PUBLISHER’S NOTE Ahhh! It’s that time of year again. For me, fall is the absolute best time of the year. What’s not to like about this time of the year? The weather is fantastic, the crowds have died down, and the kids are back in school. Fall also means football season which in the south is serious business, not to be taken lightly. Football is everywhere you turn, dominating conversations, television channels, internet and social media. Yep! Here in the south you can’t go far this time of year without the old pigskin making an appearance in some shape or form. With football as a focal point, there are many offshoots of the sport that make for perfect social situations and excuses for a party, cookout, or just meeting up with friends. There’s nothing like tailgating in Columbia or Clemson on game day, having a dog and a couple of cold ones with 80,000 plus rabid fans. Can’t make it to the game? No problem. There are some great alternatives right here on the island. Check out some of the best game day hangouts in this issue as Hilton Head is home to many establishments that pull out all the stops when it comes to serving up great food and drink in anticipation of making your game day the next best thing to being there. Start your day with a little pre game Bloody Mary or Mimosa. Then enjoy burgers, wings, pizza, and more with a cold beer or cocktail or just kick back and cheer on your favorite teams on one of the endless HD TV’s. Need to find a special game? Not a problem as most restaurants have the sports packages and are glad to accommodate every request. I have to admit, when I moved to the island many years ago I lost touch with that game day feeling. Moving away from my hometown team to a remote Island took some getting used to. There were only a few places that put any effort into providing that game day atmosphere and I never traveled to see any live games that were in driving distance. Times sure have changed as the biggest decision these days is actually choosing a spot to enjoy all the action. With all the options at the local watering holes, it would be hard to go wrong. So grab your friends, your favorite jersey, and a healthy appetite and head out to get your game on!

The Big Bamboo Café Where the South Pacific meets the Carolina Coast BY ALLYSON JONES

According to legend, ex-fighter pilot Jimmy Phipps fashioned a quasiQuonset hut overlooking the Pacific Ocean during World War II. Catering to war-weary servicemen, The Big Bamboo offered a taste of home, good conversation, cold drinks and the sounds of Big Band music. Fifty years later and half a world away, two former Disney set designers transformed a second floor space at Coligny Plaza into a replica of the fabled Tarawa bar and grill. “Where the South Pacific Meets the Carolina Coast,” brothers Tristan and Kieron O’Grady purchased The Big Bamboo 8

Café in April of 2000 and transformed it into a local favorite. Carrying on Phipps’ legacy of hospitality, the establishment offers an

escape from the everyday with an extensive menu of specialty seafood dishes and American comfort foods, a fully stocked bar with select imported and microbrewed beers and live music served both inside the bamboo-lined, 1940s-themed dining room or outside on the breezy, open deck. Open daily at 11:30 a.m. and serving continuously until the wee hours of the night, climb up two flights of stairs to enjoy free popcorn and signature appetizers such as Carolina Fireballs made with crab and shrimp, Atlantic Fish Bites, Coconut Shrimp and Chowder Fries.


PJ’s Fish & Chips, the awardwinning ribs and NY Strip are also perennial favorites, notes Tristan, as are the quality hamburgers and homemade Key Lime pie. Made in house daily, half-pound burger choices include the original Bamboo Burger in Paradise; a Carolina Fire Burger topped with fresh jalapenos, Gouda and house Carolina Spice sauce; a Black n Bleu Burger blackened and stuffed with bleu cheese; and The Bomber covered with bleu cheese slaw, BBQ black beans and jalapenos. Daily Fresh Catch Specials are presented as an entrée with rice and vegetables, on a salad or in the popular tacos. Always a sellout, the fresh catch varies from red or black grouper and mahi-mahi to amberjack and cobia. Never the same two days in a row, the special changes daily to reflect the freshest fish available on the market. Jo’s Lentil Curry and The Kish of Death (Hot Meat Curry), in demand at local farmers markets, are now permanent fixtures on the menu and made on site. Served with rice, hummus and a salad, fans no longer have to drive to Savannah to satisfy an urge for authentic Indian food. Five months in the making, another addition at The Big Bamboo is an ocean-facing deck on the second floor. Finished in May and adding an extra 50 seats, this outdoor area is the perfect place to relax while drinking a margarita, enjoying a delicious meal, listening to the latest bands and watching the world go by. “We’ve always wanted outdoor seating,” says Tristan. “Sitting up high, you can feel the breeze.” Although wryly noting it “was a challenging project – I’m just glad the whole thing is over,” he is definitely pleased with the results. “The visibility is probably one of the biggest benefits of the whole project. People now see this place. Upstairs restaurants aren’t supposed to work – it’s very, very difficult.” Thanks to its extensive menu, reasonable prices and diverse

