BOURBON WHISKEY

DRINK TO HISTORY

Bourbon whiskey is a quintessential American spirit that has captured the hearts and palates of people around the world. Bourbon whiskey is a type of American whiskey that is primarily made from corn and aged in charred oak barrels. The history of bourbon whiskey can be traced back to the late 18th century, when Scottish and Irish immigrants began settling in the American South and bringing with them their knowledge of distilling.

The exact origins of bourbon whiskey are debated, but it is generally believed to have originated in Kentucky in the late 18th century. The name “bourbon” is believed to have been derived from Bourbon County, Kentucky, which was named after the French House of Bourbon.

Bourbon whiskey became popular in the United States in the 19th century, and by the mid-20th century, it had become one of the most popular types of whiskey in the world. The popularity of bourbon whiskey can be attributed to its unique taste, which is characterized by its sweetness and notes of caramel and vanilla.

In the early days of bourbon whiskey production, it was a small-scale operation that was mainly carried out by farmers and settlers. However, as the popularity of bourbon grew, so did the industry. Today, bourbon whiskey is produced in many different states across the United States, but it is still most closely associated with Kentucky.

14 | TEQUILA & SPIRITS MAGAZINE
TEQUILAANDSPIRITS.COM | 15

Today, bourbon whiskey is a highly regulated spirit, with strict laws governing its production. In order to be called bourbon, the whiskey must be made from at least 51% corn and aged in new, charred oak barrels. It must also be distilled to no more than 80% alcohol by volume, and bottled at no less than 40% alcohol by volume.

Bourbon whiskey has become a symbol of American culture, and is often associated with the American South and its history. Today, there are many different brands and varieties of bourbon whiskey available, each with its own unique flavor and character.

In order to be considered bourbon whiskey, the spirit must be made from a grain mixture that is at least 51% corn. It must also be aged in new, charred oak barrels and cannot be distilled to more than 80% alcohol by volume. Furthermore, bourbon whiskey must be bottled at no less than 40% alcohol by volume.

The process of making bourbon whiskey involves a number of steps, including mashing, fermentation, distillation, and aging. During the mashing process, the grain mixture is cooked and mixed with water to create a mash, which is then fermented with yeast to convert the sugars in the grain into alcohol. The resulting liquid, known as a wash, is then distilled to create a clear, high-proof spirit that is then aged in charred oak barrels for at least two years.

Bourbon whiskey is known for its distinct flavor, which is characterized by its sweetness, notes of caramel and vanilla, and a slight smokiness from the charred oak barrels. It is often enjoyed neat, on the rocks, or in cocktails such as the Old Fashioned or the Manhattan.

What Makes Bourbon Whiskey Unique

Bourbon whiskey is defined by strict legal requirements that distinguish it from other types of whiskey. To be considered bourbon, the spirit must be made from a grain mixture that is at least 51% corn. The remaining grains used in the mash bill can include wheat, rye, or barley.

In addition to the grain mixture, bourbon must be aged in new, charred oak barrels. The charring of the oak barrels imparts a distinct flavor to the whiskey, with notes of caramel, vanilla, and a slight smokiness. Bourbon whiskey must also be distilled to no more than 80% alcohol by volume and bottled at no less than 40% alcohol by volume.

Production of Bourbon Whiskey

The production of bourbon whiskey involves several steps, including mashing, fermentation, distillation, and aging. The grain mixture is first cooked and mixed with water to create a mash, which is then fermented with yeast to convert the sugars in the grain into alcohol. The resulting liquid, called the wash, is then distilled to create a clear, high-proof spirit.

After distillation, the spirit is aged in new, charred oak barrels for a minimum of two years. The aging process is crucial to the flavor of bourbon whiskey, as it allows the spirit to interact with the wood and develop its unique taste. The longer the spirit is aged, the more complex and nuanced its flavor becomes.

RIESLING WINE

22 | TEQUILA & SPIRITS MAGAZINE
TEQUILAANDSPIRITS.COM | 23

Riesling is a white grape variety that is grown in many of the world’s wine regions. It is known for its aromatic qualities, high acidity, and ability to reflect the terroir of the region in which it is grown. Riesling wines can range from bone-dry to very sweet, and are often noted for their complex flavors, which can include notes of citrus, apple, peach, apricot, honey, and petrol.

