Baja California Sur is the ideal location to incorporate architecture into nature. The range of colors, shapes, and textures contribute enormously to this artistic expression and constantly create new challenges.

a arquitectura mexicana ha sido reconocida desde hace varios siglos. Las culturas que en nuestro territorio se asentaron desarrollaron centros cívicos y religiosos alrededor de los cuales se ubicaba la población. En los días de arquitectura precolombina había grandes espacios abiertos y sobre todo ejes visuales que sirvieron para el trazado de ciudades en épocas posteriores.

In the days of pre-Columbian architecture, there were large open spaces and visual axis that served for the layout of cities in subsequent eras.

Si bien en la península de Baja California este tipo de culturas no florecieron, las migraciones nómadas que llegaron tuvieron su mérito y no fueron faltos de ingenio arquitectónico.

Although these cultures did not flourish on the Baja California peninsula, the nomadic migrations that arrived also had their merit and no lack of architectural ingenuity.

Nuestra historia prehispánica es muy amplia en expresiones arquitectónicas. Solo por nombrar algunas, encontramos a los Olmecas, Mayas, Totonacas, y por supuesto Aztecas y Teotihuacanos. Muchas de ellas hicieron asociaciones espectaculares entre sus pirámides, construcciones y centros ceremoniales con la astronomía y el mar.

Our pre-Hispanic history was very broad in architectural expressions. To name a few, we find the Olmec, Mayan, Totonac, and of course Aztec and Teotihuacan. Many of them developed spectacular associations between their pyramids, buildings and ceremonial centers with astronomy and the sea.

Más tarde, en los períodos de conquista y evangelización en el México colonial, se produjeron cambios impresionantes.

Later, during the periods of conquest and evangelization in Colonial Mexico, impressive changes occurred. Of course, the artistic changes were perhaps the most dramatic and intense.

El momento de la colonización fue uno de los períodos en que la arquitectura y el paisaje interior de la península de Baja California comenzaron a desarrollarse y se utilizaron diversos elementos.

Por ejemplo, patios interiores, arcos, ventanas enmarcadas, fuentes y cascadas, y sobre todo la integración de elementos naturales, desempeñó un papel importante.

The time of colonization was one of the periods where the architecture and interior landscape on the Baja California peninsula began to develop and various elements started to appear. For example, interior patios, arches, framed windows, fountains and waterfalls. Water, and above all the integration of natural elements, played major roles.

En términos de arquitectura local, llamémosla californiana para ubicarnos en un contexto geográfico, el período misionero tuvo una poderosa influencia que es respetada y replicada hasta la fecha.

De las tres órdenes que llegaron, los jesuitas, franciscanos y dominicos, tal vez fueron los jesuitas quienes dejaron mayor huella en materia de construcción. Es imposible hacer de lado la cultura que habían desarrollado en Europa y la influencia de grandes arquitectos jesuitas. De hecho, el estilo barroco que prevaleció en varias misiones muestra elementos que se utilizan hasta la fecha: piedra, cantera, adobe, arcos, cupulas, ladrillo recocido, entre otros.

In terms of local architecture, let's say Californian to position us in a geographical context, the missionary period had a powerful influence that is much respected and replicated to date.

En Baja California Sur el cambio de vocación económica influyó en las construcciones. A principios del siglo pasado, hace poco mas de cien años, la mayoría de las casas estaban hechas de adobe y materiales naturales. Pocas eran aquellas construidas de materiales sólidos y las que existían seguían eran generalmente edificios religiosos, educativas y gubernamentales, principalmente en La Paz, San José del Cabo, Loreto, Santa Rosalía y el Triunfo.

El Municipio de Los Cabos contiene una impresionante colección de hoteles con gran valor arquitectónico. El horizonte es aún prometedor, y más desarrollos abrirán sus puertas pronto. Por supuesto, la mayor riqueza natural son las más de mil kilómetros de playas que rodean Baja California Sur. Todavía hay mucho que ver y explorar. Vale la pena tomarse el tiempo para percibir lo que se ha hecho en este próspero Municipio de Los Cabos durante las últimas seis décadas.

Es valioso recordar que la península se caracterizaba por una economía basada en el sector primario: pesca, agricultura, ganadería y minería, así permaneció durante muchos años.

Dado que Los Cabos es un municipio turístico, existe un interés especial y un desarrollo en los sectores de hoteles y servicios, que incluyen golf, actividades al aire libre, pesca deportiva, paseos marítimos y turismo alternativo. Sin embargo, los proyectos residenciales también han crecido. No solo en número sino en calidad.

Hay inmuebles que son un verdadero reto a las leyes de la naturaleza, y que reflejan el estilo propio de famosos arquitectos y firmas de construcción.

Derivado del esplendor natural de sus playas, costas, mares y del clima, la lógica dirigió los esfuerzos hacia el sector terciario de la economía, el turismo.

Con la aparición de los primeros hoteles, la arquitectura también se modificó substancialmente y evolucionó rápidamente.

Sin embargo, la influencia californiana de la década de los 50’s aun está presente en varios desarrollos.

In our state, the change of economic vocations and almost permanently influenced construction. At the beginning of the last century, just over one hundred years ago, most houses were still made of adobe and natural materials. Rather few were built of solid materials and those that existed were usually religious, educational and government buildings in La Paz, San Jose del Cabo, Loreto, Santa Rosalia and El Triunfo.

It is important to remember that the peninsula was characterized by an economy based primarily on fishing, agriculture, livestock and mining, and remained so for many years.

Due the natural beauty of the beaches, coast lines, the Pacific Ocean and the climate, the logic was to direct efforts towards the tertiary sector of the economy: tourism.

With the appearance of the first hotels, the architecture was also substantially modified and rapidly evolved. However, the Californian influence of the 1950s is still present in several developments.

Even though the Municipality of Los Cabos contains an impressive collection of hotels with substantial architectural value, the horizon is still very promising, and many more will open their doors soon. Of course, the greatest natural wealth is the more than 600 miles of beaches that surround Baja California Sur. There is still much to see and explore. It is well worth taking the time to understand what has been done in this thriving Municipality of Los Cabos over the past six decades.

Since Los Cabos is a Tourist Municipality, it is obvious that there is special interest and development in the hotel and services sectors, including golf, outdoor activities, sport fishing, ocean tours, and alternative tourism. However, residential and architectural landscape projects have also grown exponentially.

Not only in number but in quality. There are buildings that are truly challenged by the laws of nature and reflect the individual style of famous architects and construction firms.

As in any other place in the world where development far exceeds the average rate of population growth, there are challenges with planning and the urban landscape. Entrevistar a Andreas Schmidt, Director General del resort Grand Velas Los Cabos fue un verdadero placer y una experiencia enriquecedora.

Andreas Schmidt inició su trayectoria en la industria de la hospitalidad a los 17 años en Alemania, como chef de un hotel en La Selva Negra. Posteriormente continúa como chef de especialidades hasta Gerente de Alimentos y Bebidas en varios restaurantes y hoteles de lujo como Four Seasons y World Trade Center. A los 24 años, se presentó la primera oportunidad de trabajar en América y se estableció entonces en Nueva York; después vendría Venezuela, Cancún y ahora Los Cabos.

Toda mi carrera ha sido una constante búsqueda de excelencia, no solamente en los hoteles donde he trabajado sino personalmente.

Incorporarme al equipo de Grand Velas fue una posibilidad que no tuve que pensar dos veces; como hotelero reconozco que es la marca de ultra lujo en México.

Empaqué, viajé de península a península, y ¡vaya sorpresa! me encontré este paraíso de Los Cabos. Lo único que me cuestioné fue por qué me tardé tanto tiempo en venir para acá.

Los Cabos is a multicultural destination that attracts talented people from all over the world, united by a singular passion that reflects in their work. Interviewing Andreas Schmidt, manager of Grand Velas Los Cabos, was a real pleasure and an enriching experience.

Andreas Schmidt began his career in hospitality at the age of 17 as a chef at a hotel in La Selva Negra, Germany. He continued as a specialty chef until serving as a food and beverage manager in several restaurants and luxury hotels, including the Four Seasons and World Trade Center. At age 24, he was presented with an opportunity to travel. Off he went to New York, Venezuela, Cancun and now, Los Cabos.