entertainment lineup, The Big Bamboo Cafe has managed to beat the odds by attracting a loyal local following of all ages. The Kid’s Menu has recently been revamped to include select grilled items, Emilee’s Island Pasta and Luke’s Chicken Caesar, alongside the requisite chicken fingers, hot dogs and burgers. Located in the back of the restaurant, the Family Game Room will keep the kids busy before or after their meal, at least until the quarters run out. Margarita Madness Happy Hour is held in the bar area every day from 4-7 p.m. with assorted drink and appetizer specials and strategically placed TVs to catch the game. Those in the know stop by for “The Island’s Best Early Bird” from 4-6 p.m. while others choose to visit The Big Bamboo during Two-forOne Tuesdays, a 10-year tradition offering deals on select dinner items. Reservations are accepted and the establishment is popular with large groups looking for a unique venue to host rehearsal dinners, wedding after parties and other gatherings. From reggae, rock and acoustic classics to hits from The Beatles, Grateful Dead and other prominent recording artists, live entertainment is almost always on tap at The Big Bamboo Café. In fact, Tristan credits a large part of the restaurant’s success to

the diversity of the musical lineup. “We offer such a vast array of live music from local solo performers, such as Taylor Kent, to nationally renowned recording artists like Trevor Hall and Drivin N Cryin,” he notes. For instance, The Beagles, a Beatles tribute band, are now heading into their ninth year performing during Friday night dinner – always the busiest day of the week, no matter what season. Another key element of the restaurant’s popularity is the unique atmosphere. “People often come in and say that they really feel like they’ve escaped when they come in the Big Bamboo,” Tristan explains. “Everyone – kids to grandparents – can enjoy our offerings. The theme connects with people. Even young soldiers that have been in the modern wars connect to something like this.” This fall, take a trip to the South Pacific without ever leaving the Lowcountry with a visit to The Big Bamboo Café in Coligny Plaza. What would our lives be like without hamburgers? What would we do for those backyard cookouts? Would fast food even exist? I picked up the phone at work the other day and it was a client asking where the best burger was on Hilton Head. While I thought the question was random at the time, we had quite a lively debate about it in the office. Because after all, everyone has their go-to place when they need a burger fix. While the fast food burger has become a staple of our society, the

gourmet burger is being taken to a whole new culinary level and Charbar, Hilton Head’s new gourmet burger spot, is the talk of the town. So pay heed, burger lovers. There is a new team on the roster and they mean business. Charbar opened its doors in September of 2012 and only one month later won “Best Burger” at the Burgers & Brews Festival. Not only did they win this award right out of the starting gate, they did so resoundingly, garnering 1,200 of 2,000 votes with 14 restaurants participating. ”That was huge for us!” exclaimed Nick Bergelt, owner of Charbar. “We competed against great restaurants that had won the award in the past so it gave us a big vote of confidence that we were doing things right.” A native of Hilton Head, Nick grew up surrounded by the hospitality

industry. He graduated from the Moore School of Business at the University of South Carolina with a major in Entrepreneurship and a minor in Hospitality Management. After college, he opened up an Asian restaurant on King Street in Charleston, but always wanted to move back here because of family. With his dreams of moving home came plans for his future. “I felt that Hilton Head was well suited for a gourmet burger market.” Call it serendipity if you will, but when Nick was looking for a culinary partner, he ran into his childhood schoolmate from Hilton Head Christian Academy, Charles Pejeau. Charles had been working under Robert Irvine at Eat as well as at Palmetto Bluff and just happened to be a chef with a passion for burgers. Thus a merger of minds and talents was made and Charbar was born. Nick explained that Charbar is both


vision and concept. “We are not just about burgers. We are all about driving home value. We deliver a gourmet product without the gourmet price tag. We want to blend a fine dining experience with good but quick service.” On the gourmet side of things, Charbar does everything high-end and home-made. They grind all of the meat daily, and make their own pickles, buns, and desserts. Their bacon comes from the mountains in NC and is smoked for 3 days. They celebrate local flavors and use locally grown ingredients in season. Suffice to say that Charbar will satisfy all of your hamburger cravings. The menu is simple and gives the diner the power to create his own favorite fix. The ‘Char’ means everything is grilled, the ‘bar’ stands for your build a burger options. “We want people to have a stake in their food,” said Nick. There are four stages in building your burger. First thing to do is “Pick your own Protein” – hamburger, chicken burger, shrimp burger, or veggie burger (black beans, rice, carrots, roasted red peppers and onions). Next you choose your cheese, then your fixings, and finally your fresh bun --brioche, pretzel, focaccia, sourdough, or gluten-free. If you prefer not to build-your-own, there are ‘specialty’ burgers. The Champ Burger, which features a bacon marmalade, won them “Best Burger” and there is a daily Chef’s Special. Nick’s favorite burger is a Bleu Cheese Bacon Burger with blue cheese oozing inside and a pimento topping. The menu also includes Starters like wings and sliders, Sides like their best selling Rosemary Truffle Fries, a trio of Salads, and yummy Desserts. They have a varied choice of shakes including double chocolate, grasshopper, and

