On the Cover: The food truck scene in the Coastal Bend is on the rise. It seems as though almost every day a new restaurant on wheels announces itself to the community and we are here for it. For this issue, we decided to dive into the world of food trucks and pay homage to the truck who really paved the way for the rest. With food trucks, there is a new way to experience a meal with your loved ones. Our cover this month is simple, a beautiful photo of tasty food from El Jefe’s Mobile Café.

A Two-Way Street

R

ecently, I started a new route to the office. I’ve had a hard time adjusting to Chaparral Street’s transition to a two-way road. Every time I turn right and head East, I feel I am doing something wrong, but it really does make my commute easier.

Chaparral Street is just one of many changes downtown has seen in recent years. New and unique food trucks are popping up all over downtown. However, it wasn’t until 2017 that food trucks, outside of your neighborhood ice cream truck, were permitted by ordinance in right-of-way.

Benjamin Olivares, owner of TacoBar Street is one of many local food truck pioneers you will read about on page 35. He had a vision for bringing some of the authentic flavors found at stationary food trucks on the West Side to streets and events throughout the city.

It was not an easy ride for Olivares, but thanks to his efforts, along with many others, downtown is experiencing a boom of delicious street-eats.

Three Takeaways:

1.Fed by Bread has donated more than $90,000 for kid’s lunches in Rwanda. Read more about the Schaub’s new mission on page 28.

2.Enrich Local is a charity dedicated to promoting cultural awareness in the community through music, art, and cuisine.

3.Island Joe’s new location is made up of 10 containers with the upstairs comprised of micro-offices, which can be rented out by local businesses.

Food Trucks now line the streets of downtown during festivals and farmer’s markets. There is even an entire festival dedicated to the industry. Some downtown businesses have even joined forces with local food trucks. Bar Under the Sun, or BUS, offers areas for food trucks to park and easily serve guests on location. The Downtown Management District is working to help food truck owners grow their companies.

“The Downtown Management District is excited to help food trucks that already have success grow into brick and mortar establishments, and we have programs in place to help,” says Alyssa Barrera, Executive Director of the Downtown Management District.

TacoBar Street is one of those success stories. Olivares is set to open the doors to his first brick and mortar on Alameda and Airline soon. Ironically, Hi-Ho Restaurant, a popular destination for tacos, now has their own food truck, Hi-Ho On-the-Go, which you can read about on page 41. It really goes to show that good food is becoming a two-way road in town. There are now multiple ways for restaurant owners to travel, which can only mean good things for the Coastal Bend.

With so many talented photographers in our community, we wanted to create a project where we could showcase some new work and the love we all have for our beautiful city! With that, we came up with the “Colors of Corpus” photo essay series, where we recruited several local photographers to show us what they see through their lens and really rely on color theory and various color palettes to tell a story. Each photographer was asked to take photos around town that all fit into a color palette of their choice. Needless to say we were not disappointed. Rene Guerrero (top) and Hunter Harwick (bottom) were the first two up and we can’t wait to see what the other photographers come up with!

Hollie shares that it hasn’t always been easy. “A lot of the trials have been growing pains of trying to figure out how we do what we do. There’s no model; we’ve had to figure it out along the way, and it’s been kind of painful.” One of the challenges being that Fed by Bread doesn’t have a storefront. “The faithful people that have heard about us and make an effort to go online, order, and pick up their orders – we couldn’t have done it without them.”

The nonprofit will still exist; continuing with small-batch granola orders and subscriptions. Granola will still be available to purchase at Wildflowers and Jewels, and they’ll continue to partner with other businesses such as Driftwood Coffee and Eleanor’s Coffee Bar + Market. Profits will always benefit the feeding program with Africa New Life.

Aaron Schaub says his hope for the business is that it takes care of itself. Hollie shares that she hopes to transition into holding more baking classes, so that others can learn a skill that gathers people around their tables.

“The relationships, both in Rwanda and the people I’ve gotten to know in this community, how they have become friends and walked through the door – it’s not just about picking up their bread. The connections we have with people have helped us put down roots,” says Hollie.

ne alternative to the brunch plate is the endless possibilities of a well-thought-out toast.