My entire career has been a constant search for excellence, not only in the hotels where I have worked but within myself.

Joining the Grand Velas team was an opportunity I did not have to think twice about. As a hotelier, I recognized that it is the ultra-luxury brand in Mexico. I packed my bags and traveled from peninsula to peninsula, and to my surprise, I found the paradise in Los Cabos! The only thing I questioned was why it took me so long to come here.

¿Cómo defines el lujo?

“El lujo creo que implica muchos elementos y el conjunto de ellos hacen el lujo. Para mí, es primordial el espacio, hay que tener espacios abiertos y eso se destaca en diferentes áreas de Grand Velas Los Cabos.

Tenemos suites que miden más de 100 metros cuadrados. Nuestros restaurantes, el Spa y el lobby tienen techos altos, amplios.

Otro factor, es la atención a los detalles.

Implica desde la calidad de las almohadas hasta las piezas que decoran el hotel. En Grand Velas tenemos el privilegio de contar con el artista mexicano Alejandro Colunga, quien eligió meticulosamente la obra de arte de acorde a cada lugar.

El servicio también debe superar las expectativas de los huéspedes. Siempre señalo que la calidad del servicio debe sorprender al cliente, así, la experiencia se convierte en un sentimiento sincero que permanece para siempre”.

¿Quién ha sido tu mayor inspiración?

“Una gran influencia e inspiración definitivamente es por parte de mi papá. Me enseñó a ser independiente y autosuficiente.

Me dio instrucciones y compartió su sabiduría conmigo, pero nunca hizo las cosas por mí y lo agradezco.

También aprendí de él que no todos los negocios siempre funcionan. Creo que esa ha sido una de mis lecciones más importantes.

Todos caemos. Lo que nos hace diferentes es cómo nos levantamos de nuevo.

Ahora, mi hijo que también me inspira con lo que hace, ve la vida de una manera diferente a la mía”.

How do you define luxury?

I think luxury involves many elements and the combination of each adds up to luxury. For me, space is a necessity. You have to have wideopen spaces. That stands out in various areas of this hotel. We have rooms that are more than 1000 square feet, including our restaurants with their high ceilings, the spa and the lobby.

Another element is the attention to details. From the quality of the pillows to the pieces that decorate the hotel. The Mexican artist Alejandro Colunga meticulously chooses each work of art for each location.

The service should also exceed the expectations of the guests. I always say the quality of the service must get a “Wow!” from the customer. The experience becomes a heartfelt feeling that stays forever.

Who has been your greatest inspiration?

Definitely, my dad who taught me since I was little to be independent and self-sufficient. He gave me direction and helped me learn how to do things, but he never did them for me and I appreciated it.

I also learned from him, that not all businesses always do well. I think that has been one of my most important lessons. We all fall. What makes us different is how we get back up.

Today, my son is also inspired by what he does, yet he sees life in a very different way from me.

¿Cuál ha sido el mayor desafío ante los cambios culturales?

“He aprendido lo mejor de las diferentes culturas. Estoy muy agradecido con la vida.

Los mexicanos tienen una enorme calidez y entrañables costumbres, me han recibido maravillosamente. Es una cultura tan noble y amable que es un verdadero placer vivir aquí.

Tengo 22 años de residir felizmente en México.

Cada lugar ofrece todo, solo tienes que aceptarlo, tener la capacidad de asimilarlo, vivirlo e integrarte. Hoy en día, mi lugar favorito es Los Cabos y espero vivir muchos años aquí. Si algún día me voy a otro lugar, probablemente ese será mi lugar favorito.

¿Cómo conformas tu equipo de trabajo?

“La conformación del equipo es una pregunta muy difícil. El equipo es tan fuerte como su elemento más débil. Se trata de conformar un equipo no solo con profesionales extraordinarios, sino también seres humanos extraordinarios para trabajar en conjunto hacia un objetivo en común.

Hay personas que tienen más experiencia y otras que tienen actitud e iniciativa; entre todos nos complementamos para una mejora continua.

Los objetivos que tenemos en Grand Velas Los Cabos son muy altos. Uno de mis objetivos principales es compartir mi experiencia para desarrollar y hacer crecer nuestro equipo”.

What has been the biggest challenge when facing cultural changes?

I have learned the best of different cultures, and I am very, very grateful for this life. Mexican people with their warmth, with their customs, welcomed me wholeheartedly. It is such a noble, kind culture, it is a true pleasure to be here. That is why I have been in Mexico for 22 years and feel as if I am from here.

Each place offers just about everything you could want.

All you have to do is embrace it, accept it, have the ability to see it, live it and be part of it. Today, my favorite place is Los Cabos and I hope to spend many more years here.

If one day I go somewhere else, that will probably be my new favorite. We make places not the other way around.

How do you assemble your work team?

How I structure the team is a very difficult question. The team is only as strong as its weakest element. It is about forming a team not only with extraordinary professionals but also with extraordinary humans who work together towards a common goal. There are people who have more experience and others who have a lot more of the right attitude. As a result, we complement each other in our drive for continuous improvement.

The bar is set very high at Grand Velas Los Cabos.

A major goal of mine is to develop our teams and their members, if they grow so will the quality of our Resort.

What is the identity of Grand Velas?

Grand Velas is really an ultra-luxury hotel. The unique architectural details establish the brand throughout different destinations of Mexico.

Elias Elias Architects oversaw the entire project. They are 100 percent Mexican. Grand Velas has always been careful to include Mexican details. When combined with luxury, it helps preserve the essence of the experience.

Each gourmet restaurant is headed by a specialty chef that is French or Italian. Chef Sidney Schutte has received two Michelin stars and heads Cocina de Autor.

In addition, with 307 rooms and 800 employees, there is an average of three or four employees to every guest, depending on the occupancy rate. That truly makes service a unique luxury experience here in Los Cabos.

With approximately 25 years of experience, Javier began his career as an intern.

Por mas de 2 años ejerce en Nueva York en la firma de abogados Simpson, Thacher & Bartlett LLP. Por un tiempo da clases de derecho corporativo en el CIDE Campus Ciudad de México, a la vez que labora en un despacho en la cuál uno de sus clientes contaba con inversiones en Los Cabos. Tras varios viajes a este destino, se incorpora primeramente como socio en una firma local.

Javier practiced at the law firm of Simpson, Thacher & Bartlett LLP in New York for two years. Later, he taught corporate law at the CIDE Campus in Mexico City, while working in an office where one of his clients had investments in Los Cabos. After making several trips to Los Cabos, he became a partner in a local firm.

“Llegué a Los Cabos de modo circunstancial hace 12 años. En ese entonces creo que se conjugaron al mismo tiempo dos factores: la parte laboral y la calidad de vida familiar que podríamos tener al cambiar de residencia.”

Para Javier el parteaguas en su vida profesional llega en Los Cabos, después de su preparación y trayectoria toma el reto de abrir una firma independiente, con el fin de implementar sus conocimientos e interactuar de manera directa con cada uno sus clientes.

“Creo que hay un momento de la vida en el cual te detienes y pones en perspectiva el tiempo que llevas ejerciendo la profesión y dónde te ves en el futuro. Nos aventuramos a una nueva vida en la que, si el estrés y la rutina se mantienen constantes, están llenos de una calidad superior.

After having met this paradise and enjoying the attractions and amenities the destination offers, while closing the last suitcase and handing over the key to your hotel room or the majestic villa that was your home for a few days, pause and remember the moments you will always treasure and the sadness of leaving this place.

Abandoning the rituals and routines of our daily lives has passed through all of our minds. So miss the flight back home and move to this magical land.

With the technological advances and the possibility of working from home or having the opportunity to work in a retreat that allows us to enjoy our adult life in a relaxed environment facing the sea, I am sure that most of our readers understand why I feel the way I do about this location. Those who have not yet left city life among the skyscrapers and asphalt read this article with nostalgic tears while thinking of how different life would be in Los Cabos.

