The plants consist of one or more flocculators of different size, entirely built in stainless steel Aisi 304, featuring a cone-shaped bottom for a perfect discharge of ricotta. The particular steam injection system and the bottom with central discharge enable correct agitation of the whey as to get maximum yield. The bottom and sides of the flocculator are insulated; it features inspection hatch on the ceiling and efficient washing system. By building all connections for the inflows of technologic additives, for temperature control, level control and more, Priamo Food Technologies designs all its flocculators to be fully automated. As well as being provided with gangway and stairs, the flocculators are also equipped with control board according to customer’s specific requirements. The company proposes the following two solutions, with different automation level, for the draining and drying phases.

The first solution sees a draining tank, single or double, under the flocculator; inside the tank there is a hopper with a pump to transfer the product. Moreover, it can also be provided with a lid for C.I.P. washing. The second solution sees a stainless steel AISI 304 tunnel with inside belt for the draining and drying of the product. The structure of the tunnel, with inspection hatches, enables C.I.P. washing of the belt (made in non-toxic, micropore plastic material) and easy ordinary washing. The belt feeding system features an automatic compensation system of thermal expansion of the same belt, as well as regulation of the feeding speed by means of a static frequency converter. An electro-pump for the transfer of the product and a pump for the transfer of the curd whey are installed in the tunnel. In the end, the ricotta is transferred to one or more mixers where it can be added with other components before the homogenization and packaging phases that follow.

LITA – Case History GKKZ– Gatchinsky St. Petersburg - Russia Leader in the pet food sector, Gatchinsky GKKZ has asked LITA to automate its main production line. This plant required the palletization of 25-kg bags consisting of 15 piece/min. LITA provided a Kawasaki anthropomorphous robot equipped with a pincer suitable for this kind of product. In addition, this system is also provided with independent device for interlayer and empty pallet insertion. (photo 1) CJSC L’OREAL – Dobrino - Kaluga Region - Russia World leader in cosmetics and personal care products, CJSC L’Oreal has increased its production in its new Russian factory; on account of excellent market feedback, the company has invested in 3 high-capacity

palletizing lines. For this important investment, L’Oreal has again trusted LITA, which is one of the group preference suppliers. LITA supplied three high-speed, Cartesian-axis palletizing robots JOLLY equipped with digital servodrives and brushless motors, able to perform 14 cycles per minute, change pallet included. The plants are provided with empty pallet cabinet and pallet conveyor for automatic pallet change, which can also be handled with manual transpallet. The mechanical parts are entirely in aluminium, combined with accurate linear sliding on guides which makes the system highly flexible, quick and accurate. The machines are equipped with a gripping device as to handle boxes of up to 20 kg. The feeding system has been designed to perform the robot gripping in single, double or multiple ways. The systems guarantees production of 40 6-piece crate/m. (photo 2) Pasta Berruto – Carmagnola, Torino, Italy In terms of innovation, LITA has always expressed itself at the best level and its commitment to searching for target solution able to meet customers’ specific requirements is evidenced by a palletization system for bags of pasta in pallet-box. Palletization plant for bags of pasta in pallet-box, installed on the premises of Pasta Berruto SpA, an important producer of Torino, has been especially designed to handle 5-kg bags of pasta, mainly for the catering sector and centres, in different size and with production capacity of 25 bag/m by means of an anthropomorphous robot. To guarantee suitable protection during the transport, this product is usually placed inside a pallet-box, which is a big tray with sides 700 mm high, laid on pallets. In order to put the packages inside the container at the requested rate a special picking place has been designed to handle two overlaid bags per cycle. To perform this product positioning, the picking place is equipped with a two-level feed conveyer system. It is also possible to install a box centering device for an accurate positioning during the filling phases. (photo 3)

