Este año marca una nueva etapa para TENDENCIA con la alianza que se concretó con PR Solutions para realizar Culinary Awards Los Cabos 2018. En este primer evento que reconoció lo mejor de la gastronomía, aprendimos mucho. La dinámica e interacción con los restaurantes nos permitió valorar aún más esta industria. Disfruten este resumen, y esperen Culinary Awards 2019.

This was a year of new experiences for TENDENCIA, beginning with an alliance with PR Solutions to make the Culinary Awards Los Cabos 2018 possible. This first time event recognized the best gastronomy in the region. We learned a lot. The dynamics and interaction with the restaurants allowed us to understand the value of this industry even more. Enjoy our report and get ready for Culinary Awards 2019.

La extraordinaria gastronomía de Los Cabos no es un secreto.

Los restaurantes se han desarrollado exponencialmente en los últimos años, a tal punto que pocas ciudades pueden ostentar el nivel de chefs y la variedad de cocina que existe en el extremo sur de la península de Baja California. ¡El renacimiento que Los Cabos ha experimentado lo exige!

The extraordinary cuisine of Los Cabos is no longer a secret.

It is a well-known fact that the culinary arts have been developing exponentially in recent years to such a degree that few places can afford to have the level of chefs and the variety of cuisine that exist today here at the end of the peninsula of Baja California.

En los últimos cinco años, Los Cabos ha multiplicado el número de habitaciones con un enfoque particular en el turismo de lujo. La gastronomía, entonces, no podía ser la excepción.

A este crecimiento hay que sumar los restaurantes icónicos del destino, quienes definieron el escenario gastronómico actual a través de su constancia.

In the last five years, Los Cabos has multiplied the number of rooms with a focus on satisfying the most demanding tastes. Gastronomy, then, could not be the exception. To this growth must be added the iconic restaurants of the destination, who defined the current gastronomic scene through their perseverance.

De este dinamismo surge la idea de reconocer a lo mejor de la industria gastronómica local con un evento de premiación que año con año pueda crecer. Así nace Culinary Awards Los Cabos.

That gave birth to an idea. Recognize the best of the industry with an event that, year after year, promises to be even better. That event goes by the name of the Los Cabos Culinary Awards.

La idea vino de la mente de un gran hotelero, un perfeccionista. Sin embargo, al igual que otros grandes titanes de negocios, lo hace por un bien común, que es el crecimiento del destino y colocar a Los Cabos en el mapa de las ciudades con relevancia gastronómica.

The idea came from the mind of a great hotelier, a perfectionist. However, like other great business titans, he did not seek public attention, but the common good, the growth of the destination and the quest to put Los Cabos on the map of the largest tourist destinations in the world.

VIAJANDO - TRAVELING

Como en otras ramas de la industria de la hospitalidad, en el arte culinario se mantiene la innovación constante. Tarea nada fácil, cuando la ubicación geográfica dificulta el acceso a muchos ingredientes necesarios para estar en un nivel competitivo, sin embargo, como dice el refrán: querer es poder.

Dentro de la planeación de Culinary Awards se involucraron: abogados, mercadólogos, publirrelacionistas, diseñadores, artistas, contadores, autoridades de gobierno, medios de comunicación y por supuesto, miembros de la industria del turismo: hoteleros, restauranteros, proveedores y patrocinadores.

Así, después de varias sesiones para combinar y entretejer ideas, se juntaron las voluntades de algunas personas y, en un tiempo relativamente corto, se identificaron varias líneas de trabajo para detallar cuidadosamente y hacer el lanzamiento en una concurrida conferencia de prensa. La idea fue bien aceptada por la industria.

Para este efecto se conformó también un jurado imparcial, que no tuviera compromisos prestablecidos con el sector, pero que al mismo tiempo conociera, disfrutara, y estuviera dispuesto a participar en el proceso de selección de los candidatos nominados en las diferentes categorías.

VIAJANDO - TRAVELING

As in other branches of industry, the culinary arts need to improve and innovate. It is not an easy task when the geographical location hinders access to many ingredients necessary to be at the international level. However, as the saying goes “want is power.”

After many sessions, meetings, and the combining and interweaving of ideas, different opinions came together and, in a relatively short time, several lines of work were identified. The idea was well accepted by the industry, although as always, the first attempts always required more work and were more difficult to put together.

For this event, everything had to be assembled from the bottom up.

The team involved lawyers, marketers, advertisers, designers, artists, accountants, government authorities, media and, of course, members of the tourism industry: hoteliers, restaurateurs, bars, suppliers, sponsors.

For the judging, an impartial jury was formed that had no pre-established connections to the culinary sector but, at the same time, knew, enjoyed, and was willing to participate in the selection process of candidates nominated for the different categories.

Una vez logrado lo anterior, se le dio forma al evento y se dividió en categorías: la primera comformada por diez nominaciones, evaluadas por 41 jueces. La segunda integrada por cinco categorías producto de los gustos y preferencias del público participante vía electrónica y la última que otorgaría el comité organizador denominada trayectoria culinaria, dando un total de 16 estatuillas otorgadas en este primer evento de Culinary Awards Los Cabos.

En la primera edición se inscribieron 104 participantes, se espera que en futuras ediciones este número vaya creciendo de forma importante.

Durante varias semanas el equipo de trabajo tuvo largas reuniones para poder presentar a los ganadores en una ceremonia de premiación el 25 de abril de 2018, coordinando esfuerzos de logística, iluminación, sonido, escenografía, montaje entre muchas actividades, así como la coordinación de invitaciones y confirmaciones, a fin de que todo saliera como se deseaba desde el principio.

Mientras tanto el equipo de 41 jueces hizo su tarea de evaluar en las diferentes categorías, dando un especial énfasis, a la calidad, presentación, originalidad, ingredientes, sabores y texturas.

El jurado fue siempre anónimo, no se presentó como tal, ni se solicitaron patrocinios a su trabajo. La coordinación de jurados no conoció el resultado de cada uno de ellos, pues este se entregó de forma anónima también al despacho de auditoria encargado para el efecto.

Once the above was achieved, the event was assembled and divided into categories.

The first consisted of ten nominations and was evaluated by 41 judges. The second consisted of five categories that were judged by members of the public who participated by tasting the products and voting their preferences online. The last to be awarded by the organizing group was called culinary trajectory. Altogether, 16 statuettes were awarded during the first Culinary Awards Los Cabos.

The team held long meetings for several weeks to decide the winners that would be announced at the awards ceremony on April 25, 2018. The coordination of logistics, lighting, sound, and set design and assembly was required, as well as the preparations of invitations and confirmations. The goal was to make sure everything went as planned from the very beginning.

The first event featured 104 participants. However, that number is expected to grow significantly for future events.

Jury members were anonymous and no sponsors were solicited.

The members did not know the final decisions because an independent audit firm tabulated the results.

While all this was going on, the team of judges did their job of evaluating the different categories, paying special attention to the quality, presentation, originality, ingredients, flavors and textures.

VIAJANDO - TRAVELING

La estatuilla con la que se premio a los ganadores fue un diseño único y original del artista Yandi Monardo preparada especialmente para este evento.

La prestigiosa firma de Taller de los Ballesteros elaboró cada estatuilla, dándole un toque de exclusividad y elegancia a cada uno de los ganadores.

Así, fueron transcurriendo los días y las semanas, la ruta crítica que se había trazado para el cumplimiento de las diferentes tares se iba palomeando, a veces a tiempo, a veces no y era inevitable que se sintiera el nerviosismo, nadie podía quedar mal.

