Dear Beach Cove Residents,
March has arrived at Beach Cove, bringing sunny days, warmer temperatures, and a fresh spring feeling, especially after the unusual cold weather we had. Bring on the suntan lotion! ��
With St. Patrick’s Day approaching, we wish everyone a bit of luck, good cheer, and safe celebrations. We will have our annual St. Patrick’s Day Dinner with corned beef and cabbage. Be sure to dress in green!
As more residents enjoy the outdoors, our team will be preparing common areas for spring use and continuing routine maintenance throughout the community.

Welcome back Gail and welcome Michael! Gail lived in Beach Cove several years back and has decided to return to our beautiful community, along with her son, Michael. They are making their home at Lot 156.
Welcome Charlie and Susan to your new home at Lot 94! They have lived in Las Vegas for many years and decided to make Beach Cove their forever home!
We are delighted to welcome you all to the Beach Cove family. We’re so happy you’ve chosen our community as your new home and look forward to seeing you around the neighborhood.
As we enjoy the spring season, please take a moment to check your home and lot and remove any clutter or debris. .If needed, please be sure to power wash your home, skirting, driveway and sidewalks. Your efforts help keep Beach Cove clean, safe, and beautiful.

Coffee & Donuts and Social Club Meeting - Please join us for coffee and donuts during the social club meeting on March 4th at 11:30 am. We want everyone to bring their ideas and help create fun events.
Bingo – Bingo will be held on March 6th at 3 pm, so be sure to bring your lucky charms and try to win a game or two!
Chili Cook-off – This will be a fun and delicious event being held on March 8th at 4 pm. Dig out those delicious chili recipes and see if you go home a winner!
St. Patrick’s Day – We will have our annual dinner on Tuesday, March 17th at 4 pm. Beach Cove will be providing the meal and all you Beach Covers will provide the fun! Be sure to wear green!
Water Aerobics – Monday, Wednesday, & Fridays starting at 10 am. Have fun while keeping healthy!
Happy Hour at the Tiki – Every Friday beginning at 4 pm join your friends with your favorite beverage and snacks at our tiki hut!
Horseshoes – As always, the horseshoe players and spectators are out there every Sunday at 1 pm challenging their friends and neighbors to play a fun game! We have some talented players so stop by and cheer them on!

• Indian River County Firefighters’ Fair (March 14-23, 2026): Located at the nearby IRC Fairgrounds, offering rides,, rodeo, and concerts (including the Bellamy Brothers on March 14).

• Coffee and Donut Hour were held in combination with the Social Club Meeting on February 4th at 11:30 am to plan this month’s upcoming events. Our next Coffee and Donut hour / Social Club Meeting will be on March 4th at 11:30 am. We want everyone to join in the activities so we have added some new ideas and need your input!
• Bingo was held February 6th and this month’s bingo will be on March 6th. Congratulations to all the winners!
• Super Bowl Sunday February 8th was celebrated at the clubhouse featuring Ken’s famous chili along with great pizza! Not the most exciting Super Bowl game but great if you were a Seahawks fan. ��
• Valentine’s luncheon on February 11th was a sweet time shared between neighbors and friends. A great luncheon for all the sweethearts that attended.
• If you missed our Mardi Gras party you missed lots of fun and great food! Thank you Ken & Sylvia, for spearheading this great event. Thank you Ken for cooking the gumbo, red beans & rice and the cornbread, it was all amazing! Thank you everyone else who helped set up, clean up and brought your own delicious dishes!












• 1/2 pound bacon strips, chopped
• 1/4 cup chopped onion
• 1-1/2 pounds Yukon Gold potatoes (about 5 medium), peeled and cubed
• 1 can (14-3/4 ounces) cream-style corn
• 1 can (12 ounces) evaporated milk
• 1/4 teaspoon salt
• 1/4 teaspoon pepper
1. In a large skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Discard drippings, reserving 1-1/2 teaspoons in pan. Add onion to drippings; cook and stir over medium-high heat until tender.
2. Meanwhile, place potatoes in a large saucepan; add water to cover. Bring to a boil over high heat. Reduce heat to medium; cook, uncovered, 10-15 minutes or until tender. Drain, reserving 1 cup potato water.
3. Add corn, milk, salt, pepper, potatoes and reserved potato water to saucepan; heat through. Stir in bacon and onion.
