Originally from France, Jean-Pierre Gallois and Yseult Bertic have over 30 years of experience as professional chocolatiers/ pastry chefs. Since opening in 2003, they have been creating fine chocolates and truffles, decadent pastries, and macarons, along with artisan ice cream and sorbet.
They use only high-quality French chocolate couverture in their handmade delicacies and no preservatives or artificial flavours are used in their products – all are handmade. Leo’s Donair began in 1981, when founder Leo Toulany and his wife, Jean, began supplying ground beef to local businesses. As the love of donair grew in our home province, so did the demand for supplying restaurants. Since then, Leo has turned his small operation into the donair production it is today.

1 medium onion, chopped
1.5 lb (1 large or 2 medium) sweet potato, peeled and cubed
1 lb (2 medium) potato, peeled and cubed
1/2 tsp cinnamon
1/2 tsp ginger
1/2 tsp nutmeg
1/2 tsp allspice
1/2 tsp cumin
1/4 tsp cayenne (optional)
2 x 355 ml cans Bulwark 0.5%
Original Cider or Bulwark 0.5% Apple Ginger Cider
Water (to adjust consistency)
Drizzle local honey to serve
Local apple, julienned (optional)
* Bulwark Original 5.8% can be used: add to boiling time to reduce alcohol if flavour is too sharp
1/2 cups all-purpose flour
1 cup cake and pastry flour
1 cup quick oats
1 tsp salt
1/2 tbsp baking powder
1 egg, beaten
1 x 355 ml can Bulwark Original Cider
* If gluten-free: substitute both flours for 2 1/2 cups all-purpose gluten-free flour, use gluten-free oats, and add an extra egg.
1. Preheat oven to 375°F. Line a baking sheet with parchment paper.
2. In a large bowl, whisk together flour, cake flour, oatmeal, salt and baking powder.
3. In a separate bowl, whisk egg and add approximately 1/4 cup cider until well combined, then add the rest of the cider to the mixture, barely stirring.
4. Add cider mixture to dry ingredients, stirring just until wet and dry ingredients come together. Dough should be bubbly and sticky.
5. Let stand 5 minutes. Using 2 spoons, drop biscuit dough onto lined baking sheet. Pile and reshape the biscuits as needed, making 12 biscuits (3” diameter).
6. Bake 15 minutes, underside will be lightly golden.
7. Cool for 5-10 minutes before transferring to a wire rack, cover with a tea towel until ready to serve or until completely cool if storing for future use.


1. In a large saucepan, heat the oil on medium heat and sauté the onion until lightly browned and translucent. Add sweet potato cubes, sautéing for another 5 minutes.
2. Stir in 1 can of cider and bring to a boil, scraping the bottom if necessary.
3. Stir in remaining cider, all spices and potato cubes. Simmer uncovered until potatoes and sweet potatoes are cooked through and can easily be pierced with a fork.
4. Remove from heat, and either purée with an immersion blender or in a stand blender. Add water until desired consistency is reached.
5. Serve hot and garnish with honey and apple if desired.

4 local fish fillets
Or 1 whole 2 lb local fish, head on, gutted
Nova Scotia sea salt
Freshly ground black pepper
1 tsp lemon juice
1 cup neutral oil
VEGETABLES
1 lb fingerling potatoes, halved
8 oz green peas
4 tbsp olive oil
CAPER BUTTER
1/2 cup butter
1/4 cup capers
1/2 medium red onion, finely chopped
Juice of half a lemon

VEGETABLE AND CAPER
BUTTER DIRECTIONS
1. Preheat the oven to 400°F.
2. Toss the fingerling potatoes with olive oil, salt, and pepper. Arrange in a baking dish, cover, and roast for 20–25 minutes.
3. Uncover the potatoes, stir, and continue roasting for 20 minutes, or until tender and lightly golden.
4. To make the caper butter, melt the butter in a small pan over medium heat. Add the onion, capers, and lemon juice. Simmer briefly and remove from heat.
1. Pat the fish fillets dry with paper towel, season with lemon, salt, and pepper.
2. Heat a heavy skillet over medium heat with a thin layer of oil. Cook the fish skin-side down for 5 minutes, until the skin is crisp. Turn and cook for another 30 seconds. Remove from heat and keep warm. If the fish is thicker, you can finish in the oven for several minutes until it’s cooked through to an internal temperature of 140°F.
3. To fry the filleted fish skin for dramatic presentation, heat 3/4 cup oil in a pan.
4. Curve the fish so it has the shape of capital letter C. Fry the fish until it is crispy on both sides and set aside.
1. When ready to serve, warm the potatoes and quickly sauté the peas with a little olive oil and seasoning. Arrange the vegetables on plates, top with the fish fillets, and spoon over the caper butter.
2. Place the crispy fish with head and tail so it sits on the plate next to the vegetables.