El 25 de abril, el salón lució radiante, el montaje estaba concluido, y los invitados empezaban a llegar y tomar sus lugares. El representante del despacho de auditoria Crowe Horwath Gossler, tenía en su poder los sobres con las dos series de premios, mismos que fueron leídos uno por uno, anunciados después de haber dado a conocer las nominaciones respectivas.

A medida que avanzaba la noche, cada uno de los ganadores mencionados fue pasando a recibir su reconocimiento al escuchar su nombre.

Al final, el nerviosismo se había disipado. El trabajo había concluido, sin embargo, una tarea más estaba esperaba, pues a partir de ahí se recopilaría toda la información en una guía culinaria.

Culinary Awards Los Cabos 2018 cumplió su objetivo: reconocer a quienes hacen de la gastronomía una de las fortalezas de nuestro destino. El reto para la edición 2019 es tomar en cuenta las áreas de oportunidad y destacar la gastronomía como un atractivo más para viajar a Los Cabos y el resto de la península.

The statuette awarded to the winners was a unique and original design by the artist Yandi Monardo. It was prepared especially for this event and made by the prestigious firm of Taller de los Ballesteros. The statuettes provided a touch of exclusivity and elegance for each of the winners.

As the days and weeks passed, the critical deadlines for completing the different tasks were sometimes met and sometimes not. It was inevitable that people felt nervous. But nothing could be wrong.

April 25 was a radiant day. The work was finished and the guests began to arrive and take their places.

A representative of the audit company, Crowe Horwath Gossler, had the envelopes with the two series of awards. After having listed the respective nominations, the awards were read one by one.

Each of the winners came forward to receive their prize as the night went on.

At the end, the nervousness was gone.

The statuettes were awarded. However, an even more difficult task was waiting.

All the information about the winners and the dishes was to be gathered in a culinary guide.

Culinary Awards Los Cabos 2018 accomplished its goal: to recognize those who make gastronomy one of the strengths of our destination. The challenge for the 2019 edition is to take into account the areas of opportunity and highlight the gastronomy as another attraction to travel to Los Cabos and the rest of the peninsula.

PRESENTACIÓN DE NOMINADOS | PRESENTATION OF NOMINEES El 9 de abril, se anunciaron las nominaciones de la primera edición de Culinary Awards Los Cabos. Representantes de los restaurantes inscritos e invitados especiales se dieron cita en un extraordinario cóctel en el recién inaugurado desarrollo, Grand Solmar at Rancho San Lucas.

Sergio Iván Bautista, socio de Crowe Howarth Gossler, fue la empresa de auditoría que realizó el conteo de los votos del jurado y entregó la lista de nominaciones en presencia de todos los invitados a Claudia Velo, conductora del evento, para ser anunciada.

Se anunció que, por decisión del Comité Organizador, Sabor a Cabo, A.C. sería reconocida con el galardón Trayectoria Culinaria, por su contribución a la promoción de la gastronomía local. Esta asociación ha organizado el evento Sabor a Cabo, desde hace 12 años, combinando gastronomía y entretenimiento.

Para el premio del público a través de las votaciones en línea, Experiencia Culinaria, se tenían a esa fecha cerca de 6 mil votos. El Comité Organizador anunció el inicio de la siguiente etapa, ahora con 5 diferentes categorías solo para quienes habían pasado a la segunda ronda. La votación en línea se amplió del sábado 14 de abril al domingo 22 del mismo mes.

Los resultados finales emitidos por el Jurado Calificador y la votación del público fueron resguardados y entregados por la misma compañía en la gala de premiación del 25 de abril, 2018.

On April 9, the nominations for the first edition of CULINARY AWARDS Los Cabos were announced. Representatives of the registered restaurants and special guests gathered for an extraordinary cocktail reception at the newly opened resort Grand Solmar at Rancho San Lucas.

Sergio Iván Bautista a partner at Crowe Howarth Gossler, the audit company that counted the jury votes, handed out the list of nominations that were announced by Claudia Velo who served as host for the event.

The Sabor a Cabo Civil Association was recognized with the Culinary Trajectory Award for its contributions to the promotion of local gastronomy. The association has organized the Sabor a Cabo event for 12 years, combining gastronomy and entertainment.

For the public prize Culinary Experience, more than six thousand votes were received.

Online voting was open from Saturday April 14 to Sunday 22. The Organizing Committee announced the start of the second stage with five different categories The final results issued by the Qualifying Jury and the voting of the public were safeguarded and not announced delivered until the awards gala.

INTERVIEW Primer Chef mexicano merecedor de una estrella Michelin, reconocimiento de mayor influencia en la gastronomía internacional, Carlos Gaytán tiene una historia que inspira.

Nace en Huitzuco, Guerrero y a los 18 años decide salir en busca del sueño americano. Así inicia su trayectoria en la gastronomía en Estados Unidos, combina su empleo como lavaplatos y aprender inglés. En esta entrevista nos contagia de su entusiasmo y sencillez.

¿En qué momento te das cuenta de tu vocación como Chef?

No puedo recordar un momento especifico, tuvieron que pasar una serie de vivencias para que me diera cuenta de que esta era mi pasión.

Cuando viví en México no existía una escuela culinaria, al llegar a Estados Unidos me di cuenta de que la gastronomía conquistaba paladares, este es un punto decisivo.

First Mexican chef deserving of a Michelin star, recognition of greater influence in international gastronomy, Carlos Gaytan has a history that inspires. He was born in Huitzuco, Guerrero and at the age of 18 he decided to leave in search of the American dream.

This is how he began his career in gastronomy in the United States, combining his use as a dishwasher and learning English. In this interview, he is contagious of his enthusiasm and simplicity.

At what point do you realize your vocation as a Chef?

I cannot remember a specific moment, they had to pass a series of experiences to make me realize that this was my passion. When I lived in Mexico there was no culinary school, when I arrived in the United States I realized that gastronomy conquered palates, this is a decisive point.

¿Cuál es tu inspiración en la cocina?

Los ingredientes y los mercados locales son mi mayor inspiración. Cuando veo y compro los productos, elijo lo que en ese momento se me antoja cocinar.

Los cinco ingredientes que no faltan en mi cocina son: chocolate, chiles, aguacate, mantequilla y quesos.

Who inspired you, who is your greatest influence?

¿Qué es lo que más te apasiona de hacer tu trabajo?

My mother is the one who has taught me to be creative, and not to surrender to life. Another great influence is Chef Jeff Miller *, for giving me the opportunity to venture into the kitchen and the time he dedicated to teaching me.

Mi madre es quien me ha enseñado a ser creativo, y a no rendirme frente a la vida. Otra gran influencia es el Chef Jeff Miller*, por darme la oportunidad de incursionar en la cocina y el tiempo que dedicó para a enseñarme.

¿Qué es lo mejor que te ha pasado en tu carrera como Chef?

Aprender que tengo límites como persona, y caer de rodillas ante Dios para pedir ayuda.

What is your inspiration in the kitchen?

The ingredients and the local markets are my biggest inspiration. When I see and buy the products, I choose what I want to cook at that moment.

¿Cuál es el reto más grande que has enfrentado en tu vida profesional y en tu vida personal?

What do you love most about doing your job?

Cada día presenta un reto. Pensamos que unos son más grandes, hasta que llega el siguiente. Lo importante es como los enfrentamos. Vencer el miedo a los retos es lo que nos da fuerza.