It is not easy, I say from experience, to take this step. We leave our families and friends behind. Shoes and coats that would make no sense in a hot climate and even furniture that did not fit in the moving truck are left together with our past. Their absence creates space for a whole new accumulation of experiences and a new life. Even if there is stress and a new routine, the quality of life here is much superior to any other place.

En mi caso, emprender una nueva aventura con una segunda oficina de la firma, fue sin duda una experiencia mayúscula. Enfrentarse al incierto no fue en lo absoluto una tarea sencilla, estas líneas resultaron del empuje necesario para acompañarme en esta aventura, nunca me he arrepentido de la decisión que tomé años atrás. Sin duda, mis redes sociales parecieran unas vacaciones interminables, o al menos mis visitantes a lo largo de estos años así lo han creído, porque levantarme cada día a hacer mi trabajo, supervisando una construcción o proyectar una casa disfrutando la vista del mar, me permite dejar lo mundano de una tarea rutinaria para convertirlo en una actividad soberbia.

Recuerdo con mucho cariño mi primer trabajo en Los Cabos, después del Huracán Odile en 2014, supervisando los trabajos de reconstrucción de una villa, justo en el momento en que un primer grupo de ballenas llegó a Los Cabos con un espectáculo majestuoso que pude disfrutar desde lejos y jamás podré borrar de mi mente.

No es mi intención aburrirlos con mi diario personal, solo que es imposible escribir estas líneas sin buscar en mis memorias los momentos más extraordinarios que he vivido en Los Cabos, impregnados de las maravillas que esta tierra tiene para ofrecernos y de la calidez de la gente que en ella habita, en la que he encontrado grandes amigos que ahora son parte de mi familia cabeña y que me han abierto sus brazos de formas inigualables para hacerme sentir más que en casa, en mi hogar; un hogar que construimos todos en esta tierra, nutriéndola de diferentes puntos de origen, de diferentes costumbres, de diferentes formas de existir para darle forma a una sociedad multicultural que tiene algo para ofrecernos y que está ávida de nuevos integrantes y así seguir aportando, juntos, para crear un destino, inigualable.

In my case, undertaking a new adventure of establishing an office here was undoubtedly a major change. Facing the uncertain was not at all a simple task. However, even though I was pushed to make the move, I have never regretted the decision I made years ago. My social networks may make it seem like my life today is an endless vacation, or at least my visitors throughout the years have believed so. That’s because I get up every day to do the work I love, either to supervise a construction site or a new house with a view of the sea. It allows me to take mundane tasks and turn them into interesting activities.

I remember my first job in Los Cabos with great affection. It was just after Hurricane Odile in 2014. I was overseeing the reconstruction of a villa. It was at that moment that the first group of whales came to Los Cabos and put on a majestic show.

The performance was something I can never erase from my memory.

La piscina de meditación de agua salada es un sello del spa. El diseño simula una ostra abierta sobre el mar y las cabinas de masaje están integradas en el entorno natural alrededor como si flotaran en el agua. En el diseño destacan elementos mexicanos, que a la vez se integran al ambiente natural.

El concepto se enfoca en las etapas de la luna y puede apreciarse en la bóveda central. Los masajes, los tratamientos e incluso los aromas se han creado para estar en sintonía con las fases lunares.

From the beginning, the Luna & Mar Spa was planned as the center of The Resort at Pedregal. Beauty is the essence of the architecture. The spa was designed by the illustrious Sylvia Sepelli who is renowned in the industry for her great sensitivity toward situating spas into the destination and the surrounding culture.

“The spa that has impressed me most is definitely this project. I had the chance to be involved from the beginning. It is part of the culture. When you enter, you realize that you are in Mexico, the essence of the country. It is what we call a sense of place."

The saltwater meditation pool is a hallmark of the spa. The design simulates an oyster open upon the sea and the massage cabins are integrated into the natural environment around the pool.

on la sensación de que en cualquier momento iba a aparecérseme un fantasma o algún bicho, recorría los ruinosos cuartos de la casona que pensaba comprarme en El Triunfo. Encendí un cigarrillo. El silencio era tan grande que al exhalar el humo sentí un sobresalto. ¡Qué estruendo el de una piedrecilla aplastada bajo la suela del zapato! Había acordado verme con los vendedores a las seis y media de la tarde. Estaban demorados. El cielo cubierto de cúmulos favorecía la oscuridad que avanzaba rápidamente en esa tarde invernal.

Silencio. Eso era lo que yo necesitaba para recuperar el estatus de persona normal. Estaba cansada de dormir durante el día y pasarme la noche anclada a la máquina de escribir, rutina que me había llevado a convertirme en un ser detestable y antisocial. Salí al corredor, me encantaba el patio con ese piso de ladrillo, ahora cubierto de huizapoles. Lo imaginé limpio, sombreado por las palmeras de taco y los tabachines en flor. Tal vez tuviera razón el naturista y en ese lugar, al no tener las distracciones que facilita la electricidad, se curaría mi insomnio.

Estaba decidida a prescindir de la televisión, del teléfono e incluso de la radio. Así me obligaría a rectificar mis horarios y desde luego, siempre podría volver corriendo a mi casa, a escasos cuarenta minutos.

El silencio que me rodeaba se desintegró. Diáfanas notas musicales se dispersaron por el aire como una catarata de pompas de jabón. Entré y me acerqué a la ventana buscando el origen de la música, parecía provenir de la casa de enfrente. ¿Será una radio? —me pregunté—, el cuerpo sacudido por una sucesión de escalofríos que me recorrían de los pies a la cabeza. Pero no era eso.

xpecting that at any moment a ghost or some vermin would jump out at me, I wandered through the dilapidated rooms of the house that I was thinking of buying in El Triunfo. I lit a cigarette. The silence was so overwhelming that when I exhaled the smoke, I felt a start. A pebble crushed under the sole of my shoe became a roar!

I had agreed to meet the sellers at 6:30 in the evening. They were delayed. The sky was blanketed with clouds that added to the darkness that was rapidly advancing on that winter afternoon… Silence.

This was what I needed to regain the status of a normal person. I was tired of sleeping during the day and spending the night anchored to a typewriter. It was a routine that had made me antisocial. I went out into the corridor. I loved the patio with that brick floor, now covered with huizapoles.

Suddenly, the silence that surrounded me disintegrated.

Musical notes drifted through the air like a cataract of soap bubbles. I went in and stood at a window looking for the origin of the music. It seemed to come from a neighboring house. Is it a radio? I asked myself, my body shaken by a succession of chills that ran from head to foot. But it was not that.

Someone was playing a piano in that house.

A stronger shudder made me tremble just as the last ray of sun tore through the clouds then disappeared behind the mountain. If someone had asked me that afternoon, I would have sworn the other house was just a ruin. However, the great door that faced the alley was wide open, inviting me to look into the darkened room. Grasping the iron bars, I glimpsed the interior where little by little a grand piano and a pianist came into view.

Both shone bright white as if they were illuminated by the moon. Now I could see them clearly. The pianinst had long hair pulled back at the nape of his neck.

En esa casa alguien tocaba el piano. Un estremecimiento más fuerte me hizo temblar al mismo tiempo que el último rayo del sol desgarró las nubes para desaparecer tras la montaña. Si alguien me lo hubiese preguntado todavía esa tarde, podría haber jurado que la casa de enfrente sólo era una ruina. No obstante, ahí estaba la gran puerta que da al callejón, abierta de par en par, invitándome a observar el salón en penumbra. Agarrada de las rejas atisbé el interior donde poco a poco vislumbré, un piano de cola y al pianista que resplandecían como si estuviesen iluminados por la luna. Ambos eran de un color blanquísimo. Ahora podía verlos perfectamente. Él llevaba los cabellos largos recogidos en la nuca.

Jamás había escuchado un intérprete que me despertara tanta emoción. Tocaba una sonata desconocida para mí, sus manos en el teclado semejaban palomas aleteando en la cornisa. Aferrada a las rejas me dejé envolver por un hechizo imposible de romper. Los acordes y arpegios se desgranaban dulces, vibrantes, cristalinos.