Riesling is primarily associated with Germany, where it is the most widely planted grape variety. It is also grown in other countries such as Austria, France, Australia, New Zealand, the United States, and Canada. German Rieslings are often classified based on their sweetness levels, ranging from Kabinett (dry to off-dry) to Trockenbeerenauslese (extremely sweet).

Riesling is a versatile wine that pairs well with a variety of foods, including seafood, poultry, pork, spicy dishes, and Asian cuisine. It is also a popular wine for aging, with some of the best examples improving in flavor and complexity for decades.

H I S T O R Y

The history of Riesling wine can be traced back to the Rhine region of Germany, where the grape variety is believed to have originated in the 15th century. The first written reference to Riesling dates back to 1435, in a record from the Cellar Master Count John IV of Katzenelnbogen. The grape was originally grown for the production of dry wines, which were favored by the German aristocracy.

During the 18th and 19th centuries, Riesling became increasingly popular in Germany, and was exported to other countries around the world. In the early 20th century, Riesling was one of the most widely planted grape varieties in Europe.

However, the popularity of Riesling declined in the mid-20th century, as other grape varieties such as Chardonnay and Sauvignon Blanc became more popular. In the 1970s and 1980s, there was a renewed interest in Riesling, with winemakers in Germany and other countries experimenting with new winemaking techniques to produce high-quality wines.

Today, Riesling is still most closely associated with Germany, where it is the most widely planted grape variety. However, it is also grown in other wine regions around the world, including Austria, France, Australia, New Zealand, the United States, and Canada.

Determining the “best” Riesling wine is subjective, as different people may have different preferences based on their taste and experience with Riesling wines. However, there are some wellregarded regions and producers of Riesling that are known for producing high-quality wines.

26 | TEQUILA & SPIRITS MAGAZINE

In Germany, the Mosel and Rheingau regions are well-known for producing some of the best Riesling wines. In particular, the Mosel region is known for producing Riesling wines with a delicate, floral character and high acidity, while the Rheingau region is known for producing more full-bodied, complex Riesling wines.

In Austria, the Wachau region is known for producing some of the best Riesling wines, with a focus on dry wines that showcase the mineral-rich soils of the region.

In Australia, the Clare Valley and Eden Valley regions are known for producing high-quality Riesling wines with a distinctive citrus and mineral character.

In the United States, the Finger Lakes region in New York is known for producing excellent Riesling wines, with a range of styles from dry to sweet.

Some notable producers of Riesling wines include Joh. Jos. Prüm and Egon Müller in Germany, FX Pichler and Nikolaihof in Austria, Grosset and Pewsey Vale in Australia, and Dr. Konstantin Frank and Hermann J. Wiemer in the United States.

Riesling wine is enjoyed by a wide range of wine drinkers, from casual consumers to serious wine enthusiasts. Riesling is a versatile wine that can be paired with a variety of foods, making it a popular choice for meals and entertaining. Its range of sweetness levels, from dry to sweet, also make it a flexible option for different tastes and occasions.

In terms of demographics, Riesling wine is popular among both men and women, and is consumed by a broad age range of wine drinkers. However, Riesling is particularly popular among younger wine drinkers, with millennials showing a strong interest in the variety. This may be due in part to the rise of natural wine and minimal-intervention winemaking, which aligns with the Riesling grape’s ability to express its terroir and natural flavors.

LOUIS XIII COGNAC

LOUIS XIII REVEALS LIMITED-EDITION

RARE CASK 42.1

775 numbered decanters of the special edition cognac selected by Cellar Master of LOUIS XIII, Baptiste Loiseau, to be available globally.

LOUIS XIII to release RARE CASK 42.1, the latest limited-edition cognac in the Rare Cask Legacy, which aims to bring the brand’s unique discoveries and developments to market. RARE CASK 42.1 is LOUIS XIII’s third Rare Cask limitededition, and will be available for purchase globally beginning June 2023, revealing LOUIS XIII’s ultimate expression to the world 10 years after the debut of RARE CASK 42.6 in 2013.