even a root beer float. All of the wines on the menu are boutique and they have Craft Beers on tap from small breweries as well as 15 different bottled beers. Located in Park Plaza near the movie theatre, Charbar has created a perfect niche as not only offering fabulous food, but they knock it out of the park when it comes to ambiance and technology. The interior is a clever mix of old and new. The walls are adorned with nostalgia -- old albums and album covers dating back to the 30’s. “We wanted every generation to feel welcome here and find a bit of their past. We wanted a full sensory experience. Everybody has good food and good service, but we wanted more so we added the music aspect to portray a blend of American culture.” A departure from the past and a step into to the future, Charbar is piloting a program which provides each table with a small i-padesque computer tablet. You can scroll through pictures,

descriptions, and pricing for each item on the menu and some day you will order and pay for everything right from the tablet. “We are using technology to make business more efficient. This way our servers can focus on the hospitality.” The tablets also provide non-stop entertainment for the kids or the entire family with a complete digital games section. The exterior of the restaurant sports a whole new look with a patio, a fire pit with comfy chairs, and an outdoor bar. The area is tastefully done and a huge boon to business. Park Plaza’s well groomed grounds flank the patio, making the whole experience feel quite backyard-like and homey. Kids can peel off onto the lawn after dinner and run around in safety while mom and dad sit back and enjoy a cocktail and live music. Passing movie goers cannot help but be wooed by the aromas and music and detour inside for a visit. Charbar is the only restaurant on the Island to offer live entertainment everyday of the week, year-round. “We like to support the locals when hiring our entertainment,” said Nick. You can catch an array of talent like the good vibrations of Derrick and Damato and Hilton Head Prep student and vocalist, Taylor Kent, who lights up the night with her powerful voice. The locals have always come first to Nick and Charles. Opening a restaurant in September can be risky business, but Nick explained that they wanted to cater to the locals first. “We didn’t want the locals to have to fight crowds. Chef Wade began his culinary journey at a very young age cooking with his mom in their Midwest home, and “she’s an excellent cook!” he added. While attending the University of North Carolina in Greensboro, he followed his passion for cooking and worked at a small bar and grill, Olde Town Draught House. “I felt drawn to pursue my culinary path after graduating from college which led me to the Scottsdale Culinary Institute in Arizona.” While in Scottsdale, Haase started building his culinary foundation working with Iron Chef Mark Tarbell at Barmouche. “I have been lucky to work with and be mentored by very talented chefs throughout my career. I use the knowledge daily to maintain an everevolving outlook on the culinary scene.”

In 2000, Chef Wade’s love of adventure and travel led him back to the East Coast and ultimately to Hilton Head Island to assist in opening a new restaurant. “I fell in love with the island, the culture and the people right away.” During this time, Chef Wade earned a reputation as a talented chef and became acquainted with the wonderful people at The Jazz Corner. “I was fortunate to get an invitation from Kelli Lesch at The Jazz Corner in early 2013 to interview for a position with their culinary team. After meeting with Bob and Lois Masteller and learning of their passion to preserve the Great American Art Form of Jazz, we all felt it was a perfect fit for me to join the team melding great food, great jazz and the intimate elegant atmosphere of The Jazz Corner.” Cooking is an art form to Chef Wade. “I am excited to use fresh, local products in preparing new, creative dishes while keeping staple menu items that are signature to The Jazz Corner. My favorite dishes usually include fresh, local seafood, but one of my signature dishes is Pork Osso Buco. It is not on the menu, but I feature it as a special.” When not at The Jazz Corner, Chef Wade says, “I always enjoy cooking for friends or for a date! One of my favorite things about the island is that I am surrounded by many of my best friends, some of whom are the most talented musicians around. And what better opportunity could there be than to hear world-class music every night while I’m back in the kitchen creating my own art with food!”