No podía apartar la vista del conjunto lunar que formaban el hombre y su piano. Los temores se transformaron en sueños y me vi desnuda, grácil, danzando en el patio bajo los tabachines florecidos. Mis manos trazaban figuras en el aire con una chalina plateada, transparente. Las notas musicales explotaban dulces sobre mis mejillas y se enredaban entre mis largos cabellos… No sentí cuanto tiempo permanecí así, soñando, agarrada a las rejas, los ojos fijos en el hombre y el piano. De pronto la música cesó y volví a la realidad. Él salió al callejón. De su cara y sus manos emanaba una suave luz fluorescente.

Permaneció ahí de pie, vuelto hacia mí, esperando una palabra, quizás.

Intenté hablarle y no salió ningún sonido de mis labios.

Mis dedos entumecidos soltaron las rejas, pero mis pies doloridos se resistían a dar un paso. Había anochecido. Tenía que salir y alcanzar la calle antes de que él se fuera.

I had never heard a musicial interpretation that aroused so much emotion. He played a sonata unknown to me. His hands on the keyboard resembled the wings of a dove. ¡Espérame!, dijo la voz enronquecida que salió de mis labios. Haciendo esfuerzos por desentumecerme di unos pasos en la oscuridad y salí al patio. En las copas de las palmeras se reflejaban las escasas estrellas que brillaban entre las nubes. Mis ojos pronto se acostumbraron a la falta de luz y caminé anhelante hasta el zaguán.

Afuera esperaban mi coche y el pianista, inmóviles. Al verme él echó a andar ligero, callejón abajo. ¡Espérame! le grité, pero no pareció escucharme. A riesgo de caer corrí para alcanzarlo, mis piernas pesaban. Ahora podía verlo claramente a la luz de la luna. ¡Espérame!, grité nuevamente sin parar de correr a manera de una cámara lenta. La distancia entre los dos no disminuía. Una barda alta y ruinosa daba fin al callejón. El hombre se internó por un portón sin rejas y decidí seguirlo hasta allá, ya no sentía ningún temor. Él se detuvo junto a una estela luminosa y me esperó con los brazos cruzados sobre el pecho.

It was dark. He walked out to the street. Wait for me! Said the hoarse voice that came from my lips. I made an effort to loosen up in the darkness and took a few steps into the courtyard. The few stars shining through the clouds reflected in the palm treetops. My eyes soon became accustomed to the lack of light and I walked eagerly to the entrance hall.

Outside, my car and the pianist waited, motionless. When he saw me, he started walking lightly down the alley.

Wait for me! I screamed at him, but he did not seem to hear me. At the risk of falling, I ran to reach him on heavy legs. I could see him clearly in the moonlight. Wait! I screamed again. I felt as if I was running in slow motion. The distance between the two of us did not decrease. A high and ruined wall was at the end of the alley.

The man went through a gate and I decided to follow. I felt no fear. He stopped next to an illuminated path and waited for me with his arms crossed over his chest.

Who are you? I asked, approaching him. He turned his face towards me, resplendent and white, but empty. Nothing. There was nothing in that face. He had no features, no eyes, no nose, no mouth... like an unfinished doll. A scream escaped my lips and he vanished.

Rosaura estudia diseño gráfico, posteriormente arte. Decide especializarse y seguir su pasión, la fotografía. Esta es la técnica que elige para transmitir sus experiencias y emociones.

Rosaura started out studying graphic design. She later added art. That is when she decided to follow her passion, photography. Photography is the technique she uses to convey her experiences and emotions.

“Mis recuerdos de pequeña me remontan a mi papá recopilando todos los momentos de nuestra familia, fotografiándome a mí y a mis hermanos. Me encantaba. Es la primera chispita que despierta mi interés por la fotografía. Quiero capturar todos los momentos, parezco reportera. Son las memorias que busco conservar, me emociona saber que puedo volver a verlas… y recordar.”

“My memories include seeing my dad collect all our family moments, taking photos of me and my brothers. I loved it. It was like the first spark that kindled my interest in photography. I look like a reporter because I want to capture every moment. They are memories that I want to preserve. I get excited to know I can then see them again ... and remember.”

De niña, el recuerdo de su padre capturando todo lo que veía en una imagen despierta su interés por este arte. Las personas y los paisajes son dos elementos que despiertan particular atención en Rosaura. Busca transmitir las historias de los momentos que captura.

As a child, the memory of her father capturing everything in pictures aroused her interest in this art form. People and landscapes are two elements Rosaura finds particularly appealing. She seeks to transmit the stories of the moments she captures.

“Hay fotografías que son muy estudiadas, muy esperadas, hay otras espontaneas, en el momento.

Tienes que estar preparada. Busco retratar la esencia de las personas, de dónde es, qué es lo que hace, lo que aporta a este mundo.

"There are photographs that are very studied and highly anticipated, but there are others that are born of the moment. I have to be prepared for everything. I seek to portray the origins of people, where they are from, what they do, what they bring to this world.

De un paisaje lo que busco es drama. Me gusta lograr el efecto dramático de asombro que solo dura un momento al capturar un paisaje. Eso es porque cada momento es irrepetible. La luz cambia de un segundo al siguiente Y la siguiente imagen no será la misma”.

Rosaura encuentra además inspiración en las obras de Renoir y fotógrafos como Ansel Adams, Steve McCurry, Annie Leibovitz, Emmanuel Lubezki, entre otros. Al momento de preparar una colección sus experiencias son la directriz para seleccionar imágenes de acuerdo con un tema específico.

From a landscape, I look for drama. I like to achieve the dramatic effect of astonishment that only lasts a moment when capturing a landscape.

That’s because each moment is unrepeatable. The light changes from one second to the next and the following image will not be the same.”

Rosaura also finds inspiration in the works of Renoir and photographers such as Ansel Adams, Steve McCurry, Annie Leibovitz, Emmanuel Lubezki, and others. She uses their work as a guide when selecting images for her collections.

“Mis colecciones reflejan el momento que estoy pasando, o están enfocadas en algo que me ha sucedido, en mis vivencias. Por ejemplo, tengo una colección que refleja el folklore de México.

El tema central es la belleza de mi país y está compuesta por fotos que me hacen sentir todavía más orgullosa. Creo que es tan rico en cultura que de verdad nos quedamos cortos. Todavía tenemos mucho que retratar sobre México.”

“My collections reflect the moment I am going through, or, they are focused on something that has happened to me, my experiences. For example, I have a collection that reflects the folklore of Mexico. The central theme is the beauty of my country and is composed of photos that make me feel even more proud. I think our country is so rich in culture that we have really fallen short. We still have a lot to say about Mexico.”

La escultura, la pintura y las aventuras en el extranjero son otras grandes pasiones de Rosaura.

Viajar con una cámara y perseguir la fotografía perfecta es un recorrido inesperado, y a la vez, arriesgado.

Sculpture, painting and living adventures abroad are Rosaura’s other great passions. Traveling with a camera and chasing the perfect photograph is an endless journey and, at the same time, risky.

“El mayor desafío que enfrenta un fotógrafo en la actualidad, es quizá la controversia sobre la fotografía como arte.

Mis herramientas son la cámara, la luz, las sombras. ¿La computadora? Es mi pincel.

Pocos entienden que los fotógrafos persiguen el extremo. Implica riesgo, dejar el estudio, muchas veces cansancio, calor o frío. Ir a los límites, es lo que llamo valor agregado".

En 2011, el destino le dio a Rosaura una oportunidad, alentada por una amiga, deciden encontrar un espacio para exhibir su trabajo juntas. Justo antes de someterse a una operación médica, recibió una llamada que se convertiría en un momento decisivo en su carrera.

“Solo una semana antes de la operación, me dice mi amiga que encontró el lugar, y acepté. Me encantó el espacio, tenía muchísima obra que no había expuesto, entonces dije, ¡sí! Dimos el anticipo y salí de la ciudad. De regreso me enteró que mi amiga tuvo que cambiar de residencia, acepté la oportunidad y heme aquí.