In the Grande Champagne Cru of Cognac, France, fifth generation Cellar Master Baptiste Loiseau, discovered a single tiercon containing a particularly aromatic profile in the cellars of Domaine du Grollet, the home of the LOUIS XIII Legacy. Each of LOUIS XIII’s tiercons are made from French oak trees that take over 100 years to reach maturity, containing precious eaux-devie sourced from Grande Champagne’s terroir.

Kept undisturbed, the eaux-de-vie evolves as the liquid deepens with intensity and mahogany hues. This aging process gives RARE CASK 42.1 its inimitable complexity – resulting in an extremely rare effect. The exceptional cognac’s aromatic profile is a distinct expression of LOUIS XIII never encountered before with an unexpected 42.1% ABV.

To complement RARE CASK 42.1’s expression and rarity, the 775 limited-edition numbered decanters will be available globally, each crafted from black Baccarat crystal. This decanter requires a combination of art and savoir-faire to achieve a jewel-like black finish, hand-made by 20 master craftsmen working meticulously in unison. Each decanter’s neck is then dressed in gold and rhodium finished details and finely engraved with quadrilobed patterns in reference to France’s Fleur-de-lis.

RARE CASK 42.1 is the first Rare Cask edition from LOUIS XIII to be presented as a ritual set. The black crystal decanter is accompanied by a pair of glasses, each glass adorned with black quatrefoils and a serving pipette featuring a black medallion. “While the singularity of a RARE CASK rests on the wonder of nature and the aging of eaux-de-vie, the know-how that it requires to produce is an art form, passed on from generation to generation, where each Cellar Master perpetuates the gestures of his predecessors,” says Baptiste Loiseau. The meticulous tasting of the eaux-de-vie as they age, in the endless transmission of savoir-faire, is part of the lifelong purpose of each Cellar Master to preserve the LOUIS XIII Legacy. RARE CASK 43.8 was released in 2009 by previous Cellar Master Pierrette Trichet, and RARE CASK 42.6 in 2013 when Baptiste Loiseau and Pierrette Trichet were collaborating. For the third time in history, in an unexpected departure from the ordinary passage of time, Baptiste Loiseau uncovers RARE CASK 42.1.

“To discover Rare Cask 42.1, I listened to my instincts and favored emotion to science. I call upon my memories,” remarks Loiseau.

To mark this discovery, an exclusive event in Venice, Italy celebrated the launch of RARE CASK 42.1 - with the theme ‘Care For Wonders’. A city that for hundreds of years has preserved a unique heritage and artistic beauty, Venice remains a source of inspiration that draws creative minds from across the world. Previous RARE CASK reveals from LOUIS XIII have taken place within the Guilin Caves, China for RARE CASK 43.8, and in Udaipur, India for RARE CASK

“10 years have passed since the latest RARE CASK was revealed. A singular tierçon set apart for the unicity of its aromas, a true wonder reflecting the power of nature, which sets the RARE CASK Collection apart. Today, we are thrilled to present the latest wonder RARE CASK 42.1, the result of time and human talent caring for our terroir. It’s LOUIS XIII’s ultimate expression,” says Jean-Philippe Hecquet, CEO of the house of Rémy Martin.

In addition, RARE CASK 42.1 will be celebrated with exclusive tasting experiences in several cities around the world - including Paris, Zurich, London, Dubai, Beverly Hills, New York, Miami, Las Vegas, and Kuala Lumpur - as LOUIS XIII reveals this exceptional launch to clients on a global scale.

About LOUIS XIII

Since 1874, LOUIS XIII Cognac is forever reborn from the precious eaux-de-vie of Cognac Grande Champagne, handed down through generations and artfully blended. Time is the raw material with which this rare spirit is crafted, its essence unwavering. Guided by Cellar Master Baptiste Loiseau, LOUIS XIII is the symbol of an enduring bond with Nature and Terroir, strengthened by the patina of age. Each drop is a living legacy, each decanter a celebration of visionary minds and human hands that shape the future by making a mark on tomorrow, today.

IRISH COFFEE

The origin of Irish coffee is said to have originated in Ireland at the Foynes Airbase in the 1940s.

