WELCOME FROM OUR LAND.

FROM OUR SEA.

FROM OUR HANDS.

Let us take you on a Nova Scotia culinary journey. From dining on the ocean floor, to sipping Tidal Bay on a patio overlooking a vineyard, everyone knows the best part of travelling is the local food and drink. TASTE OUR TERROIR. Nova Scotia has a long and storied agricultural history; every bite and sip tells a story - of who we are and where we’re from. Whether it’s rappie pie on the Acadian Shore, oatcakes in Cape Breton, lobster dinners on the South Shore, exploring the Good Cheer Trail in the Annapolis Valley, or eating oysters on the Northumberland Shore – our stories are part of every taste. EAT YOUR VIEW.  In Nova Scotia, you are never far from the sea. The ocean and its offerings are an important part of our lives, culture, and livelihood, and you’ll taste the ocean’s influence at every stop along our Seafood Trails. Drive through rolling agricultural landscapes and historic fishing communities. These views, and the landscapes and coastal communities that grow our food, are a vital part of our culinary fabric.  SUPPORT LOCAL. We believe in supporting local farmers. We believe in respecting the land and sea that feed us. We believe that a rising tide lifts all boats. We believe in buying local. We believe in community.  WELCOME TO OUR NOVA SCOTIA.

Get ready to sip, sample and shuck your way around Nova Scotia because this is your guide to the most authentic culinary adventures Nova Scotia has to offer. There are more than 190 ways to eat and drink your way across our beautiful province – and we encourage you to try them all!

We follow Ocean Wise certification as our main guide, a classification that ensures responsibility to a fishery’s abundance and catch method. We also build deep relationships with our region’s smallscale, community-based fishers and aquaculturalists. We build and maintain close relationships with those who catch our fish, and work hard to help foster a fair, transparent, traceable, and sustainable exchange of seafood in the Maritimes. Please check out our weekly, bi-weekly, and monthly subscription shares, our online retail shop, wholesale options, Canada-wide shipping, and more! LOBSTER CARBONARA KITCHEN DOOR CATERING

www.kitchendoor.ca 2 Bluewater Rd., Bedford

INGREDIENTS

340 g box good quality linguini, or homemade pasta dough* 1/2 lb (200 g) local smoked bacon 1 tbsp (15 g) minced garlic 1 1/2 pound Nova Scotia lobster 3 egg yolks 1/3 cup (80 g) shaved Grana Padano cheese Salt & pepper Fresh basil 1 lemon

DIRECTIONS (SERVES 4)

1. Boil the lobster for 8 minutes, then immerse in an ice water bath. Cool for 10 minutes. 2. Shell the lobster, trying to keep the claws whole. Cut the rest of the meat into a large dice, and set aside. Save the tail and claw shells. 3. Slice bacon into large strips, and begin to cook in a large frying pan. When half cooked, add garlic and the shells (to be removed later). 4. While the bacon is cooking, add pasta to salted boiling water. Cook until al dente (usually about 10-12 minutes). 5. In a separate bowl, add egg yolks, half of the Grana Padano, salt, pepper, lemon juice and zest, and lobster meat. 6. Remove the lobster shell from the frying pan. Drain half of the bacon fat from the frying pan, add to egg mixture, and mix. 7. When the pasta is cooked, drain and add to egg mixture while still hot. Mix quickly, as the eggs cook in the mixture; add torn basil leaves. 8. Serve, plate and enjoy. 22

Back in 2009, siblings Heather and Christian Rankin hatched a plan to create something a little different in Halifax. A wine bar that was both informal yet special; social yet cozy. A neighbourhood spot where people would meet for memorable wine and food, with service that was engaged and unscripted. What resulted was Obladee. Obladee combines the international concept of a wine bar, with our unique Nova Scotian spirit and hospitality. We offer an awardwinning wine list that is hand-selected, off-beat, and ever-changing. Our food changes with the seasons, focusing on locally-sourced ingredients from a close network of local producers.

Grasp the body and twist off the large front legs and claws. Separate the claw from the knuckle.

4

Cut the tail on both sides or grasp it tightly and squeeze until it cracks. Snap off the tail flippers.

Push out the meat in one piece. Peel back the flap on the upper side of the tail piece to expose the vein. Remove and discard the vein.

Break the hinged part off the claw and remove the meat with a fork or pick. Crack the claw with lobster crackers. Be careful to crack the shell only and not damage the meat inside. Knuckle meat can be removed with a lobster fork.

Unhinge the back from the body and remove the green tomalley. The red roe of a female lobster is extremely tasty and considered a delicacy.