Los Cabos es un lugar completamente diferente de donde crecí en Puerto Vallarta.

Me cautivaron los colores. Cuando llegué, no había muchas opciones culturales, especialmente para los jóvenes, así que empecé un taller de arte para niños.

Hoy considero a Los Cabos parte de mi vida. Poco a poco quiero ir poniendo mi granito de arena en arte y cultura”.

“The biggest challenge that a photographer faces today is perhaps the controversy regarding photography as art. My tools are the camera, the light, the shadows. The computer? It's my brush.

Few understand that photographers pursue the extreme. It implies risk to leave a studio into extreme heat or cold and many times totally exhausted. Going to extremes is what I call added value.”

In 2011, fate gave Rosaura a nudge.

Together with a friend, they decided to find a space to exhibit their work together.

Just before they began operating, she received a call that would become a watershed moment in her career.

“Just a week before we started, my friend tells me she found her own place. I said I'm a week away from operation. I’m going. I loved the space but there was a lot of work to do. I said, time to pray. I put down a deposit and left. My friend had to change her residence, but I accepted the opportunity and here I am.

Los Cabos is a completely different place from where I grew up in Puerto Vallarta. I was captivated by the colors here. When I arrived, there were not many cultural options, especially for young people, so I started an art workshop for children.

Today, I consider myself from Los Cabos. Little by little, I am doing my part in culture and art.”

El chef Cristian Schwuger se gradúa del Instituto Argentino de Gastronomía, durante sus estudios organiza sus tiempos para trabajar. Por parte de sus abuelos, tiene influencia de las culturas y sabores de Croacia, España, e Italia. Desde la infancia el buen comer argentino le hereda un bagaje gastronómico muy particular.

Chef Cristian Schwuger graduated from the Argentine Institute of Gastronomy, where he combined his studies with his work. Influenced by the cultures and flavors of Croatia, Spain, and Italy through his grandparents during his childhood, Christian combined his experiences with Argentine cooking.

“Comencé en Argentina, está claro. Formalicé mis estudios en uno de los mejores institutos de Sudamérica dirigido por Ariel Rodríguez Palacio. Cuando tenía 16 años, descubrí que cocinar podía llevarme rápidamente a un trabajo. Y el argentino es bueno para comer, así que me fue bien a esa edad. Debo reconocer que mi mayor influencia se dio con la familia, en especial con mi mamá.”

“I started in Argentina and studied in one of the finest institutes in South America commanded by Ariel Rodríguez Palacio. When I was 16, I found that cooking could quickly lead to a job. Argentinian food is good to eat so I did well at that age. I decided to formalize my study, but my real influence continued to be my family, especially my mother.”

Después de una ardua labor de servicio en uno de los primeros hoteles Relais & Chateaux en Argentina, Cristian comprende que su desarrollo profesional depende de su aprendizaje en los estándares profesionales más exigentes.

Su siguiente objetivo es laborar en el Hotel Alvear bajo la dirección de Jean Paul Bondeaux, uno de los primeros franceses en llevar la cocina argentina dentro de un hotel de lujo. Más tarde, trabaja dos temporadas en La Bourgogne, en Punta del Este, Uruguay. Participa en la cocina de Mirazur en Francia. También tiene oportunidad de estar en Paraguay, Brasil, Santiago de Chile y un año en San Sebastián, en el país vasco de España, donde aprende de Hilario Arbelaitz, padre de la nueva cocina vasca.

“Los viajes y ser parte del equipo de cocina de varios chefs han marcado mi carrera. Jean Baptiste Pilou lo considero un referente gastronómico. Por otro lado, la cultura gastronómica del vasco es impresionante, cualquier momento del día es bueno para comer y para cocinar.”

En 2013, el chef Christian se muda a Chile para tomar el mando de la cocina en el Hotel W de la Ciudad de Santiago. El primer desafío que enfrenta es ir más allá de la cocina, y comprender que la industria de la hospitalidad es una experiencia aún más completa.

“Venía con una impronta muy restaurantera, quién conoce el ámbito sabe que son dos cosas diferentes.

Incursioné poco a poco en la gastronomía hotelera y encontré un lindo nicho laboral. No solo es cocina, va desde montar un banquete, montar eventos, ver la decoración, contactar proveedores y conjugar todos estos elementos, además de la cocina.

La gastronomía dentro de un hotel es un oficio tenaz. Debes tener una pasión extrema por el servicio.

En lo personal, dedico gran parte de mi vida a esta ocupación. Mi familia apoya al 100% mi crecimiento profesional”.

"Travel and working with a number of impressive chefs have marked my career. Jean Baptiste Pilou is someone I consider to be one of my great references and working as a chef in the Basque culture impressed upon me that any time of the day is good for cooking and eating.”

After hours of service in one of the first Relais & Chateaux Hotels in Argentina, Chef Cristian understood that his professional development was dependent on him achieving the most demanding professional standards. He set his sights on the Alvear Hotel under the management of Jean Paul Bondeaux, one of the first Frenchmen to bring Argentine cuisine to a luxury hotel. Later, he spent two seasons in La Bourgogne in Punta del Este Uruguay, and time in the kitchens of Mirazur in France, Paraguay, Brazil, Santiago Chile and one year in San Sebastian in the Basque country of Spain where he learned from Hilario Arbelaitz, the father of the new Basque cuisine.

In 2013, chef Christian moved to Chile to take command of the kitchen at the Hotel W de Santiago. The first challenge the chef faced was to go beyond the plate and understand that hospitality stretches from the arrival of the dish at the table to the experience people take away from the restaurant.

“I came with a restaurant imprint who knew there were two different parts to the field. I was venturing a bit into hotel gastronomy and I found a very nice niche.

It's not just cooking. It goes from setting up banquets, events, even overseeing the decorations. I would contact the suppliers and combine all the elements, not just the kitchen.

Finalmente, Cristian llega a formar parte del equipo del Sheraton Grand Hotel Hacienda del Mar en Los Cabos, una de las ciudades gastronómicas más importantes del mundo.

“Parte de la belleza de Los Cabos es el clima, ¡nunca uso chamarra! Además, de la extraordinaria calidad de vida. En verdad, el destino está evolucionando gastronómicamente.

Me atraen mucho las actividades en el mar, me encantaría tener más tiempo para pescar. Todos los días, me doy cuenta de que este es un lugar vivo con atractivos muy interesantes".

Bajo su liderazgo, De Cortez Grill and Restaurant en Sheraton Grand Los Cabos Hacienda del Mar es un referente a nivel nacional como uno de los embajadores de la mejor gastronomía y servicio.

“Part of the beauty of Los Cabos is the climate. I never wear a jacket! In addition, there’s the relaxed atmosphere and working life. On top of that, the destination is evolving gastronomically.

I really like the sea and would love to have more time to fish. I also like the desert. Every day, I realize this is a place alive with very interesting things.”

Under his leadership, De Cortez Grill and Restaurant at Sheraton Grand Los Cabos Hacienda del Mar serves as an ambassador and a national benchmark for the finest cuisine and service.

El objetivo era refrescar los elementos para continuar siendo un restaurante emblemático en Los Cabos.

Modernizar fue uno de los objetivos, asimismo crear un ambiente relajado.

Quién pudiera pensar que a 23° 03' latitud norte y 109° 42' longitud oeste del Meridiano de Greenwich encontraríamos una población con una diversidad cultural, tanto en sus habitantes como en el arte. Me refiero al Centro Histórico de San José del Cabo, Baja California Sur, que puede jactarse de contar con un sitio específico en donde se concentran las creaciones de artistas, locales e internacionales.

Obras de arte que han recorrido kilómetros para llegar a este sitio pintoresco de México y, otras tantas, que han sido creadas localmente con la inspiración única que Los Cabos transmite a sus artistas, se reúnen en el conocido Distrito de Galerías entre las calles de Obregón, Guerrero y Morelos, en el Centro Histórico. Contagiados por el entusiasmo de dar a conocer el arte, otras calles han abierto espacios para extender más el concepto de San José del Cabo como un destino cultural y artístico. Quienes conocen esta población y la han visitado por años, no me dejaran mentir.

