Just months after its opening Sollo, a fine dining restaurant in Fuengirola, was awarded a coveted Michelin star. Today, it also holds two Repsol Suns and the prestigious Green Michelin Star, the first of its kind in Malaga province. To uncover the story behind these accolades, The Agency Marbella had the privilege of sitting down with the man behind it all: Diego Gallegos, affectionately known as the ‘King of Caviar.’

Gallegos is not only a culinary visionary but also a father of two, a passionate environmentalist, and a chef whose life story reads like the script of an underdog movie.

From his humble beginnings as a law student in Brazil to his ascent as a leading figure in Spanish gastronomy, his tale is one of resilience, creativity, and a commitment to sustainability.

From Dishwasher to Michelin Star

Diego Gallegos’s culinary journey began unexpectedly. After arriving in the South of Spain as a law student, he took up a job as a dishwasher to support himself and stay longer.

One day, the chef at his workplace called in sick, and Gallegos was asked to step in. That day, he says, everything for him changed.

“You don’t have time to think of anything. It’s like a feeling that I have never felt in another place,” Gallegos recalls, likening the chaotic yet exhilarating kitchen atmosphere to the scenes from The Bear, the hit TV series starring Jeremy Allen White.

The thrill of that moment led him to abandon his law books and pursue culinary training, much to the dismay of his father.

“It was difficult because at this time nobody wanted to be a chef,” he admits, reflecting on the stigma attached to the profession at the time.

Rooted in fresh, vibrant ingredients and a passion for creative, feel-good food, Santina brings globally inspired flavors to Mallorca’s dining scene. With locations in Puerto Portals and Santa Catalina, this all-day brunch spot offers a colorful menu where gluten-free, vegan, and hearty comfort meals coexist in perfect harmony. Family recipes take center stage, such as an innovative version of the tiger milk his grandmother used to make, enriched with high-end culinary techniques.

“Each dish tells a part of my story,” he explains. “For me, the menu is like my children. I love them all the same way.”

A Green Gastronomic Revolution

Sollo’s Green Michelin Star is a testament to Gallegos’s dedication to sustainability. The restaurant’s 10,000-liter aquaponic system integrates fish farming with vegetable cultivation, reducing waste to nearly

zero.

“We try to emulate the natural ecosystem. Each plant works better with different kinds of fish (...) The only thing wasted here is the water by evaporation,” he says, as he guides us through the facility.

The ingredients for Sollo’s courses are sourced predominantly on-site, including herbs from a meticulously cultivated garden. These plants, used in desserts and infusions, feature unexpected flavors like camembert cheese and European wasabi.

The Darth Vader Gummy and the Art of Sobremesa

A playful nod to his childhood, Gallegos’s signature Darth Vader gummy has become a highlight of Sollo’s menu.

“Darth Vader, for me, is the special one. He was the bad guy in all the movies, but in the end, he was nice (...) because he saved his son,” Gallegos shares with a smile.