Las preguntas del público. Me inspiro al responder. Muchas veces preparas una conferencia, pero no sabes en realidad qué les servirá o que pueda ayudarles en la carrera.

The five ingredients that are not missing in my kitchen are: chocolate, chiles, avocado, butter and cheeses.

What is the best thing that has happened to you in your career as a Chef?

Learn that I have limits as a person and fall on my knees before God to ask for help.

What is the biggest challenge you have faced in your professional life and in your personal life?

Each day presents a challenge. We think that some are bigger, until the next one arrives. The important thing is how we face them. Overcoming the fear of challenges is what gives us strength.

What do you enjoy most during the development of each student conference?

The questions of the public. I was inspired to respond. Many times, you prepare a conference, but you do not really know what will be useful or what can help them in the race.

What local ingredients do you know, or would you integrate into your dishes?

Seafood, seafood and shellfish.

Everything related to the sea is a marvel of products and ingredients for me as a chef.

Disfruto inspirar a otros para luchar por sus sueños con dedicación y voluntad. Hace tiempo que se presentó esta invitación y la agenda no lo permitía. Ahora finalmente se pudo.

Unfortunately, we have not been able to take her to Chicago for import sanitary permits, but it's delicious.

¿Qué te gusta de Los Cabos?

Los Cabos es un paraíso. Debería estar en la lista de todos para visitar porque es un lugar hermoso para vacacionar. La naturaleza, la aventura, la oferta culinaria. Definitivamente, es un paraíso.

What do you know about the culinary scene in Los Cabos?

Gastronomy in Los Cabos is a combination of sea and desert. You have the abundance of the sea and the best of the earth. That originates a very healthy kitchen with great flavor.

¿Qué ingredientes locales conoces o integrarías en tus platillos?

Mariscos, mariscos y mariscos. Todo lo relacionado al mar es una maravilla de productos e ingredientes para mí como chef.

Educar al comensal extranjero en lo que es verdaderamente la gastronomía mexicana. Ese es mi reto y mi objetivo.

¿Cómo se percibe la gastronomía mexicana fuera del país?

En el mundo ahorita la gastronomía mexicana ha dado un giro importante. Se ha expandido el conocimiento e ingredientes que nos conforman. Más allá de los tacos, enchiladas y burritos. Importantes chefs viajan a México para inspirarse a crear nuevas recetas y combinar sabores.

Why did you accept the invitation to give a conference organized by the University in Los Cabos?

I enjoy inspiring others to fight for their dreams with dedication and will. Some time ago this invitation was presented, and the agenda did not allow it. Now finally it was possible.

What do you like about Los Cabos?

Los Cabos is a paradise. It should be on everyone's list to visit because it's a beautiful place to vacation. The nature, the adventure, the culinary offer. It’s a paradise.

What would you like your contribution to gastronomy to be?

Educate the foreign diner in what is truly Mexican cuisine. That is my challenge and my goal.

How do you perceive Mexican gastronomy outside the country?

In the world right now, Mexican gastronomy has taken an important turn. The knowledge and ingredients that make us up have been expanded.

Beyond the tacos, enchiladas and burritos. Important chefs travel to Mexico to inspire themselves to create new recipes and combine flavors.

La cocina de Arbol exhibe la generosidad de los productos del mar con delicadas influencias asiáticas y un tesoro de especias exóticas de la India y el Lejano Oriente.

At the helm of Arbol, Chef Anand draws on the rich culinary traditions of India, as well as a wide variety of Pan-Asian influences.

Hailing from Mumbai, he spent more than a decade exploring and developing coastal cuisines in the Maldives, Seychelles and the United Arab Emirates.

While seafood occupies a central place on the menu, there are other tempting ingredients such as curry, sushi or sashimi, Wagyu beef, vegetarian dishes and a variety of delicious desserts. The dishes emerge from the oven and woks prepared over the low heat of charcoal. You can also take a seat in the front row at the sensational raw bar where the delicacies include fresh lobster, stone crab, oysters and clams.

His upbringing defined his culinary style. He continues to use rich spices and unique aromatics such as cinnamon, cardamom, ginger, salt, bay leaves, turmeric and chilies.

“I started cooking professionally when I was 18 years old. I had already been preparing my own meals since I was little. Because of that, I began to develop an interest in the culinary arts. It is that passion that led me to my current profession.”

His culinary style is best described as “simple but unique.” He chooses ingredients carefully and brings out the best of each in every dish. For Anand, it is important to maintain the essence and integrity of the flavors. He considered Mexican cuisine challenging and quite competitive.

With his characteristic humor, the Chef opened a window of transparency to who runs one of the restaurants nominated by the jury in the Culinary Awards as the best culinary concept, best new restaurant and restaurant of the year.

“I grew up around the stove and the markets. When I stopped playing in a musical group, I found the same emotion in pots and pans that I felt in the rehearsal room, in composing and in live concerts.”

Así se encuentra con el maravilloso mundo de la cocina. Continua sus estudios culinarios en Canadá y descubre su propio estilo, el cuál describe como libre. Inspirado en productos e ingredientes frescos, aromas, y por supuesto la música.

“Cuento solamente mi vida a través de platos y sabores. Cocino para mi y para la gente que comparte mi visión de la vida, trato de ser feliz por medio de sentirme libre.

Los años 90 fueron una década de fusiones culturales en todo el mundo. Logré incorporar la influencia francesa heredada de mi abuela y mi papá con la gastronomía mexicana en un proceso natural. Para mí la cocina francesa es técnica, y la cocina mexicana son ingredientes.”

En conjunto con su hermano, a quien describe como el hombre diseño, eligen nombre y ambientación de cada restaurante. Combinan palabras que fonéticamente tienen impacto y representan al Chef.

“Definitivamente es un trabajo en conjunto con Nacho, no entendería mi carrera culinaria sin mi hermano. Así como tengo claro lo que me gusta cocinar y comer, el espacio es fundamental. Le platico a Nacho lo que me gustaría percibir a mi alrededor y Nacho hace su magia.”

This is how the Chef met the wonderful world of cooking. He continued his culinary studies in Canada and discovered his own style, which he describes as free. Fresh products and ingredients, aromas and, of course, music are his inspirations.

“I can only describe my life through dishes and flavors. I cook for myself and for people who share my vision. I try to be happy by feeling free.

The 90s was a decade of cultural fusions around the world. When you add that to the French influence of my grandmother and my dad, incorporating my ancestry with Mexican cuisine was a natural process. For me, French cuisine is technical, Mexican cuisine is ingredients.”

In partnership with his brother, whom he describes as a man of design, the two choose the name and setting of each restaurant. They combine words that have a phonetic impact and represent the Chef.

“It's definitely a matter of working together with Nacho. I could never imagine my culinary career without my brother. Just as I know what I like to cook and eat, the right space is essential. I tell Nacho what I perceive around me and Nacho does his magic.”

In addition to cooking, Poncho finds it exciting to be in contact with the products and to know their origins. He also appreciates the challenges, the ups and downs and everything else that goes into being a chef. He highlights the basics in his dishes using local ingredients such as butter, herbs and chilies.

Además de cocinar, Poncho encuentra apasionante estar en contacto con los productos, conocer su origen, el estrés, vértigo y todo lo que implica ser chef. Resalta sus raíces en sus platillos empleando ingredientes como ahí, mantequilla, hierbas y chiles.

“Maybe one of the things I love the most is doing everything possible so that people tell me the dish I designed is extraordinary.

It can be described as ego.”