Like sandwiches (but not), the toast can include a bevy of different layers, flavors,

and textures. That’s why we love toasts, arguably the best open-faced thing since sliced bread. The Coastal Bend knows how to keep things interesting, and when it comes to what we lay out on bread, the locals don’t disappoint.

1. Hester’s does fancy toast like it does the rest of breakfast: with a refreshing taste of class. Whipped goat cheese turned out to be the perfect base for walnuts, chia seeds, and a drizzle of honey to make a toast as delicious as it is picture-worthy. You can also add berries to this toast, or bacon, depending on which direction you’re wanting to take. 2. Atomic Omelette’s Hawaiian French Toast has an obvious twist. Leave it to one of the town’s breakfast experts to perfectly marry Hawaiian bread into a French toast for our morning cravings, and to do it so sweetly. 3. The Post at Lamar Park’s Crab Avocado Toast is a mighty promise, and boy, do they deliver. A refreshing avocado spread with jumbo lump crab makes the perfect toast for a breakfast, lunch, or dinner. If it’s not the heirloom tomatoes that seal the deal, it’s the finishing dressing of truffle oil that spins the flavor combination into something unique. The Post is known for this multi-grain goodie; one of their favorite dishes is, understandably, also one of ours.

But, pairing fall fruit with oven-roasted turkey turned out to be the best warming cold-weather appetizer. On a thick slice of buttered German bread, the toast melds the aroma of sliced apples with soft brie and a drizzle of homemade thousand island. ReTooled breathes life into the unexpected subject of tools by profiling 28 visionary artists from the Hechinger Collection. In the 1980’s, John Hechinger’s booming chain of hardware stores led him to purchase a new company headquarters and collected art to beautify the offices.

Hechinger’s acquisition of a tool-inspired collection of diverse 20th century art that was accessible and engaging to all audiences. This exhibition furthers his mission by showcasing the diverse range of ideas, materials, forms, and creativity that encompass modern art. Adrian Tello A renaissance man who just can’t seem to sit still

You’re a man of many talents. From running a non-profit to being in a band, what is your favorite part about what you do?

I have to stay busy and diversify myself. I used to design components for the F-35 Lightning II for Northrop Grumman. Now, I work with my family’s home health business, Save Home Health Care. I also play guitar for Somethin’ Silky, Venus Lily, and occasionally Clarissa Serna’s band, and produce music, as well. I run a non-profit and build my own guitar pedals on the side. So, you could definitely say I can never be too idle with my time. It’s not just about staying busy – it’s about being busy, productive, and doing things that better myself and mankind. I surround myself with a diverse, motley group of people who challenge me culturally and intellectually every day.

Doing so keeps me connected, diverse, open-minded, intelligent, sane and accepting of all races, creeds, and colors. That is what makes me a man of “many talents” – my desire to experience all the things life has to offer.

What is the purpose behind Enrich Local?

Enrich Local’s mission is to promote cultural awareness in the local community through music, art, and cuisine. Enrich Local organizes events to help raise proceeds for different charitable endeavors every year.

Favorite part about the Coastal Bend?

he food truck scene in Corpus Christi has been on the rise for a few years now. Any night of the week, all over town, you can find a plethora of food trucks ready to serve up some delicious eats. At this point, it’s hard even to remember a time when food trucks did not line the streets of downtown, or have a permanent spot in some of the coolest new bars. However, it took major footwork and hoop-jumping (so to speak) for all of your favorite trucks, carts, and trailers to have a presence in our community.

Before the 2017 City Council amendment, the only “food trucks” permitted by ordinance in right-of-way were ice cream trucks in residential neighborhoods. Seeing the need to provide the community with a more innovative and interactive food experience, Alyssa Barrera, Executive Director of the Downtown

Management District, says that “the city launched a pilot program to test out different sites around the area, to test the feasibility and projected impact food trucks would have on the community.”

One of the pioneers in coordinating what is now the food truck industry in Corpus was TacoBar Street. In 2012, owner Benjamin Olivares noticed the old-school taco trucks on the west side were serving up delicious authentic foods, but they weren’t accessible to everyone, since they were stationary vendors. Olivares saw this as an opportunity; envisioning taco trucks that could move around and serve at events, provide catering, and best of all, appear at the numerous festivals popping up around the city.