1 bottle of Hope Blooms Lemon Smoked Caesar dressing
1 cup Arborio rice
1/2 cup Nova Scotia white wine
3-4 cups chicken stock
1/2 cup Parmesan cheese, grated
Nova Scotia sea salt and freshly ground black pepper, to taste
10 spears wild Nova Scotia asparagus, trimmed
2 tbsp oil
10 strips locally smoked bacon, at room temperature
10 x 10-20 count local scallops
Nova Scotia sea salt
Toothpicks
Micro greens (optional)


1. Place 4 cups of chicken stock in a pot and place on medium high heat.
2. Trim the scallops of the muscle and pat dry.
3. Toss scallops in 1/4 cup Hope Blooms Lemon Smoked Caesar dressing.
4. Cook the bacon until it is brown but still flexible. Pat dry and set aside.
5. Heat butter in a heavy-bottomed pot, add shallots, celery, garlic and lemon zest, sauté until translucent. Add the rice, and 1/4 cup Hope Blooms Lemon Smoked Caesar dressing, stir to coat each grain, deglaze with white wine.
6. Once the wine is absorbed, start adding the hot chicken stock, one ladle at a time. Stir continuously as each ladle is absorbed. Continue adding stock until the rice becomes tender and cooked through. Remove from heat, stir in Parmesan cheese and season to taste with salt, pepper and lemon juice.
1. Heat a skillet over medium, add 2 tbsp of oil. Add the scallops and sear each side until lightly golden.
2. Wrap one piece of bacon around one scallop and secure with a toothpick. You will need to trim each piece of bacon once it is wrapped.
3. Retur n the bacon wrapped scallops to the pan and sear the bacon until golden brown. Remove from the pan and place on a plate. Sprinkle with sea salt.
4. In the same pan, add 1 tbsp Hope Blooms Lemon Smoked Caesar dressing and the asparagus, cook for 2-3 minutes, until tender. Season with sea salt and fresh pepper.
5. Spoon the risotto into a shallow bowl, add the asparagus and bacon wrapped scallops. Sprinkle with sea salt, garnish with micro greens and a drizzle of Hope Blooms Lemon Smoked Caesar dressing.

1/2 tbsp fresh chives
2 tbsp fresh parsley
1 small clove of garlic, minced
Lemon zest from 1 lemon
2 tsp lemon juice
3 tbsp olive oil
1/3 cup fresh breadcrumbs
1/3 cup panko breadcrumbs
1 lb fresh mussels, cleaned
1 lb fresh clams, cleaned
5 oz dry Nova Scotia white wine
1 tbsp fresh parsley, chopped
1/2 tsp fresh tarragon, chopped
1/2 cup smoked pancetta, finely diced
15 ml olive oil
1/8 cup unsalted butter
1/2 lb Yukon gold potatoes, finely diced
1 cup carrots, small dice
3/4 cup celery, small dice
1 cup leeks (white part only), thinly sliced
1/4 cup shallots, minced
2 1/2 tsp garlic, minced
4 oz dry Nova Scotia white wine
2 cups reserved shellfish broth
3/4 cups heavy cream
Freshly ground black pepper, to taste

LEMON HERB CRUST
DIRECTIONS
1. Bring a small pot of salted water to boil.
2. Blanch chives and parsley for 10 seconds, then immediately shock in ice water.
3. Drain well and squeeze completely dry with a tea towel.
4. In a blender, combine blanched herbs, garlic, lemon zest, lemon juice, and olive oil.
5. Blend until smooth and vibrant green.
6. Fold the herbs into fresh breadcrumbs and panko. The mixture should be moist and crumbly.
7. Set aside, covered, in the refrigerator.
HALIBUT DIRECTIONS
1. Preheat oven to 375°F.
2. Season halibut fillets with salt.
3. Heat a heavy pan over mediumhigh heat.
4. Add a small amount of oil and sear the halibut until golden.
5. Flip and sear the other side.
6. Add butter and white wine to the pan.