Poncho has experienced many important moments in his life such as appearing on El Gourmet, opening the restaurants La Leche in Puerto Vallarta and Hueso in Guadalajara, attending Madrid Fusion, and working in The French Laundry restaurant in Napa Valley.

“Quizá una de las cosas que más me apasiona es hacer todo necesario para que la gente me diga que está bien cabrón el platillo que diseñé. Puede llamarse ego.”

Poncho ha vivido diversos momentos importantes, dentro de ellos destacan ser conductor de El Gourmet, abrir los restaurantes La Leche en Puerto Vallarta y Hueso en Guadalajara; asistir por primera vez a Madrid fusión, y trabajar en el Valle de Napa en afamado restaurante The French Laundry de Thomas Keller.

“Las aperturas de los restaurantes siempre son un reto. ¡Cuando comenzamos con Carbón Cabrón en Los Cabos, me voló la cabeza! De verdad que mi reencuentro con el desierto fue lo máximo. Los hermosos mares y playas, el abrazo entre desierto y mar, su clima, su gente. Pienso que es un buen momento para pertenecer a este destino turístico.”

Originario de Michoacán, Guillermo Téllez crece en Chicago, donde ha pasado la mayor parte de su vida.

Llega a Los Cabos por primera vez para laborar en el icónico hotel One&Only Palmilla. En ese tiempo conoce a Patrick y Gloria Greene quienes lo invitan a ser parte de Flora’s Field Kitchen, restaurante galardonado como mejor Experiencia Culinaria en San José del Cabo, en el formato de votación en línea de Culinary Awards 2018.

“Ser chef ha sido la aventura de toda la vida, siendo joven quise un trabajo no tan en serio. Trabajé desde paisajismo, construcción, en fábricas y otros. De mis amigos en Chicago era el único que trabajaba fuera de la ciudad. Un día mis amigos me llamaron para pedir ayuda, el auxiliar de cocina había faltado y acepté encantado por pasar tiempo con ellos.

"Becoming a Chef was a lifelong adventure. When I was young, I didn’t want a job that was so serious. I worked in landscaping, construction, factories and more. Of all my friends in Chicago, I was the only one who worked outside the city. One day, my friends call me for help. The kitchen assistant didn’t show up. I happily agreed to spend time with them.

Desde ese momento me sentí en familia, dentro de la cocina. Esa satisfacción me llevó a quedarme con el puesto, lavando platos. De ahí empecé a aprender diversos roles, sin entender el idioma, compré revistas para ver imágenes de platillos y reuní dinero para estudiar en una escuela culinaria de Chicago.

La cultura latina gira alrededor de la cocina. Mi madre preparaba diario las comidas en casa, desde las tortillas o el pan, hasta el guiso principal. Ella fue mi primera influencia.

A lo largo del camino he conocido chefs que han marcado mi carácter y aprendizaje, entre ellos admiro la disciplina de Marco Pierre White, el talento de Charlie Trotters y los consejos de Emeril Lagasse.”

Guillermo inicia su trayectoria culinaria de la mano de Charlie Trotters, quien le brinda una oportunidad dentro de su cocina. Al año de apertura el restaurante es un gran éxito. Sorprende a comensales y críticos saber que un chef latino es la mano derecha de Charlie. El sabor de los platillos y presentación le dan una nominación para una beca en una prestigiosa escuela de California.

“Hazlo posible. Esta es mi frase favorita, tras dos intentos para ingresar a la escuela de California, lo logré. La escuela culinaria me dio lineamientos, bases y dirección. La escuela de la vida me enseñó diversos estilos culinarios. Personalmente no me gusta decir que me especializo en una sola área.

Los viajes y las culturas son una inspiración para mis platillos, busco incorporar mi esencia sin llegar a ser una réplica.”

From that moment on, it felt like family in the kitchen. That satisfaction led me to stay with the position, washing dishes. From there I learned different roles. I didn’t understand the language but I bought magazines for the images of dishes and I saved money to study at a culinary school in Chicago.

Latino culture revolves around the kitchen.

My mother prepared meals from tortillas and bread to the main stew everyday. She was my first influence. Along the way, I have met chefs who have influenced my character and skills. I admire the discipline of Marco Pierre White, the talent of Charlie Trotters and the advice of Emeril Lagasse.”

Guillermo began his culinary career with the help of Charlie Trotters who gave him an opportunity in his kitchen. The year the restaurant opened was a great success. Its amazed diners and critics to know that a Latino chef was Charlie's right hand. The flavor of the dishes and the presentation earned him a nomination for a scholarship at a prestigious culinary school in California.

“Make it possible. This is my favorite saying.

After two attempts to get into the California school, I did it. The culinary school gave me guidelines, standards and direction. The school of life taught me different culinary styles. Personally, I do not like to say that I specialize in only one area. Traveling and different cultures are the inspiration for my dishes. I seek to incorporate the essence without becoming a replica.”

Lograr que los comensales tengan una reacción sorprendente, una explosión de sabores y prolongar el efecto en el paladar, es una de las metas del Chef Guillermo al cocinar, y lo transmite a todo su equipo en Flora’s Field Kitchen.

“Durante mi primera estancia en el destino, Gloria y Patrick me contactan para platicarme sobre un terreno en Los Cabos y les aconsejo sembrar vegetales para ser proveedores directos para mis cocinas. Posteriormente regreso a Estados Unidos y me dedico por un buen tiempo a abrir restaurantes y crear conceptos de costa a costa.

La idea de vivir en Los Cabos siempre estuvo latente en mi mente y en la de mi esposa. Abrir restaurantes, crear conceptos y entrenar a sus chefs implica viajar.

Una vez que nace mi hija quería pasar más tiempo en familia. De nuevo los dueños de Flora’s me contactan y la oportunidad se presenta para transformar el huerto en un verdadero concepto Farm to Table.”

Chiles, especias, clavos, pimientas y ajo son ingredientes imperdibles en los platillos del Chef Guillermo. El menú actualmente presenta opciones de charcutería, pastas, ensaladas, y opciones de proteína dependiendo de la producción del rancho.

“Los Cabos aún tiene mucho por mostrar al mundo, mientras más restaurantes nos sumemos a eventos como Culinary Awards para hacer ruido lograremos impulsar el desarrollo del destino.

Este fue una primera edición muy bien organizada, para nosotros surgieron ideas para implementar en siguientes ediciones y crecer.

Personalmente estoy más que dispuesto para apoyar.”

Getting diners to react to an explosion of flavors and then having them stop and think about what they just tasted is one of Chef Guillermo’s goals. He communicates it to his team at Flora's Field Kitchen.

"During my first stay here, Gloria and Patrick contacted me to talk about a piece of land in Los Cabos. I convinced them to grow fresh vegetables and supply my kitchens. Later, I returned to the United States. For quite some time, I dedicated myself to opening restaurants from coast to coast.

The idea of living in Los Cabos was always in the back of my mind and my wife's. Opening restaurants, creating new dining concepts and training your chefs involves travel. Once my daughter was born, I wanted to spend more time with the family. The owners of Flora's contacted me and presented another opportunity to transform the garden into a true Farm to Table concept.”

Chiles, spices, cloves, peppers and garlic are ingredients that are indispensible in a Chef's kitchen. The menu currently presents deli options, such as pasta, salads, and protein depending on what is produced at the farm.

"Los Cabos still has a lot to show the world. If more restaurants join events like the Culinary Awards and make noise, we will be able to boost the development of the destination. This was a very well organized first edition.

