It is exclusively available in a Sunset Gold Satin finish, among a choice of five exterior colours. Both Standard (SWB) or Long Wheelbase (LWB) body designs are available with five seats, while the New Range Rover LWB model is available with a third row for extended comfort for up to seven adults.

The new Range Rover SV5 is an exquisite interpretation of Range Rover luxury and

personalisation from the experts at Special Vehicle Operations. The SV model is available in both SWB and LWB body designs, with exclusive features including new SV Serenity and SV Intrepid design themes and a four-seat SV Signature Suite configuration.

Land Rover’s latest Electrical Vehicle Architecture (EVA 2.0) is the enabler-in-chief and includes Software-Over-The-Air (SOTA) updates for more than 70 electronic modules, meaning the New Range Rover will constantly evolve, improve and remain up to date as it matures.

New Quality Benchmark

The New Range Rover has been designed, developed and engineered in the UK and, during this process, Land Rover has filed no fewer than 125 patents covering everything from its pioneering chassis technologies to its PHEV battery. Land Rover’s engineers used motorsport-derived simulation technology to put the vehicle through its paces in the virtual world more comprehensively and intensively than ever, completing more than 140,000 hours of computational analysis prior to physical testing.

A fleet of prototypes then embarked on a punishing global test and development programme, taking in extreme temperatures ranging from the 45C heat of the desert to

the -30C cold of the Arctic. The New Range Rover will be produced exclusively at the Solihull Manufacturing Facility in the UK, using a state-of-the-art production line housed in the building used to produce early Series Land Rovers. THE PIG opened in 2011 in the New Forest and became an instant hit. A more relaxed take on the country hotel, The Pig’s unique selling point was, and still is, its kitchen garden which remains at the heart of each hotel.

Founded by Robin Hutson OBE (who created Hotel du Vin and launched Lime Wood), his wife Judy Hutson (who is responsible for the interiors) and David Elton, THE PIG’s litter has grown to eight, with hotels across southern England. The hotels have won a fervently loyal following and a string of industry accolades. This summer comes the second book from THE PIG. Following the success of their first book, this new book focuses even more on the home-grown and the local, celebrating the talented artisans, growers, farmers, foragers and fishermen who make each PIG hotel - and its menu - unique.

Eight chapters - one per hotel - will take readers from coast to coast across southern England, featuring beautiful photography, anecdotes, tips, interviews and, of course, delicious, simple recipes that reflect each hotel’s region.

Commenting on the new book, Robin Hutson says: “A lot has happened in the three years since we published our first book. We have opened three more hotels and, of course, we’ve all had a global pandemic to contend with. Pannage is an extremely exciting time of year, not only because you get to see pigs roaming free in the forest but also because you know their incredible meat is soon to follow - so for a few precious weeks every autumn this dish is on our menu. The black garlic butter with oyster mushrooms grown in our mushroom house is one of our favourite pairings. We use black garlic from The Garlic Farm on the Isle of Wight, available in farm shops and online. We repurposed our old walk-in fridge for our mushroom house at The Pig, where we grow a range of fungi using recycled coffee grounds.

Pannage Pork, Black Garlic

Oyster Mushrooms

Heat the oven to 220ºC, 200ºC fan (425ºF), Gas Mark 7. Using a sharp knife, remove the sinew from the tenderloin – take care not to cut too deep and waste any of the meat. Season well with salt and pepper. Bring a frying pan up to a high heat. Add the oil and the tenderloin (you can cut the pork in half if that makes it more manageable); turn regularly until all the sides are golden brown. Add the butter, garlic and herbs and baste by spooning the oil over it. Cook in the oven for 4-5 minutes and rest for 3 minutes before serving. Your pork should be blushing.

Soften the salted butter. Place the black garlic into a mixing bowl and, using a fork or spoon, crush to a paste. Add the rest of the ingredients plus the butter and mix well. Spoon the butter onto a sheet of parchment paper. Make a sausage shape by rolling up the parchment then chill.