To share the wealth, TacoBar Street created and now manages the Facebook group FoodTruck Finder. Many food trucks will post daily about where they are located, what foods they have on deck, and upcoming festivals and community events where you can find them.

Now, with a buzzing food truck community that is only growing more and more, we at The Bend want to highlight some of the local favorites that top the list.

TacoBar Street TacoBar Street is an infusion of the traditional taco with a splash of Asian influence. The street nachos, a signature dish and crowd favorite, have the all the Mexican flavors we know and love, topped with spicy mayo and a little Japanese seasoning, too.

Olivares officially got his wheels turning (literally) in 2014, after working with the city to create and define permitting for food trucks in Corpus. With the help of Alyssa Barrera, Heidi Hovda at Corpus Christi Visitor’s Bureau, the mobile catering team at Tailfinis, and many other downtown advocates, TacoBar Street has paved the way for what is now a major food truck movement in the Coastal Bend.

Early this year, TacoBar Street plans to open a brick and mortar location near Alameda and Airline.

The most popular dishes served at TacoBar Street are their Taco & Nacho Combo, Arroz con Pollo, and Street Taco Meal (rice, beans, and street tacos).

El Jefe’s Mobile Café Corpus Christi chef Sam Silva is now the owner of El Jefe’s, having joined the food truck community in the fall of 2017.

While El Jefe’s may be considered a newcomer to the scene, they have certainly gained popularity with the community quickly.

With its signature dish being called the “Corpito Fries,” you know El Jefe’s knows what locals want. The dish consists of fries smothered in chile con queso, pico, creamy chipotle, avocado lime sour cream, queso fresco, and your choice of meat. Is your mouth watering yet? Although the mobile truck is the self-proclaimed “Jefe” of Mexican street eats, according to local Corpus Christians, between the Corpito Fries and the delicious street-style tacos, El Jefe has earned its name.

The City of Corpus Christi has grown by leaps and bounds from the original “ice cream trucks only” ordinance we once had. Now, the city – and more specifically, the Marina Arts District – are making an effort to provide an all-inclusive experience for the community by maintaining a balance between

Hi-Ho on the Go Hi-Ho on the Go got started when the owner, Rene Garcia, and his father were sitting at their restaurant – a customer came up and asked when they were going to build a restaurant on the south side. Garcia explained that the family had plans to open a brick and mortar, but instead, they were joining the food truck world to be able to serve wherever the public demands. In the weeks after that conversation, Garcia purchased the food truck.

Hi-Ho on the Go is Mexican comfort food. They make fresh, authentic flour tortillas right there on the truck. Community favorites include chalupas, street tacos, fajitas, and enchiladas.

Outside of the big downtown festivals that the Hi-Ho on the Go team attend annually – St. Paddy’s Day, Fiesta de la Flor, and the Hot Tamale Festival – their food truck can be found on a weekly basis in several locations:

This gives all business owners a chance to play in the same market space successfully, and even provide opportunities for one another. Lesley and Ben Lomax, owners of Bar Under the Sun, are on the cutting edge in terms of their support of food trucks because they are the only brick and mortar in town that has electrical hookups and facilities for trucks. That means no loud generators are needed, and there is a consistent place for food trucks to park in the Marina Arts District.

“Consistency and dependability are really important for the mobile food industry to blossom in Corpus Christi,” explains Barrera. “The Downtown Management District is excited to help food trucks that already have success grow into brick and mortar establishments, and we have programs in place to help.”

Nona’s Cocina Nona’s Cocina has only been open for a little over a year and a half and has already gained a tremendous following with nothing but rave reviews. The mastermind behind the restaurant is Erica Franco, who immigrated to the United States from Victoria, Mexico in 2014. She came equipped with a genuine love of cooking and a treasure trove of family recipes passed down through generations. What started as a catering gig soon turned into Nona’s Cocina, and Erica has been serving up delectable food ever since.