The idea is to implement improvements in subsequent editions and grow. Personally, I am more than willing to lend my support.

En México vivimos un frenesí de buen diseño. No es casualidad que nuestro país fue elegido “Capital mundial del diseño 2018”. In Mexico, we are crazy for good design. It is no coincidence that our country was chosen “2018 design capital of the world.” Although Los Cabos has traditionally been known for fantastic culinary offerings, the tsunami of restaurants with high quality architecture and interior design that has emerged is relatively recent. The goal of each is simple: to combine the menu with the physical experience, a kind of symbiosis between dish and space.

“I had the pleasure of working in many places in Europe, including Spain, Italy, Germany and England. I discovered that there are times when inspiration can come only with having first hand knowledge of the ingredients.

Superior ingredients are essential for maximizing the flavor and aromas of a dish. You can make a great dish from just one ingredient. Undoubtedly, one of the great products of Naples is the tomato, and it is fundamental to my kitchen. So are olive oil, basil, rosemary and thyme.”

Callo: Callo de garra de león en sopa de apio y limón.

Casiano Reyes Es originario de Oaxaca, uno de los estados de México con más tradición, que pudiéramos llamarle la capital de sabores, colores y formas eclécticas. Casiano decide abrir un negocio propio de banquetes en Los Cabos. Dos años más tarde transporta su experiencia en el arte haciendo realidad su sueño al inaugurar Casiano’s Restaurant, donde la especialidad es la espontaneidad.

“La idea de estudiar para chef me surgió de la imperiosa necesidad de tener la libertad de dar rienda suelta a la creatividad. Quería liberarme de las ataduras e imposiciones de un menú fijo. Mi cocina es muy espontánea”.

En 2012, se le presenta uno de los momentos más importantes de su carrera, cuando es elegido para brindar el servicio de alimentos y bebidas para todos los invitados a la convención del G20.

“Me inspiran los ingredientes que selecciono a diario con mis proveedores. Busco los productos más frescos. En base a ello elaboro un menú́ degustación de 3 o 5 tiempos. De esta forma los comensales pueden disfrutar platillos creados especialmente para ellos día a día”.

Originally from Oaxaca, the capital of flavors, colors and eclectic cooking, Casiano Reyes decided to start his own catering business in Los Cabos. Two years later, he made a dream come true by opening the Casiano’s Restaurant, where the specialty is spontaneity.

“The idea of becoming a Chef came to me from the imperative need to have the freedom to unleash my creativity. I wanted to free myself from the bonds and boundaries of a fixed menu. My kitchen is very spontaneous.”

In 2012, he experienced one of the most important moments of his career when he was chosen to provide the food and beverage service for all of the officials at the G20 convention.

“I am inspired by the ingredients I select everyday from my suppliers. I'm looking for the freshest products. Based on this, I create three-to-five tasting menus. As a result, diners can enjoy dishes created especially for them day to day.”

Mi estilo de cocina es espontáneo. Me inspira lo que encuentre disponible en el mercado, la pesca del día y vegetales frescos. Por lo menos uno o dos platillos son nuevos cada día.

My cooking style is spontaneous. I am inspired by what is available in the market, the catch of the day and fresh vegetables. At least one or two dishes are new every day.

De esta forma el resort permanece en constante innovación y con renovadas propuestas. Durante Culinary Awards 2018 fueron nominados por el jurado como mejor propuesta dulce en su restaurante Agua by Larbi y ganador al reconocimiento como mejor selección de vinos por la cava de Seared.

¡Me encanta lo dulce! Las frutas predominan en el menú de postres, porque son versátiles para crear combinaciones de sabores frescas. Por ejemplo, limas con durazno, la naranja, los dátiles. Y por supuesto, el menú incluye churros, postres con dulce de leche, la azúcar morena que tiene un sabor increíble y el tradicional chocolate mexicano.

Agua by Larbi rescata recetas tradicionales con un toque moderno, incorporando productos mexicanos para presentar recetas nuevas y ligeras para diversos paladares.

The collaboration of Jean-Georges Vongerichten, the executive chef of One&Only Palmilla Larbi Dahrouch, Stuart Roger, the executive chef of Seared, and Alejandro Aviles, the wine manager, has done a remarkable job of offering unparalleled culinary experiences at One&Only Palmilla.

Collaboration is the path the resort has chosen to constantly innovate and offer the finest in culinary concepts. The Culinary Awards jury nominated One&Only for the best dessert served in the restaurant Agua by Larbi and declared the Seared wine cellar as the winner for the best selection.

Agua by Larbi revives traditional recipes but adds a modern twist. Today’s Mexican ingredients are incorporated to present new and light recipes for different tastes.

How do you combine your Moroccan ancestry with Mexican cuisine?

I love sweets. Fruits dominate the dessert menu because they are so versatile and I can create combinations of fresh flavors. For example, limes with peaches, oranges, and dates. Of course, the menu includes churros, desserts with dulce de leche, brown sugar that has an incredible flavor and the traditional Mexican chocolate.

Llegar a la cocina, recibir productos frescos de las granjas, inspeccionar que todos los ingredientes se vean brillantes, frescos, hermosos, con gran aroma, me hace querer cocinar más y más.

Para mi cada momento que sirvo un platillo con lo más fresco, y que la reacción sea sin palabras un “wow, nunca había comido algo así antes”. Busco la satisfacción del huésped por medio de sabores únicos.

En el 2003 cuando me hicieron la propuesta de cocinar comida mexicana, la percepción que en ese momento tenía de la gastronomía eran comidas fritas. ¡Ahora la gastronomía mexicana está en auge! A la gente le encanta la gastronomía mexicana.

Arriving in the kitchen, receiving fresh produce from the farms, making sure that all the ingredients look bright, fresh, and beautiful with the great aromas. That makes me want to cook more and more.

For me, it’s every time I serve a dish to a new diner and his or her reaction says “wow” without having to use the word. I want them to feel like “I have never eaten anything like that before.” When a guest is satisfied by the unique flavors, I’m happy.

In 2003, when the proposal was first made to cook Mexican food, the perception at the time was fried foods, basically what was known in the United States as street food. Now Mexican gastronomy is booming! People love Mexican cuisine.

First, we ask about preferences. For repeat customers, we always offer them a new and interesting wine. Of course, we consider the menu items and your choice of food, as well as the price range that you are comfortable with.

Curiosamente, a pesar de que el concepto de Seared es Steakhouse, el vino más vendido es un vino blanco Chardonnay de California.

Interestingly, even though the identity of the Seared steakhouse is the cuts, the best-selling wine is a California Chardonnay white wine.

Adquirimos las únicas 30 botellas del vino Sanwiss Rosé de la región de Santa Inés. El vino Blanco Resistent de la bodega Sine qua non. De la bodega más emblemática de Napa, Screaming Eagle, tenemos un vino blanco y el único formato magnun Screaming Eagle.

Of the wines available on the world market, we have five labels that cannot be found in any other cava in Los Cabos. We acquired the only 30 bottles of Sanwiss Rosé wine available from the Santa Inés region and the White Resistant wine from the Sine Qua Non winery. From one of Napa's most iconic wineries, Screaming Eagle, we have a white wine and the unique Screaming Eagle Magnun format.

Existen vinos costosos y para nuestros huéspedes conocedores los tenemos disponibles, del mismo modo para quien desea maridar su cena con una copa de vino tenemos una extensa variedad para recomendarle. El valor agregado es el servicio en la mesa, desde el procedimiento de descorche por nuestro sommelier, hasta la ruta de cata explicativa por el mismo.