Luke Mitchell The One Man Music Band BY RISA WILLIAMS McMILLAN

The day that his parents gave him a drum set when he was three years old was a defining moment in Luke Mitchell’s life. While as a parent I would deem that a bold move to give license to my toddler to bang on a drum and rock the already tumultuous reverberations of a house with little ones, it obviously was a strong move by his parents. Luke is now a full time musician and music has consumed his past and present and is all he can see in his future. Drum lessons began for Luke at age 8 and he started his first band while in middle school. He started earning money for his trade at age 13. Aside from the drums, he plays the guitar -acoustic, electric, or bass – the banjo and some piano. Luke grew up on Hilton Head and, recognizing that music was more than a passion, he played for 5 different bands while attending Hilton Head High School. After going to college in Charleston and then the Berklee College of Music in Boston, Luke went solo. “I decided to go solo mostly because the venues I played at were small.” His act was singing and playing the guitar. What was missing was his favorite first instrument, the drums. One night while playing his music at the Quarterdeck, Luke decided to change it up. “I knew I had to do something different. I had seen a guy in Austin playing the guitar and using his feet to play the drums and I thought that maybe I could do it better.” So he tried it that night and it was a huge success. “It took me about an hour to get it right. After that, everything changed for me.”He attaches each heel to a device which will beat a drum and then the rhythm is all in thumping those heels. Luke has found his niche and his listeners found themselves dancing, tapping their feet, and thoroughly enjoying what now became a visual show as well as musical entertainment. The phone started ringing for Luke and now he often plays 3 gigs a day. That’s 11 hours of music. “Better to be employed than the alternative,” he says with a chuckle. His typical day might start at a hotel or a brunch before he will play for a dinner crowd and then off to late night stuff, sometimes teaming up with childhood friend, Kevin Early, in the band “Rowdy Cloud”. Luke writes his own music and is currently on his fourth album. When he plays his gigs, however, he mostly plays other people’s music like older 50’s classics, Motown, Tom Petty, Neil Young, and Bob Dylan. He has started incorporating his music into the mix and hopes to do more of that in the future. While he mostly plays on Hilton Head, Luke also does shows in Savannah and Charleston as well as wedding and private parties. Carrie Alberg has been serving, bartending, and trading stories with people at San Miguel’s in Shelter Cove Harbour for the past 12 years. A California-inspired Mexican restaurant, San Miguel’s has been delivering fresh, authentic food to the community for over 30 years. Like many others who have made Hilton Head their home, Carrie originally came to the island on vacation from Minnesota. “On one of those trips, I met the man of my dreams and moved to Hilton Head a month later! We have two wonderful children and are thankful to be in such a beautiful place to raise our family.” San Miguel's is a special place to Carrie, and her co-workers are like a second family. Working in a family run business adds an incredibly important dynamic. She has held a variety of positions – waitress, manager, and everything in-between. “I wear many hats; particularly while bartending friend, therapist, tour guide, mother, acrobat, concierge, magician, and comedian, sometimes all in the same night!” To be successful at her job, Carrie has to be a good listener and a quick thinker. “I truly love talking to people and hearing their stories and jokes. And I have a few to share as well!” Hospitality is a unique industry in that every day it offers something new. “That’s why I love what I do,” Carrie said. “Every day I have the opportunity to meet new people and have new experiences, and I almost always have a good time! You never go through a shift without laughing, even in the offseason!” The hospitality field is certainly not for everyone, and not everyone can do

it well. You attract more flies with honey than with vinegar. Carrie added, “The key to success in doing my job is to practice patience, go with the flow, and smile and laugh – a lot!” One of Carrie’s challenges in her job is being around the tasty food! “After working at San Miguel's for years, I still love the food and the margaritas! A margarita anywhere else is but a pale shade in comparison to the ones we make at San Miguel's.” Carrie’s favorite way to spend a day off is to be with her husband and children. “I love to play tourist and do all the fun things people do when they

come here on vacation.” She also appreciates the varied and excellent dining options on the island. “It sure feels good to have the roles reversed and be waited on.” When asked what job she’d want if she could have any job in the world, Carrie’s response was “This is it; I love what I do!” And she does it well. While we may not have any local college teams on the Island, and while South Carolina may not be home to any professional teams, there is certainly no lack of enthusiasm around here for our “home” or favorite teams. So maybe 40

we can’t tailgate in the stadium parking lot or sit in the stands, but we can certainly find Game On in every corner of the Island. We have the next best thing to being there as our local restaurants love football season and

bring the action to life every weekend all fall. In fact, what is kind of fun about game days on the Island is that since we are such a melting pot, we have fans for pretty much all sports teams and if you are looking for a particular game, you just have to venture out to one of our many restaurants that have Game On! For Callahan’s owner, Vic Neely, fall and football mean his “biggest season of the year”. Given Callahan’s huge local following, the tables and barstools are habitually full year round, but they positively light up during football season as the fans pour in and the atmosphere comes alive with the “ahs” of victory and the “ohs” of defeat. Callahan’s boasts 35 televisions, 2 of which are large screen. They carry any and all sports packages and if you are looking for a remote game, they can find it. On Saturdays, Michigan State, West Virginia, and South Carolina fans are among the throngs and Sundays see the arrival of the boisterous Steelers crowd, but also Philly, Baltimore, and Giants fans. Local college alumni chapters looking to reunite for a big game just need to call ahead and make arrangements for their game to be shown.