Initially, Nona’s exclusively sold food through the Howard’s BBQ drive-thru. They quickly evolved their business into a food truck and now have a brick-and-mortar restaurant in the Hamlin Center. This permanent fixture on the corner of Doddridge and Staples has become one of the newest (and trendiest) places to stop and grab a bite to eat. Their large patio, complete with string lights and all the ambiance you could ask for, features outdoor of seating for you to enjoy their tasty creations.

Their menu features a wide variety of authentic Mexican cuisine. From Taco de Trompo to flautas, there is something you are sure to love. The dedication Nona’s has shown to bringing something new and exciting to our community makes for one wonderful addition to the food truck scene we now have here in the Coastal Bend!

Lion's Den Lion’s Den is a taste of authentic English cuisine. Owner Dennis Cooper was a member of the U.S. Coast Guard until 2013, when he retired and took a position with the Military Sealift Command based in Corpus Christi. Last year, when the Command Ship left Corpus, Cooper found himself without a job – so he decided to embrace his passion for food, and purchased the food truck that would ultimately become Lion’s Den. Cooper is originally from England and studied Hospitality and Catering at Cambridge College, City & Guilds. And his accolades are certainly apparent in the dishes he produces: The fish and chips are made with fresh Atlantic cod, the labor-intensive bangers and mash aren’t afforded any shortcuts, and from grinding the meat to stuffing in the nat-

ural casing to making the British gravy, every step in the process is handled with care and precision.

His proprietary creation is the British Banger Burger. Made fresh from scratch daily, this is the real deal, and the Lion’s Den is the only establishment in the entire U.S.A. to serve this burger at the moment. The Art of Self-Care How taking pen to paper can lead to a better life By: Kirby Tello

I

have long been an advocate for journaling and its magical way of solving life’s intense mental puzzles and emotional blunders.

Being a writer, journaling comes naturally to me. I started writing in a journal at a very young age, and after realizing how euphoric it made me feel afterward, it has played an essential role in my self-care.

I realize that not everyone loves the idea. As if articulating your thoughts isn’t hard enough, journaling pushes you to navigate those mucky thoughts and turn them into words on a page. This idea of writing down things that make you feel sad or ashamed or fearful seems like a process that one would want to avoid. However, the purging of such deep emotions is extremely cathartic.

I have learned a few things throughout my years of keeping journals. If you were to open one of mine, you would find a bunch of nonsense that was written in moments of extreme doubt. I’ve gone back and read past entries, and what I found was a version of myself that I didn’t even really believe was me. It’s funny how the mind can trick you sometimes into thinking your world is tumbling down around you; but really, there are so many things to be grateful for. The lesson in this type of reflection is that journaling doesn’t have to have a dark undertone. In fact, I’ve found that challenging myself to find at least three things I am grateful for

daily, and writing them down, makes the problems I originally wanted to spew onto paper seem negligible.

UNDER the TUSCAN SUN The Desenberg home reveals casual elegance perfect for family gatherings

reating a vision of your perfect home is equal to making a commitment; the vivid picture you’ve painted in your mind allows you to engage fully in making this dream a reality.

Interior designer Lori Desenberg was invited to be a part of the Architectural Control Committee for the Tuscan Place gated community, an upscale, quiet, secluded spot on the outskirts of Corpus Christi. Fortunately for Lori and her husband, Dave, this meant that their dream home would become a reality – and the peaceful setting of the 1.3-acre lot situated on the high bank of the Nueces River provided the perfect area for them to begin building their dream home.

No home is complete without a theme and suitable decor. Desenberg loved the Tuscan region’s ambience and flavor – both decor and lifestyle – and she decided to implement the aesthetics into her home. Although the majority of her decor is purchased from markets in Dallas, there are a few traditional pieces that hold a special place in her heart.

Desenberg had a vision of the perfect home for entertaining. She had ideas of furniture placement, kitchen size, and accommodations for guests. “The entire floor plan was drawn to accommodate the furni-

ture,” she says. A proud grandmother and a lover of family gatherings, she wanted her home to properly handle crowds.

With family in mind, she ensured that the guest bedrooms were fully equipped with additional sleeping space: Each guest room holds a queen-sized bed complete with a trundle, allowing children to sleep soundly by their parents.

