BEACH COVE Breeze From the Desk of Your Community Manager

Hello Wonderful Residents!

Fall is officially here — which in Florida means… well, it’s still 85 degrees and we’re sweating through our pumpkin spice! ☀️ But who needs falling leaves when we have sunshine, palm trees, and air conditioning?

As we roll into October, let’s embrace everything this “not-soautumn” season has to offer — from spooky movie nights to costume parties (yes, you can wear flip-flops with your witch hat, we don’t judge).

A big Happy Birthday to all our October celebrants! At 55+, you’ve earned the right to eat cake before dinner, nap whenever you want, and completely ignore anyone who says, “Act your age.” You’re the life of the party — even if the party ends at 8 p.m.

We’ve got some exciting events lined up this month, so be sure to check the calendar — whether you’re here year-round or just flying in for the season, we’ve saved you a seat (and maybe a bingo card).

Stay cool, stay connected, and as always — thank you for making this community the vibrant, fun, and fabulous place it is.

With sunshine and smiles,

With warm regards,

BEACH COVE BUZZ

Great News!!

Our new fitness center is scheduled to be completed by December ‘25. The additional parking stalls, sidewalks, and extra landscaping will also be a great addition. The clubhouse will be closed during construction; however, the pool will remain open. There may be some pool closings, but we will notify you when these occur.

Even though the clubhouse is closed for construction, the events and fun won’t stop. Cobblestone has purchased a new tent for us to enjoy our events while the clubhouse is closed. The tent also has sides in case of cold or rainy weather, and it is ours to keep for any outdoor events!

• Be sure to check out the flyer for our Beach Cove Mobile App. We are using this application which will eventually be replacing our phone broadcast and mass emails. It will have all the information about events and much more and most importantly it’s the best way to reach you in case of emergencies. It will soon be available for your computer too.

• We now have a dartboard, ring toss game and a croquet set at the tiki hut to add to the other fun activities! The croquet set will be stored in the tiki’s storage box.

Friendly Reminders COMMUNITY UPDATES

• Hurricane season is here. Please review the preparedness checklist that has been emailed or stop by the office for a copy. It is also on the Beach Cove Mobile App.

• Please remember to keep your dogs leashed and clean up after them. No dogs are allowed to run at large – thank you!

INGREDIENTS

• 4 tablespoons unsalted butter

• 1 medium yellow onion, chopped

• ½ teaspoon sea salt

• Freshly ground black pepper

• 3 garlic cloves, chopped

• ¼ cup all-purpose flour

• 2 cups whole milk or unsweetened almond milk

• 2 cups vegetable broth

• 3 cups chopped broccoli florets

• 1 large carrot, julienned or finely chopped

• ½ teaspoon Dijon mustard

• 8 ounces shredded cheddar cheese, about 2 heaping cups

• Homemade croutons, for serving, optional

1. Melt the butter in a large pot or Dutch oven over medium heat. Add the onion, salt, and several grinds of pepper and cook, stirring, for 5 minutes, or until softened. Stir in the garlic and cook for another minute, then sprinkle in the flour and whisk continuously for 1 to 2 minutes, or until the flour turns golden. Slowly pour in the milk, whisking continuously.

2. Add the broth, broccoli, carrot, and mustard and stir to combine. Simmer for 15 to 20 minutes, or until the broccoli is tender.

3. Gradually add the cheese, stirring after each addition, until all the cheese is melted and the soup is creamy. Season to taste and serve with croutons, if desired.