Our cava has been recognized for managing a balance of price and quality.

There are very expensive wines and for our knowledgeable guests, we have them available. At the same time, for those who just want to pair their dinner with a glass of wine, we have an extensive variety to recommend. “Dependiendo del tipo de menú que presentemos se eligen ingredientes claves como protagonistas y complemento que realcen el sabor de los platillos.

Actualmente el menú cambia con el día de la semana para dar variedad a nuestros visitantes: sea mediterráneo, carnes y costillas, parrillada, cocina mexicana, mariscos y tacos.

Los proveedores locales manejan excelente calidad de producto, los huertos en Pescadero y Miraf lores nos permiten ir directamente a seleccionar las hierbas aromáticas, vegetales baby, fresas, entre otros. Además se ha creado una dinámica interesante con el equipo de cocina para realizar pesca de orilla y en lancha que incorpora el pescado fresco en sashimi y ceviches, así como la pesca del día.”

Una de sus más grandes influencias en la cocina ha sido su padre, quien recuerda asignaba tareas a él y sus hermanos.

Preserving the flavors and charácter of the Mexican cooking style, Chef Hector presents international food offerings within the Anica flagship restaurant. The diner can always find interesting combinations.

“Depending on the type of menu we present, key ingredients are chosen as the main attraction or as a compliment to the dish to enhance the flavor. The menú currently changes with the day of the week to provide our visitors with variety, such as Mediterranean, meat and ribs, barbecue, Mexican cuisine, seafood and tacos.

Local suppliers provide excellent quality products. The gardens in Pescadero and Miraflores allow us to directly select aromatic herbs, baby vegetables, strawberries, and more. In addition, an interesting dynamic has developed with the kitchen team who fish from shore and boats and bring fresh fish for sashimi and ceviches, as well as the catch of the day.”

One of his greatest influences in the kitchen has been his father, who Chef Hector remembers assigning tasks to him and his brothers.

Primeramente, la presentación sorprende a la vista, y el sabor es una combinación de sabores directos al paladar.”

“Mi padre nos ponía a cocinar, cada uno estaba encomendado de una tarea para preparar la comida familiar. Delegando se lograban resultados rápidos y delicioso. También trabajaba en el sector hotelero y aprendí mucho gracias a él.

Encuentro mi inspiración principalmente en los recuerdos de las comidas en familia. Las salsas caseras vienen a mi mente por sabores que se quedan grabados, conservo la base de estas recetas pero innovando con algunas especias o ingredientes locales.”

Como buenos anfitriones, Rancho San Lucas fue la sede del espectacular coctel de nominación Culinary Awards. Los asistentes fueron bienvenidos con muestras de coctelería, selectos vinos y la sazón del Chef a la parrilla.

“Quisimos consentir a los Chef y mixólogos invitados en el coctel de nominación Culinary Awards.

Demostrar que Anica se encuentra al par tanto en el nivel gastronómico como en propuestas de coctelería.

Por la reciente apertura no entramos en las nominaciones de este año, sin embargo, es una gran satisfacción ver a colegas Chefs participando y algunos ganadores en este primer evento. Personalmente, me encantará sumarme a en la segunda edición con propuestas innovadoras dentro de Anica, Rancho San Lucas”.

“My father put us to work. Each was entrusted with a task when preparing the family meal. The results were quick and delicious. I also worked in the hotel sector and learned a lot thanks to him.

I find my inspiration mainly in the memories of family meals. Our homemade sauces and flavors are engraved in my mind. I’ve kept the basics of these recipes but innovate with different spices or local ingredients.”

Ingredients that distinguish the chef’s dishes are products representative of Mexico such as avocado, epazote, cilantro, thyme and rosemary. He emphasizes his cooking roots by using different chiles such as habanero, guajillo or pasilla.

“I’m from the state of Guerrero, so I love adding spices to dishes. A satisfied diner is one of my greatest rewards.

First of all, the presentation must surprise the eye and the palate must clearly experience the combination of flavors.”

An exemplary host, Rancho San Lucas served as the venue for the spectacular Culinary Awards nomination party. Attendees were welcomed with cocktail samples, selected wines and the chef’s choice from the grill.

“We wanted to pamper the chefs and guest mixologists at the Culinary Awards nomination party and show that Anica is on par with other venues at the gastronomic level and for cocktails.

Due to our recent opening, we did not enter this year’s nominations. However, it was greatly satisfying to see colleagues participating in this first event. Personally, I would love to join in the second edition with innovative proposals from Anica, Rancho San Lucas.”

Casa San Jose 23400 es un lugar estupendo para comenzar un recorrido gastronómico. Está ubicado en el centro de San José del Cabo, a solo una cuadra de la plaza principal. Puedo recomendar el tartar de atún como entrada y el rack de cordero como plato fuerte, acompañados por alguno de los cócteles del mixólogo, destaca la variedad de mezcales. Mi bebida favorita, el vellocino de oro con ginebra.

Debo admitir que soy un fanático de la comida y siempre estoy en búsqueda de nuevos lugares que permitan recompensar mi paladar. Consentirme y conocer un nuevo restaurante, es un hábito que tengo aquí en Los Cabos que es donde resido, principalmente, después de una larga jornada de trabajo.

Por ello, creo que uno de los mayores beneficios en esta nueva era de la información, es compartir la experiencia gastronómica que tenemos en los lugares que visitamos. A través de medios especializados, obtenemos las referencias de restaurantes en cada ciudad, según la experiencia de los usuarios. Los restaurantes con más premios generalmente se ubican en lugares exclusivos, aunque no es una regla. Podemos aventurarnos en revisar la lista de los restaurantes mejor calificados por los locales, sorprendentemente también aclamados por turistas. Entonces se acercarán a una gastronomía cotidiana, relajada y altamente gratificante.

Los Cabos es un destino placenteramente gastronómico. Entre los hoteles inaugurados en los últimos años, se encuentran cadenas de alto prestigio, que ofrecen diferentes estilos de cocina con altos estándares de calidad, abiertos al público, por si se desea conocerlos sin hospedarse en ellos.

De este modo, tenemos una dinámica gastronómica muy espléndida y con sana competencia para garantizar las mejores alternativas; acompañada por chefs reconocidos internacionalmente con formidables propuestas, que se han ganado un lugar especial en las listas de los restaurantes imperdibles del destino.

I must admit that I am foodie and am always looking for new experiences that allow me to reward my palate. It is a habit I sometimes practice at home, but mainly on a long journey to a new destination.

That’s why I believe that one of the greatest benefits created by this new era of information is share the gastronomic experience we can find in the places we visit. Through specialized media, we can obtain lists of the best restaurants in each city according to the experts. The restaurants with more awards are usually located in the most luxurious locations. We can also get the list of the restaurants rated highest by locals and tourists. They are generally more relaxed and visited more frequently, but are no less rewarding.