“We didn’t want anything formal; we wanted something multi-functional – casual, yet elegant,” says Desenberg. She designed multi-room living areas to allow for a transformation during parties. A quick shuffle of the furniture allows for her to mingle with her guests as she takes on the role of chef in the kitchen.

The kitchen is the heart of the home, an expansive area that contains a large gas grill for ample cooking space. The long wooden bar with chandeliers perfectly achieves Desenberg’s casual, yet elegant design.

Large wood-framed windows and french doors reveal picturesque views of nature. And a pool table and shuffleboard are strategically placed next to the kitchen, allowing for an area conducive to entertainment. thebendmag.com

Although the inside of the house has plenty to offer, the majority of their entertaining is done outside, alfresco style. The courtyard – complete with an outdoor kitchen, a stained deck with granite countertop, and a cooking egg – allows for a variety of entertainment options, and also offers a stunning backdrop of nature, complete with birds chirping.

The true gem of the courtyard is the pizza oven, called the “Nueces River Grill.” Desenberg reflects on a recent party she hosted with several children under the age of 6. “The kids donned chef hats and aprons and created their own pizzas in the Nueces River Grill.”

The 9-car garage was the cherry on top of the perfect home for Dave, an avid car collector. The 18’ insulated doors open to reveal a space reminiscent of a mechanic’s shop, complete with an automobile lift and vintage signage offering rock and roll vibes. Dave’s vintage cars, including Studebakers and GTOs, all dating between 1952 and 1964, add nostalgia. The stained pine walls are reminiscent of the mossy green color of the river.

The garage also adds to the entertainment vibe of the home, with an area doubling as a showroom. “Dave places a particular car; we keep the door closed and air-conditioned, allowing people to view the car on display. We also sometimes leave the door open during parties,” says Lori. The garage also has fluorescent and track lighting, and anytime there is a party, the cars are illuminated.

The Desenbergs also use the spacious garage as a party room. With the cars backed out into the driveway or the lawn, the garage holds several tables and is perfect for brunches, showers, and dinners. “We designed these areas to double as party rooms because we were able to with so much space.”

This remarkably versatile home is specifically designed for entertaining. “I’ve done interior design for other people over the span of 40 years, so it was a whole lot of fun to do it for myself. It was a dream come true,” says Lori of her experience with this project. A lot of heart and soul was put into the construction of their home, and whether the Desenbergs are hosting an event or simply have a few people over, one thing is for sure: “Friends just don’t want to leave!”

Planning Your Garden’s Growth The secret to a successful spring and summer garden is getting an early start

o get the greatest production from your garden, plant as early as possible in the proper season.

For plants, seasons are like windows of opportunity that open and close. The window to grow a particular set of plants is open only for a few months each year, so plant your seeds or transplants as soon as possible, to get the most from your vegetables before the season ends and the window slams shut.

The last average frost date in The Bend is February 9. Begin planting your warm-weather vegetables – such as corn, beans, squash, and tomatoes – around Valentine’s Day or soon after.

It should be noted that even warm-weather plants don’t like too much heat.

Tomatoes require a nighttime soil temperature between 55 and 70 degrees to set fruit, which means tomato production in South Texas typically shuts down

by June or July, when the sun bakes the soil like a clay oven.

Most Popular Spring and Summer Veggies in The Bend +Tomatoes: Plant on sturdy trellis. 36” spacing. Transplants only (not by seed) to make the most of the season. You want these plants fully grown as early in the season as possible. This gives them a longer period to set fruit before the heat shuts them down. Not only that, pests are much worse in summer; the sooner fruit ripens, the fewer pests will attack it.

T

he macramé technique is believed to have originated among 13th century weavers, although some say it dates back to ancient Babylon. This unique method of textile weaving was spread across the globe by sailors who entertained themselves with the knotting and twisting of macramé art, and found its way into the Victorian era – when it adorned both grand houses and pretty ladies. Since then, many artisans have discovered a passion for macramé. For Jalyn Casarez, owner of Moonlight Woven, that passion came from growing up thrifting and antiquing with the women in her life. And like all things woven, this just seemed to work itself out.

“I bought a loom and taught myself one night,” she recalls. “At this time, I was only creating for myself and my sister. I had never thought about taking it to a professional level.”

