Crab cakes

We get succulent fresh crab from Cornwall and Orkney, but store-bought picked crab meat is a convenient way to enjoy this tasty shellfish. I add smoked paprika to these easy crab cakes, which lends a distinctive flavour not often used with seafood. The accompanying mayo – flavoured with fragrant dill, sharp lemon and salty capers – is a lovely foil.

MAKES 12

400g cod fillet, skin removed & pin-boned

1 large free-range egg white

1 tsp Dijon mustard

Finely grated zest of 1 lemon

1/4 tsp white pepper

1/2 tsp smoked paprika

200g white crab meat

1 tbsp finely chopped chives

1 tbsp roughly chopped dill

50g panko breadcrumbs

Vegetable oil, to fry

Salt and freshly ground pepper

Cut the cod into large chunks and place in a small food processor. Add the egg white, mustard, lemon zest, white pepper and smoked paprika. Blend until smooth.

Transfer the fish mixture to a bowl. Add the crab meat and chopped herbs with a good pinch of salt and fold through until the mixture is well combined.

Tip the panko breadcrumbs into a shallow bowl. Wet your hands with a little water (to avoid sticking) then divide the fish mixture into 12 even-sized pieces and shape into patties.

Place each patty in the breadcrumbs and turn to coat well on both sides. Place these crab cakes on a tray in the fridge for 20 minutes to firm up.

Meanwhile, for the caper mayonnaise, put all the ingredients into a small bowl and mix well, seasoning with a little salt and pepper.

Heat about a 1cm depth of oil in a large non-stick frying pan over a medium-high heat. When it is hot, carefully add the crab cakes and cook for 2–3 minutes on each side or until golden brown and cooked through. Remove from the pan and drain on a tray lined with kitchen paper.

Season the crab cakes with a little salt and serve them on individual plates with a dollop of caper mayonnaise and a lemon wedge.

Red mullet with fennel, chorizo and chickpeas

Caught near to the shore on the southwest coast of England, red mullet is a delicate fish which boasts a high fat content. Its unique texture is celebrated in this simple dish, where, despite all the other big flavours, it remains the star of the show.

SERVES 2

4 small red mullet fillets,pin-boned

2 tbsp rapeseed oil

100g cooking chorizo, diced

1 shallot, diced

100g fennel, diced

1 small courgette (100g), diced

1/2 tsp smoked paprika

1 tbsp tomato purée

250ml chicken or fish stock

400g tin chickpeas, drained

30g butter, melted

Finely grated zest and juice of 1/2 lemon

1 tbsp roughly chopped dill

Salt and freshly ground pepper

Preheat the oven to 190°C/170°C Fan/Gas 5 with the grill element on. Season the red mullet fillets on both sides with salt and pepper and set aside.

Heat 1 tbsp rapeseed oil in a sauté pan over a medium-high heat, add the chorizo and cook until crispy. Remove with a slotted spoon and set aside.

Place the pan back over the heat. Add the shallot and cook for 2–3 minutes or until softened. Toss in the fennel and sauté for 2 minutes. Add the courgette, smoked paprika and tomato purée and stir over the heat for 2 minutes.

Pour in the stock and bring to a simmer. Add the chickpeas, bring back to a simmer and lower the heat. Simmer very gently for 15 minutes or until the veg are tender and the liquid is reduced by half.

Lay the red mullet fillets skin side up on an oven tray and brush with melted butter. Place on a high shelf in the oven for 5 minutes or until cooked through.

Return the crispy chorizo to the sauté pan and add the lemon zest and juice. Stir and warm through, adding the chopped dill and seasoning with salt and pepper to taste.

Divide the chorizo and veg between 2 shallow serving bowls. Top each portion with 2 red mullet fillets and serve.

Chicken traybake with garlic & cherry tomatoes

Nothing beats a chicken traybake for a quick and easy midweek meal. I use chicken thighs here, along with plenty of garlic and tomatoes. However, it’s the sourdough (which soaks up all those glorious juices) and the delicious combination of herbs that will bring a taste of the Mediterranean to your British kitchen.

SERVES 4

8 chicken thighs, bone in and skin on (1.5kg in total)

3 tbsp extra virgin olive oil

3 sprigs of oregano, leaves picked and roughly chopped

3 sprigs of rosemary, leaves picked and roughly chopped

200g olive sourdough, cut into 2.5cm cubes

1 garlic bulb, cloves separated (but not peeled)

500g mixed red and yellow cherry tomatoes on-the-vine

100ml chicken stock

2 handfuls of basil leaves

Salt and freshly ground pepper

Preheat the oven to 200°C/180°C Fan/Gas 6.

Place the chicken thighs in a shallow roasting tray. Drizzle with half of the extra virgin olive oil and season well with salt and pepper. Sprinkle with half of the chopped herbs and turn each chicken thigh over to coat well on both sides.

Rearrange the chicken so that all the thighs are skin side up. Place in the oven and bake for 20 minutes.

Meanwhile, drizzle the sourdough with the remaining extra virgin olive oil and herbs and toss well to mix. Take the tray from the oven and scatter the sourdough and garlic around the chicken. Return to the oven for 10 minutes.

Take out the tray again and tuck the cherry tomatoes around the chicken thighs. Pour over the stock and place back in the oven for another 20 minutes.

Remove the tray from the oven and scatter over the basil leaves. Let everyone help themselves to this very easy and super tasty traybake.

The debut of the road-legal version of the GT2 that took the House of the Trident back to the track in the closed-wheel championships was christened in Andalusia with a driving experience dedicated to the main stakeholders and customers worldwide.