Los Cabos is now a gastronomic destination. The opening of new hotels in recent years, some of which are prestige brands, offers culinary experiences with very high quality standards. They are also open to the public in case you wish to visit without booking a room. The gastronomic awakening began a couple of years ago and a splendid and very healthy competition has developed. Casa San Jose 23400 is a great place to start a gastronomic tour. It is located in the center of San Jose del Cabo just one block from the main square. As part of a spoken tradition that passes from friend to friend, I can recommend the tuna tartar with avocado to start and the rack of lamb as the main course. You’ll want to accompany your experience with cocktails from the mixologist. Try the mezcales, or my favorite, the Golden Fleece with gin. If you prefer to start in Cabo San Lucas, Peacock's restaurant is located just two blocks from El Medano. It is set in a secret garden that seems very far from the beach. Do not pass up their seafood. I recommend the lobster bisque. From the land, I especially appreciate the organic oven roasted suckling pig.

esde el primer momento, sabía que este reconocimiento a la gastronomía de Los Cabos debería representar el orgullo y la pasión que se puede crear en una cocina, por cierto, muy similar a un taller de arte. Y así, el arte de la gastronomía y el arte plástico se unieron.

rom the very first moment, I knew that any recognition to the gastronomy of Los Cabos would have to include the pride and passion that can be created in a kitchen, by the way, it is similar as to an art workshop. And so, the art of gastronomy and sculpture came together.

Los ojos vislumbran la primera impresión y el sentido del gusto logra un bienestar a los sentidos y el alma. Esa emoción me invadió para presentar un diseño que pudiera cautivar desde un inicio.

The eyes glimpse the first impression and the sense of taste achieves the wellbeing of both the senses and soul. That emotion invaded me to present a design that could captivate from the beginning.

Diseñé varias propuestas para el reconocimiento que se entregaría a los galardonados restaurantes y chefs. El diseño que se eligió simboliza un ser de forma erguida, con una actitud de orgullo por quien es y lo que representa consentir a los comensales con cada exquisitez preparada, además, del arte que implica presentar una obra que satisfaga el paladar.

I designed several proposals for the recognition of the award-winning restaurants and chefs. The design that was chosen symbolizes an upright being with an attitude of pride for who it is and what it means to pamper the guests with each exquisiteness prepared, in addition, of the art that implies presenting a work that satisfies the palate.

Después, se hizo la reproducción de la estatuilla.

Este laborioso trabajo lo realizaron los prestigiosos joyeros de la empresa Talleres de los Ballesteros, ubicados en Taxco, Guerrero.

Afterwards, the reproduction of the statuette was made. This laborious work was made by the prestigious jewelers of the company Talleres de los Ballesteros, located in Taxco, Guerrero.

Ver reflejado ese trabajo en la satisfacción de las personas es muy gratificante. Pescados y mariscos son mis ingredientes favoritos. Mis pasatiempos favoritos pescar, vel amanecer o atardecer; el off road y por supuesto probar propuestas culinarias de otros compañeros chefs.

What a very exciting award. It is important to remember that it is a team effort that takes time. The awards made it possible to see how the people’s satisfaction is reflected in the team’s work. Fish and seafood are favorite ingredients. Fishing is a hobby I enjoy. I watch the sunrise or sunset, off or on the road while, of course, trying culinary creations from fellow chefs.

The theme of the restaurant is fire and it incorporates all the vegetable products available in the area, plus seafood and, of course, meat. I appreciate being nominated.

From my very first trip, I fell in love with the destination. Opening a restaurant was a major achievement for me. That diners have accepted it is very exciting. Using charcoal and wood as another ingredient adds special flavor to the menu. Outside of cooking, skateboarding and boogie boarding are some of my hobbies.

Al recorrer distintos lugares de Baja California Sur y conocer la variedad de ingredientes, encuentro la inspiración para convertirlos en una experiencia líquida. I am so fortunate to be part of this team. The small contributions that are made within Comal are a great motivation. Nature is very noble and when traveling through different parts of Baja California Sur and learning the ingredients, I find the inspiration to turn them into a fluid experience. I discover flavors and mix exotic ingredients. When not at work I like to hear other people's stories. The fruit of those experiences nourishes me. It has been a pleasant surprise to have received seven nominations for this event. Personally, it is important to know these awards are more than just a competition between colleagues, mixologists and chefs. They are awards that honor the gastronomy that exists in this destination.

Por supuesto, hace 10 años, no existían bares tan famosos, ni premiados en México como ahora lo es Limantour a cargo de Jose Luis León. Es un colega y amigo mío que logró colocarse en el puesto número 13 en la lista de los 50 mejores bares del mundo. Una tarea difícil. En ese momento no teníamos idea del impacto en las redes sociales, no había influencers, no imaginamos #quierosermixologist ni de broma. El interés por las marcas de renombre estaba en bares localizados en Nueva York y Londrés.

La última palabra en el menú, concepto y diseño de un bar en México en muchas ocasiones era responsabilidad, a veces sin experiencia, de quien está en el puesto más alto, sea propietario, gerente o incluso el chef.

Para tener en cuenta la opinión de un cantinero, es importante enfatizar que no verá ideas fuera de su apertura a escuchar. Afortunadamente, en México esta profesión escala posiciones todos los días.

After a few years of seeing how Mexico behaves and how the bar scene has grown, the answer, in my opinion, is listen to your bartender!

Of course, 10 years ago there were no Mexican bars so famous or award winning as Limantour by Jose Luis Leon is now. He is a colleague and friend of mine who managed to place 13th on the list of the 50 best bars in the world. It was a difficult task. At the time, we had no idea of the impact of the social network, we did not listen to influencers, we did not know if the #hashtag was journalism or a joke. • Are you always asking what I will do this month for our clients?

• Do they invest in my career, so I can provide better results?

Estas preguntas son las primeras que vinieron a mi mente, después de pensar en la lista de cócteles que mis compañeros prepararon por el cambio de temporada.

Son cuestionamientos personales válidos, ¿qué he sembrado en mi equipo para su propio crecimiento? ¿cómo puedo apoyarlos para elaborar un plan de desarrollo que incluya visitas a destilerías, cursos con chefs locales que les creen vínculos, asimismo experiencias entre la cocina y el bar? ¿Cómo formar a un equipo profesional y capacitarlo para laborar juntos a largo plazo? Creo que en estos tiempos, la lealtad laboral es difícil de conseguir, es algo que se logra con años y para mi hay una sola clave: “¡Escuchen a sus cantineros!”

These questions are the first that came to mind after thinking about the drink list my fellow bartenders prepared for me during the change of the cocktail season.

The general idea is to ask myself, what have I sown in my team that will be worthy of harvesting and boasting about? How can I help my team of bartenders create a development plan, visit distilleries and develop courses with favorite local chefs that will create bonds and experiences between the kitchen and the bar?

How can I form a faithful team that follows me and can be trained for the long term? I believe that in these times, work loyalty is the hardest thing to achieve and it can only be accomplished over the years. For me, there is only one key: "Listen to your bartenders!"

Si los escuchan atentamente, se enterarán de sus verdaderos talentos dentro de la barra, obtendrán su confianza y motivarán a tu equipo.

If they listen closely, they will be able to explore their true talents within the bar. If they listen to their bartenders, they will have their confidence. There are times when they only need to agree to the rules. When there is a disagreement, it would be perfect if you could come up with an answer. If not, you know that it will be a better motivated team.

Create room for an innovative mind that is trying to excel. In the end, that’s all we want to do all as a company, leader or person.

Take the risk! At least manage to step out of our comfort zone and generate a different experience, a wow moment!

Del centro mismo de esta casi ínsula, en derredor de las aguas represadas por los padres fundadores en el ojo de agua de San Ignacio Kadakaamán, es donde se producen los dátiles mejores: amarillos, cuelgan de vástagos naranja los racimos pesados alrededor del espinudo penacho de sus palmas, prestando su oro al circundante verdor. Cada día veraniego pasado sobre el ardor del sol, y cada noche bien guardados del rocío y del influjo perverso de la luna, los frutos ahora cafés dormitarán en zurrones de cuero al amparo de cuevas calichosas para volverse luego negras, doradas gotas de miel.