Who would think that at a latitude of 23° 03' north and a longitude of 109° 42' west a population would exist with such cultural diversity, both in the inhabitants and in the art. I’m referring to the historic district of San Jose del Cabo, Baja California Sur. This one location can boast of having an impressive concentration of both local and international artists.

Works of art that have traveled miles to reach this picturesque site in Mexico, as well as many other local creations that are the result of the unique inspiration provided by Los Cabos, are gathered in the well-known Galleries District in the Historic Center between the streets of Obregón, Guerrero and Morelos. Infected by the enthusiasm for enjoying art, other streets have opened spaces to further expand the notoriety of San Jose del Cabo as a cultural and artistic destination.

As in most things, the effort it takes to display art on a wall is rarely noticed. It may appear minimal but, in reality, it is the result of hard work that starts with an idea, the procurement of original materials, transporting the work, contracting for the transport insurance, displaying the work and the agreement of terms with the Galleries or the artists. After that, the work must be protected, rotated, and more.

Tal vez, un día nos sorprenda una pintura del mismísimo Bansky en esta población josefina.

Era una casa que tenía como seis cuartos muy grandes, altos, hechos de paredes gruesas, techo con vigas de palma y atravesados estaban los ladrillos y el entortado en la parte de arriba. Tenía un corredor amplio, con arcos de madera a cuadros, precioso se veía. La casa era más o menos lo que es una cuadra, la casa y lo que era el patio, porque la cocina estaba anexa a la casa, no estaba integrada. Era una cocina de hornillas, al estilo viejo, colgaban los enseres: ollas, sartenes y todo eso, una mesita como un desayunador, digamos…”

“Se vivía en comunidad, era como una familia grande. Teníamos abiertas las puertas de cualquier casa. …Me tocó vivir la época del tomate, la época de las moliendas, de la caña de azúcar, de la panocha, del guarapo, de aquellos corazones que se hacían tipo de panocha… de la melcocha… era una industria. Eso junto con la carne seca de tiburón, de su hígado y aceite…, era lo que florecía aquí…el tomate de exportación, después de la segunda guerra mundial…ya después Sinaloa produjo en demasía y pues ya bajo el precio y ya no era redituable aquí”.

Estas remembranzas no son para volver a ese pasado, sino para reflexionar y señalar que en esta fusión de horizontes es posible encontrar la libertad y el amor.

Los Cabos al igual que los diversos pueblos de nuestro México, añoran siempre un mejor porvenir, los lugares remotos del final de la tierra, son una invitación al descanso y al alimento del espíritu, a vivir experiencias de libertad. Las dos principales ciudades de Los Cabos: Cabo San Lucas y San José del Cabo, se separan en su origen por 32km, distancia que actualmente se pierde, puesto que la carretera que los une está llena de majestuosos servicios turísticos.

Este proceso de hibridación, tanto geográfica como cultural, estará seguramente al cuidado de los que aquí vivimos y de los visitantes. Dará como resultado un mejor destino para vivir, descansar y disfrutar de esta maravillosa Tierra Perfumada.

La fusión del horizonte es el apoyo a la cultura, a que las ideas de donde vengan siempre deben apuntalar la construcción social que lleva al camino de la identidad y el respeto. Elizabeth Acosta Mendía Un ejemplo de pérdidas documentales notables tuvo lugar durante el enfrentamiento bélico contra los invasores norteamericanos en 1847, la falta de armas y municiones obligó a los defensores de la tierra bajacaliforniana a utilizar “los papeles más viejos” para confeccionar cartuchos de pólvora. De esta forma la historia de la ocupación jesuita de Californias y parte de la del siglo XVIII, se convirtió casi por completo en patrióticas cenizas.

Gracias a la actitud conservacionista de los funcionarios a partir del siglo XIX, la reducida memoria histórica peninsular pudo ser rescatada una y otra vez, la existencia de el Archivo Histórico con sede en La Paz es prueba de ello.

A fines de los años sesenta, historiadores, estudiosos y ciudadanos preocupados, impulsaron el rescate de este acervo documental con el propósito de crear el Archivo Histórico Sudcaliforniano, ideal que se vio cristalizado el 9 de mayo de 1969.

n almacén situado en la azotea de un viejo edificio conocido como El Sorbazo fue, por muchos años el lugar de refugio de buena parte de la memoria histórico documental de la península californiana.

Además de la humedad y hongos, los estragos que sufrió este valioso legado vienen de tiempo atrás. Uno de los fines que obedece la creación del Archivo Histórico del Estado es para que sus acervos sirvan de sustento en la construcción de la península californiana. Por esa razón, una de sus funciones centrales es el servicio público, constituido éste principalmente por investigadores y estudiantes de educación media superior y superior.

In addition to humidity and mildew, there was damage to this valuable legacy that came from a long time ago. At the end of the 1960s, historians, scholars and concerned citizens supported the rescue of the historical collection by promoting the creation of the Sudcalifornian Historical Archive. The dream became a reality on May 9, 1969.

What an accomplishment for those that daily devote part of their lives to conserve and catalog the valuable historical heritage of Calientes!

One of the requirements for creating the State Historical Archive is that the assets serve as a support for construction on the Californian Peninsula. Consequently, a central function is public service, predominantly provided by researchers and students of upper and higher secondary education.

Pablo L. Martinez (1898 - 1970) The Historical Archive is named after the native author and historian Pablo Leocadio Martínez Márquez of Santa Anita and the municipality of San Jose del Cabo.

Don Pablo was one of the first South Californians to directly investigate the national and foreign collections of documents that contained material about the Californias. One of his most recognized works, History of Baja California (1956), drew the first general outline of the peninsular history. After an exhaustive search of the civil and ecclesiastical records of the main Sudcalifornian populations, he also produced a second important text, Family Guide of Baja California Sur 1700-1900 (1965).

However, Don Pablo left the History of Alta California 1542-1945 unfinished. It was published after his death in 1970. The book demonstrates the growth of his experience and skill in the management of primary sources and his tenacious character in his search for information.

Professor Martínez earned permanent recognition in June 1990 when he was declared Illustrious Sudcalifornian and his remains were buried in the archive rotunda built specifically for this purpose.

No obstante, de estar inconclusa, después de su muerte fue publicada: Historia de la Alta California 1542-1945 (1970), en la cual se puede apreciar una mayor experiencia y oficio en el manejo de fuentes primarias y el tesonero carácter en la búsqueda de información.

Sin duda, el profesor Martínez se ganó un imperecedero reconocimiento cuando en junio de 1990 fue declarado Sudcaliforniano Ilustre, y sus restos depositados en la rotonda construida para este fin.

En el Centro Histórico el Gobierno del Estado ha rescatado edificios públicos para la difusión y promoción del arte y la cultura. En la Antigua Casa de Gobierno del Territorio se encuentra el Centro de Culturas Populares, donde se aprecian exposiciones de arte y tradición del Estado y el resto del país.

También se recuperaron los edificios del Teatro Juárez y el Antiguo Palacio Municipal, inmuebles centenarios que hoy albergan al Centro Cultural La Paz, un sitio de exposiciones históricas, artísticas permanentes y temporales, así como espacios para música y presentaciones teatrales.

Por otra parte, Todos Santos es un “Pueblo Mágico” que se encuentra a 82km al sur de La Paz, es un oasis fértil y acogedor con temperaturas más bajas que la ciudad de La Paz y sobre la costa del Océano Pacífico. En los últimos años se ha convertido en un punto cultural sobresaliente, ya que su tradicional arquitectura está siendo rescatada y transformada en hoteles, galerías y restaurantes. Muchos pintores nacionales y extranjeros han migrado a Todos Santos, convirtiéndolo en un pueblo de arte, además de ser la sede de festivales culinarios, musicales, cine y otros durante el año.

a Paz offers various attractive places to visit, such as the Cathedral of Our Lady of La Paz located in the heart of the city. Erected in the same place where the mission was founded by the Jesuits during the seventeenth century and built by the Dominicans in 1861. Inside it shelters beautiful restored altarpieces from other missions.