Wild Wing Café also carries all of the Directv sports packages. With 40 flat screen tv’s, both inside and on the patio, plus one giant projector screen, Wild Wing is serious about game day. They bring in a big Gamecock crowd on Saturdays, but also show rival Clemson games which can create quite the electric atmosphere. On Sundays they are home to NFC East cheerleaders with a huge Eagles following. Every game they will offer some sort of food and drink special. There are always beer bucket specials, liquor specials, and some sort of giveaway depending on who is playing. Patrons can sign up for the free Wild Card, where every dollar spent will earn credits toward free meals and it automatically enters them in every contest Wild Wing runs including Superbowl Tickets, National Championship tickets, ACC Basketball Tournament tickets, among others. Captain Woody’s is looking forward to drawing a sizeable football crowd this fall as they take advantage of their new location on Target Road across from the Publix shopping plaza. They have more room now in a fancy new home with plenty of seating both inside and out. While their Bluffton location has always drawn a good sports crowd, their Island locale was never a huge sports bar. Russell Anderson, owner of Captain Woody’s with his wife, Shannon, is excited about football season. “If you want a good time, come on in,” said Russell. “We are new at this so we are a fan of every team. If you want a game, just ask for it.” Captain Woody’s has 16 tv’s at their Target Road location, 9 inside and 7 outside. Their outdoor seating, while usually not open until 4 p.m., will be sporting “game on” for all kickoffs, early and late. If there is a nip in the air, Russell knows how to keep his exterior area warm with a glass partition, exterior heaters, and blankets. Woody’s will run different drink and food specials each week. The Frosty Frog keeps pace during football season too as they welcome a pumped up crowd and even go so far

as accommodating little football fans with a bouncy house every Sunday! The Frog carries all of the NFL and MLB sports packages and tunes into ESPN3 for College games so they can show all the big match-ups. They are not home to any particular NFL team, so will feature an array of games. A special feature of game day at the Frosty Frog, is that they have 5 different zones where they can turn up the volume on different games. During all Saturday, Sunday, and Monday games, they offer 25 % off of pizza, $13 buckets of domestic beer, $16 buckets of imports, $4 well drinks, and $4 for house wine. They have 27 High Def tv’s, 2 of which are 70 inchers and 2 with surround sound. There is a new outside patio with a retractable roof, a beach area, and plenty of seating inside and out. For the non-game watchers in your clan, Coligny Plaza offers lots of shopping and sweet treat options. Located on Office Park Road near the entrance to Sea Pines, Drydock is the home of the University of Pittsburgh Panthers and owner Rob Arogast promises to show their games “come hell or high water”. He explains that, “Since the Panthers moved to the ACC they are hard to find now but I will stream them with a laptop if I have to.” Drydock is also home to University of Michigan Wolverine fans. “It’s like having a wife and girlfriend,” jests Rob. “You don’t want them in the same room so you have to be careful.” Drydock also carries all Directv sports packages for NFL and MLB. Sundays see an influx of Dolphin people as well as Lions fans which are an offshoot of the Wolverine crowd on Saturday. Rob said that they also have a regular crowd of Buffalo Bills fans and he is sure to put their game on in a different room from the Miami game. “The place is full of

hootin’ and hollerin’ when the Bills play the Dolphins.” Drydock has 10 tv’s including a 12 foot projection tv, outdoor seating, and will show up to 8 different games at a time. They have drink specials every Saturday and Sunday with $1 off all beer, wine, and liquor. Sundays they will play up the tailgate atmosphere outside and will fire up the grill and have oyster roasts. Mellow Mushroom restaurants in Park Plaza and also in Bluffton are always very busy places during football season. With a fan base all over the board from Atlanta to Cleveland to Indianapolis, Mellow Mushroom is not really “home” to any particular team. “If it’s available, we have it on,” said Kim Boyce, owner of Mellow Mushroom with her husband, John. Kim says they will mark their tv’s with what game will be on so early arrivals that want to get a good seat will know where to plant. “Football days are huge for us. The restaurant is so full of energy. We have become the meeting ground for a lot of f&b people and it is just so much fun,” said Kim. and they carry all sports packages on Directv. They have a big 12 foot projection screen for the game of the day as well as outdoor seating. The Park Plaza location also has an outdoor bar and fireplace. Every game day will see different specials. Their menu adds a “breakfast special” for early games like a specialty calzone or pizza and you can expect drink deals to include bucket and shot specials as well as Bloody’s and Mimosas. “Come early and stay late. We are the meeting place for game day.” Just a chip shot down Park Plaza from the Mushroom is Charbar, another big home for Gamecock fans. Charbar will have all the games showing on the weekend with televisions indoors as well as outside on their fancy new patio. Owner Nick Bergelt wants game day to be authentic, so aside from serving up fun burger specials, he will have hotdogs on the grill too. Drink specials will vary from week to week, but you can expect something worthy of of note will be on tap during all games. Reilley’s has always been a popular place for sports fans and enjoys a good, cheerful crowd on game days. Sunday patrons can come early and feast on Reilley’s famous brunch menu and stay for the duration. Reilley’s on the south end has 12 tv’s, 6 indoors and 6 out. They will take any and all requests on a first come first serve basis. You can always find the Gamecocks playing on Saturdays and on Sundays you will be in good company if you’re are a Patriot’s fan. Reilley’s North End, off of Matthew’s Drive, sports 8 tv’s and has an affinity to the Nebraska Cornhuskers. Sunday they see a good crowd of Patriots and Steelers fans. “All people 42

