In life we get so busy with work, sports, etc. that we don't have much family time unless it's a holiday, family reunion or funeral. I like Thanksgiving because of how busy our lives can get. On Thanksgiving we come together, we visit and tell each other what we are thankful for.
Cornbread Dressing
Boil chicken 30 minutes
Bake cornbread (jiffy)
While chicken is boiling and cornbread is baking, cook seasoning blend in skillet. Once cornbread is done, crumble cornbread in a pan.
Add chicken and seasoning blend. Mix well.
Add your chicken broth that you boiled your chicken in and mix again.
Put in oven to brown the top.

Sourdough Gingerbread Cookies
1/2 cup unsalted butter, softened
1 cup brown sugar
1/2 cup molasses
1 large egg
1/2 cup sourdough starter discard
1 teaspoon vanilla
1 teaspoon salt
1 1/2 teaspoons baking soda
2 teaspoons cinnamon
1 tablespoon ground ginger
1/2 teaspoon ground cloves
1/2 teaspoon allspice
3 cups all-purpose flour ROYAL ICING (OPTIONAL) 4 cups powdered sugar
tablespoons room temperature water 3 tablespoons meringue powder
1. Mix Wet Ingredients: In a large bowl or stand mixer with a paddle attachment, beat the butter, brown sugar, and molasses on medium speed until creamy. Add the egg, sourdough starter, and vanilla, then mix on medium speeduntil incorporated.
2. Combine Dry Ingredients: In a separate bowl, whisk together the flour, salt, baking soda, cinnamon, ginger,cloves,andallspice.
3. Form the Dough: Add the flour mixture to the wet ingredients, beat on low speed until combined. Cut the dough in half and form two discs. Wrap the discs in plastic wrap and refrigerate forat least one hour, or up to three daysfor long fermentation.
4. Prepare for Baking: When ready to bake, let one disc of chilled dough sit at room temperature for a few minutes. Preheat the oven to 350°F (175°C) and line two large baking sheets with parchment paper. Roll the dough to 1/4 inches thickness on a lightly floured surface. Cut into desired shapes and place cookies 1 inch apart on prepared baking sheets. Repeat with the other disc.
5. Bake: Bake for 10 minutes. Cookies will look slightly underdone and edges will be golden but not dark. For crispier cookies, bake a little longer. Allow cookies to cool completely before decorating,approx. 30 minutes.
FOR THE ROYAL ICING
1. Mix Wet Ingredients: Add powdered sugar, water, and meringue powder to the bowl of a stand mixer. Using a wire whisk attachment, beat on high speed for about 2 minutes. If the icing is too thin,continuebeating until thickened, or add more powdered sugar.
2. Decorate: Once applied, royal icing typically dries within acouple of hours.
NOTES:
You can use sourdough starter discard or yourfed,active starter. Chilling the dough is important, but let your dough sit on the counter for a few minutes before rolling out.
The dough should be smooth and manageable,not sticky. Add flour minimallyif necessary. If the royal icing isn’t thickening enough, add more powdered sugar. Store in the fridge, airtight, and warm to room temperaturebefore icing.

PERSIMMON BREAD
3½ cups sifted self rising flour
1 teaspoon ground nutmeg
2 to 2½ cups sugar (we use 2 cups)
1 cup melted unsalted butter, cooled to room temperature
4 large eggs, at room temperature, lightly beaten 1/2-1 cup milk
2 cups persimmon puree (from about 4 very ripe Hachiya persimmons)
2 cups chopped dates
Preheat oven to 350 degrees. Butter 2 loaf pans. Line the bottoms with a piece of parchment paper or dust with flour and tap out any excess. Sift the flour, nutmeg, and sugar into a large mixing bowl. Make a well in the center of the dry ingredients and then stir in the butter, eggs, milk, persimmon puree, and dates. Pour the batter into the loaf pans and then place the pans in the oven. Bake 1 hour or until toothpick inserted into the center comes out clean. Allow the bread to cool completely in the pan. Then remove the bread from the pans and serve.

PICCADILLY PECAN PIE
4 egg whites at room temperature 1/4 tsp. cream of tartar
1 c. white sugar 25 crushed Ritz crackers
2 c. chopped pecans Cool Whip
Beat egg whites and cream of tartar until stiff peaks form, but not dry. Add sugar and beat. Very gently fold in chopped pecans and crushed Ritz, making sure not to deflate the egg whites. Pour into a buttered 9-inch pie pan and bake at 350 degrees for 20-30 minutes or until slightly brown. Let it cool completely and then pile it high with Cool Whip. Garnish by sprinkling chopped pecans on top of the Cool Whip.