8. Roast until halibut is approximately 80% cooked, approximately 6 minutes.
DIRECTIONS
1. Remove halibut from oven.
2. Press lemon herb crust onto top of each fillet.
3. Return halibut to oven and cook until the internal temperature is 140°F and crust is set.
PLATING & PRESENTATION
1. Spoon the shellfish and chowder elements into four shallow bowls. Finish with your desired amount of sauce.
2. Place halibut on top, crust facing upward.
3. Finish with a drizzle of pan juices and pepper.
7. Baste fish gently and transfer pan to the oven.

6 cups mixed greens
2 cups arugula
2 tbsp fresh dill, chopped
1 cucumber, thinly sliced
6 radishes, thinly sliced
1/2 red onion, thinly sliced
1 cup cherry tomatoes, halved
1/2 cup crumbled Feta
6 tbsp honey
1/2 tbsp lemon juice
2 tsp Dijon mustard
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp fresh dill, chopped
1 tbsp apple cider vinegar
2 tbsp olive oil
1/4 cup canola oil
Nova Scotia sea salt, to taste
Black pepper, to taste
1. Prepare the Lemon Dill Vinaigrette. Add all vinaigrette ingredients to a food processor or blender and mix until creamy. Set aside.
2. Thinly slice the cucumber, radishes, red onion and halve the cherry tomatoes.
3. Add mixed greens, arugula, and fresh dill to a large bowl and mix until combined.
4. Divide the greens among four bowls. Top with cucumber, radishes, red onion and cherry tomatoes. Form the smoked salmon slices into little pinwheels. Add to the salad and top with Feta.
5. Drizzle with vinaigrette and serve immediately.

At Millen Farms, we take pride in producing top quality fruits and vegetables. The strawberries are picked fresh daily and shipped to our buyers to ensure peak freshness to the consumer. The rutabagas and onions are also selectively hand harvested. 1 lb ground pork
1 lb lean ground beef
1 cup carrots, diced
1 cup celery, diced
1 cup white onions, diced
1/4 cup garlic cloves, minced
2 x 28 oz cans whole, peeled tomatoes
1 small can tomato paste
2 tbsp white sugar
100 ml Grand Pré Castel wine
2 cups beef stock
3 tbsp neutral oil
Nova Scotia sea salt/pepper to taste
1 cup heavy cream
Parmesan cheese, grated
Black pepper, freshly cracked
Fresh pasta

1. Preheat oven to 350°F.
2. Line a baking tray with parchment paper.
3. Combine chopped vegetables, garlic, salt, pepper and 1 tbsp oil. Pour onto the prepared tray. Roast for 40-60 minutes depending on your oven. Vegetables should be very soft with a little colour.
4. In a large bowl, using an immersion blender or a potato masher, purée or mash the roasted vegetables, the canned tomatoes, the sugar and the beef stock until smooth as possible. Set aside.
5. In a large frying pan, heat 1 tbsp oil, add the ground meat, fry until cooked and some colour has developed. Break up the meat as it cooks to create a crumble. Drain fat from the meat and discard. Set meat aside.
6. Using the same frying pan as the meat, heat 1 tbsp oil, add tomato paste, cook on low heat until the paste has darkened and thickened slightly. Scrape into a bowl containing the cooked meat.
*Caramelizing the tomato paste will sweeten the sauce and intensify the tomato flavour.
7. Using the same pan, deglaze by adding the red wine, bring to a simmer and cook for 4-6 minutes, scraping the sides. This will capture the flavours of the meat and the caramelized tomato paste to develop a more complex sauce. Combine with cooked meat and tomato paste.
8. In a large, heavy-bottomed pot, combine all ingredients and stir.
9. On medium heat, bring mixture to a gentle simmer, lower heat and cook on very low heat, stirring often to prevent the sauce from sticking to the bottom of the pot. Cook for 1-1.5 hours until the sauce has thickened slightly.
10. Before serving, add heavy cream to sauce, heat through gently. Serve with pasta.
11. Prepare your choice of pasta according to the package instructions. When possible, try the dish with fresh pasta, which is widely available at farm markets and specialty grocery stores.
12. Garnish with freshly grated Parmesan cheese and cracked black pepper.