Place a frying pan on a high heat and add the vegetable oil. Add the mushrooms and cook until slightly softened and starting to turn golden. Add the broccoli and season with salt and pepper, then add 50g of the black garlic butter

(the rest can go into the fridge or freezer for later, maybe for a risotto or any number of dishes). Cook until the broccoli is softened but still has some bite. Once the pork has rested, slice it into thick rounds and put on a plate with the broccoli and mushrooms. Finish with the red wine sauce, gently heated through.

SERVES 2

FOR THE PORK

• 1 pannage pork tenderloin, weighing 400-500g

• 1 tablespoon vegetable oil

• 25g butter

• 3 garlic cloves, crushed

• 4 sprigs winter savoury

FOR THE BLACK GARLIC BUTTER

• 125g salted butter at room temperature

• 25g black garlic, peeled

• zest of ½ lemon

• ½ banana shallot, finely diced

• 10g parsley, chopped

FOR THE MUSHROOMS AND BROCCOLI

• 1 tablespoon vegetable oil

• 100g oyster mushrooms (halve them if they’re big)

• 100g purple-sprouting (or Tenderstem) broccoli (split it if it’s large)

• 200ml red wine sauce (you can get good quality sauces from the chilled aisle in the supermarket)

This is cheesecake but not as you know it. The honey adds a lovely sweetness to the base and the Potter soft cheese from Book & Bucket makes it extra special. We ran a competition for The Pig guests to name one of our favourite local maker’s new cheeses, and the winner by a mile was Potter, of Peter Rabbit fame. It’s beautifully creamy, which works well with that zesty dash of lemon. We grow a few different types of strawberry at The Pig, including the small but flavoursome white Alpine and wild varieties, which work well. You can adapt this to make one large cake if you prefer.

New Forest Strawberry Cheesecake

Break the biscuits into a food processor and blitz until fine. If you don’t have one, place in a freezer bag and crush with the base of a pot or rolling pin.

Gently heat the butter and honey until just melted. Pour the hot liquid onto the crushed biscuits and, with a spoon, work in the butter mix until all the crumbs are coated. Divide the biscuit crumb between the dessert rings and press down with the base of a teaspoon. Chill in the fridge.

In a food mixer with the beater attachment (or large bowl and spatula), combine the cheese and 50g of the sugar - take care not to overwork it!

In a small pan, place the diced strawberries with the juice of the lemon and the remaining 20g sugar; gently heat until the strawberries break down to a pulp. Leave to cool completely.

In another large bowl, whip the cream with the lemon zest until it forms soft peaks - again, don’t whip it too much or it’ll split.

Using a spatula, gently fold the cream into the cheese in three or four stages. Mix in the chilled strawberry pulp (this adds a bit of colour and sharpness to the rich mix).

Remove the bases from the fridge. You can either spoon the cream cheese mix onto the base or you might find it easier to use a piping bag. Now, with a stepped palette knife (or the back of a spoon or spatula), level the mixture (if you run the spatula under hot water then dry it, it’ll be easier to smooth).

Chill uncovered for at least 2 hours.

While it’s chilling, hull and cut the small strawberries into halves and the larger ones into quarters, place in a bowl and sprinkle with a good amount of icing sugar and the zest and juice of the lemon. Cover and leave at room temperature.

When you’re ready to serve, gently remove the cheesecakes from their moulds and decorate with the strawberries, then drizzle over the strawberry juices.

SERVES 8

FOR THE BASE

(You’ll need 8 stainless steel dessert rings measuring 7 x 4.5cm)

• 200g McVitie’s Hobnobs or digestives (best to use biscuits that aren’t overly sweet)

• 50g unsalted butter

• 20g runny honey

For the cheesecake

• 350g Book & Bucket’s Potter cheese (a soft cow’s milk cheese), or any full-fat cream cheese

• 70g caster sugar

• 80g ripe strawberries, diced

• zest and juice of 1 lemon

• 150ml double cream

For the top

• 1-2 punnets ripe strawberries

• icing sugar

• zest and juice of 1 lemon