The constantly growing presence in marketplaces of processed plants made by I.F.ind Srl Italian Food Industries, enables the company to constantly develop its technology for carbonated and still drinks production. Not only does a team of technologists analyses customer’s any specific requirement in order to propose the best plant, but it can also add machinery to already existing production lines. Lately, the company has supplied an “integrated blending-pasteurization-sanification plant” for tea-based drinks and aromatized water production, capacity 4,000 l/h. The plant assures the highest quality and production standards; in fact, it is a fully preassembled plant that was studied to be installed in small rooms at the customer’s production facilities. The drink is produced by diluting sugar- based syrup in water, which was previously de-aerated as to eliminate oxygen and other gases that are naturally present in it. Next on, the water is mixed with the syrup by means of a static mixer and a “Stator”. This mixing system is software controlled as to adjust the machine to the parameters set by the operator, and production requirements consequently,

in order to offer the customer the highest production flexibility. The plant consists of the following: • Premix complete of water de-aerator / dosing unit and control-syrup of vacuum / storage tank: • 4-step pasteurizer with automatic continuous regulation of load and process temperatures; • Automatic management of the “recovery” function, with sterile water in case of malfunction, stop and restart of the plant; • Filtration group with stainless steel cartridges; • 2 tank automatic C.I.P • Central electric control board. Moreover, I.F.ind also proposes its customers the following: Plate, tube-intube or multitube pasteurizers; Pasteurization, heating and cooling tunnels; Saturators; Premix; wash C.I.P; evaporators for fruit juices; complete lines such as Syrup rooms and fruit processing rooms. FIMER was established in 1970 in the heart of one of the most ancient and renowned Italian wine areas, origin of top-class wines. Founder Bruno Mogliotti initially put his expertise and innovative ideas to the local wine companies’ disposal by creating a line of small- and medium-sized fall filling machines for modest and high capacity productions. But what about the homogenizing principle? In order to permanently mix one or more substances in a liquid, a homogenizer must be used in such a way as to make it possible to micronize and disperse the suspended particles in the fluid, rendering it highly stable even during successive treatments and storage. The product reaches the homogenizing valve at a low speed and at high pressure. As it passes through the valve, it is subject to various forces that cause the micronization of the particles: violent acceleration followed by immediate deceleration causes cavitation with explosion of the globules, intense turbulence together with high-frequency vibrations, impact deriving from the laminar passage between the homogenizing valve surfaces and consequent collision with impact ring. Homogenization can occur with the use of a single stage homogenizing valve (suitable for dispersion treatment), or double stage homogenizing valve (recommended for use with emulsions and for viscosity control when requested). FBF Italia’s range of machines can be commonly classified as follows: • high pressure homogenizers: The homogenizer is often necessary to mix one or more substances within a liquid. This machine allows micronizing and scattering the particles suspended in the fluid, so that the product becomes highly stable, no matter the followings treatments and storage the product may undergo. The “Buffalo Series” homogenizers are manufactured according to the UE directives and are available with capacity ranging from 50 up to 50.000 litres/hour; according to the products to be processed, the requested pressure may vary up to 2.000 bars (29.000 psi) • positive displacement pumps: these pumps are used to transfer the products from a storage system or process one to a further part of the plant at a high pressure. These machines are commonly used for feeding of spray driers, tomato paste plants, osmosis plants, etc. • laboratory homogenizers: manufactured to replicate the same homogenization conditions that can be expected in a real production process these machines offer the possibility to execute tests up to very high pressure (1500 bar) and do not need of any other device to work. Easy to use and to move, with the highest reliability, is the best choice for keeping the production always under control. • positive displacement pumps for product containing particles: these pumps are mainly used for product containing particles with a max. sizes of 15x15x15 mm such as tomato cubes, vegetable or fruit pieces. The construction of such a machine is much the same as the homogenizers, except for the compression head which is equipped with special pneumatically controlled valve groups.

FARCK SPA is an Italian company specialized in the manufacturing of plants and machinery for the dairy and food industry in general with a long year experience in the realization of evaporators and spray-dryers for liquids such as milk whey, milk, stillage, grape must, fruit juices, etc. The principle used is the Vapour Thermal Recompression that allows the realization of plants with very reduced consumptions. Spray-drying plants for the pulverisation of the concentrated liquids coming from evaporators and their transformation into powders with a long-life conservation. Compared to traditional dryers, the product coming from a FARCK SPA plants has better qualitative characteristics: lower density, no hygroscopicity, better solubility, no hardening in packaging and so a better use in the industry. 14 SWAN new short-pipe electro-pneumatic isobaric fillers are AVE Technologies’ latest novelty standing out for their special features of functionality and construction quality. These plants are suitable for throughput up to 80,000 bottle/h and are engineered upon “clean design� philosophy; in addition, stainless steel materials are also used to produce all component. External pressurized tank is equipped with a variable speed restart pump for overall control on the pressure of the filling head. The machine manages three different process gases, such as: pure CO2 at filling pressure; CO2 impure from the bottle during low pressure isobaric filling phase to vacuum wash the bottles and pressurization, and vacuum making for bottle pre-discharge and decompression. The modular isobaric valve runs at two filling speeds and is provided with short or long pipe to perform filling from the bottom. Mineralization on calcium and magnesium carbonate film