have to do is ask for a game and we will find it,” said David Reilley. The football menu at both Reilley’s locations features inexpensive appetizers, burgers, and sandwiches as well as specials on beer including $2 domestics, $2.50 imports, $3 drafts, and $3 well drinks. Another Reilley family restaurant that turns up the volume in the fall is Aunt Chilada’s on Pope Avenue. Aunt Chilada’s is serious about football season with a pre-season countdown clock on the wall indicating the number of days until the start of the season when Game is On! They have 28 tv’s, 2 of which are outside, and will show every game, every day. If you can’t find your game, just ask for it. Aunt Chilada’s tries to stay neutral when it comes to boasting a home team so shouts for all teams can be heard reverberating through their walls. They have game day specials that include $2 Pabst Blue Ribbons, $3 Blue Margaritas, and $0.50 wings. Located on the north end in Main Street, Mangiamo packs a standing room only crowd in the fall during football season. “If you take a Sunday in June we probably only have a handful of people. Compare that to a football Sunday and the place is packed,” said owner Brian Bambeck. If you are an Ohio State fan, then this is the place for you as it is all Buckeye

high fives when game is on. The folks from Cleveland come back on Sunday as the Browns’ fans emerge. Mangiamo has 19 tv’s, 2 big screens, and has outdoor seating. They will run different specials every week like Bloody’s and Irish coffee for the early games. Fittingly, Kenny B’s is home to all things New Orleans, including the Saints. The walls are adorned with Saints as well as LSU and Georgia Bulldog memorabilia and you can be sure to catch them in action when available. With its casual, order at the counter atmosphere, you can stop by and watch the game or pick up your Cajun cookin’ for take-out - Gumbo, Po-Boys, Crawfish, Jambalaya, and more. The Hilton Head Brew Pub will have more than great beer on tap this fall. Owner Juan Brantley ushers in football season with great gusto knowing that his cheering sections will be full. With 7 outdoor tv’s and another 25 or so indoor screens, you can catch all the action at the Brew Pub. Gamecock fans are aplenty on Saturdays and NFL game days see an influx of Steelers, Bills, and Falcons fans. The Brew Pub will offer food specials all season including buy one get one wings and a Large Cheese Pizza for $11. You will not go thirsty at the Brew Pub during football season with $4 craft pints and $15 Brewtenders. So don’t be shy. Go ahead and paint your face, don your favorite team’s jersey, and visit one of our many restaurants to whoop it up with fellow fans because there is no reason to miss Game Day on Hilton Head. The Lowcountry’s premier culinary event, presented by the Hilton Head IslandBluffton Chamber of Commerce, is the place to wine, dine, and enjoy awardwinning cuisine. Treat yourself to the crème de la crème of the Island’s restaurants and resorts with a ticket to a holiday culinary extravaganza – a sumptuous sampling of the area’s top chefs and confectionary artists showcased in sparkling holiday elegance. Taste of the Season was created to celebrate the talents of our area’s top chefs and indulge the foodies of the Lowcountry. This year marks the 24th anniversary of the culinary showcase, and it continues to get better and better each year. More than 35 area restaurants and chefs will showcase their skills and culinary creations this 44

year on November 22, at the Hilton Head Marriott Resort and Spa in Palmetto Dunes, from 6:00 until 9:00 p.m. Each year, winners of Taste of the Season are chosen by those who attend the event to sample some of the region's best culinary offerings. Awards are presented to the restaurants serving the most popular dishes. Hundreds of ballots are submitted for both best cuisine and best decor. Last year’s award for Best Cuisine went to Hugo’s Seafood and Steakhouse for their Surf n’ Turf Lollipops, lobster wontons, and Hawaiian-seared filet mignon with celeriac puree, parsnip chips, and soy vinaigrette. Second place went to Marley’s Island Grill for their savory Surf and Turf Rockefeller with tender chili peppers,

beef tenderloin over sautéed spinach Rockefeller, drizzled with roasted red pepper and garlic Aioli, and Double Chocolate Raspberry Truffle Bliss cookies. Honorable Mention for Best Dessert was awarded to Flatbread Grill for their Flourless Chocolate Cake with Peanut Butter Bark, White Chocolate and Pumpkin Crème Brulee Cheesecake, and Miniature Christmas Tree cupcakes. Honorable Mention for Best Décor went to The Beach House - A Holiday Inn Resort. “Taste of the Season showcases


