1. Whisk egg yolk with maple syrup and rosemary in a glass bowl. 2. Slowly add oil to emulsify while whisking. 3. Add lemon juice and zest. Season with salt and pepper, to taste.

1. Preheat oven to 450F. 2. In a Dutch oven (or oven safe heavy bottomed pan with tight-fitting lid), heat oil over medium/medium-high heat. 3. 1. Heat a cast iron pan to medium - high heat. 2. Place oil into pan and wait until it reaches temperature. Pat fish cheeks dry and season with salt. Once oil is hot, add cheeks to pan and sear for 2 - 3 minutes or until golden. Flip over and repeat. 3. Place seared fish cheeks onto a paper lined plate, turn the temperature of your pan to low. Add shallot, and pearl onions to pan and cook till slightly golden. 4. Add minced garlic, mint, dill and pastrami - stir with wooden spoon and sauté for 1 minute.

5. Add pastrami stock and butter, use your wooden spoon to get golden bits off the bottom of the pan. Simmer for 1 minute. 6. Add dried cherry tomatoes, kohlrabi, tsp of mustard, mint and fish cheeks. Continue to simmer for another minute or until the kohlrabi is slightly tender. Taste, season, and serve.

1. Chop the scallops in quarters, chop shrimp in thirds and chop lobster claw meat in fourths. Place in a bowl. 2. Add in mozzarella and garlic butter. Mix until ingredients begin to form a ball. 3. Slice down the tail of the lobster, and open the shell, peeling back the lobster meat. 4. Form the seafood mixture into a 4 oz. oval and place it into the cracked lobster tail. 5. Sprinkle breadcrumbs on to the tail before baking at 350F for 11 minutes.

1. Heat frying pan on low heat. Sauté lobster meat in 2 tbsp melted butter and 1 tbsp oil until a little colour is released into butter mixture, about 2 minutes. Add cream, increase heat and simmer for about 5 minutes or until cream reduces and thickens.

4. Place cooked haddock on plate and top with lobster sauce.

2. While cream is reducing, bread haddock. Crack egg and whisk with milk. Season flour with salt and pepper. Coat haddock with flour, dip in egg mixture and coat with cracker meal. 3. Once cream sauce has thickened, add brandy and tarragon. Simmer for 1 minute and season with salt and fresh cracked pepper, to taste.


Heat frying pan on medium heat. Add 2 tbsp butter and 1 tbsp of vegetable oil. Cook haddock fillets until golden on each side and fish is cooked through, about 2 minutes per side.


Preheat broiler in oven on low setting. Brush sheet pan with melted butter. Lay breaded haddock fillets on pan and brush with melted butter. Broil fish for 10 minutes or until golden and cooked through.

1. Preheat oven to 425F with rack placed in the middle position. Prepare 2 baking sheets with parchment paper. 2. Place flatbreads on baking sheets and brush with garlic oil. Bake for approximately 3 minutes. 4. 5. Return to the oven and bake for an additional 7 minutes, or until cheese begins to bubble. If a crispier finish is desired, switch the oven to broiler and cook for an additional 2 minutes, watching carefully to ensure it does not burn. 6. Remove from oven and allow flatbreads to set for 2 minutes before cutting. Cut each flatbread into 8 pieces. 7. Garnish with basil and parsley. Serve immediately with lemon wedges on side.

Charles Keddy Farms is a family farm located in Nova Scotia’s beautiful Annapolis Valley. We are in our 44th year of business and are currently the largest commercial producer of sweet potatoes east of Ontario.

1. Combine all ingredients in a bowl and whisk together.

1. Peel each carrot lengthwise with a vegetable peeler keeping each colour in separate bowls. 2. Season each bowl with 1 sprig of tarragon, 1 tsp salt and 1 tsp extra virgin olive oil. 3. Combine all of part b in a pot and bring to a boil, then immediately split liquid evenly between the bowls. These can be made ahead of time and left in the fridge submerged in pickle liquid for a more enhanced flavour.



C h icken , P epper & P ear C rostini Paired wit h G aspereau R iesling SERVES 6 2 fresh baguettes, sliced diagonally into 12 pieces, about 1/2” thick 2 boneless free range, skinless local chicken breasts 1 red pepper, cored and thinly sliced 3 tsp olive oil 2 fresh pears, peeled and cored 3 tbsp lemon juice 3 tbsp sesame oil 1/4 tsp cayenne pepper 1 tsp curry powder 4 oz local goat cheese, crumbled Salt & pepper, to taste

1. Preheat oven to 350F.

8. Place chicken and red pepper in pre-heated oven for 25 minutes.

2. Place sliced baguette on baking sheet lined with parchment. Gently brush with olive oil. 3. Place in oven for 8 minutes. Remove and set aside when finished. 4. Cut chicken breasts in half lengthwise. 5. In a small bowl, add sesame oil, cayenne, curry powder, salt and pepper. Mix thoroughly.

11. Check temperature of chicken with meat thermometer to ensure temperature of 180F. When cooked, remove chicken and peppers from oven. 12. Place chicken on a cutting board and slice in 1/4” slices lengthwise.

6. Place chicken in mixture to coat thoroughly. Place on baking sheet lined with parchment.

13. Place 1 - 2 slices of chicken on each piece of baguette. Top with slices of pear, sliced roast pepper and crumbled goat cheese.

7. On baking pan lined with parchment, place sliced red pepper and drizzle with 1 tbsp olive oil and sprinkle of salt.

14. When complete, place in oven for 4 minutes or until cheese has softened.

9. While chicken and peppers are cooking, slice pears lengthwise in thin pieces. Set in a small non-metallic bowl with lemon juice and 1 cup cold water for 10 minutes.


