Why Having a Mobile Stroke Unit Program in the Community Matters Stony Brook Medicine recently rolled out Long Island’s first Mobile Stroke Unit Program.

Mobile stroke units have successfully reduced stroke disability and improved survival rates in other major metropolitan areas across the country.

How does a mobile stroke unit differ from an ambulance?

Dr. Guido: Mobile stroke units are specially equipped, state-of-the-art ambulances designed to provide lifesaving care right at the scene, within the critical moments of a stroke before the patient even gets to the hospital.

What does it look like inside?

Dr. Fiorella: Think of it as a mobile stroke emergency room with a full crew of first responders, including a critical care nurse, paramedic, emergency medical technician (EMT) and computed tomography (CT) technologist. Medications including clotbusting agent tPA are also onboard as well as brain imaging equipment. There’s a CT scanner that can perform both a standard head CT and a CT scan angiogram (which looks at, in detail, blood vessels throughout the body).

Dr. Guido: These scans allow Stony Brook Medicine physicians to immediately check for bleeding in the brain (hemorrhagic stroke) and determine whether a person has a blocked blood vessel (ischemic stroke). With physician approval,

first responders onboard can begin administering time-sensitive, advanced stroke treatments while a person determined to have a blocked vessel or bleeding in the brain is en route to the nearest hospital with the appropriate level of care.

What if a stroke patient needs a special procedure?

Dr. Fiorella: Our mobile stroke units will greatly improve the chances of a good outcome because we can more rapidly identify if someone is a candidate for a mechanical thrombectomy, which is a procedure to remove clots that block large vessels. The American Heart Association/American Stroke Association now recommends that selected acute ischemic stroke patients receive mechanical thrombectomy as the standard of care. This means an individual must get to a hospital with the expertise and technology to perform a mechanical thrombectomy early enough to get the most benefit from the treatment.

With our Mobile Stroke Unit Program, more people will be candidates for treatment if they are rapidly identified and transported to the nearest comprehensive stroke center early for these timesensitive interventional therapies.

North-South and East-West access.

One is located off of Exit 57. Another is located near Exit 68. The program operates seven days a week, from 8 am to 8 pm, which is the window of time when most stroke calls are received.

Our team takes calls within a 10-mile radius of each base, which includes about 40 different communities. The goal is to provide response times of less than 20 minutes.

How does this work when someone calls 911?

Dr. Fiorella: When a call comes in to the Suffolk County 911 system, specially trained emergency medical dispatchers receive the call. In addition to determining the location and type of call, these dispatchers provide medical advice to the caller that can be initiated while an ambulance is en route. The 911 dispatcher will simultaneously dispatch a Stony Brook mobile stroke unit along with the local EMS provider to any potential stroke call. Stony Brook is collaborating with EMS agencies throughout Suffolk County to provide this lifesaving, time-sensitive care to our community.

Dr. Guido: Yes. When not in use, our mobile stroke units are strategically located at base stations off of the Long Island Expressway to provide rapid

LIM hosts Mount House Summer Soirée The Long Island Museum is turning 80 this year, and the celebration kicks off on Friday, June 28 with a Summer Soirée at the Hawkins-Mount House on North Country Road in Stony Brook from 6 to 9 p.m.

Held rain or shine, the Americana-themed party will feature signature cocktails, dinner catered by Villa Sorrento, live music by Johnny Cuomo and Brian Chabza, tours of William Sidney Mount’s boyhood home and a presentation of W.S. Art League of LI highlights funniest photos with Laughing Out Loud exhibit

You’ve probably heard the old adage that laughter is the best medicine. As it turns out, it’s more than just pithy wisdom. According to the Mayo Clinic, laughter stimulates the heart and muscles, releases feel-good endorphins, reduces tension and can even lower blood pressure.

Inspired by the belief that we could all use a good laugh, the Art League of Long Island invited amateur and professional photographers from the tristate area to submit photographic images “capturing smile provoking images of humor, laughter, and all things silly with their camera lens” for its 7th annual juried photography exhibit, Laughing Out Loud, which opens June 29.

“We all need a break from the seriousness of life and to share a little joy with one another,” said Susan Peragallo, gallery coordinator and curator for the Art League’s Jeanie Tengelsen Gallery in Dix Hills. “Everybody on the exhibition committee latched onto the idea and they really loved it. We were so pleased with the submissions and were literally laughing out loud.”

More than 200 photos were submitted for juror Alex Ferrone, owner of the Alex Ferrone Gallery in Cutchogue, to review. She ultimately narrowed the field to 51 of her favorites.

“I was looking for an immediate response that made me laugh or chuckle because of what was happening in each scene. Along with that, I considered the structure of the image and the technical execution including composition, use of color, balance, and mood,” Ferrone explained.

