Michelle called his insurance company while in office, navigated using an interpreter and found out how to help the patient get the supplies he needed. This would not have been something that I would have immediately been able to do. The patient and his wife were grateful for her time and expertise with home health which helped them through the process.”

Recipe of the Month
Veggie-Packed Egg Muffins
Ingredients:
6 large eggs
¼ cup milk (any kind)
½ cup spinach, chopped
¼ cup bell pepper, diced
¼ cup shredded cheese (optional)
¼ tsp salt
¼ tsp black pepper
Directions:
10 min prep time
20 min cook time
6 muffins
Calories: 80
Protein: 6g
Carbohydrates: 1g
Fat: 5g
Fiber: 0.5g
Sodium: 120mg
Preheat Oven: Preheat your oven to 375°F (190°C). Lightly grease a 6-cup muffin tin or line with silicone muffin liners 1.

Mix Ingredients: In a medium bowl, whisk together the eggs, milk, salt, and pepper Stir in the spinach, bell pepper, and shredded cheese (if using).
Fill Muffin Cups: Pour the mixture evenly into the muffin cups, filling each about ¾ full
Bake: Bake for 18-20 minutes, or until the egg muffins are set and slightly golden on top.
Cool and Serve: Let the muffins cool for 5 minutes before removing them from the tin. Enjoy warm or store in the fridge for up to 4 days