2 cups granulated sugar
1/2 cup unsweetened cocoa powder
2 tsp baking soda
1 tsp Nova Scotia sea salt
2 cups cold water
2/3 cup neutral oil
2 tbsp white vinegar or apple cider vinegar
1/2 tsp vanilla extract
RED WINE CHOCOLATE GLAZE
1 cup Gaspereau Small Lot Red Wine
4 tbsp sugar
1 cup dark chocolate, finely chopped
4 tbsp unsalted butter


1. Preheat oven to 350°F. Grease and line your pan.
2. In a large bowl, whisk together dry ingredients: flour, sugar, cocoa powder, baking soda, and salt.
3. In a small bowl, add liquid ingredients: oil, vinegar, cold water and vanilla.
4. Add the liquid ingredients to the dry ingredients and mix until incorporated.
5. Pour batter into prepared pans and bake for 35-40 minutes, until a toothpick comes out clean.
1. In a small saucepan, simmer wine and sugar over medium heat until reduced by about half.
2. Remove from heat. Add chocolate and butter.
3. Let sit for 1 minute, then stir gently until smooth and glossy.
4. Allow the glaze to cool slightly. This can take up to 20 minutes. The glaze should be thick but pourable.
5. Place the cooled cake on a rack or serving plate.
6. Pour glaze over the top, letting it drip naturally.
7. Let the cake set for 20 minutes before slicing.
Gaspereau Small Lot Red is an ideal food wine, pairing well with slow roasted meats, tomato-based pasta dishes, BBQ dishes and dark chocolate. This easy-to-bake cake, with deep cocoa flavour, was a favourite of Doris Mullane (nee Hanrahan), a Halifax Explosion survivor, lawn bowling enthusiast, mother of seven and champion of the more-the-merrier mindset. Not too sweet, the cake’s moist texture works in harmony with the wine’s notes of clove and cinnamon-infused dark berry fruit while balancing the soft undertones of toasted oak and vanilla on the palate.


2.5 lb lamb shoulder or leg
.5 lb wild mushrooms
4 onions, finely chopped
2 handfuls parsley, chopped
6 cloves garlic, minced
4 tbsp lemon juice
1/2 cup Grand Pré Field Blend red wine
2 tbsp dried rosemary
20 pieces sun-dried tomatoes
4 tbsp extra virgin olive oil
Salt and pepper to taste
CREAMY POLENTA
2 cups polenta
6 cups water
4 cups milk
6 tbsp butter

1. Clean and cut mushrooms into 1/4 pieces and set aside.
2. Cut lamb into 2-inch pieces. Heat the olive oil in a large pot or skillet over medium heat.
3. Add the lamb and fry until browned on all sides, about 10 minutes. Remove from pan.
4. Stir in the onions, cooking until translucent. Add the lamb, sun-dried tomatoes and sprinkle half of the chopped parsley. Stir to combine.
5. Pour in the red wine and 2 tbsp of lemon juice, stirring up any brown bits in the pan. Add the mushrooms, dried rosemary, salt and pepper.
6. Stir to combine all ingredients, reduce the heat, then cover and simmer lamb with wild mushrooms for about 30 minutes, or until the lamb is tender.
7. Before serving, stir in the other half of chopped parsley and add the remaining lemon juice.
1. Heat the water and milk in a large saucepan or pot until boiling. Once boiling, slowly pour the polenta into the hot liquid while whisking to avoid any lumps. Stir the polenta continuously until it starts to thicken, then turn the heat down to low.
2. Cook the polenta on a low heat for at least 30 minutes or until it starts to come away from the edge of the pot, stirring occasionally with a wooden spoon.
3. Add the butter, Parmesan or other hard cheese, salt and pepper to taste and stir until melted and combined.
4. Serve immediately with the lamb ragù, or pour into a baking dish to cool.