“Jurying is never easy, and it was an honor to be asked to work with the Art League on this fun exhibition. I believe this exhibit will make people feel good inside, and maybe just keep that feeling to pass along to the next person they meet,” she added.

Gemma Saylor of Centerport quickly had the perfect photo in mind when she heard about this year’s theme. Her submission, titled “French Art Is Not PG,” features her young daughter bashfully covering her eyes in front of a revealing painting at a French museum.

“Reading the news every day is just depressing, and I loved the idea of getting people to laugh no matter how bad things are,” said Saylor, who works as a dietitian while also running her photography business, Leela Bleu Photography. “It’s good to have a laugh and appreciate that small things in life can make us smile.”

Alissa Rosenberg of Commack chose her photo “The Ultimate Movie Experience” for the exhibit, which depicts her husband posing before a billboard of moviegoers as if he were one of them. The photo is part of Rosenberg’s ongoing Manhattan billboard project, where her subjects alter or enhance the meaning of the billboards with their poses.

“I’m very excited to be a part of this exhibit because I love the community that the Art League provides, and the gallery is beautiful.

I also really respect Alex Ferrone’s work,” said Rosenberg, a speech pathologist and owner of Alissa Beth Photography. “Everybody wants to find things that make them smile and feel good, and it’s nice to create art that evokes those feelings.”

Laughing Out Loud will be on view from June 29 through Aug. 4 at the Art League’s Jeanie Tengelsen Gallery, 107 East Deer Park Road, Dix Hills. Winners of the juried exhibit will be announced at an artist reception on Sunday, June 30 from 3:30 to 4:30 p.m. followed by a Gallery Talk led by Alex Ferrone on Thursday, July 11 at 7 p.m.

The gallery is open Monday through Thursday from 9 a.m. to 9 p.m., Friday from 9 a.m. to 4 p.m. and weekends from 11 a.m. to 4 p.m. except for major holidays. Admission is free. For further information, visit www. artleagueli.net or call 631-462-5400.

Suffolk County Community College Entrepreneurship Assistance Center named outstanding by New York State For a second consecutive year, the Suffolk County Community College Entrepreneurship Assistance Center has won the New York State Entrepreneurship Assistance Center Award for Outstanding Performance and Achievement.

Suffolk was presented with the award in Albany on June 12.

Entrepreneurship Assistance Centers provide instruction, training, technical assistance and support services to new and aspiring entrepreneurs in local communities statewide and are strategically located throughout the state.

The 24 centers assist new and aspiring entrepreneurs in developing basic business

management skills, refining business concepts, devising early-stage marketing plans and obtaining business financing.

McKay ends tenure

Suffolk County Community College’s board of trustees accepted Shaun L. McKay’s resignation as President of Suffolk County Community College on May 24. Theresa Sanders, Board Chair stated, “On behalf of the full Board of Trustees, we wish Dr. McKay well, as he begins his pursuit of new opportunities.”

Sanders went on to say, “I am sure the college community and the residents of Suffolk County, will share the Board’s sense of purpose as we begin to transition the institution toward the selection of its seventh president.”

Selecting the right diet and psyche for weight loss

Setting weight loss goals are less effective than health goals

Weight loss should be a simple concept.

It should be solely dependent on energy balance: If we burn more kilocalories (energy) than we take in, we should lose weight. However, it is much more complicated.

Among factors that result in weight loss (or not) are stress levels. High stress levels can contribute to metabolic risk factors such as central obesity with the release of cortisol, the stress hormone (1). In this case, hormones contribute to weight gain.

By David Excess weight Dunaief, M.D. has consequences, including chronic diseases such as cardiovascular disease, diabetes, osteoarthritis, autoimmune diseases and a host of others.

Weight also has an impact on all-cause mortality and longevity.

It is hotly debated as to which approach is best for weight loss. Is it lifestyle changes with diet and exercise, medical management with weight loss drugs, surgical procedures or even supplements? The data show that, while medication and surgery may have their places, they are not replacements for lifestyle modifications; these modifications are needed no matter what route is followed.

But the debate continues as to which diet is best – for both weight loss and overall health.

Let’s look at the evidence.

Low-carbohydrate vs. low-fat diets

Is a low-carbohydrate, high-fat diet a fad?

In the publication of a 12-month randomized controlled trial (RCT), results showed that a low-carbohydrate diet was significantly better at reducing weight than low-fat diet, by a mean difference of 3.5 kg lost (7.7 lb), even though calories were similar and exercise did not change (2).

The authors also note that the low-carbohydrate diet reduced cardiovascular disease risk factors in the lipid (cholesterol) profile, such as decreasing triglycerides (mean difference 14.1 mg/dl) and increasing HDL (good cholesterol). Patients lost 1.5 percent more body fat on the low-carbohydrate diet, and there was a significant reduction in the inflammation biomarker C-reactive protein (CRP).