Moonlight Woven’s adorable macramé creations made their real debut in an art gallery, and have received an overwhelming amount of support since. They were recently voted the best unique item in the CC BlissBox “Blissies” – the result of making around 100 tiny macramé plant hangers (in only three and a half weeks) for the September BlissBox.

In preparing an art display at K Space Contemporary, the non-profit art gallery downtown where Casarez works, she saw that submissions were plentiful, but lacking in something.

“I realized there wasn’t any fiber art. And BAM! I hustled for about three weeks, working from around 11 p.m.-4 a.m.,” she says.

“I whipped out over 30 woven pieces in a variety of styles, colors and prices, and hung them in the show.”

With persistence, practice, and a whole lot of weaving, Casarez’s use of organic and natural materials comes from an inspiration that translates in between the fibers.

“We are a very nature-involved family, so I really get inspired with all the things I see around me daily,” she says. “I love foraging for the branches and driftwood I hang my pieces on. I also love foraging for natural dye ingredients.”

Her pieces bring that natural, fresh vibe to any space needing a twist of eccentricity. Her macramé, woven pieces, and plant hangers bring the area casual elegance.

“I always have an iced coffee next to me,” Casarez says about her creation process. It often includes snacks like berries, nuts, and chocolate, and almost always Netflix, or a good radio station. “Once I get started, it’s on – I work into the ‘witching hour.’ Sometimes, I have to tell myself to just put the piece down, turn the lights off, and decompress.”

Casarez, who is also a mother of two, even started to get the community involved when she started hosting workshops for weaving and macramé. Ever since the successful “Macramé and Mimosas” class at Green Light Coffee last year, we know to keep our eyes out for our own macramé awakening experience.

Let’s Dance The party never stops for a pair of best friends

here is nothing quite like an epic dance party with your best friends. No matter your age, we can all relate to that, and it is why Shaw (who’s four) and Louisa (who’s three) had a spectacular birthday bash, revolving around the beat of the music.

The two best friends met on the dance floor with all their friends and danced the night away. It was the cutest little dance party you’ll ever see – the dance floor was covered with purple and blue stars, and rows and rows of handmade metallic streamers swayed overhead while the DJ played all their favorite dance tunes.

Party activities included making Dancing Queen disco ball headbands, Let’s Boogie bubbles, and Walking on Sunshine ribbon wands. The kids didn’t stop dancing long enough to eat club favorites like Electric Sliders and Hey, Mr. DJ Crudites, but they did stop long enough for cake and sweets. The Donut Leave Me on the Dance Floor donut wall was a huge hit, as well as the disco ball cookies and star-studded cupcakes.

As the dance floor cleared, it was time to pass out party favors; all the guests received I Wear My Sunglasses at Night sunnies as the evening ended. Needless to say, the event was a smashing success.

L

et’s take a food time machine back to 1969. If you like “Mad Men” and moon landings, you will love pork crown roast and baked Alaska.

These dishes have origins in upper-class Victorian England, where, it should be noted, servants prepared the meals. These showstoppers experienced a resurgence in 1960s America, when Ward and June Cleaver became the stylized role models of marital bliss.Suddenly, housewives were expected to feed their upwardly mobile husbands like British lords. Crown roasts and baked Alaska became status symbols on the polished Formica tables of suburban America.

But these status symbols happened to be quite delicious.

A pork crown roast is a bone-in pork loin, formed into a circle with the bones pointing upward like an English crown. The butcher at Moody’s Meat Market will form and tie your roast; ask him to “French” the roast, which means to cut the meat from the top of the bones to give it a clean appearance.

If you want to go fully 1960s legit and place tiny paper hats atop the bones, be sure to order them online well in advance. Crown roast hats are (apparently) not sold locally.

Most crown roast recipes call for cooking the vegetables separately and adding them to the center of the roast, like stuffing, just prior to serving. But we cook our veggies with the roast so that they absorb that amaz-

ing, robust flavor. We also wrap the crown in bacon, because who wouldn’t want a bacon-wrapped crown?

