AUGUST

THE DOG DAYS OF SUMMER ARE UPON US THE ENTERTAINMENT COMMITTEE

Despite the ongoing construction at the Club your Entertainment Committee is working hard to provide the membership with a variety of fun events this summer. For the golfers among us (and I’m told there are a few) be sure to sign up for the “Chip and Sip” Social Golf Tournament on Saturday, August 19th starting at 4:00 PM. This 9-hole tournament of all par 3’s will have prizes, food, and beverage stations on the course. This event is limited to 36 2-person teams so be sure to register early. Call the Golf Shop to make a reservation: 856.429.1827

National Dog Day will again be celebrated on Saturday, August 26th. The event starts at 5:00 PM. This family favorite event will feature a caricature artist as well as a special a la carte dinner menu offered by Chef Kelly for you and the doggies.

The 3rd annual Tavistock Brewfest will take place under the tent on Friday, September 8th from 5:00 – 9:00 PM. There will be 10 craft

breweries again this year including Kings Road, Double Nickel, Bonesaw, Tanner and Anglelsea Aleworks. Chef Kelly prepares the perfect menu of bratwursts, sausage, German potato salad and more to accompany the fine beers. Live music and games as well. This event has grown in popularity each year so get a group together and join in the fun. Rain or shine and guests are welcome.

$60.00 ++

Sign up early for the Wednesday, September 13th Cigar Dinner as this event always sells out quickly.

The wine connoisseurs among us will not want to miss the Opus Wine Dinner (yes, you read that right – Opus) on Friday, September 15th. This very special event will feature several older vintages of this award-winning wine paired with a meal expertly prepared by our own Chef Kelly. This will be a limited seating event so get your reservation in early!

Enjoy the rest of the summer and see you at the Club! 2023

THE TCC ROOFTOP GARDEN IS THRIVING

Chef J. Kelly Morrow

Summer greetings from the kitchen! We plan to use the below pickle brine base recipe with some of our house grown items from the summer garden and we thought we would share in case you want to make some at home. Many of you may be growing gardens of your own and will have an abundance of produce. Here’s another way to enjoy them.

Pickle Brine Recipe Base: (You can multiply as needed)

1 cup white vinegar

3 teaspoons sugar (or 1 tablespoon if you’d like it sweeter)

2 teaspoons mustard seed

2 teaspoons salt

2-4 cloves of garlic smashed

2-4 tablespoons of fresh dill chopped or 2 teaspoons of dried dill

2 bay leaves (optional)

Process For Making the Pickle Brine:

Heat a small saucepan over medium high heat. Add vinegar, sugar, mustard seed, salt, and garlic to the pan and cook until it begins to simmer and sugar dissolves. Then toss the dill, bay leaf, and sliced vegetables together in a heat-proof bowl. Pour the simmering liquid over the vegetables and stir to evenly coat and be SURE to have enough liquid versus the number of vegetables you are trying to pickle. Wrap or cover with a lid and allow to cool to room temperature or chill before serving. After use keep in the fridge.

You can use all or a mix of the below vegetables or just the ones you like. Peel and chop to your liking of size, or shape and set aside to add hot brine.

• Cucumbers of any kind (try not to use ones with a lot of seeds)

• Beets of any kind (for a quick pickle you must slice the beets or just make the pickle liquid and beets together and cook till tender and set aside)

• Onions of any kind including garlic

• Carrots of any kind

• Cauliflower of any color

• Mushrooms (button or cremini work best)

• Fennel

• Turnips and radishes

• Peppers or hot peppers

• Squash and zucchini (can be cut like a pickle try to get small ones with few seeds)