Twist the tail away from the body.

Open the main body section by cracking it apart. The delicious meat in this section can be dug out with a fork or pick. Discard the dark sac located between the eyes (since this is not edible). Twist the walking legs from the body. Clench between teeth and nibble meat from legs. The same method can be used to extract meat from tail flippers.

Benjamin Bridge is Canada’s most acclaimed sparkling wine house, nestled in Nova Scotia’s picturesque Gaspereau Valley. Its cool climate is moderated by the powerful Bay of Fundy - promoting natural acidities and a long ‘hang-time’ of the classic Champagne varietals, which are critical to producing sparkling wines of richness, structure, and finesse. Primarily a classic sparkling wine producer, Benjamin Bridge’s other strength is brisk, aromatic whites - wines that take full advantage of the same, very precise climatic traits that craft great sparklings. Nova 7, coined “Nova Scotia’s iconic wine,” pioneered an effervescent, aromatic, off-dry style in the province, crafted on a foundation of quintessential freshness. COLDSTREAM CLEAR DISTILLERY

CRYSTANY’S BRASSERIE

A deep family history and an adventurous modern day endeavour brings you Coldstream Clear Distillery.

Crystany’s Brasserie is the only 100% gluten-free restaurant in the province. Our goal is to educate the public on healthy eating and to show them that gluten-free does not mean no flavour.

87 Main St. W., Stewiacke 902-956-3393 www.coldstreamclear.com

The story begins with Simon Giffen, the first Giffen family ancestor to arrive in Nova Scotia. He came to Halifax in 1749, from Northern Ireland, and practiced his trade as a very successful distiller. Little did Simon know that his family name would live on and the distilling tradition would be revived a full nine generations later. Today’s quality lineup of vodkas, rums, and liqueurs are made with the finest ingredients and water from a natural artesian spring, deep beneath rural Nova Scotia. Visitors have the opportunity to view the distillery and learn the fascinating process of creating world class spirits.

9848 Main St., Canning 902-582-3663 www.crystanysbrasserie.com

Crystany’s serves gourmet meals prepared with only the freshest locally sourced produce (when available). We ensure the quality of our dishes with the quality of our ingredients. Everything on our menu, from our sauces up, are made in-house by our very talented chef. We care by offering clean local organic, gluten free food and drink. Your health will say thank you! Apples have grown in the Annapolis Valley since the first apple trees were planted by Acadian settlers.

We are a small family-owned and operated diner and take-out in a small rural community, nestled on the beautiful Bay of Fundy. If you take the time to search us out, we will serve you the freshest local seafood in generous portions.

Spa Springs Mineral Water Company Ltd. is responsible for the bottling, sales, and distribution of a selected portfolio of innovative and refreshing non-alcoholic, premium segment beverages that are available in over 35 countries.

Our Seafood Chowder is a favourite, full of lobster, scallop, and haddock. Dine with us in our comfortable, casual dining room, decorated with a nautical flair.

One of the company’s products is Canada Geese, a natural high-calcium mineral water bottled at source in Middleton, Nova Scotia. Canada Geese is a healthy and refreshing beverage. Due to its balanced and harmonious taste, this gently sparkling water is perfect as a thirst-quencher or as a companion to delicate food.

Today, Scotian Gold Cooperative Limited produces more than half the apples grown in Atlantic Canada in orchards stretching from Windsor to Granville Ferry. Over 20 varieties of apples are produced, including Honeycrisp and two new varieties; SweeTango™ and Sonya™.

We look forward to seeing you! When you’re in the Valley, stop into Scotian Gold’s Country Store, Country Pet & Horse Shop, and Scotian Gold’s Country Garden Centre (open seasonally), in Coldbrook. You’ll find pet, equine, bird, farm and seasonal supplies, and apples. Lots of apples.

Sunday - Saturday 11 a.m. - 8 p.m.

Canada Geese is available at Pete’s Fine Foods, Real Atlantic Superstore, Save Easy, Sobeys, Your Independent Grocer, and other grocery retailers.

Our seasonal menus offer a mix of old world pub food (ploughman’s lunch, meat & seafood pies), East Coast classics (mussels, chowders), uncommonly tasty salads, plus international street and taverna fare (tapas, noodle bowls, Mexican “pizza,” and vibrant curries). We source as much as possible from local producers and make everything from scratch. The cozy atmosphere is inspired by neighbourhood pubs of the U.K. and Ireland, but friendly locals give The Townhouse its true colour. Thursdays feature live jazz, and on Sundays we do a roast and host a traditional Irish music session. Open Tuesday - Sunday from 4 p.m.
