Well now, at Tavistock we are approaching the middle of the summer season and the LRMP improvements are in full swing. You might think that TCC is not really an option but, in fact, the development team and our TCC staff continue to make proper dining space available to our members and guests throughout the construction effort. With the warmer weather, member dining has moved out on the terrace and is in full swing. I know we liked our temporary dining room and bar, but just wait until we can reoccupy the new and improved member space - just around the corner.
Sunset Grille returns on Friday, June 2nd. Every Friday evening and runs through mid-September. Enjoy the sights and sounds of the bagpiper who will amaze and play on the course at sunset. Chef Kelly will have a special a la carte dinner menu.
In addition, the Entertainment Committee has pulled together some old standard events and some new ones to keep the party going through the summer. On Thursday, June 22nd the ever-popular Cigar Dinner will be held down at the 11th tee. Always a very popular event at
TCC, this dinner includes a fine flight of cigars and a great menu. It is currently sold out, but you can get on the waiting list.
A brand-new event is on the horizon as well. Tavistock’s first ever “Chip and Sip” Social Golf Outing is scheduled for Saturday, August 19th. This event is a 9-hole mini tournament for couples with the course set up with all par-3 holes. At each tee box, there will be appetizers and wine tasting to help you hone your best 9-iron “shot”. This event will surely be a whoot with 36 team slots available. This event promises to become a favorite.
Returning this summer is the Tavistock celebration of National Dog Day, on Saturday, August 26th. This has become a standard for all TCC dog owners and I’m sure their dogs have marked their calendars too. A sure favorite outing for them. The dogs have a special dining experience and a chance to pose for our sketch artist. So, don’t miss this eventyour pooch wants you there!
So, as we wait for the completion of our newly renovated Clubhouse, don’t think that the Club is closed. There are events to be attended, golf to be played, nice evenings to be enjoyed and Chef Kelly’s summer menu to be sampled. Make your reservations today. See you at the Club!

WOMEN’S 18-HOLE GROUP

The Women’s 18-Hole Group competed in its annual Member/Member tournament on May 16, which is always a highlight of the season. Donning their favorite team color, members competed in a better ball of partners format with full handicap. The weather couldn’t be better and a fabulous lunch followed. The low-net winning team went to Jessica Schultz and Wendy Tomasello ( -12 ). Second place net went to Nancy Sloan and Penny Schmidt ( -9 ). Third place, determine by a match of cards, went to Rita Shannon and Dorothy DiMarino. The four closest to the Pin contests went to Natalie Pope (#4), Jess Schultz (#8), Grace Worthington-White (#13), and Ellen Richey-Porter ( #16). Congratulations to the winners!! Golfers, post-play enjoyed a lovely buffet lunch. A special thanks to Liza and Agnes for cochairing such a successful event!

WGAP Teams, 2023 Season
THE GOLF ASSOCIATION OF PHILADELPHIA

Tavistock’s WGAP teams completed their season in May. Playing in the 7th Cup, Team One (Tavistock scores listed first) competed against St. David’s (3-4) ; Wilmington (5-2); Cedarbrook (3-4); North Hills (2-5) and Aronimink (3-4). Team 1 finished the season in 5th Place and will remain in the 7th Cup. Kudos goes out to Susie Kirk who won all 5 of her matches!
Way to go!
Team Two competed in the WGAP’s 17th Cup. The season began by playing Cedarbrook (3-4); and Philly Country Club (3-4). Unfortunately, due to weatherrelated conditions and a lack of players Match 3 against Llanerch was a forfeit and Match 4 against Merchantville was defaulted because of a lack of players. The final match against Talamore ended in a loss 0-7. Team Two finished in 6th Place and will drop to the 18th cup. The TCC WGAP team celebrated the end of the WGAP season with a team dinner, enjoying drinks, good food, and lots of golf chats!

THE GOLF ASSOCIATION OF PHILADELPHIA
Member Play Days give GAP members a chance to experience other golf courses in a relaxed, enjoyable setting. The following venues will host events in June: Philmont Country Club in Huntingdon Valley, Pa. (June 12) and Valley Country Club in Sugarloaf, Pa. (June 21). Registration is open for the GAP/AGA Lawler Junior Tour Series sponsored by Abington Center for Cosmetic & Family Dentistry and Community Bank. Cost is $10 for nine-hole golfers (Division II), $15 for 18-hole golfers (Division I). The GAP/AGA Lawler Junior Tour, which began in 1983, is open to boys and girls 10 to 18 years of age. GAP’s premiere Junior event, the 109th Junior Boys’ Championship, is set for June 20-22 at Lulu Country Club in Glenside, Pa. Registration closes June 6. The Junior Boys’ Championship is open to members of a GAP Member Club, 14-18 years of age as long as they have not started their college career. A USGA Handicap Index of 14.4 or better is also required. A participant may not have reached his 19th birthday by the final day of the championship. The Junior Boys’ Championship begins with 18-hole stroke play qualifying on Day One. Thirty-two individuals (16 Championship Flight, 16 First Flight) advance to match play. Cost is $50 per person. Registration is available exclusively at www.gapgolf.org.

Matt comes to us most recently from Old Marsh Golf Club in Palm Beach, Florida. Matt is originally from Bucks County, PA and has worked as a professional at Commonwealth National and Overbrook Golf Club in the Philly area. Matt’s passion for Junior Golf has led him to Tavistock Country Club, where he will directing the Junior Golf Program this season. Matt is excited to get started and looks forward to a great season at TCC.