10. Remove pears from lemon water and place on a clean, dry towel to remove excess water.

15. To serve, plate as 2 per person with chopped parsley garnish or set on platter.

1. Mix together tamari, liquid smoke and Sriracha sauce. 2. Thinly slice tofu and marinate in mixture for 10 minutes (or longer if you want to make in advance). 3. Heat a pan on medium, add oil, fry the faken (marinated tofu) until crisp. Remove.


3. Serve immediately.

1. In a pot, bring cream to simmer with juniper. 2. In a bowl, whisk egg yolks, corn starch and sugar until smooth. 3. Strain cream into egg mixture and mix well. 4. Return ingredients to pot over medium heat and cook until custard thickens. 5. Remove from heat and strain.


1. In a food processor add flour, salt, sugar and butter. Blend until it forms course meallike consistency. 2. Slowly add water to mix until it comes together. Dough should not become too wet. Mix for another 10 minutes then remove and keep somewhere cool. 3. Roll out to 1/4 inch thick and line a 10 in. tart pan. 4. Blind bake with parchment and beans or rice for weight to help hold shape for 15 minutes at 350F.


1. Cream together butter and sugar until smooth. 2. Add eggs slowly and mix until well combined. 3. Fold in almonds. 4. Add mix to parbaked shell, smoothing with spatula. 5. Place in oven and bake at 350F until set (approximately 20 minutes.)

To serve

1. Cut into 8 pieces, dust with icing sugar and slivered almonds. 2. Pour custard over each piece upon service.



S PICY GARL IC S H RIM P D I P PA I R E D W I T H M E R C A T O R C O M PAS S R O S É SERVES 6-8 1/2 lb local shrimp, peeled, deveined, cooked and chilled 8 oz cream cheese, softened 1/2 cup mayonnaise 1 1/2 tbsp garlic, minced 2 tbsp red onion, minced 2 tsp extra virgin olive oil 4 dashes Tabasco 1/4 tsp cayenne pepper 1 tsp fresh cracked pepper 1/4 tsp kosher salt 1/2 lemon, zested 1/2 lemon, juiced 2 tsp chives, finely chopped

1. Drain shrimp and allow to dry on paper towel. 2. In a food processor, combine cream cheese, mayonnaise, minced garlic, red onion, salt and pepper until thoroughly integrated.

For chilled version

1. Tightly wrap desired serving bowl with cellophane. 2. Place in fridge for at least 1 hour before serving.

3. Add shrimp, olive oil, lemon zest, lemon juice, Tabasco and cayenne and blend in processor for 1 1/2 minutes or until shrimp have been shredded to combine with cheese mixture.

3. Remove 20 minutes before serving.

4. Spiciness can be adjusted to suit your palate.

1. Pre-heat oven to 375F.

5. Place mixture in a non-metallic bowl and fold in chopped chives. Reserve some for garnish.

4. Will keep up to 4 days in fridge.

For hot version

2. Place mixture in a large ramequin (12 oz) or oven safe serving dish. 3. Set on upper rack of oven for 15 minutes or until mixture starts to bubble. 4. Safely remove from oven and place on a wooden bread board. 5. Prepare with your favourite local bread, crackers or pita.

S E A R E D S C A L LO P S WITh B A C O N & LIME B U T T E R PA I R E D W I T h J O S T T I D A L B AY SERVES 4 20 large Nova scotia scallops 1/4 cup demerara sugar 4 limes - 2 for garnish, cut into 12 wedges and 2 for zesting and juicing 2 strips thick cut local bacon 1 tbsp red chili flakes 3 tbsp butter salt and pepper, to taste garNish 2 cups organic greens

1. Place scallops on sheets of paper towel to remove excess moisture. Do not squeeze or press scallops. 2. Spread Demerara sugar over a large plate. Place scallops on top, rolling each to coat slightly. 3. Chop bacon and add to a small skillet on medium heat. 4. Stir occasionally and cook until slightly browned. Do not crisp. 5. Remove from heat, drain and set aside on paper towel to absorb excess fat. 6. Place a large skillet on stove top set to medium-high heat. Heat pan thoroughly. 7. Add 1 tbsp butter and allow to melt. 8. Place scallops evenly in pan. Reserve extra sugar. Allow scallops to sear for 2 minutes. 9. Add crumbled bacon to pan and turn scallops to sear on other side.

Crisp TOPPING 1 cup of flour 3/4 cup oats, rolled or quick 1/2 cup butter, softened 1/3 cup of white sugar 1/4 tsp cinnamon 1/2 tbsp thyme leaves, destemmed (optional)

1. Preheat oven to 375F.

3. Once mixed, crumbled, and butter is incorporated throughout, set aside.

8. Bake for 55 minutes or until blueberries are sticky, bubbling, and crisp has turned golden.

Filling 3/4 cup white sugar 3 tsp cornstarch 3 tsp salted butter, melted and cooled 1 large egg, well beaten 1-2 tbsp thyme leaves, destemmed (optional) 4 1/2 cups frozen wild blueberries

4. To begin filling, add sugar and cornstarch to medium mixing bowl and whisk. Then add melted butter and cream until consistent and all dry ingredients are moistened.

9. Cool and serve with ice cream or whipped cream. Cover with airtight wrap and refrigerate for safe keeping.

2. Add crisp topping ingredients to mediumsize mixing bowl and loosely mix with a rubber spatula or wooden spoon and hands. The mixture should form pea to small grape size clumps.

5. Add the well beaten egg and mix again until smooth and consistent. This mixture will be thick, like a cake batter.

6. Pour blueberries and thyme into filling mix. Use a spatula to fold until the blueberries are covered in filling mixture. 7. Spoon filling mix into a deep 9 inch pie plate, cast iron pan, or cake pan. Add crisp topping mixture evenly over the filling.