There was also a reduction in the 10-year Framingham risk score. However, there was no change in LDL (bad cholesterol) levels or in truncal obesity in either group.

hydrate/high-animal protein diet might result in adverse effects on the kidneys, loss of calcium from the bones, or other potential health risks.

The author goes on to say that, for overall health and longevity and not just weight loss, micronutrients found in nutrient-dense foods may be the most important factor.

A Seventh-Day Adventist trial would attest to this emphasis on a micronutrient-rich, plantbased diet with limited animal protein. It resulted in significantly greater longevity compared to a macronutrient-rich animal protein diet (5).

Psyche

A low-carb diet shows better results.

There were 148 participants, predominantly women with a mean age of 47, none of whom had cardiovascular disease or diabetes, but all of whom were obese or morbidly obese (BMI 30-45 kg/m²). Although there were changes in biomarkers, there was a dearth of cardiovascular disease clinical end points. The authors indicated this was a weakness since it was not investigated.

Digging deeper into the diets used, it’s interesting to note that the low-fat diet was remarkably similar to the standard American diet; it allowed 30 percent fat, only 5 percent less than the 35 percent baseline for the same group. In addition, it replaced the fat with mostly refined carbohydrates, including only 15 to 16 g/day of fiber. The low-carbohydrate diet participants took in an average of 100 fewer calories per day than participants on the low-fat diet, so it’s no surprise that they lost a few more pounds over a year’s time.

As Dr. David Katz, founding director of Yale University’s Prevention Research Center, noted, this study was more of a comparison of low-carbohydrate diet to a high-carbohydrate diet than a comparison of a low-carbohydrate diet to a low-fat diet (3).

Diet comparisons

Interestingly, in a meta-analysis (group of 48 RCTs), results showed that whether a low-carbohydrate diet (including the Atkins diet) or a low-fat diet (including the Ornish plant-based diet) was followed, there was a similar amount of weight loss compared to no intervention at all (4). Both diet types resulted in about 8 kg (17.6 lb) of weight loss at six months versus no change in diet.

A published study followed West Point cadets from school to many years after graduation and noted who reached their goals (6).

The researchers found that internal motivators and instrumental (external) motivators were very important.

The soldiers who had an internal motivator, such as wanting to be a good soldier, were more successful than those who focused on instrumental motivators, such as wanting to become a general. Those who had both internal and instrumental motivators were not as successful as those with internal motivators alone. In other words, having internal motivators led to an instrumental consequence of advancing their careers.

When it comes to health, focusing on an internal motivator, such as increasing energy or decreasing pain, could ultimately lead to an instrumental consequence of weight loss.

There is no question that dietary changes are most important to achieving sustained weight loss. However, we need to get our psyches in line for change. Hopefully, when we choose to improve our health, we don’t just focus on weight as a measure of success.

Focus on improving your health by making lifestyle modifications. This tends to result in a successful instrumental consequence.

Fans of Mindy Kaling, best known for “The Office” and “The Mindy Project,” have been flocking to theaters to see her debut as feature writer for “Late Night,” a by-thenumbers comedy that takes on the issue of diversity in the workplace and makes its statement with a connect-the-dots expectation. Directed by Nisha Ganatra, there are no surprises but it still makes for an enjoyable hour and 45 minutes.

Emma Thompson plays legendary latenight talk show host Katherine Newbury whose ratings have been slipping. She has surrounded herself with an all-male, all-white staff and is described as a “woman who hates women.” In response to this, she gives her long-suffering producer Brad (a wonderful Denis O’Hare) the task of hiring a woman.

Through slightly unbelievable machinations, he brings on chemical plant worker Molly (Mindy Kaling) to the writing staff.

Instead of a true examination of hiring practices, what ensues is humorous but contrived as Molly is first ostracized and then embraced by the team. There are occasional edgy moments – including Molly writing a topical and controversial monologue joke – but these risks are few. For the most part, it adheres to traditional comedy tropes, including an ill-fated and unnecessary romantic entanglement that feels incomplete. (There is a sense throughout the film that a good deal ended up on the cutting room floor as certain ideas and conflicts are introduced but not seen to conclusion.)

The first turning point is when Katherine discovers she is going to be replaced by a mainstream and extremely coarse comedian Daniel Tennant (Ike Barinholtz, a subtle performance that avoids caricature). With this impetus, she goes to war with the head of the

network Caroline Morton (Amy Ryan, saddled with a two-dimensional character). With Molly’s wide-eyed, aw-shucks guidance, Katherine begins to reinvent herself.

Emma Thompson, one of the greatest and most versatile actors, creates a delightful monster of a boss. She never talks to her writers and doesn’t even bother to learn their names. When forced into a room with them, she gives them numbers. This is not done with cruelty but rather by someone who cannot be bothered with the people beneath her. Of course, in a comedy of this nature, she gradually learns to appreciate them.