Near to the center of the city is the Regional Museum of Anthropology and History, (INAH). As you walk through each room, you will get to know the history of the state, from pre-Columbian cultures to independent Mexico.

In the Historical Center, the State Government has rescued public buildings for the dissemination and promotion of art and culture. In the Old House of Government of the Territory is the Center of Popular Cultures, where you can enjoy art exhibitions and traditions from the state and the rest of the country.

The buildings of Juarez Theater and the Old Municipal Palace were also recovered, centenary buildings that now house the La Paz Cultural Center, a site of historical, artistic, permanent and temporary exhibitions, as well as spaces for music and theatrical presentations.

Todos Santos is a Magical Town located 82km south of La Paz, it is a fertile and cozy oasis with lower temperatures than the city of La Paz; on the coast of the Pacific Ocean.

In recent years it has become an outstanding cultural point, as its traditional architecture is being rescued and transformed into hotels, galleries and restaurants. Many national and foreign painters have migrated to Todos Santos, turning it into an art town, as well as the venue for culinary festivals, music, movies and others throughout the year.

Aquí comienza la Baja California que muchos piensan que es un desafío; el enorme desierto, inhóspito, deshabitado, una tierra salvaje donde apenas llueve.

La inolvidable figura principal de este paisaje es un raro y extravagante cactus llamado cirio o árbol boojum. Este nombre viene de imaginarios y extraños personajes del libro de Lewis Carroll “La cacería de la trampa”. Estos cirios crecen solo en la península de Baja California y parte de Sonora. Los nativos le han dado este nombre debido al parecido a enormes velas.

One unforgettable feature of this inscrutable landscape is the sight of a rare and bizarre cactus called the “cirio” or “boojum” tree. The name “boojum” came from the weird creatures or things imagined in a book by Lewis Carrol titled, The Hunting of the Snark. The cirios grows only in Baja and parts of Sonora.

Pueden parecer también unas gigantescas zanahorias cubiertas de una barba dispareja y espinosa, que en lo alto se divide en finas plumas de tonos naranjas y amarillos como una flama. El cuerpo del cirio va decreciendo en lo alto; esta vara puede llegar a medir 20, 40 o hasta 60 pies de altura.

The natives call them “cirio” because they look like candles. Actually, they resemble huge carrots covered with a stubble of thorny twig-like branches. The cirio’s tapering body reaches varying heights of 20, 40 or even 60 feet.

LA COMIDA NATIVA En las raíces históricas de la cocina sudcaliforniana existen coincidencias con diversos platillos de Sonora, Sinaloa y Jalisco, herederas a su vez de la comida novohispana y española. En la etapa misional los jesuitas introdujeron el trigo, el maíz, el frijol, la lenteja, el garbanzo, la calabaza, el zapote, el mijo, la granada, el limón, la ciruela, la col, la lechuga, la caña de azúcar, el arroz, el dátil, el plátano, la sandía, la naranja, la lima, la uva y la aceituna.

Del maíz se obtuvo el plato de pozole, de la vid se produjo el vino de uva, de la caña se elaboró el piloncillo o panocha, además de la ciruela y la uva pasa.

Las misiones también introdujeron la ganadería, de la que se obtuvo carne asada, leche, queso y huevo. Es importante subrayar las dificultades que enfrentó la economía misional para la producción de alimentos por las características de aridez del medio peninsular. La comunidad misional se componía del misionero, de la tropa y los neófitos indios. Su alimento principal era el pozole y el atole. Los oasis permitían el cultivo de huertas, de las que obtenían uva, caña, naranja, aceituna y hortalizas. Los demás ingredientes se traían de puerto Yaqui, de Sinaloa o desde Nueva Galicia.

La tradición culinaria de los pueblos misionales del siglo XVIII en California careció de muchos ingredientes utilizados en la cocina novohispana.

Con la secularización y colonización civil, en el tránsito del siglo XVIII al XIX, surge una nueva tradición cultural con el reparto de huertas y aparición de los primeros ranchos ganaderos, de donde proceden los hábitos, saberes y sazones de la cultura alimentaria regional, marcada por las condiciones ecológicas del desierto, por la base productiva de los ranchos y de las necesidades de una escasa población. De esta etapa sobrevivieron los platillos del cipai, del guacabaqui de origen mayo y yaqui, el vino misionero, el cabrito.

Desde mediados del siglo XIX se desarrolló una demarcación en los límites de La Paz y Comondú llamada Intermedios que se inscribe en la cultura del vaquero serrano. En esta zona extensa que ocupó desde Andachire y Jesús María Aenatá hasta Toris y la costa del Pacífico, en los llanos de Magdalena, se repartieron numerosos sitios de ganado mayor como fueron Tihuana, Tembabiche, Yerbabuena, San Dionisio de Quepoh, Los Dolores, Iritú, Toris, Kaquiwi y otros que aportaron a la gastronomía los platillos del vaquero serrano como la carne seca, el cabrito asado o en caldo con orégano silvestre, los chimangos, la machaca de res, el caldo de hueso con frijoles, las coyotas, el puchero, el queso con miel, el sancocho, la cabeza de res tatemada y las tortillas de harina.

The missions also introduced livestock that provided roasted meat, milk, cheese and eggs. The missionary community consisted of the missionaries, military troops and neophytes from India. of the regional food culture influenced by the ecological conditions of the desert, the production of the ranches and the needs of the small population.

Foods that have survived from that time include the cipai, the guacabaqui of May and Yaqui origin, roasted goat meat and missionary wines.

In the mid-nineteenth century, an area was identified near the borders of La Paz and Comondú called Intermedios. It is memorialized in the culture of the mountain cowherds. In this extensive area that ranged from Andachire and Jesús María Aenatá to Toris and the Pacific coast, including the plains of Magdalena, numerous cattle ranches were distributed such as Tihuana, Tembabiche, Yerbabuena, San Dionisio de Quepoh, Los Dolores, Iritú, Toris, Kaquiwi and others. The ranches contributed the dishes of the mountain cowboy such as dried meat, goat meat either roasted or cooked in a broth with wild oregano, the chimangos, the machaca de res, broth from bones with beans, the coyotas, the puchero, cheese with honey, beef stew, beef tatemadas and flour tortillas.

Native Food

The historical roots of Southern Californian cuisine contain similarities between dishes from Sonora, Sinaloa and Jalisco, the heirs of the food of New Spain and Spain. During the missionary era, the Jesuits introduced wheat, corn, beans, lentils, chickpeas, squash, zapote, millet, pomegranates, lemons, plums, cabbage, lettuce, sugar cane, rice, dates, bananas, watermelon, oranges, limes, grapes and olives.

The pozole dish was obtained from the corn, the wine was produced from the vines, and the piloncillo or panocha was prepared from sugar cane, as well as plums and raisins.

In San Jose del Cabo the leader of the Indian communities, Marcelino Chicori, also suffered the wrath of Father Nicolas Tamaral. According to Father Venegas, Marcelino Chicori and Domingo Button were frequently visited in their respective ranches and, as they had authority over the populations, they soon enlisted the support of other indigenous chiefs. Durante el mes de agosto, los rebeldes dieron muerte a un soldado que campeaba ganado en la Misión de San José del Cabo, la muerte de un mozo en Todos Santos, y la muerte del único soldado que vigilaba el recinto misional de La Paz. Los rumores de una sublevación llegaron a oídos de los tres misioneros que operaban en la región pericú. Las amenazas de muerte y estaban hechas.

El día primero de octubre de 1734, un enardecido grupo de indios pericúes dirigidos por Cristóbal Abúe; sacó al padre Lorenzo Carranco de su cabaña para lanzarle un buen número de flechas, para continuar con algunas otras laceraciones a su cuerpo. El domingo 3 de octubre del mismo año, muy de mañana el padre Nicolás Tamaral de la Misión de San José del Cabo corría la misma suerte. Un grupo de indígenas penetró hasta su habitación, fue agredido, flechado y finalmente echado a las llamas junto con objetos de uso religioso. El día 4 de octubre por la tarde el Padre Segismundo Tavaral de la Misión de Todos Santos se dio por enterado de los acontecimientos de Santiago y San José del Cabo. Supo por información de algunos indígenas cercanos a la iglesia lo que había ocurrido e inmediatamente acompañado por su escolta y varios indios auxiliares, se dirigió a la misión de La Paz para después llegar a Loreto.

