CREDITING PLANT PROTEINS AS M/MA Beans, Peas & Lentils What credits? Beans, peas, and lentils (e.g., black beans, kidney beans, chickpeas, split peas, lentils) credit as either a M/MA or a vegetable, but not both in the same meal or snack. Crediting rules: Cooked beans, peas, and lentils credit as the M/MA component based on volume. A ¼-cup serving credits as 1 oz eq of M/MA. Roasted or dried beans, peas, and lentils credit as the MMA component based on weight (ounces). A 1 oz serving credits as 1 oz eq of the M/MA component.
Tofu What credits? Commercially prepared tofu made from soybeans, coagulants, water. Crediting rules: 2.2 oz by weight (¼ cup) of tofu containing ≥5 g protein credits as 1 oz eq M/MA.
Tempeh What credits? Tempeh made primarily from soybeans (or other legumes) and basic fermentation ingredients. Crediting rules: 1 oz by weight (1/4 cup) of tempeh credits as 1 oz eq M/MA. Products with additional foods (grains, seeds, veg) require a CN Label/PFS showing the creditable amounts of each component.
Seed & Nut Butters, Nuts & Seeds What credits? Peanut butter and other seed/nut butters credit toward the full M/MA requirement. Nuts and seeds (e.g., almonds, sunflower seeds, pumpkin seeds) also credit as M/MA. Crediting rules: 2 Tbsp nut/seed butter or 1 oz nuts/seeds = 1 oz eq M/MA For mixed or processed nut/seed products, a CN Label/PFS may be needed.