Thompson’s depth is best shown when interacting with her ill husband Walter (a touching John Lithgow) and in an impromptu performance at a hole-in-the-wall benefit downtown.

In the latter scene, the audience can see her pondering the mortality of her career.

Kaling is Thompson’s co-star and conscience. She is also “Late Night’s” writer and producer, which perhaps explains some of the weaknesses. As an actor, Kaling is a personality performer. There is no genuine complexity in her work but she is comfortable in her persona. She is watchable but, unlike with Thompson, as a presence, she is not transformative.

The film is bolstered by a cast of strong actors in convincing performances, including Hugh Dancy, Reid Scott, Max Casella, Paul Hauser and John Early. It is interesting to note that with the exception of Thompson and Kaling, there are no other fully developed female characters.

The second act crisis is clumsily manipulated but, once again, the actors are able to make it work. “Late Night” builds to an expected resolution but, given the nature of the film, it is the one that the audience hopes for and expects.

Rated R, “Late Night” is now playing at local theaters.

Prohibition Night The Three Village Historical Society, in collaboration with The Jazz Loft, hosted the 3rd annual Prohibition Night on June 21. This year’s theme, An Evening of Booze and Bootlegging, began with a mock funeral in the tradition of businesses, including at least one funeral parlor, that also functioned as speakeasies during Prohibition.

The eulogy for John Barleycorn had heads bowed and hearts pumping.

Then Tom Manuel and The Hot Peppers got feet tapping with jazz music of the era. It was a fun evening enjoyed by flappers and fellas alike.

A TREASURE AMONG US

The Ward Melville Heritage Organization celebrates 80th anniversary

I

’m sitting on a bench on the Village Green at the Stony Brook Village Center. I’ve come to see the sun set over the harbor. It’s mid-June and there’s still a slight chill in the air. Behind me are the quaint New England style shops and restaurants; across the street Hercules sits in his Pavilion, tall and regal with a lion’s pelt wrapped around his shoulders while kayakers and paddle boarders row silently behind him.

Down to my right I spy the little stream that I used to play in as a child and beyond that the Three Village Inn, the spot for so many family gatherings. I hear a familiar sound and turn to catch the mechanical eagle on the post office flap its wings.

It’s 8 p.m. and the chimney swifts above me make their last rounds in search of insects as the sky turns orange and purple and pink. The scene is peaceful and beautiful; a community treasure.

One man’s vision

According to Gloria Rocchio, president of The Ward Melville Heritage Organization, this exact spot was the focal point for Ward Melville’s vision to build the nation’s first planned business community. Originally Melville’s mother, Jennie, came up with the idea of rebuilding the village after the Great Depression and started purchasing properties in the area. When she died in the summer of 1939, “Mr. Melville took up the gauntlet” and envisioned opening the whole village to the harbor.

After establishing The Ward Melville Organization (then known as the Stony Brook Community Fund) on Dec. 31, 1939 the philanthropist presented his grand plan, a crescent-shaped Village Center with connected shops grouped around a Federalist-style post office, to the community in January of 1940 at a special dinner at the Three Village Inn. The project was well received.

“He officially opened [the Stony Brook Village Center] on July 5, 1941 but the last tenant, the hardware store, opened on Dec. 7, 1941, Pearl Harbor Day,” said Rocchio during a recent interview, adding that the mechanical eagle was there from the first day. “The idea of attaching buildings together and having the road network where the deliveries went in the back – all of it was very unusual and unique,” she said.

Now known as the Harbor Crescent section, the shops featured big show windows with identical signage. Full-size trees were planted in the grassy area in front of them (probably to keep them from

blocking the storefronts as they grew, theorizes Rocchio), with green metal garbage cans inscribed with a quote from Abraham Lincoln, “I like to see a man proud of the place in which he lives,” placed next to them.

Melville then turned his attention to restoring historic properties in the area dating back to the Revolutionary War, including the Stony Brook Grist Mill and the Thompson House and Brewster House in Setauket. “Each time he did that he deeded it over to the Stony Brook Community Fund, now the WMHO, and here we are,” Rocchio explained.

In the 1960s, Melville saw that the community was changing, and to go along with the times, he built the second section of the Stony Brook Village Center, Market Square, which featured a Bohacks.

When he passed in 1977, his wife Dorothy became president of the board and headed up the third phase of the Village Center with the addition of the Inner Court. Rocchio worked for Dorothy Melville from 1979 until she died in 1989. “I worked very closely with her and she taught me a lot; I learned how [the Melvilles] thought and that was very important.” The final phase, the Educational & Cultural Center, located behind the Inner Court, was completed in 2002.

