Gourmandises Avenue Chocolaterie, located near beautiful Fisherman’s Cove in Eastern Passage, is owned and managed by Jean-Pierre Gallois and Yseult Bertic. Highly skilled chocolatiers with over 20 years of experience each, Jean-Pierre and Yseult are both natives of France. Since spring 2003, they have been creating fine chocolates in their chocolate lab, using only French chocolate couverture and fresh ingredients (no preservatives or artificial flavour). Portion the halibut into 8 pieces that are 7-8 oz each. Cut the lemongrass in half lengthwise, if they are really big they can be quartered. Spear the halibut with the lemongrass from one side to the other of the fish. Heat a medium sized hot cast iron or nonstick skillet. Pour a small amount of oil into the pan, season the fish with salt and pepper, and sear in pan for two to three minutes on each side. Having heard the positive reviews and praise of its reputation for delicious seafood, I wanted to discover for myself whether The Five Fishermen Restaurant was all it had been made out to be. To my delight I found that it was all that and more! The moment we walked through the front door, my guest and I were greeted by the wonderful aromas of delicious seafood. After being shown to our table, we were invited to begin our meal with a trip to the famous mussel and salad bar. Upon retrieving our own heaping piles of steaming,

fresh cultured mussels, I chose garlic butter while my companion opted for spicy marinara for dipping. My main course choice of the Pan Seared Halibut melted in my mouth with a creamy sweetness only the freshest fish can provide. I begin to wonder how The Five Fishermen Restaurant manages to serve such incredibly fresh seafood. I asked my server, who had already won my confidence with his expert pairing of a Nova Scotia Muscat with my entrée, how this feat was possible. BUTTER POACHED LOBSTER INGREDIENTS 125ml White wine (Riesling) 2 Shallots minced fine 3 Tbsp Butter (salt free) 20oz Clearwater Raw Lobster meat 750ml Heavy cream (35%) 400g Sweet corn kernels 1 Tbsp Snipped chives 1 stalk Celery peeled and minced fine 1 /2 Vanilla bean Sea salt and fresh ground pepper to taste DIRECTIONS In a saucepan melt 1 tbsp of butter with 1Ú2 of the shallots and cook gently until shallot is translucent. Add Lobster and wine and cook gently until lobster is barely cooked through. Remove lobster meat and reserve warm. Add celery, shallot, vanilla bean and 3/4 of the corn and stir until mixture begins to dry. Add the heavy cream and bring to a boil. Puree and strain. Add remaining corn and stir in butter. Divide among 10 bowls and place a couple slices of lobster in the center. Add snipped chives and a sprinkle of sea salt and a crack of pepper. Serve at once. Appetizer: Serves 10 people

Peel back the flap on the upper side of the tail to expose the vein, remove and discard the vein. 6 Unhinge the back from the body and remove the green tomalley. Red roe of the female lobster is extremely tasty and considered a delicacy.

7 Open the main body section by cracking it apart. The meat in this section can be removed using a fork or pick. Discard the dark sac located between the eyes (since this is not edible). Twist the walking legs from the body. Clench between teeth and nibble meat from legs. The same method can be used to extract meat from the tail flippers.

Willy Krauch came to Nova Scotia from Denmark and began smoking fish in the tiny village of Tangier.