Qué decir de las vides achaparradas y muy retorcidas que, amorosos, trajeron en sarmientos los jesuitas desde allende La Rioja y también amorosos plantaron en las escasas vegas dejadas en los huertos por las palmas venidas de la morería africana, aquí también en Mulegé como en los Comondú serranos. Sus apretados racimos siguen regalando en la vendimia el jugo que es para los santos varones la sangre del Cristo en su consagración, pero para los rudos soldados como yo es apenas el dulce heraldo de cupido, de los sueños y de la fantasía.

o you, I present myself. I am Diego Arce e Aguilar, corporal and cuera soldier of the prime order to his majesty Don Carlos III of Spain. I was assigned directly to the most holy Father Fray Junipero Serra and will soon march with him to explore the newest territories of Alta California. We will use the sinuous Camino Real of Antigua to transport by horse and mule, carts and trains, the goats, pigs, seeds, hides, wine, wheat, meat of machaca, cheeses, dates, pomegranates, figs and other delicacies that are the fruit of these latitudes. From 1789 forward, they will reproduce, and God will be served.

In the middle of this almost island, the founding fathers discovered the spring of San Ignacio Kadakaaman. It is here the best dates are grown. Heavy, yellow clusters hang from orange shoots around the spiky plume of the palms. They add gold to the surrounding greenery. The dates spend every summer day sunbathing and every night awaiting the dew and the perverse influence of the moon until they turn the color of coffee. They snooze in leather bags then protected in calcified caves to become dark, golden drops of honey.

And what can be said about the squat and very twisted vines the Jesuits lovingly brought from beyond La Rioja? The grapes were planted in the few fertile areas that were available in the palm orchards that came from the African Moreria and planted here and in Mulege and the Comondu sierra. Their tight clusters of grapes continue to produce the vintage that, for the male saints, represents the consecrated blood of Christ. However, for rough soldiers like me, it is simply the sweet herald of Cupid, dreams and fantasy.

TIERRA PERFUMADA - SCENTED SOIL

Estos estragados territorios de caliente faz, cada año atropellados y enfriados por chubascos y por invernales, prestan un especial encantamiento a los negrísimos o verdes granos de las parras, que en fiestas vendímiales pisados por doncellas dan a sus caldos los agarrosos taninos, los olores y humores afrutados que –aguardados en barricas vejanconas hechas con encinos del país— ponen a bailar el gusto de quienes los trasegamos.

Es el regalo de las vides una tradición que en cada temporada arrejunta en los salones de las vetustas casas misionales a serranos, vallenatos y costeños para agradecer aquellos dones con bailes y música que de cristianas tienen poco y mucho sí de báquicas jornadas.

El buen Dios es así también servido, pues hay que mitigar con risas los quebrantamientos que estos ardores terrenales nos propician.

¿De quesos? Ha dicho el bardo que comida sin queso es mulier fermosa a la que falta un ojo. Sin ser del otro mundo, el queso que –tras tratar con cuajo de rumiantes— prensan o tienden en los zarzos las señoras de nuestros vaqueros y cabreros, es de suyo sobrio y sin las dulces hedentinas oleosas presentes en los de la madre patria. Pero el oreado de apoyos cumple con el paladar más exigente, sobre todo cobijado en tortilla de harina de trigo; los frescos cuajados de cabra y vacuno regalan el sentido, y los secos y muy salados son oro en los cajones de las alacenas de todo rancho respetable, en la alta sierra o en un valle cualquiera.

Queso, dátiles y vino son pues, en esta California que estamos dejando atrás, valiosa trinidad culinaria que llegó en el año venturoso de 1697 con los padres misioneros y habrá de asentarse orgullosa en las mesas rústicas o elegantes de los californios de siempre jamás, para su deleite.”

The scorched surfaces of these damaged territories are cooled and flooded each year by squalls and winter rains.

The elements lend a special enhancement to the red or white grapes that are stomped by maidens during harvest season to bring out the tannins, aromas and fruit. Aged in old barrels made from local oak trees, the wines dance on the palates of those who made them.

It is a tradition that each season an event is arranged in the halls of the old missionary houses to honor those gifts with dances, a little Christian music and much bacchanalia. As a result, our good Lord is served and we have joyously made amends for our earthly ardor for wine and song.

Of cheese? The bard has said that food without cheese is like an angry woman that is missing an eye.

It’s easy to believe the cheese is from another world because it is cured with ruminant acids then pressed and formed by the wives of the cowboys and goat herders.

By itself, the cheese is plain and without the oily sweet aroma present in that from the mother country. But the final product meets the most demanding palate, especially when included in wheat flour tortillas. The fresh goat and beef curds provide the substance and the salty, dry versions are boxed gold that can be found in all the respectable ranches in the high mountain ranges or in any valley.

Terramar nació en Los Cabos el 6 de enero de 1994 como una empresa de transporte y el 17 de septiembre de 1996 evolucionó como DMC, Destination Management Company. Terramar was founded in Los Cabos on January 6th, 1994 as a transportation company and on September 17, 1996, evolved into a DMC. After several years and a change of general management, the company has grown in the tourism sector by offering multiple services through different brands and divisions including Transportation, Meetings and Incentives, Events, Activities and Tours, Wholesale, Media Center, Marketing Services and Vendor Management.

Due to numerous requests from our existing customers, in April 2016, Terramar opened a third office in Cancun, serving the Cancun and Riviera Maya destinations. Terramar Diseño e Impresión Gráfica En Terramar el centro de medios tiene para sus clientes un área de diseño gráfico, impresión y servicios de marketing. El equipo de impresión de alta calidad nos permite trabajar con diferentes formatos, desde tarjetas de presentación hasta posters de formato grande y letreros, así como revistas, entre otros. El proceso es sencillo, y consiste en enviar el material del evento en formato digital o si no cuenta con él, nosotros lo diseñamos.

Programas, calendarios, diarios, carteles y menús, entre otros. Nuestros gerentes de ventas lo asesorarán en los materiales gráficos para su evento. Con este proceso logramos ahorrar tiempo, agente de aduanas, gastos de envío y costos aéreos. El centro de medios también puede hacer sitios web de programas personalizados donde sus clientes pueden tener acceso a información relevante.

Nuestro propósito: asegurarnos de crear experiencias inolvidables en cualquiera de nuestros destinos Una de las áreas más divertidas es el área de Turismo Receptivo por la cercanía con los clientes, y la atención personalizada a sus vacaciones. Top-of-the-line printing equipment allows us to work with formats as small as business cards to large format posters and signs, as well as magazines. Send your event materials digitally such as program booklets, day-by-day calendars, signs, and menus and we'll print them right here. No need to print or finalize materials until close to the program. Save on time, customs broker and shipping fees and airline charges! The Media Center can also make custom program websites where your clients can have access to all the relevant information.

This is the area in charge of the operation (logistics) of the passengers booked through the Associated Tour Operators Agencies. Staff provides high quality services in transportation, excursions and personal assistance within the main hotels of the destination.

The adventure begins when our representatives greet passengers with a warm welcome at the airport by providing essential information about our services and the destination. First, we make sure our guests feel at home then we transfer them to the different hotels where a destination expert receives and assists them throughout their entire stay. By suggesting all possible options, we make sure the passengers enjoy their trip to the fullest. We book their excursions, provide support when there are incidents and emergencies, orient them to the destination, confirm flights, and schedule transportation for the return to the airport.