48 | TEQUILA & SPIRITS MAGAZINE
TEQUILAANDSPIRITS.COM | 49

Foynes Airbase was a transatlantic hub for airplanes, and passengers would often experience long delays due to bad weather conditions. Joe Sheridan, a chef at the airport’s restaurant, wanted to offer these passengers something to warm them up and keep them awake during these long waits, so he created a drink made with hot coffee, Irish whiskey, brown sugar, and whipped cream.

The drink became so popular among the passengers that when the airport closed in 1945, the recipe was taken to the Buena Vista Café in San Francisco, where the owner, Jack Koeppler, and travel writer, Stanton Delaplane,

perfected the recipe and introduced it to the United States. The Buena Vista Café is still known today for its Irish coffee, and the drink has become a beloved classic cocktail enjoyed around the world.

50 | TEQUILA & SPIRITS MAGAZINE

Today, Irish coffee remains a popular cocktail and is served in many bars and restaurants around the world. There are also variations of the recipe that incorporate different types of liquor or flavored syrups to give the drink a unique twist.

In addition to being a delicious and comforting drink, Irish coffee has become a symbol of Irish hospitality and a cultural icon of Ireland. It’s often served at St. Patrick’s Day celebrations and other Irishthemed events.

Some establishments also put their own spin on Irish coffee by using locally sourced ingredients or by adding their own unique toppings, such as chocolate shavings or cinnamon. Regardless of the variations, the basic recipe of hot coffee, Irish whiskey, sugar, and whipped cream remains a classic and beloved cocktail.

Famous irish coffee in san francisco

The Buena Vista Cafe in San Francisco is known for its famous Irish coffee. The café has been serving Irish coffee since 1952 and has become a popular tourist attraction. The story goes that in 1952, Jack Koeppler, the owner of the Buena Vista Cafe, and journalist Stanton Delaplane, who had enjoyed Irish coffee at the Foynes Airport in Ireland, set out to recreate the recipe for American audiences.

After several attempts, they finally perfected the recipe and began serving Irish coffee at the Buena Vista Cafe. Today, the café is known for its delicious Irish coffee and serves over 2,000 cups of the cocktail every day. The café even has its own special glassware and method of preparation, with each cup of Irish coffee being individually prepared and topped with a layer of whipped cream.

Some irish coffe anecdotes

There are several amusing anecdotes associated with Irish coffee that are worth sharing:

The original recipe for Irish coffee created by Joe Sheridan was said to have used cream that had been lightly whipped and poured over the back of a spoon onto the coffee to create a distinctive layer of cream. However, when the recipe was brought to America by Stanton Delaplane, the bartender at the Buena Vista Cafe misinterpreted the instructions and used heavy cream instead of lightly whipped cream. Despite this mistake, the drink became a hit and heavy cream has been used ever since.

54 | TEQUILA & SPIRITS MAGAZINE

In 1952, when Jack Koeppler and Stanton Delaplane were trying to perfect the recipe for Irish coffee, they invited a group of friends to come and taste test the drink. The group included journalist Herb Caen, who wrote about the experience in his newspaper column, which helped to spread the word about Irish coffee and put the Buena Vista Cafe on the map.

There is a well-known story about how the Buena Vista Cafe first learned to make Irish coffee. According to the story, a group of American passengers arrived at the Foynes Airbase in Ireland on a cold, rainy evening and

were looking for something to warm them up. The chef at the airport restaurant, Joe Sheridan, decided to make them a drink made with hot coffee, Irish whiskey, sugar, and cream. When the passengers asked if they were drinking Brazilian coffee, Sheridan jokingly replied that it was “Irish coffee.” The name stuck, and the drink became a classic cocktail.

J. LOHR ARROYO VISTA CHARDONNAY

Our J. Lohr Arroyo Vista Chardonnay is grown in the heart of the windswept and cool Arroyo Seco AVA of Monterey County. Loamy sand and gravelly loam soils of the Elder series are intermixed and underlain by “Greenfield potatoes” - stones that resemble potatoes in size and appearance and which absorb heat during the day and radiate it after sunset. This underlying layer of stone effectively limits root growth to the top three to five feet of soil, harmoniously balancing the fruit and shoot growth of our richly flavored Chardonnay.