According to Rocchio, the Stony Brook Village Center was part of a larger vision. “[Ward Melville] loved history – American history. He bought all these properties as it relates to the history of this area,” she explained, adding that Melville’s goal was to have Stony Brook look similar to Colonial Williamsburg. “[Melville] saw it as a master plan, the Williamsburg concept,” which included donating 400 acres of land for the development of Stony Brook University. “This [shopping area] was supposed to be the road that leads to [The College of] William and Mary,” Rocchio explained, and a lot of the homes on Main Street were purchased by Melville who removed all the Victorian architecture and brought them back to the Colonial style. Slate sidewalks were installed to complete the look.

“This was a place that you lived with history … So you just lived with the Grist Mill where it always was, you lived with the Thompson House where it always was – and to think that this one man had the vision to save all of this and to create this for the residents is such a treasure,” said Rocchio. “The legacy and the foresight that he had is just amazing to me, amazing.”

The Brewster House, 18 Runs Road, East Setauket was built in 1665 and is considered the oldest house in the Town of Brookhaven. Home to six generations of Brewsters, it was operated as a tavern and general store during the American Revolution by Joseph Brewster. Open on Culper Spy Day every year and by appointment.

The Stony Brook Grist Mill, 100 Harbor Road, Stony Brook is Long Island’s most completely equipped working mill. Listed on the National and New York State Register of Historic Places, it is open to the public for guided tours with a miller on weekends April through mid-October from noon to 4:30 p.m.

Admission is $2 for adults and $1 for children.

Overlooking Stony Brook Harbor, the Hercules Pavilion on Main Street, Stony Brook, houses the figurehead and anchor from the U.S.S. Ohio, the first ship launched from the Brooklyn Navy Yard in 1820. Sharing the Hercules Pavilion with the historic figurehead is the Polaris whaleboat, thought to be the only surviving artifact from the Charles Hall expedition to the Arctic in 1870.

The Mechanical Eagle at the Stony Brook Post Office, 129 Main St., Stony Brook, was hand carved and has a wing span of 20 feet. It flaps its wings every hour on the hour from 8 a.m. to 8 p.m. as it has done since 1941, welcoming visitors to the Stony Brook Village Center.

Today, The Ward Melville Heritage Organization continues its mission to protect and preserve historic and environmentally sensitive properties deeded to it by Ward Melville including the Stony Brook Grist Mill, Thompson House, Brewster House, the 11-acre T. Bayles Minuse Mill Pond Park and two-acre Upper Pond, the Hercules Pavilion, and the Ernst Marine Conservation Center and 88-Acre Wetlands Preserve.

The organization also leases WMHO land and buildings to the Long Island Museum, The Jazz Loft and the Three Village Society Lending Aids for the Sick for $1 per year with the stipulation that they are responsible for maintenance and operations.

This was Ward and Dorothy’s vision of creating a community where art, music and history are an integral part of daily life.

Every year the organization offers free summer concerts in front of the post office, a scarecrow contest in October, a holiday festival and Promenade of Trees in December, educational programs for children, Master Classes for adults, cultural exhibits, musical theater luncheon and Wetlands Discovery Cruises. In addition, the WMHO hosts the Long Island’s Got Talent competition and Walk for Beauty.

Time to celebrate

In honor of its 80th anniversary, The Ward Melville Heritage Organization plans to celebrate with a series of exciting family

events kicking off with its Summer Concerts on the Green from July 7 to Aug. 18. Titled Music Through Time, every concert will represent a different decade.

“We’re going to be counting down backwards so we’re going to start off with today’s music and work our way right down to the 1940s,” said WMHO Director of Development Gabrielle Lindau.

From July 14 to Sept. 29 the WMHO will present an exhibit at the Educational & Cultural Center titled Journey Through Time.

Working in collaboration with Newsday and the Kings Park Heritage Museum, the exhibit will show how society has changed since 1939 because of national, regional and local events and the advancements in technology. “Each panel will represent a different decade,” explained Rocchio. “Newsday is giving us national news, then we have Long Island news and then we have what’s happening here. It’s been a big project.”

The celebration continues from July 20 to Sept. 14 with Walking Through Time, one and a half hour walking tours that will feature costumed actors from St. George Productions portraying historic figures performing in the first person.

“For this tour we are specifically featuring local women … and you’re going to get to meet people who really lived here and owned some of the properties,“ said Lindau, explaining that participants will meet “Mrs. Devereux Emmet” who owned the Stony Brook Grist Mill and built All Soul’s Church and then head over to the Hercules Pavilion with “Mrs. Jonas Smith” who will speak about the U.S.S. Ohio as well as the legend behind Hercules. The group will then walk

over to the Three Village Inn to learn about Captain Jonas Smith, Long Island’s first millionaire. Next the group will meet “Miss Louise,” Dorothy Melville’s longtime driver who will move the group to The Jazz Loft to discuss the history of the building. The tour will conclude in front of the Stony Brook post office just in time to see the eagle flap its wings.

