

Caramelized Pecans Ingredients: 1 cup pecan pieces 1 tbsp unsalted butter 1/2 cup sugar

Directions: In a skillet, add 1 tbsp butter and nuts, cooking over medium heat until it releases some oils. Add sugar and stir until caramelized.