Yields 36 shortbreads
1 cup unsalted butter, softened. Use local butter if available
2 cups sharp Nova Scotia cheese such as cheddar or Gouda, finely grated
2 cups all-purpose flour
1 tbsp fresh chives, finely minced
1 tbsp fresh thyme leaves, finely minced
1/2 tsp fresh rosemary, very finely minced
1/2 tsp flaky Nova Scotia sea salt, plus extra for topping
1/4 tsp freshly ground black pepper
1/4 tsp smoked paprika
1 tsp Dijon mustard
1. In a large bowl, beat the butter until smooth and creamy. Fold in the grated cheese until evenly distributed.
2. Add chives, thyme, rosemary, salt, pepper, smoked paprika, and Dijon until fully incorporated.
3. Add flour and mix just until the dough comes together. It should be soft but not sticky. Avoid overworking, shortbread loves a light touch.
4. Divide dough in half and roll each into a log about 1.5 inches in diameter. Wrap tightly in parchment paper or plastic wrap. Chill for at least 30 minutes or up to 2 days.
5. Preheat oven to 325°F.
Slice logs into 1/4 inch rounds and place on parchment-lined baking sheets. Sprinkle lightly with flaky sea salt.
6. Bake for 15 minutes or until just set and lightly golden at the edges. Do not over-brown.
7. Let cool on the tray for 5 minutes, then transfer to a rack.
8. Store in an air-tight container if not using immediately.

We sell local beef, chicken, pork, jams, honey, maple products, and cheese, as well as pasta and more. We also produce Bert’s International Sauce, great on pork, fish, and chicken. You can now visit us in two locations!
1 baguette, sliced into 1/2 inch rounds
2 tbsp extra-virgin olive oil
200 g Annapolis Fine Cheese Brie cheese, sliced (rind on)
8 thin slices prosciutto
1 small Nova Scotia apple (Honeycrisp or Cortland), thinly sliced
3 tbsp Nova Scotia honey
Fresh thyme, lightly chopped
Flaky Nova Scotia sea salt
Freshly cracked black pepper
1. Preheat the oven to 400°F. Place prosciutto slices on a parchment-lined tray and bake for 8–10 minutes until crisp. Once cool, break into long pieces.
2. Reduce oven to 375°F. Arrange baguette slices on a baking sheet and brush lightly with olive oil. Bake for 5 minutes or until they are crisp.
3. Remove crostini from oven and, keeping them on the baking sheet, place a slice of Brie on each. Return to the oven and bake for another 3 minutes until cheese begins to melt.
4. Remove baking sheet and top each crostini with a piece or two of crispy prosciutto, a thin slice of apple, and a very light drizzle of honey.
5. Sprinkle with thyme, flaky sea salt, and cracked black pepper.
6. Serve immediately and enjoy.

It started 30+ years ago with two beehives placed on our farm to pollinate the blueberry fields. That tiny step into beekeeping resulted in a successful pollination and honey that is minimally processed, from the hive to your table.
The family farm continues today, with youngest son Benjamin looking after 500+ beehives while Margaret produces and markets our honey products. It all started in 2020 when Liane and Chris Goldhawk put down roots on a small farm along Nova Scotia’s stunning Eastern Shore. Liane started baking homemade treats for local farmers’ markets, including her Gramma’s beloved granola recipe–just a smallbatch product in mason jars, labeled Goldhawk Farm Honey Granola.
But it didn’t stay small for long. Week after week, the granola sold out, and customers kept coming back, asking for more. As demand grew, so did the flavors.
Today, what started in a farmhouse kitchen has grown into something truly special. Every batch of our granola is still crafted with care, using simple, highquality ingredients–just like it was on day one.


Enjoy the relaxed atmosphere of the Riverside Dining Room that seats 100. This is where traditional meals with special, homemade flavours are prepared for breakfast, lunch, and dinner, and the best seats in the house are by the windows, where you can share dinner with the birds and small animals who feast at the feeders on the river’s bank just outside.