the Lowcountry’s culinary arts scene with award-winning cuisine from many of the area’s top chefs who are out to wow tasters,” says Bill Miles, chamber president and CEO. “With more than 250 restaurants in our area, visitors and residents find Taste of the Season a great way to try the best of the best!” It’s a spectacular way to sample the area’s incomparable cuisine and to enjoy the festive atmosphere - all in one venue! One of the biggest complaints I hear about pursuing the healthiest food options is the expense. It’s no secret that a bag of chips is a fraction of the price of a bag of carrots. Taking a “farm to table” approach can help with not only keeping your expenses in check but also with capitalizing on the seasonal genius that mother nature provides. What exactly does it mean to have a ‘farm to table’ approach to eating right? At the most basic level of understanding, farm to table is a concept versus an actual type of cuisine. It’s the attempt to eliminate as many steps, processes, chemicals, and hands that interact with your food between its raw state and the state in which you consume it. The largest benefit to you is that you are eating a whole food with all the nutrients and yumminess nature intended. Let’s take that bag of carrots previously mentioned. When you purchase a bag of carrots at a large retail grocery store you have the carrots that were cut by a machine, placed in a preservative liquid, packaged in plastic, frozen, shipped, then thawed, and stocked. Whew! However, a bundle of carrots purchased at the local farmers market was hand harvested, hand cleaned, then set on the market table for you to purchase and prepare however you want. Even just reading the steps comparing these two choices reinforces 46

that the locally grown option is going to provide you with a fresher choice. Fresh means not only more nutrient dense, but also means tastier too. And the same volume of carrots purchased a local farmers market is going to be easier on the pocket book as well. While taste and cost are fantastic benefits, the most important reason to apply farm to table habits is that the rotation of readily available produce will broaden your nutritional intake. Mother Nature is a pretty smart cookie. She gives us acorn squash just when our Vitamin C needs are at their highest and she gives us watermelon when we need the most hydration! Seasons infuse natural diversity in our food choices, which in turn exposes us to a wider range of vitamins and minerals. With modern food processing this diversity can all but disappear. You can’t get the benefits of spinach if you only ever eat asparagus, right? A seasonally diverse menu connects you back to that organic cycle that nature intended for us all along. Would eating seasonally be a gentle push outside of your comfort zone? Have no fear! An easy way to start this transition is to try one new thing per month. Just one. That’s not so bad, right? This is a small step that can reap huge rewards. Given one year of this small action you will have added 12 new locally grown items to your diet. Twelve new ways to be a healthier you!

INGREDIENTS FOR THE RIBS 5 Pounds Beef Short Ribs 1 Quart Beef Stock (Reserve)

TO PREPARE YOUR DISH Place Short Ribs in a large roasting pan, in a single layer. Add beef stock. Cover pan tightly with foil. Roast 4 hours at 350째. Remove foil. Roast 30 minutes more, meat should fall off the bones. Remove bones. Discard *Strain stock into a saucepan. Reduce by half. Shred beef.

FOR THE WINE SAUCE 1 750 ml Bottle Good Red Wine 1 Shallot Chopped Pinch Dry Tarragon *Reserved Beef Stock

RED WINE SAUCE Add Red Wine and shallots to another sauce pan. Reduce to a light syrup, add tarragon. Strain into beef stock. Keep warm.

FOR THE BENEDICT 2 Quarts Water 1/4 Cup White Vinegar 8 Eggs 4 Split English Muffins 8 Slices Fresh Tomatoes

HOLLANDAISE SAUCE Add 6 yolks to a mixing bowl, add white wine. Over low heat whip yolks and wine into a thick sauce consistently. Slowly pour in melted butter, whipping gently but constantly until butter is incorporated into the eggs. Set hollandaise in a warm spot on the stove. Stir in cayenne pepper and worcestershire sauce with a serving spoon.

FOR THE HOLLANDAISE SAUCE 1 Pound Unsalted Butter (melted) let stand 20 min. to cool slightly 6 Egg Yolks 1/4 Cup White Wine 1 teaspoon Worcestershire Sauce 1 teaspoon Cayenne Pepper

TO SERVE Toast english muffins add sliced tomatoes, place beef into warmed beef sauce, put on tomatoes. Put vinegar in boiling water, add eggs to poach. Place poached eggs on top of beef, spoon on Hollandaise sauce. Serves 4 easily. Enjoy!