If you have never tasted baked Alaska, get ready to swoon. This dessert is cake, ice cream, and pie all baked together – what could go wrong? This dish was invented in 1804 by Count Rumford to prove that meringue is a poor conductor of heat. He scooped ice cream onto a cake sponge, covered it in meringue, then baked it. The meringue browned, but the ice cream stayed frozen.

Baked Alaska got its name when a chef at Delmonico’s in New York prepared this dessert to commemorate William H. Seward’s negotiation of the Alaska Purchase in 1867.

“Seward’s Folly” gained us a new state and the best dessert name ever.

A lot has changed since 1969. Today, it’s just as likely that the husband will prepare supper as the wife, or that he will at least do the dishes after. But crown roast and baked Alaska are just as good today as they were back then. It’s time to dust off the old recipe cards for a dinner worthy of our “Mad Men” binge watching!

CROWN ROAST Serves 8-10 Prep time: 40 minutes Cook time: 2 hours

INGREDIENTS: 10 lb pork crown roast (about 12-14 ribs) 4 cloves garlic, minced 2 tbsp olive oil, plus 1 tbsp 2 tsp kosher salt, plus 1 tsp 1 tsp black pepper, plus ½ tsp ½ lb sliced bacon 1 apple, sliced 2 shallots, sliced 4 lbs baby potatoes 2 lbs carrots, peeled and quartered 2 lbs parsnips, peeled and quartered 1 bunch fresh thyme, with stems removed 1 bunch fresh sage, stems removed, chopped

DIRECTIONS: Preheat oven to 350°F. Blot roast dry with paper towels. Brush roast with olive oil. Combine salt, pepper, garlic, and half the herbs in a medium-sized bowl. Massage garlic-herb mixture into the inner cavity and exterior of the crown.

Using toothpicks or wooden skewers, affix bacon slices to the bottom half of the crown. Transfer crown to a roasting pan.

Stuff the cavity of the roast with sliced apples and vegetables. Surround the roast with the remaining vegetables, and drizzle with remaining olive oil. Season vegetables with remaining salt and pepper and fresh herbs.

Bake in preheated oven until internal temperature reaches 145°F, or for about 2 hours (12 minutes per pound). Remove roast from oven and let set for at least 10 minutes prior to carving. Serve with cooked apples and vegetables.

BAKED ALASKA Prep time: 25 minutes Inactive prep time: 90 minutes Cook time: 2-4 minutes

INGREDIENTS: Non-stick cooking spray 1 pint cherry vanilla ice cream, softened 1 pint pistachio ice cream, softened 1 pint chocolate ice cream, softened Prepared 9” round sponge cake, 1” thick, cooled (we used vanilla and chocolate sponges, cut into ½” layers) SPRING

6 egg whites at room temperature ½ cup granulated sugar 1/8 tsp cream of tartar

DIRECTIONS: Spray a 1½ quart bowl with non-stick cooking spray and line with two pieces of plastic wrap long enough to have a few inches of overlap on each side. Scoop ice cream into bowl, alternating flavors as you go. Cover ice cream with plastic wrap and press down with a spatula to remove any air until flat. Freeze for 60 minutes.

Remove ice cream from the freezer.

Unwrap ice cream and place the sponge cake on top. Place back in the freezer for another 30 minutes.

Preheat oven to 500°F. With an electric mixer, beat the eggs on high for 2-3 minutes until soft peaks begin to form. With the mixer on high, gradually whisk in sugar and cream of tartar, a little at a time, until glossy, stiff peaks are formed.

Remove the ice cream cake from the freezer and place sponge side down on a baking sheet. Remove plastic wrap and cover with an even layer of meringue. Using a fork or the back of a spoon, form swirly peaks in the meringue. If ice cream starts to melt, return it to the freezer for about 15 minutes.

Bake for 2-4 minutes, until peaks are golden. Serve immediately.

riving onto North Padre Island, one is hard-pressed to miss the towering stack of brightly colored shipping containers along the highway. This Lego-like construction is the new location for coffee shop, Island Joes Coffee and Gallery, owned by Bryan and Brenda Tumlinson. It is the result of collaboration between Bryan and his son, Andrew. Together, they built the new site, which extends up two floors and incorporates a total of ten shipping containers, almost entirely by themselves.