On Sept. 28 the organization will present The Courageous Women of the Revolutionary War. “[Participants] will have the opportunity to visit the Educational & Cultural Center, the Brewster House, the Thompson House, the Hawkins-Mount House and the Stony Brook Grist Mill,” explained Lindau. “In each of the houses there is going to be a living history performance and you’ll meet ‘residents’ who actually lived in those houses during the Revolutionary War,” she said. “There will be things revealed during this tour that most people have never heard before.” Transportation provided by WMHO to all sites.

The Ward Melville Heritage Organization will also team up with The Jazz Loft to present the John Monteleone Art of the Guitar Festival from Sept. 11 to 14 and the Harbor Jazz Festival from Sept. 25 to 29 and collaborate with the Long Island Museum to present a program titled William Sidney Mount & the Sounds of the 19th Century on July 20 from 2 to 5 p.m.; Hawkins-Mount House tours on Sept. 15 from 10 a.m. to 1 p.m.; and a Carriage Show and Ride Demonstration on Oct. 27 from 1 to 4 p.m.

Cheese takes the cake

BY BARBARA BELTRAMI Cheesecake has to be one of the most popular desserts around. I mean, who doesn’t like cheesecake?

I have two versions that have been in my recipe file for as long as I can remember.

One, a rich and creamy decadent version is called Cousin Edith’s Cheesecake. I have no cousin named Edith, nor do I know whose cousin she is; I just know that ages ago I found it in one of those ancient spiral bound ladies auxiliary fundraiser cookbooks languishing at a yard sale.

My eye was drawn to it because of all the recipes there, it was the only one on a stained and dog-eared page, always a sign of a cook’s or baker’s favorite.

Another recipe for Italian Ricotta Cheesecake, much lighter but equally delicious, was found in my motherin-law’s scrawl tucked into an old address book many years ago and has undergone a slight updating for modern kitchen appliances. They both are real company pleasers and travel well when it’s my turn to bring dessert.

YIELD: Makes 8 servings INGREDIENTS: • Nonstick cooking spray • 11/3 cup graham cracker crumbs • ¼ cup melted unsalted butter • ¼ cup sugar • Two 8-ounce bricks cream cheese, at room temperature • 3/4 cup sugar • 1/4 cup flour • 2 eggs • 1 cup light cream • ½ tablespoon vanilla extract • ½ cup cherry juice • 2 tablespoons sugar • 2 teaspoons cornstarch DIRECTIONS:

Preheat oven to 325 F. Spray bottom and sides of 9-inch springform pan. In medium bowl, combine graham cracker crumbs, butter and quarter-cup of sugar; press into bottom and partially up sides of pan. Bake for 10 minutes; let cool slightly. While it is cooling, in large mixer bowl beat cream cheese until soft and fluffy, about one minute; add sugar and flour.

Mix well. Blend in eggs, one at a time; then stir in cream and vanilla. Pour mixture into crumblined pan. Bake for 35 minutes or until set in middle. Turn off oven; let sit in oven another 30 minutes. Cool before removing rim.

Cheesecake With Cherry Glaze

Meanwhile, in small saucepan combine cherry juice, two tablespoons sugar and cornstarch. Stirring constantly, cook over medium heat until mixture thickens, about 5 minutes.

Let cool slightly, place cake on serving plate and pour cherry glaze on top. Serve with coffee, tea or dessert wine.

Ricotta Cheesecake

YIELD: Makes 12 to 16 servings INGREDIENTS: • 8 large eggs • 2 teaspoons vanilla extract • 1 teaspoon grated orange or lemon zest • 1½ cups sugar • ½ cup flour • 3 pounds whole milk ricotta cheese DIRECTIONS:

Preheat oven to 350 F. Butter and flour a 9-inch springform pan, place pan on a 12-inch square of aluminum foil and mold it tightly around bottom and sides of pan. In a large bowl beat eggs, vanilla and zest just until blended. Beat in sugar and flour. In a food processor or blender, puree ricotta until very smooth; then add to the egg mixture and stir well. Pour batter into prepared pan and place pan in a roasting pan filled with 1 inch of hot water on middle rack of oven.

Bake for 1½ hours or until a knife inserted 2 inches from center of cake comes out clean. Turn off oven. Prop oven door open with a wooden spoon and let cake cool there for half an hour. Remove from oven; remove foil and cool completely on wire rack. Cover and refrigerate until ready to serve chilled or at room temperature with amaretto, hazelnut liqueur or espresso.