Excellent food and wine can give you a name and a reputation. Excellent food and wine paired with an eventpacked festival can put you on the map as a culinary destination. The festival concept seems to be contagious as Savannah has now joined the fun and is planning its first week long Food & Wine Festival. Scheduled for November 11th to the 17th, The Savannah Food & Wine Festival is chock-full of James Beard Foundation celebrity chefs, guest winemakers, demonstrations, competitions, and of course opportunities for foodies from all over to feast to their heart’s content. In its 1st year, the Savannah event already is making a bold statement with big names and a large gamut of opportunities to eat, drink, and become educated by the pros. The city’s Tourism Leadership Council (TLC), under the tutelage of Michael Owens, is obviously quite serious about making Savannah a food and wine destination and has hired Jan Gourley as their fearless leader. Jan has been the successful organizer of festivals in Hilton Head, Atlanta, Marietta and now Savannah. Jan was thrilled at the prospect of bringing this type of festival to Savannah, the face of southern 56

hospitality. “We knew Savannah needed a food and wine festival and the timing was right for this,” said Jan. “The idea was to come up with a way to expand the TLC's already successful Taste of Savannah, attract tourists during the offseason, and not to conflict with anything else.” Jan has worked tirelessly with a team of local leaders including Michael Owens, Diane Rousakis, Jamie Parks, Roberto Leoci, Mark Spadoni, Craig Cupit, Jesse Blanco and Joe Marinelli. Their goal is to make a name for Savannah in the culinary world. The timing of the event is set to follow on the heels of Savannah’s popular Rock ‘n Roll Marathon so as to encourage stayovers. The Festival will kick off on Monday, November 11th with “Savannah’s Connoisseur Wine Dinners.” These dinners will take place all week long in Savannah’s finest restaurants. Offerings include wine pairings, luncheons, educational wine and cheese tastings, and cooking classes. One of event organizers’ most anticipated events is the “Celebrity Chef Tour” on Wednesday the 13th. Benefitting the James Beard Foundation, the event will be a massive collaboration between Chefs Steven

Satterfield, Hugh Acheson, Chris Hastings, Elizabeth Terry (Savannah's only James Beard Foundation awardwinning chef) and host Chef Geir Killen. Each chef will prepare one of the dinner courses with their own wine pairing. The dinner will take place at 700 Drayton at the Historic Mansion on Forsyth Park. Rob Mondavi Jr, of the Mondavi Family Estate, who has been visiting with event organizers to help plan various wine related events, will be on hand for “The Grand Reserve Tasting & Silent Auction” on Thursday evening, along with a host of other celebrity chefs and winemakers. This will be the festival’s ultimate wine tasting event with the best of the best being poured from vintages averaging over $50 a bottle. Gourmet samplings will be served to accompany the fine grapes and there will be a high end silent auction including wine lots, travel, services, and merchandise. Thursday night’s event will play host to winemakers from all over -- South Africa and Italy to California. “This is becoming very exciting!” exclaimed Jan. Many wine festivals just entertain the presence of local distributors showcasing various brands from the wineries they represent. Jan explains that what will set Savannah apart is the


winemaker aspect. “The timing of the festival is perfect because it is just after harvest. The winemakers have shown a tremendous amount of interest in visiting Savannah and becoming involved. While Charleston is known for its food, Savannah is already being identified by the winemaker's as the not to miss event - add in the beauty and culinary excellence of Savannah and it's not hard to understand why!” On Friday afternoon from 1:30 until 3:30 there will be a cooking class at the Mansion on Forsyth that will reveal many secrets to southern cooking traditions. The class will be taught by brothers Matt and Ted Lee who grew up in historic downtown Charleston and have coauthored 3 cookbooks, all of which have been praised for bringing Charleston and southern food to life. More than the river will be flowing on Friday evening the 15th at the “River Street Wine Stroll”. You can meander up and down the cobblestones in the parklike setting and visit outdoor wine and food vendors while enjoying the scenery

and live music. Later that evening, there will be a Savannah River Boat Cruise with Anthony Lamas of Louisville’s Seviche restaurant at the helm of the kitchen. Joy Sterling with Iron Horse Vineyards will be the guest winemaker on board. The Savannah River Boat kitchen will be turned up a notch as Lamas prepares a fairytale feast fit for a king that will be paired with tastings from Iron Horse Vineyards. The main event of the festival will be “Taste of Savannah” held at Ellis Square from 12 to 4 pm on Saturday, November 16th. Now in its 13th year, Taste of Savannah is sporting a whole new look. It has shifted from an indoor, evening event to an outdoor, daytime extravaganza in Ellis Square and surrounding streets. Food, fun, wine, and spirits will be the name of the game and all ages are welcome as different wrist bands will grant you access to different sections. Non-drinkers and children will not feel left out as there will be an access area just for food booths. There will be entertainment for all ages

including a Artisan Market, panel discussions, demonstrations, and competitions. Also for the kids will be a program to teach them about culinary arts and cooking classes. In the wine sector, hundreds of exhibitors will be present to offer samplings of their grapes and there will be plenty of live music. Saturday dinner will be a mustattend as Rob Mondavi Jr will host the “Michael Mondavi Family Estate Dinner” at the Westin on the Savannah River. Guest celebrity chef, Chris Hastings will lead a team preparing a four course dinner that will be expertly paired with exclusive wines from the Mondavi Family Estate. The festival will go out with a pop on Sunday with “Jazz & Bubbles Brunch”, also to be held at the Westin.
