Nova Scotians are renowned for their hospitality, cherishing the experience of sharing a meal.

A grazing board offers the perfect opportunity to connect over rich flavours and engaging stories.

Here’s how to craft a well-balanced, seasonally inspired grazing board that celebrates local tastes.

Nova Scotia boasts an abundance of seasonal delicacies and yearround staples. whether you explore farmers’ markets, independent retailers, or local grocers, you’ll find an array of essentials, from seasonal produce and artisanal cheeses to cured meats and fresh seafood.

let the bounty of each season guide your selection, from the crisp freshness of spring rhubarb to the hearty richness of winter root vegetables. whether you serve the produce fresh, pickled, or stewed, it’s up to you!

A combination of flavours and textures is key to creating an enticing grazing board. Consider incorporating elements from the following categories:

Sw EET – Indulge in the natural sweetness of honey, fresh fruits, and preserves.

SA lT y – Tempt the palate with the richness of bold cheeses, cured meats, and smoked fish.

SAVO ury – Satisfy savoury cravings with artisan bread, crackers, dips, and flavourful pâtés.

S PIC y – Pack a punch with spicy pepper jellies, chutneys, and fresh radishes.

ACI d IC – Add a burst of flavour with pickled vegetables, relish, and crisp apples.

They say we eat with our eyes first, so presentation is paramount. whether you opt for a wooden board, pottery, or your favourite China, ensure ample space to showcase each ingredient.

Experiment with different shapes and textures, from sliced cheeses, meats, and pâtés to whole fruits and torn baguettes, to create visual interest. use smaller bowls and varied serving utensils to enhance the presentation of pickles and preserves.

Arrange items strategically, considering both their flavour and aesthetics. Pair salty cheeses with sweet fruits or spicy meats with creamy dips. layering items and allowing them to overlap adds depth and abundance to your presentation.

p AI r IN g

Elevate your grazing experience by pairing your board with a local craft beverage. Nova Scotia offers an abundance of options, from wines and craft beers to kombucha and artisanal sodas. Embrace the diversity of local flavours, raising a glass to the spirit of Nova Scotian hospitality with every sip.

with these tips in hand, you’re ready to embark on a culinary journey that celebrates the essence of Nova Scotia’s hospitality and culinary richness. Cheers to good food, great company, and memorable moments shared around the table!

like the building of a historical Saltbox house, brewing small batches of quality beer is a deeply rooted expression of heritage and craftmanship found in Nova Scotia. in those days, most brewing and drinking was done in the home. The resurgence of craft brewing marks a renaissance of the kind of local brewing that took place before the industrial revolution – when making beer was a standard household chore as integral as baking bread.

at Saltbox Brewing Company, we celebrate the development of the skills and artistry required to create fresh, fullflavoured beer for consumption by the local community. our motto: Think social and drink local.

Wayfarers’ ale came together in 2012 as a group of local craft beer enthusiasts developing their own beers. after a lot of experimenting and tasting, they gravitated toward some interesting heritage beers that go well with food and friends.

The name Wayfarers’ is a tribute to an old custom in England where medieval travellers (wayfarers) would stop at local churches, knock on the door, and be given a small horn of ale and a piece of bread to help and refresh them along their way.

located at the wharf in port Williams, the brewery offers an amazing view of the ever-changing tides. Great food, terrific beer, and a fabulous view await you at Wayfarers’ ale.

Since 2009, the unique beaches, coves, marshes, woods, and streams of advocate Harbour have sculpted our intimate cooking style here at Wild Caraway. We have sought to share our excitement of the area and the produce it provides. Sourcing only the best local and seasonal ingredients and imbuing them with our passion and enthusiasm, we hope to entertain, inform, and delight.

We have three ensuite guest rooms above the restaurant as well as three cottages in the field adjacent to the restaurant.

We are open Thursday to Monday for our 5-course tasting menu from May until December, and we have pop ups throughout the season.

Serves 4

1 lb linguine noodles

1/2 lb fresh local scallops

1/2 lb coldwater shrimp

6 tbsp unsalted butter

4 tbsp olive oil

1 tsp salt

1/4 tsp black pepper

4 garlic cloves, minced

2 – 3 lemon wedges

1/2 tsp red pepper flakes

1/4 cup Parmesan cheese, freshly grated

2 tbsp parsley, finely chopped

1. Dry the scallops. Place on paper towel and let sit for 10 minutes.

2. Bring a large pot of water to a boil & season with salt. Add the linguine noodles and stir occasionally, cooking until al dente. Reserve 1/2 cup of pasta water, then drain cooked noodles.

3. Season scallops and shrimp with salt and pepper; make sure to season both sides of the scallops.

4. Heat 4 tablespoons of butter and 2 tablespoons of olive oil over high heat. When hot, add scallops to the pan and cook for 1-2 minutes. Flip scallops, then cook for an additional minute.

5. Turn the heat down to medium-high and add shrimp. Cook about 2-3 minutes and remove from pan.

6. Char the lemon by adding lemon wedges to the pan and cooking until charred. Remove from pan.

7. To make the sauce, add 2 tablespoons each of olive oil and butter, then add minced garlic, lemon zest, and red pepper flakes.

8. Pour the drained, cooked pasta, along with 1/2 cup reserved pasta water, into the sauce. Stir sauce and noodles together until noodles are thoroughly coated. Add seafood and cooked lemon slices back to the pan, then stir in fresh parmesan. Garnish with fresh parsley.

8 – 10 beets, small to medium in size

1/2 cup water

1/2 red onion, thinly sliced vertically

142 g baby spinach

2 cups walnuts, chopped

1/2 cup local soft cheese, crumbled

Honey Balsamic dressing

1/4 cup balsamic vinegar

1/4 cup olive oil

2 tbsp local honey

1 tbsp dijon mustard

1 garlic clove, minced

Salt, to taste

Pepper, to taste

1. Preheat the oven to 375F. While oven is heating, wash the beets and trim the stems and bottoms of them.

2. Drizzle olive oil on beets, then place in a 8x8 baking dish. Add water to the baking dish and cover with foil. Roast beets for 45 minutes or until they can easily be pierced with a fork. Let cool; peel and slice.

3. While beets are roasting, prepare the Honey Balsamic Dressing by whisking together all ingredients for the dressing.

4. In a bowl, add sliced, cooled beets and red onion. Drizzle with 1/2 cup of dressing and toss to coat. Let stand at room temperature for 15-20 minutes so the beets absorb some of the dressing and the onions soften slightly.

5. Place spinach on a serving plate with beet and onions, then sprinkle walnuts and crumbled soft cheese over the top. Add additional dressing if desired.

tony’s meats

475 Landing Rd., Antigonish 902-863-1545 www.mrdonair.ca

The Mr. Donair story unfolds in the early 1970s when two brothers, peter and John, immigrated to Canada from Greece, bringing their gyro passion along. peter’s creative mind revamped the original recipe, incorporating ground beef, secret spices, and a sweet sauce, giving rise to “The original” Mr. Donair™.

Today, “The original” Mr. Donair™ recipe remains the same and is produced by Tony’s Meats in antigonish.

Mr. Donair has grown to be the top donair meat sold in both retail and food service markets in Canada. Due to a recent exclusive expansion into the US, Mr. Donair is now also within reach on the international marketplace.

We are proud to offer our customers the most authentic, traditional, and highest quality donair selection on the market.