Nature in a bottle - water mineralizing solutions Mineral waters, whether natural or industrially produced, represent the bigger portion of worldwide water bottling market. “Natural” mineral water, taken from a natural source, contains a selection of naturally occurring inorganic minerals in its composition and is influenced by the gases reacting with the water in its relatively slow passage through the rocks and sediments of the Earth’s crust. Many variables cause extensive variation in the quality of groundwater, even in local areas. At some point, the water reaches an equilibrium or balance, which prevents it from dissolving additional substances. With more and more interest in this developing market and fewer and fewer sources of so-called clean and “natural” mineral water, bottlers are seeking to create what they consider to be a synthetic replica of the best tasting natural mineral water(s) available. Mineralising units by Water Systems Raw water undergo different stages of treatment according to its source and characteristics: if necessary the incoming water (tap water or source water) is initially stripped of most if not all of its inorganic, biological, metallic and organic components through a reverse osmosis process. Where a simple RO blending by-pass is not enough, to restore adequate mineralization, a precise combination of a selected number of mineral concentrates are added to the water being bottled, to match the desired mineral content for the product water. The specific amount and combination of dosed salts will of course depend on the taste, texture or other characteristic of the wished end product. The aim is to achieve a pleasant and acceptable flavour profile, which may vary depending on geographic area, climate, ethnic population or other demographic data. Therefore, the primary objective of the mineralization process is to impart that “pleasant and acceptable flavour profile” which would result in product acceptability and sales.

Remineralisation can be carried out in three ways. Traditional one involves dissolving of powder salts in water by means of a dosing pump; this process is probably the most widely used, but has some advantages: powder salts must be highly soluble and this characteristics sometimes affects negatively product taste. Furthermore powder salts are not so noble salts. The alternative is a water filtration in a huge Calcium and Magnesium Carbonate filter, after a water acidification. This kind of process reflects the action of environment (rocks, air) on natural mineral water during its flow from heart of the earth, through the source in high mountain, up to consumer. Mineralisation on calcium/magnesium carbonate filter Already widely used on boats to mineralize demineralised RO sea water, the process includes an automatic water acidification equipment by means of CO2: the injection of gas is necessary to acidify the demineralised water (through the formation of carbonic acid) in order to give it the properties necessary to dissolve the calcium carbonate in follow stage of treatment. The filter contains a layer composed of calcium and magnesium carbonate: the passage of acid water through the filter layer will determine the dissolution of the salt contained in the filter and therefore the mineralization of the filtered water; to ensure very high exchange surface between liquid and solid, minerals used in the filters have a particle size of 0.8 ÷ 1.2 mm, and the inorganic layer will be installed on a siliceous sand layer to avoid leakage of fine stuff; process is continuously controlled by pH analyzer and conductivity analyzer. Mineralisation by powder salts dosing Mineralisation on calcium/magnesium carbonate filter can be followed by a stage of traditional mineralization with dosing pump to dose what the customer wants: usually calcium chloride, sodium bicarbonate, magnesium sulphate, potassium fluoride. The equipment is completely manufactured in AISI 316 L stainless steel and provided with salts powder dissolving tank and centrifugal pump for the transferring of the concentrate to the storage tank. Process is continuously controlled by pH analyzer and conductivity analyzer. Furthermore, it allows to set the dosing ratio according to the chosen recipe and therefore to determine the mineralized water quality. A second centrifugal pump is conceived to feed water to final stage of treatment (microfiltration and UV-disinfection). Final treatment Water ozonization, which grants product conditioning right before filling, is a typical application used by Coca Cola (Dasani and Bonaqua) and Pepsi Cola (Aquafina) to increase the product shelf life and microbiological quality, affected by the powder salts contamination; at the same time ozonised water will provide fully disinfection of bottle and cap: then ozone will disappear in 24 hours and the product will be ready for the market but much more safe on the microbiological point of view. Water ozonising systems, as well as other equipment by Water Systems, are especially conceived and manufactured for beverage industry and provided with components supplied by leader European manufacturers, in order to guarantee maximum reliability.