Mientras tanto los rebeldes orgullosos de su éxito efímero destruían todo vestigio de los españoles, locales misionales, enseres y símbolos religiosos. El fuego y la muerte acabaron con todo lo que fuera presencia extraña en tierra de los pericúes. Con las primeras fuerzas que llegaron a Loreto, el Capitán Esteban Rodríguez Lorenzo organizó su tropa para realizar las primeras campañas de reconquista. 25 soldados presídiales y cien indios flecheros y muchos auxiliares californios conformaron el ejército para la reconquista espiritual. Ante la imposibilidad de vencer a sus enemigos; los soldados actuaron sobre la parte más débil de la población. Se dedicaron a la captura de mujeres y niños, se les envió a Loreto y luego se les desterró a otros lugares. Bernal de Huidobro Gobernador de las Provincias de Sonora y Sinaloa desplegó sus fuerzas; demostrando la superioridad bélica de su ejército, logró dar con los cabecillas responsables de la sublevación. En dos años aproximadamente sofocó la rebelión. En 1737 remitió procesos a la Ciudad de México a 25 indios pericúes en los que destacaron los principales líderes indígenas Cristóbal Abúe, Domingo Botón, Marcelino Chicori, Francisco Meté, Felipe Caichané y 20 indígenas más, que durante el largo viaje hasta la capital de la Nueva España prefirieron darles muerte en el camino.

On the afternoon of October 4, Father Segismundo Tavaral of the Todos Santos mission was made aware of the events in Santiago and San Jose del Cabo by Indians who lived near the church. Father Segismundo departed immediately accompanied by his escorts and several Indians. They traveled to the mission of La Paz and then Loreto.

Meanwhile the rebels, proud of their apparent success, destroyed every vestige of the Spaniards and local missionaries, including religious objects and symbols. Fire and death put an end to everything that was an alien presence in the land of the Pericues.

However, with the arrival of Spanish forces in Loreto, Captain Esteban Rodríguez Lorenzo ordered his troops to carry out the first reconquest campaign. An army was formed of twenty-five provincial soldiers, one hundred sympathetic Indian archers and many Californian volunteers.

Faced with the impossibility of defeating the larger enemy forces, the soldiers focused on the weakest part of the population. They captured women and children and sent them to Loreto. They were then transported to places of exile. Bernal de Huidobro, Governor of the Sonora and Sinaloa Provinces deployed his forces. Demonstrating the warlike superiority of his army, he managed to find the leaders responsible for the uprising and, in about two years, quelled the rebellion. In 1737, the Governor sent 25 Pericues Indians to Mexico City. Included were the main indigenous leaders Cristóbal Abue, Domingo Button, Marcelino Chicori, Francisco Mete, Felipe Caichane and others. They never reached the capital of the New Spain. They were killed on the road.

Bajo el lema, “Solas invisibles, unidas invencibles”, la Asociación de Mujeres Empresarias Capitulo San José del Cabo, realizó con gran éxito el Foro Regional AMEXME 2019 durante el pasado mes de enero. Este foro comprobó una vez más que la unión marca la diferencia en la organización para colocar el nombre de Los Cabos nuevamente en alto.

on el título “Nuevos escenarios, grandes oportunidades”, en los temas abordados en conferencias y paneles los asistentes analizaron el futuro económico, ofrecieron información de nuevas herramientas en marketing digital y otros temas que fortalecieron el espíritu emprendedor.

El foro favoreció la conexión entre mujeres empresarias de la región norte, promoviendo la proyección nacional de sus empresas; al mismo tiempo fue un espacio de intercambio de experiencias, conocimientos y una feria comercial de productos abierto al público en general.

Una de las conferencias estuvo a cargo de Leo Zuckerman, comentarista, académico y uno de los líderes de opinión más influyentes en México; quien de modo ameno y claro realizó un análisis de las gestiones económicas y su impacto en la presidencia actual.

Además, para reafirmar el compromiso de AMEXME Capítulo San José del Cabo con la sociedad cabeña, el 20% de lo recaudado fue destinado a Fundación Questro y Fundación Breast Cancer Society.

Karla Taira capturó la atención de su audiencia con la conferencia, “Super woman por fuera, super cansada por dentro”. Otros de los ponentes fueron Jorge Camarillo, Maru Panganiba, Maria Fernanda Seguy, María de los Ángeles Solórzano y Máximo Hernández.

La Asociación Mexicana de Mujeres Empresarias tiene más de 50 años de creación, agrupa a más de seis mil integrantes de 70 capítulos y forma parte de Femmes Chefs d’Entreprise Mondiales.

Driven by the slogan Alone Invisible, Together Invincible, the Association of Businesswomen, San Jose del Cabo Chapter sponsored the successful AMEXME Business Forum 2019 last January in Los Cabos. The event proved that unions make a difference when it is about organization and putting the name of Los Cabos back on top.

ith a program titled “New Scenarios, Great Opportunities� among the topics addressed in the conference, panel attendees could analyze the economic future, learn new tools and address new challenges. One of the keynote presentations was given by Leo Zuckerman, commentator, academic and one of the most influential opinion leaders in Mexico. With an entertaining and clear delivery, he presented an analysis of how the economy is managed and the impact on the current presidency.

Karla Taira captured the attention of her audience with the conference "Super women on the outside, super tired inside."

Other speakers included Jorge Camarillo, Maru Panganiba, Maria Fernanda Seguy, Maria de los Angeles Solorzano and Maximo Hernandez.

The forum focused on the connection between women entrepreneurs from the northern region who promoted the national expansion of their companies.

At the same time, space was set aside for networking, as well as a trade fair for products open to the general public.

In addition, the San Jose del Cabo chapter of AMEXME reaffirmed its commitment to fighting cancer by donating 20 percent of the proceeds to the Breast Cancer Society and Questro Foundation.

The Mexican Association of Women Entrepreneurs was created more than 50 years ago. More than six thousand members belong to sixty chapters. The association is also part of the Femmes Chefs d'Entreprise Mondiales.

Restaurando Nuestra Historia A.C. se constituye oficialmente en Julio de 2011 con el objetivo de conservar y promover el patrimonio histórico y cultural tangible e intangible de Baja California Sur.

Restaurando Nuestra Historia AC was officially established in July 2011 with the goal of conserving and promoting the tangible and intangible cultural heritage of Baja California Sur.

Desde entonces, la organización ha encabezado la promoción de la comunidad y los últimos siete años se han logrado muchos éxitos. El énfasis se ha puesto en el apoyo a las artesanías regionales, así como a la música, la danza y las cocinas locales a través de festivales artesanales y gastronómicos.

Los recursos recaudados del primer festival gastronómico en 2016 se destinaron a la restauración de la Chimenea La Ramona, en alianza con International Community Foundation, Tenaja Holdings y Carem A.C. quienes, desde Tecate, Baja California dedicaron su trabajo y esfuerzo a tan loable labor en favor de un importante ícono de El Triunfo.

El segundo festival, contribuyó a la restauración del Antiguo Teatro, el cual se ubica dentro de las instalaciones del edi¬ficio histórico conocido como Casa Municipal.

El tercer Festival destinó los fondos para el programa cultural de becas de estudio para los niños de El Triunfo.

Through these events, the story is spread and the interest in our town grows. Training workshops have been provided and new sources of employment have been created that result in a better quality of life for the residents.

The funds from the first gastronomy festival were directed to the restoration of the La Ramona Smokestack in El Triunfo. The work was completed in alliance with the International Community Foundation, Tenaja Holdings, Carem A.C. from Tecate, Baja California. All dedicated so much of their time and efforts to this community icon.

The second festival, contributed to the restoration of the Old Theater, which is located within the facilities of the historic building known as Municipal House.

The third festival allocated funds to the Cultural Scholarship Program for the children of El Triunfo.