Australia ... it’s not just shiraz

BY BOB LIPINSKI When the subject of wines from Australia is brought up, most people think of “critter” (Yellow Tail) labels, “fruit-bomb” shiraz and over-oaked chardonnay. Australia produces some excellent chardonnay, pinot noir and even sparkling wines.

Australia is a grape-growing country that is slightly smaller than the United States. Australia is divided into six grape-growing states (in descending order of production): South Australia, New South Wales, Victoria, Western Australia, Tasmania and Queensland. Wine is also made (to a lesser degree) in the Northern Territory. Within each state Australian appellations are subdivided into zones, regions, subregions and GIs (geographical indications).

Labeling laws

(Australian wine law, established in 1990) •Vintage Dated: Wines must be made from a minimum of 85 percent of the stated vintage.

•Varietal Wine: Wines must be made from a minimum of 85 percent of the stated grape variety.

•Blend: A blend must state the dominant grape variety first.

•Denomination of Origin: If a place of origin appears on the labels, wines must be made from a minimum of 85 percent from that location.

•Chaptalization: Adding sugar to the unfermented grape juice is prohibited.

CSHL’s Ela Elyada finds new pancreatic cancer associated cell Harnessing the Technology of our Research Giants

BY DANIEL DUNAIEF They have the ability to call the body’s armed forces. They may interact with the immunological foot soldiers and, then, somehow, inactivate them, allowing the destructive cancer they may aid and abet to continue causing havoc.

This is one hypothesis about how a newly discovered class of fibroblasts may play a role in the progression of pancreatic cancer.

Ela Elyada, a postdoctoral fellow in David Tuveson’s lab at Cold Spring Harbor Lab, partnered up with Associate Professor Paul Robson at the Jackson Laboratory in Farmington, Connecticut, to find a new class of fibroblast in pancreatic cancer.

This cell, which they called antigen-presenting cancer-associated fibroblasts (or apCAFs) had the same kind of genes that are usually found in immune cells. Cells with these genes have signals on their surface that present antigens, or foreign parts of viruses and bacteria to helper T-cells. Elyada and Robson showed that the apCAFs can use their immune cell genes to present peptides to helper T-cells.

With the apCAFs, the researchers hypothesize that something about the immunological process goes awry, as the T-cells show up but don’t engage.

Elyada and Robson suspect that the activation process may be incomplete, which prevents the body’s own defense system from recognizing and attacking the unwelcome cancer cells.

While she was excited about the potential of finding a different type of cell, Elyada needed to convince herself, and the rest of the scientific community, that what she’d found was truly original, as opposed to a scientific mirage.

“We spent hours and hours trying to understand what is different

in this type of cell,” Elyada said.

“Like everything new you find, as a scientist, you really question yourself, ‘Is it real? Is it an artifact of the single cell?’ It was really important for me to do everything I could from every angle to make sure they were not macrophages that looked like fibroblasts or cancer cells that looked like fibroblasts.”

After considerable effort, Elyada was sure without a doubt that the group had found fibroblasts and that these specific cells, which typically are involved in connective tissue but which pancreatic cancer uses to form a shell around it, contained these immunological genes.

She sees these cells in different experiments from other people inside and outside the lab, which further supports her work and found the apCAFs in mice and human pancreatic ductal adenocarcinoma, which is the fourth leading cause of cancer-related deaths in the world.

The fibroblasts, which are not cancerous, play an unclear role in pancreatic cancer.

Elyada explained that single-cell sequencing enables scientists to look at individual cells, instead of at a whole population of cells. Scientists “have started to utilize this method to look at differences between cells we thought were the same,” she said. “It’s useful for looking at the fibroblast population. Scientists have appreciated that there’s probably a lot of heterogeneity,” but they hadn’t been able to describe or define it as well without this technique.

The results of this research, which was a collaboration between Elyada, Robson and others, were recently published in the journal Cancer Discovery. Robson said it was a “great example of how [single-cell RNA sequencing] can be very useful in revealing new biology, in this case, a new subtype of cancer-associated fibroblast.”

Earlier work in the labs of Robson and Tuveson, among others, have shown heterogeneity within cancer-associated fibroblast populations. These often carry a worse prognosis.

“We are very interested in continuing to explore this heterogeneity across tumor types and expect we will continue to find new subtypes and, although we have yet to confirm, would expect to see other solid tumor types to contain apCAFs,” Robson said.

“We still need to work hard to reveal their function in the full animal, but if they turn out to be tricking the immune cells, they could be a target for different immune-related inhibition methods,” explained Elyada.

The newly described fibroblast cells may be sending a signal to the T-cells and then either trapping or deactivating them. Elyada and Robson both said these results, which they developed after working together since 2016, have led to numerous other questions.

They want to know how they work, what the mechanisms are that allow their formation, what signals they trigger in T-cells and many other questions.

