Tasting History: A Conversation with Chef Santi Taura

From humble beginnings to a Michelin star, Chef Santi Taura crafts a culinary journey through Mallorca’s rich history—where every dish tells a centuries-old story.

What sparked your passion for cooking, and when did you know it would become your career?

My passion for cooking didn’t emerge during childhood—it was ignited while I was studying vocational training in culinary arts. It was during my time at culinary school that I realized this was the path I was meant to follow. I didn’t grow up with a clear dream of becoming a chef.

Initially, I chose this profession as a way to distinguish myself from those around me. Thirty-five years ago, being a chef didn’t carry the prestige or visibility it does today. Gastronomy wasn’t making headlines, let alone trending on social media. Cooking wasn’t associated with recognition.

It was precisely for that reason that I embraced it—to stand out, to carve out my own identity. What started as an act of differentiation soon evolved into a true vocation.

Who or what influences your culinary creations?

My mother’s recipes and her intuitive approach to cooking were an early influence. But beyond that, my culinary style is rooted in a deep fascination with the history of our region—its traditions, culture, and the foods that shaped each era.

I love researching, reading, and studying the gastronomic heritage of the Balearic Islands. I’m fascinated by how our ancestors understood cooking, what ingredients they used, and the techniques they employed. Two of the books that have greatly inspired me are De Re Coquinaria, a Roman treatise from the 1st century considered one of the first culinary texts in history, and Modo de cuinar a la mallorquina, regarded as the first modern Mallorcan cookbook from the 18th century.

What does Mallorca mean to you, and how do you express its essence through your cuisine?

Set in the heart of Santa Ponça, Mallorca Country Club blends the legacy of grass-court tennis with contemporary Mediterranean ambiance. Created in close collaboration with Wimbledon, the club proudly features championship-level natural grass courts, alongside clay and hard courts - making it the only venue in southern Europe to offer all three surfaces across twelve courts. More than just tennis, the club caters to a wide range of racket sport enthusiasts with padel, pickleball, and a uniquely elegant Croquet Club. Every Friday afternoon and Saturday morning, members can enjoy relaxed matches paired with Pimm’s, afternoon tea, and the charm of timeless tradition.

A elevated bistro, state-of-the-art gym, and tranquil outdoor pool round out the MCC experience - perfect for both social and business occasions in a serene, garden setting. Each summer, the club becomes the epicentre of world-class sport as host of the ATP Mallorca Championships (21-28 June 2025). Spain’s only grass-court tournament has welcomed tennis icons such as Novak Djokovic and Daniil Medvedev, with this year’s line-up featuring Casper Ruud, Ben Shelton, and Gaël Monfils. The event draws not only top players, but also global personalities like Sir Richard Branson and Jürgen Klopp, who return year after year for its exclusivity, proximity, and world-class hospitality. Mallorca is where I was raised and began my career. It’s not just my home—it’s my identity. The island’s rich cultural and historical layers have deeply shaped my perspective as a chef.

At DINS, I aim to tell Mallorca’s story through food. I reinterpret traditional recipes using local ingredients and ancient techniques, always with respect. My goal is to create dishes that don’t just nourish, but also connect guests to the island’s soul and history.

How was the move from Lloseta to Palma’s old town? Has your clientele changed, and did it influence your approach to the menu?

Until 2019, I ran two restaurants in Lloseta: the original Santi Taura and DINS, where I explored Mallorcan culinary heritage in a more personal and focused way. That year, the opportunity came to move to Palma— specifically to El Llorenç Parc de la Mar in the historic La Calatrava district. It was the perfect setting to deepen my concept based on the gastronomic memory of the Balearic Islands, so I merged both restaurants into one: DINS

Santi Taura.

Since then, the cuisine has evolved—shaped by experience and changing tastes. We now offer a single 11-course tasting menu, with up to four optional additions and a curated wine pairing. This format best tells the story behind each dish and creates a seamless, immersive experience.

Being based in Palma, especially within a hotel, has connected us with a wider, more international audience, including many American guests with a real appreciation for history-driven cuisine. At the same time, we remain rooted in our local community, with many loyal guests who’ve been with us since Lloseta.

What achievement are you most proud of as a chef?

One of my proudest accomplishments was earning DINS Santi Taura’s first Michelin star in 2020, right in the midst of the pandemic. It was a deeply meaningful recognition— not only because of the challenging circumstances but also because it reflected the dedication, resilience, and pursuit of excellence by our entire team. What made it even more special for me was achieving that international acclaim by championing Mallorcan cuisine. The menu featured deeply rooted local dishes, such as panades and toasted country bread with sobrassada—flavors that might not immediately resonate with outsiders. Yet, we managed to touch the hearts of the Michelin guide team with a truly authentic proposal.

If you could create something truly original—whether a new concept, experience, or something unexpected— what would it be?

I’ve had an idea in mind for several years now. Whether I’ll be able to bring it to life remains to be seen, but it would be a bit of everything: a new concept, a distinct experience, and something entirely unexpected…

Whether it’s a historic bullring reimagined for modern performances, a cliffside terrace or a sleek marina venue pulsing with energy, these hotspots are where culture, community, and rhythm come together. Here are some of the island’s standout stages making waves this summer community, and rhythm come together.

The historic Coliseo Balear, a former bullring from 1929, has been transformed into a modern hub for music, culture, and community. Since its March 2025 reopening as Es Coliseu, it’s hosted a vibrant calendar of events: indie rock, Afro-Latin sets, DJ nights, vintage markets, family events, and food truck festivals. The venue is shaping up to be a major cultural force on the island.

More than just a festival, it’s a celebration of the island’s soulful character — where music, local gastronomy, and warm night air blend into something utterly unforgettable.

This season, two special nights stand out on the calendar. On July 18th, the Soultown Festival invites you to step back in time under a blanket of stars. Expect a soundtrack of iconic soul and 80s classics from the likes of Shalamar, Lighthouse Family, Albie Davies, and the island’s own DJ Des Mitchell — a line-up that feels like a love letter to feel-good nostalgia.

A couple of weeks later, on August 3rd, prepare for the ultimate 00s revival. BLUE, those chart-topping kings of the era, return to the stage, joined by Atomic Kitten’s Natasha Hamilton. It’s the kind of night that calls for dancing barefoot on the grass, singing along without a care in the world.

The Festival Pollença 2025, held in August (9th to 29th), takes place within the historic and elegant Santo Domingo Cloisters in Pollença, Mallorca, presents a series of world-class classical music performances.

Featuring acclaimed artists such as violinist Janine Jansen and pianist Sir András Schiff, the festival offers a sophisticated cultural experience. This stunning 17th-century Dominican convent, with its atmospheric open-air courtyard, provides a unique and intimate setting, blending exceptional music with Mallorca’s rich heritage for discerning music lovers.

Port Adriano Music Festival takes place from the 1st to the 16th of August this year, within the luxurious Port Adriano marina. This festival currently features Los Sectretos, Bonnie Tyler, & Boney M., with potential for more acts.
