CATERING FOR THE FUTURE

Tayside Contracts is a commercially based local authority contracting organisation providing catering, cleaning, roads maintenance, vehicle maintenance and winter maintenance throughout the Tayside area of Scotland.

THE CHALLENGE The Scottish Government has introduced free nursery meals and Universal Free School Meals (UFSM) for primary school pupils in years 1-5, with P6 and P7 due to come on stream in the very near future.

Of course, this means a significant increase in demand for nursery and primary school meals which is, and will increasingly be, very challenging for Scottish Councils' education departments. Not only in terms of how costly it will be to expand school kitchen environments, but in many cases whether it will even be physically possible to do so.

THE SOLUTION To meet the challenge of increased demand for nursery and primary school meals, Tayside Contracts, in partnership with the constituent Councils of Tayside, developed a central production unit called 'Tay Cuisine'.

Producing meals at a single central unit then blast freezing them to seal in nutrients and flavour has enabled Tay Cuisine to meet the increased demand for meals without compromising food safety, quality or menu choices, whilst greatly reducing the unit cost per meal.

Perhaps most importantly, the Tay Cuisine model has enabled the Tayside Councils' to cope with increased demand without significant capital expenditure on increasing kitchen capacity in the school estate.

Tay Cuisine has provided a solution for the Tayside Councils and can also provide a solution for you!

TAY CUISINE CPU Tay Cuisine is the jewel in the crown of Tayside Contracts’ Catering Unit, located in the Claverhouse West Industrial Estate just off the A90 Dundee - Forfar Road.

This State-of-the-Art central production unit (CPU) has been producing high-quality, affordable nursery, school and community meals since December 2020 to the communities of Tayside.

Tayside Contracts works closely with pupils, parents

Tayside Contracts sources as much Scottish produce as possible, all butcher meat is QMS and stakeholders in the continuous development of (Quality Meat Scotland), all chicken dishes are school and nursery meals. This approach ensures made with Red Tractor chicken and all fish that lunch menus deliver fresh, high quality, products meet Marine Stewardship Council nutritious meals which are fully compliant with food standards for fish sustainability. and nutrition regulations and, just as importantly, which are appealing to nursery and primary school pupils.

We can offer you a fully compliant menu which has been analysed using the latest catering management software. Our menus offer two daily hot choice options, or a selection of dishes from our range of soups and main meals, including vegetarian and vegan options, home baking and desserts.

We offer full transparency via our interactive menu, which includes recipes for all our dishes.

We also offer a pictorial menu to facilitate decision making for younger pupils, which is available on our website.

We also cater for food intolerances/allergies for the main 14 allergens, as defined by the Food Standards Agency, and we can provide individual meals which exclude the various allergens.

There is a misperception that frozen food is in some way inferior to fresh, but when you look at the facts, it is clear to see that frozen has all the benefits of fresh, and more!

Freezing is a natural process which does not require the use of preservatives, which are often found in chilled, ambient or so-called ‘fresh’ foods. It offers quick and convenient access to quality, healthy, nutritious meals and ingredients with ‘freshness’ locked in.

At Tay Cuisine, we use only the highest quality, locally sourced ingredients prepared by highly skilled catering professionals to ensure the meals we produce are of the very highest standard.

It is perhaps appropriate to describe much of what we do at Tayside Contracts as forming alliances which will deliver services in the most efficient and effective way for the public.

TAY CUISINE BENEFITS Food safety is assured as the Tay Cuisine model eliminates the risk of cross-contamination from raw meat in school kitchens.

Menu items can be stored for up to 6 months from the date of production giving much improved menu choice and flexibility.

Meals for those with special dietary SPECIAL DIETS r e q u i r e m e n t s c a n h a v e n o margin for error. Tay Cuisine has a specific adapted recipe kitchen which eliminates the risks associated with multi-site production.

TAY CUISINE ENVIRONMENTAL BENEFITS

There are substantial savings to be made from the reduction in energy usage as the single-site Tay Cuisine production model is far more energy efficient than thousands of meals being made from scratch across the entire school estate.

TAY CUISINE BENEFITS Food quality is far more effectively controlled at Tay Cuisine as a single production unit than it could ever be at every production kitchen across the entire school estate.

Maintaining quality and choice preserves the ethos of ‘Better Eating Better Learning’ by sustaining and increasing meal uptake and improving the dining experience.

As a single production unit, Tay Cuisine enables absolute RDS STANDA compliance with food and nutrition legislation, standardised recipes and production methods.