DON’T SCORCH THE MILK!

These are TCC recipes that we use in house for Farmers Cheese and Ricotta. Give these a try at home and you will be impressed for sure! It will be the talk of the party! If you make the recipe, email a picture to mscianni@tavistockcc.com. We just might publish it!
Let this strain and cool for 15 minutes. Once this is completed you can add herbs or just black pepper or any seasoning you wish. Chill and serve over salads, tacos, or anything you wish.
Ricotta Cheese:
• 1-gallon whole milk
• 1-quart heavy cream
• 3 tablespoons kosher salt
• ½ cup to ¾ cup white vinegar
Important! You will need a double boiler or Bain Marie. This can be as easy as a sauce pot with water covered by a stainless-steel bowl but not touching or a double pot set up. You will need a dial or digital thermometer. You will also need cotton cheese cloth or a tea towel for straining your final product.
Farmers Cheese:
• 1-gallon whole milk
• ½ cup apple cider vinegar
• 1 ½ tablespoon kosher salt
Process: Set up your double boiler on medium heat. In the top bowl or pot add the milk. Bring the milk up to 190-195 degrees. When you have reached that temperature add the salt and vinegar. When the acid is added, your milk will start to curdle. Stir gently until the edge of the milk becomes clear. Let this rest for 10 minutes. Line a strainer or colander with the cheese cloth or tea towel. With a slotted spoon or ladle strain the curd into the towel.

Line a strainer or colander with the cheese cloth or tea towel. With a slotted spoon or ladle strain the curd into the towel. Let this strain and cool for 15 minutes. Chill and serve as desired!

As we get closer to the Member Dining Rooms reopening, a la carte dining in the Coulter Room will be coming to an end due to previously booked banquet events in the Ballrooms. To provide a dining venue for the Members, the tent is scheduled to be installed on May 25th on the rooftop, which will serve as the new temporary dining. To facilitate this switch, the last day for a la carte dining in the Coulter Room will be Thursday, May 25th. Unfortunately, we will be closed for a la carte dining Friday, May 26th through Monday, May 29th. Dining will be open on Sunday, May 28th for the Memorial Day Family Bar-Be-Que Buffet only. (Temporary Men’s Grille & Halfway house will open as usual.)

Kim Sandelier Human Resources Director
What do you like about your current position? In this position I have the great opportunity to interact with everyone employed here at the Club as well as work directly with a strong management team of trained professionals. I enjoy witnessing and contributing to how different talent levels, abilities, and personalities develop together as a team.
Where did you work prior to Tavistock? Graduated from Widener University in May 1992 and started at TCC 1 month later.
What are some things you like to do when you’re not working? My husband Pete and I have been married for 31 years and we have 2 amazing daughters and two fantastic sons-in-law. We all love sports, especially the Phillies. Both our daughters played college softball and attending Phillies games together has kept the competitive spirit alive in our household.
How long have you worked at Tavistock? 31 years – In 1992 I began working at Tavistock as Assistant Clubhouse Manager for Country Club Management Services and joined TCC during the 2012 transition from CCMS.
What is something you plan on doing that you have never done before? I actually conquered a huge fear of mine this past year in Kauai. We snorkeled off the Na Paoli coast in shark inhabited waters. Not sure how smart that was, but we did it and luckily did not spot any sharks!
Do you have a favorite holiday tradition? Every year I would purchase 2 Christmas ornaments for each of my daughters. These ornaments represented something significant or meaningful that happened to them throughout that year. Now we have a truly meaningful collection of memories on our family Christmas tree.

Meet Andrew Mastro! Andrew resides in Haddonfield with his wife Ashley and their two daughters Charlotte and Emelia. He is President of Wrought Advisors, LLC. He graduated from The College of New Jersey. He is a member of the Haddonfield Rotary Club. He likes to coach his girls’ sports teams, distance run, cycle, work on home improvement projects and grows and makes his own cocktail cherries. Andrew is looking forward to being a part of the family-oriented activities at the Club. He looks forward to some date nights with his wife and wants to introduce the game of golf to his girls one day. See you on the course!
Meet Thomas Smith! Thomas resides in Haddonfield. Thomas works for BDO, USA a public accounting firm as an Audit Associate while pursuing his CPA. He is also a licensed NJ Realtor. He graduated from Rutgers University. He’s a Philadelphia sports fan. He likes to golf, endurance train and hunt. He likes all the amenities that Tavistock has to offer for his professional development. He’s looking forward to becoming a part of Tavistock’s community. Welcome to the Club!
Meet Jeffrey Umosella! Jeffrey resides in Hammonton, NJ with his wife Angela. He has 4 children, Joseph, Jeffrey, Jason and Julia. Jeffrey is President of Universal Supply Company. He graduated from LaSalle University. He is also President of The Joseph F. Umosella Family Foundation. He’s interested in real estate, he’s a sports fan, and likes recreational boating & fishing. DRESS CODE
Please visit the House Rules on the Club’s website to familiarize yourself with the dress code on the course and around the Clubhouse.
No ripped jeans
Shirts tucked in Athletic wear before noon only Hats off in the Clubhouse
SHOE CHANGING POLICY
Changing shoes should be done in the Golf Shop or Locker Room and more specifically not in the parking lot.
OTHER REMINDERS
No cell phone conversations in the dining room – please use them outside or in the lobby.
Dining reservations strongly suggested.
