Courgette, Feta and Broad Bean Quiche

This quiche is a thing of beauty: courgette ribbons are spiralled in the pastry case and interspersed with broad beans and feta, then baked in a creamy egg custard. You can also throw in some peas if you have any. Please don’t over bake it – you want the filling to still have a slight wobble in the middle.

Makes 12

Shortcrust pastry

225g plain flour, plus extra to dust

A pinch of fine salt

60g chilled unsalted butter, diced

60g chilled lard or vegetable shortening, diced

3–5 tbsp water

Filling

2 courgettes, trimmed

100g feta

75g podded broad beans, skinned

4 medium eggs, plus an extra 2 yolks

200ml double cream

1½ tbsp wholegrain mustard

1 tbsp chopped chives

Salt and white pepper

1. For the pastry, put the flour and salt into a large bowl, add the butter and lard or shortening and rub in using your fingers until the mixture resembles fine breadcrumbs. Add just enough cold water to bring the dough together. Turn out onto a lightly floured surface, knead briefly until smooth then wrap in cling film. Chill in the fridge for 30 minutes.

2. Heat your oven to 200°C/180°C/Gas 6 and have ready a 23cm fluted loose-bottomed tart tin, 3.5cm deep.

3. Roll out the pastry on a lightly floured surface to a 3mm thickness and use it to line the tart tin, leaving most of the excess hanging over the edge. (Keep a little raw pastry to patch any cracks later.) Line the pastry with baking paper and then fill with baking beans (or uncooked rice).

4. Bake ’blind’ for 15 minutes, then remove the paper and beans (or rice) and return the pastry case to the oven for 8 minutes or until it looks dry and lightly coloured. Use a small, sharp knife to trim away the excess pastry from the edge. Patch any cracks with the saved raw pastry.

5. To prepare the filling, using a swivel veg peeler, shave the courgettes into ribbons. Stack a handful of these on top of each other, then start to roll into a pinwheel, continually adding ribbons. Place this courgette rosette in the centre of the pastry case. Holding it in position with one hand, keep adding courgette ribbons to the outside until the courgette slices start to lean on the edge of the case and hold themselves in.

6. Crumble the feta over the courgettes, allowing it to drop in the gaps between the courgette ribbons. Add the broad beans, gently slotting them in among the courgettes.

7. In a bowl, whisk the eggs, extra yolks, cream, mustard and chives together. Season with salt and a pinch of white pepper. Pour the mixture into the pastry case and bake in the oven for 25–30 minutes, until the filling is just set and golden brown.

8. Leave the quiche to cool in the tin on a wire rack for 5 minutes before removing. Serve warm or cold.

HOLLYWOOD’S ‘CELEBRATE’

Pear Bakewell Tart

Having spent some time around Bakewell, I wanted to include this classic bake, which is traditionally made with cherries. Pears work beautifully with almond frangipane – it really is a marriage made in heaven. The freshness and intensity of the flavours make it far superior to shop-bought versions.

Serves 8–10

Pastry

200g plain flour, plus extra to dust

2 tbsp icing sugar

100g chilled unsalted butter, diced

1 medium egg

1 tsp lemon juice

2–3 tsp ice-cold water

Frangipane

100g unsalted butter, softened

100g caster sugar

2 large eggs, at room temperature

50g plain flour

75g ground almonds

A drop of almond extract (optional)

To assemble

100g apricot jam

415g tin pear halves in juice, drained (6 pear halves needed)

20g flaked almonds

1. To make the pastry, mix the flour and icing sugar together in a large bowl. Add the butter and rub in using your fingers until the mixture resembles fine breadcrumbs. Make a well in the centre.

2. In a small bowl, beat the egg with the lemon juice and 2 tsp cold water then pour into the well and mix into the flour, using a round-bladed knife. Bring the pastry together using one hand, adding a little more cold water if needed todo so.

3. Gently knead the pastry into a ball and flatten to a disc. Wrap in cling film and refrigerate for at least 20 minutes. Heat your oven to 200°C/180°C Fan/Gas 6.

4. Roll out the pastry on a lightly floured surface to a 3mm thickness and use to line a 23cm loose-bottomed tart tin, leaving a little excess overhanging the edge.

5. Line the pastry case with baking paper and fill with a layer of baking beans (or uncooked rice). Bake ’blind’ for 12–15 minutes, until the pastry is dry to the touch. Remove the paper and beans (or rice) and return the pastry case to the oven for about 5 minutes until it is very lightly coloured. Using a small, sharp knife, trim away the excess pastry from the edge. Turn the oven down to 180°C/160°C Fan/Gas 4.

6. For the frangipane filling, beat the butter and sugar together until light and fluffy, then beat in the eggs one at a time. Stir in the flour, ground almonds and almond extract, if using. Put the frangipane into a piping bag fitted with a 2cm plain nozzle.

7. Spread the apricot jam over the base of the pastry case. Starting in the centre, pipe the frangipane on top in a spiral, to fill the case. Slice the pear halves and arrange the slices, overlapping, on the frangipane.

8. Bake the tart in the oven for 10 minutes, then scatter the flaked almonds evenly on top and bake for a further 15 minutes until golden. Transfer to a wire rack and leave to cool before releasing the tart from the tin. Cut into slices to serve.