Island Joes has been a local favorite since their opening in 2014 and has been unique from the very beginning. When opening the shop, Bryan said he had to consider the reality of coffee shops in South Texas. “We sell more cold drinks than hot drinks. Summer time is our big time, versus coffee selling more in most markets in the wintertime.” To cater

to that cold drink necessity, Bryan invented the recipe for their now well-known Mexican Vanilla Cold Brew coffee.

The unique properties of the shop continue as these shipping containers come together to create an eclectic space which boasts an impressive set of two separate coffee bars. The main bar, which was built with wood from the destruction of Hurricane Harvey, has the espresso machines and options, while a side bar has cold brews and slow pours. The indoor space has a conglomeration of textures and feels in keeping with the colorful standard they have set on the outside. Bryan explains, “It has an industrial, island, eclectic kind of vibe.” The upstairs is comprised of micro-offices, which can be rented out by local businesses, as well as outdoor seating.

Bryan also plans on making the new Joes a hub for arts and culture in the Coastal Bend. At this new location, Bryan hopes to bring in artists from all over the state to come and perform their original music for Island Joes’ guests. On the 1800 square foot patio, along with a host of games for guests to play, the new Island Joes will also feature a movie screen for screening independent films as well.

The Tumlinsons have big plans for the future of Island Joes. While this Padre Island location will be the flagship store for Island Joes Coffee and Gallery, Bryan hopes to eventually expand into other areas of the Coastal Bend. With their creativity and love for the Coastal Bend, there is no doubt they will do just that.

ounders of Salty Oak BBQ, Travis and Rita Brem, hope to bring the classic version of [Central] Texas barbecue to the Coastal Bend. Located at 4301 S. Alameda, Salty Oak BBQ is thrilled to put Corpus Christi on the map as one of the best regions in Texas for good ol’ “low and slow” smoked barbecue – seasoned with a simple rub and fired with post oak wood imported from Austin.

“I’ve been a Corpus Christian since 1989. I’ve heard it echo throughout the generations now, South Texas is more of a mesquite wood,” says Travis. However, due to its use of post oak wood, he says, “Central Texas-style barbecue is arguably the best BBQ in not only Texas, but the nation.”

Salty Oak BBQ uses nothing but post oak wood, which produces a mild, less sweet smoke.

“We also don’t let too much get in the way. We use minimal rubs, salt, and pepper for the most part. We let the fire and the process of the cooking itself do the flavoring. We don’t use conventional indoor smokers; I have a 1,000-gallon propane tank converted into a barbeque pit, enclosed on a flatbed,” says Travis.

“We do everything the traditional way. We’re talking as early as the 1800s, when the Czechs introduced smoking meats to Texas.”

Salty Oak’s main attraction is The Big Salty Sandwich, starting with a bottom layer of sliced pickles and onions, stacked with layers of brisket and close to a pound of pulled pork, then topped with house-made coleslaw, three sausage coins, and house-made barbecue sauce. aptain Richard King and his King Ranch are well known in the agricultural world for making his land incredibly productive, including through several equine breed improvement programs. King started with mares and stallions running the Wild Horse Desert in the 1850s, and his ranch ended up with world-class Quarter Horses and award-winning Thoroughbred racehorses just decades later.

King Ranch entered the Thoroughbred industry as a means to improve its Quarter Horse genetic line. Chicaro joined the Ranch in 1934, followed in 1939 by Bold Venture, 1936’s Kentucky Derby and Preakness Stakes winner. Bold Venture went on to sire two Kentucky Derby winners with King Ranch mares, Assault (1946) and Middleground (1950).

Assault went on to 18 victories, earning $674,720, despite a lifetime of health problems. While he walked awkwardly, his full gallop was flawless – or as Max Hirsch, the King Ranch’s trainer, said, “There wasn’t a thing wrong with his action when he went fast.”

In 1946, Assault captured just the seventh Triple Crown in history. That year, he was also the U.S. Champion 3-Year-Old Colt and the U.S. Horse of the Year. After his Triple Crown, he raced less often until age seven, then retired to a life of leisure at the King Ranch, where he lived until he died in 1971 at the age of 28. Assault remains Texas’ only Triple Crown Winner.