Elyada is working with Pasquale Laise in Andrea Califano’s lab at Columbia University to gather additional information that uses this single-cell sequencing data.

Laise has “a unique way of analyzing [the information] to look at how the sequencing can predict if proteins are active or not active in a cell,” she said. Laise is able to predict the activity of transcription factors according to the expression level of their known target.

Elyada may be able to use this information to understand the source cell from which the fibroblasts are coming.

Originally from Israel, Elyada has been working as a postdoctoral researcher in Tuveson’s lab for about six years. She lives in Huntington Village with her husband Gal Nechooshtan, a postdoctoral researcher at Cold Spring Harbor Laboratory’s Woodbury complex. The couple has two daughters, Maayan, who is 10, and Yael, who is 8.

Elyada hopes to return to Israel next year, where she’d like to secure a job as a professor and build on the work she’s done at CSHL.“I definitely want to keep working on this. This would hopefully be a successful project in my future lab.”

ong Island author Erika Swyler’s debut novel, “The Book of Speculation,” was an international bestseller, can be found on many of the Best Book lists of 2015, and was subsequently translated into multiple languages.

It is an intimate and touching book, both sweet and eccentric.

In her sophomore outing, “Light From Other Stars,” she has created a powerful work that is no less affecting but now she has turned outward — delving into themes of time, space and responsibility. It is both science and speculative fiction of the best kind. The novel follows two threads: The first centers on Jan. 28, 1986, the day of the tragic explosion of the Space Shuttle Challenger; the second is over 50 years into the future. The two are woven together by the story of Nedda Papas.

In 1986, 11-year-old Nedda lives with her scientist father, whom she idolizes, and scientist-turnedbaker mother, with whom she has a dysfunctional relationship. They reside in the fictional Easter, Florida, just on the edge of the launch.

She is a young girl obsessed with space exploration. Unbeknownst to Nedda, her father has invented a machine (the Crucible) that alters the fabric of time.

The father’s motivation is one of the mysteries that is slowly unraveled throughout the course of the narrative. It is a wholly personal impetus that makes the repercussions all the more heartbreaking. The impact of the time alteration is varied, intriguing and truly chilling. It is a world that has been rent. One Easter resident laments, “My pools half froze and the half that’s not is boiling.”

Told alongside this story is adult Nedda on the spacecraft Chawla, journeying into another solar system. The crew has been

sent from a dying Earth to colonize a new planet. Nedda and her three shipmates face untold challenges without and within as they journey millions of miles into the universe.

Small details of the day-today struggle, both physical and emotional, are juxtaposed with larger themes and the crisis that they are immediately facing. From the first moments of the book, the stakes are genuinely high.

‘Light From Other Stars’ is a book that will stay with you long after you’ve closed its cover.

While epic in scope, Swyler creates characters of depth and dimension. Their pain and hope are painted with the most telling of details. She understands the complicated relationship of parents and children: “[Nedda] forgave him, but added it to the tally of things her parents needed to make up to her.” And conversely: “Part of parenting entailed learning the exact expression your child made when you broke her heart, and knowingly breaking it again and again.”

Swlyer writes with equal authority the details of time and entropy as she does the deep ache of burgeoning childhood romance.

Whether clearly explaining complex theories (both in space and baking) or describing a brutal and fatal car accident, she writes with vivid and visceral accuracy.

The plotting is sharp and her alternating between the two strands is smooth and logical. Her language has grown even more lyrical since her premiere novel. It is elevated prose but never loses its grounding and understanding of humanity: Sometimes rightness was a feeling. Sometimes you didn’t know something worked until you touched or smelled it and saw where it fit.

Denny was oranges, Ivory soap, and moss. Her dad was a hinge creaking, unbent paper clips, and boiling salt water. A launch was rain, ash, and eggs. Those things weren’t supposed to fit together, but they did.

Ultimately, the complicated themes of family and scientific creation are joined: Your children were all your flaws shown to you in a way that made you love them: your worst made good. Inventions were your best attempt at beautiful thought. They were objective; they worked or they did not. They had purpose, whether they achieved it or not. They were yours always, in that they did not leave you, or turn away.

“Light From Other Stars” is a rich and rewarding read, told with tremendous insight and profound resonance. It is a book that will stay with you long after you’ve closed its cover.

Join the Whaling Museum, 301 Main St., Cold Spring Harbor for Red, White & Blue Week from July 1 to 7 (closed July 4) from 2 to 4 p.m.

Hot Peas ‘N Butter in concert

The award-winning, multicultural family music band Hot Peas ‘N Butter heads to the Huntington Summer Arts Festival at Heckscher Park, 2 Prime Ave., Huntington on July 2 at 7 p.m. Named for the playground game they played as kids, Hot Peas ‘n Butter incorporates many languages into their performances – English, Spanish, French, Korean and Hebrew just to name a few.
