MAKING YOUR UNION LEGAL

hen planning a wedding, it’s important not to let things slip your mind — particularly the legal aspects of a union. Thankfully, getting a marriage license is simple in New Mexico. It’s also inclusive — in December 2013, the New Mexico Supreme Court ruling made marriage equality the law of the land. When visiting the Taos County Clerk’s Office, be sure that you both have photo identification with your birth date and your Social Security cards. Both partners must be present at the office to sign the application. There is a filing fee of just $25 in cash — no checks or credit cards. Blood tests are not required in the Land of Enchantment. The marriage license book is available at the clerk’s office and is open to the public. Whether you are local residents or not, you must attain and file a marriage license if you are married in Taos County. New Mexico licenses are only good for in-state weddings, but the couple doesn’t have to be New Mexico residents to obtain a license. Taos and New Mexico laws regarding weddings are fairly customary; couples may get married as long as they 14

REACH OUT TO FRIENDS AND FAMILY Don’t think twice about reaching out to friends and family for assistance. Correspond their proficiencies with your needs, and watch your to-do list dwindle. Never forget: These people love you and want to participate in your special day. Plus, delegating tasks will reduce your stress, and that’s always a good thing. PONDER A NO-PHONE WEDDING A smartphone can be found in just about everyone’s hand these days. While well intentioned, many guests may not hesitate to jockey for a good position in which to take a picture or video during a memorable ceremony moment. More active shutters may provide a varied stockpile of images and videos. However, too many “photographers” in the room can backfire when a guest inadvertently steps in front of the professional photographer to capture a one-chance candid moment. And recognize how many photos might end up on social media sites before you’ve had a chance to look at them. Also, consider asking your guests to refrain from using their cameras altogether or at certain times. Include this

request in your invitation or ask your officiant to make an announcement at the beginning of the ceremony. SHARE GUEST PHOTOS WITH A UNIQUE HASHTAG On the flip side of an “unplugged” ceremony, if you don’t mind your guests capturing photos or videos with their phones, create a unique hashtag and share it with them. They can then upload images using your custom hashtag for followers to view. Be sure to make your hashtag easy to remember and original.

AVOID LIQUOR STICKER SHOCK Celebration and liquor often go hand in hand. But it’s easy for the bar budget to reach its maximum faster than anticipated. Ask the caterer to stop serving liquor once your budget limit has peaked. Request that your caterer check with you (or someone you designate) about continuing a free bar — if you are OK with spending more money than originally allotted.

REQUEST A MIDNIGHT SNACK As the bride and groom, bride and bride or groom and groom, you will be very busy socializing at your wedding reception and may not get much to eat. Ask your caterer to prepare a special to-go box of reception food that you can enjoy later. — Compiled by Scott Gerdes

— not so fancy or busy. And wooden presentation bases have become more popular.” Also popular, she continued, are cakes featuring a lace design, for example — to reflect the bride’s dress. Lucero recommends that couples should order their cake about six months in advance, to a year out for out-of-towners. She also highly recommends saving the top tier or a slice or two for later. Lucero has heard many a story about the couple being so busy socializing that they miss out on enjoying a whole piece of cake. To freeze slices or the top tier of your cake — or not to freeze — largely depends

upon the cake’s ingredients. Because of dairy and eggs, most cakes have to be frozen to prevent spoilage. Keep in mind that fondant cakes or cakes made with citrus curd layers preserve better than alternatives. This may not cross your mind, but how the cake is served also determines whether it’s worth saving any of it for posterity. The most risk to your cake becoming a bacteria magnet occurs when it is transported to an event location. Was it out on the table for eight hours in the sun at the park and then wrapped up? If yes, you’re risking contamination. No amount of freezing will kill bacteria. If you’re hosting your event at a catering hall that’s around 68 degrees inside, it’s less

likely to take on tons of extra bacteria during the ceremony and reception. Wrapping your cake correctly also greatly makes a difference. The actual freezing process is not usually the problem; it’s that most people don’t wrap the cake properly. Moisture is the enemy when it comes to freezing. It is recommended that you wrap it as tightly as possible — there’s no such thing as overwrapping — so that no additional moisture or bacteria collects on the cake. Every time you open and close the freezer, you let moisture in and poorly protected cake risks getting freezer burn. Still, it’s true that cakes are great candidates for freezing if you control for contamination and freezer burn before preserving.

The consensus among expert bakers is to eat the saved cake at your first-year anniversary, but not beyond then. The decorative flowers, made out of sugar paste, basically last forever. Sugar without moisture doesn’t spoil. As your first-year anniversary nears, don’t just take a slice or an entire tier from your freezer and put it on your counter to defrost. A day or two before the anniversary, move it to the refrigerator (still covered). After it’s defrosted, remove it from the fridge and let it come to room temperature (still wrapped). You’ll also be eliminating that soft outside, frozen inside problem. Remember: Memories last a lifetime; frosted cakes do not.

HAVING YOUR CAKE AND EATING IT, TOO

h, the wedding cake — the oftentiered bakery marvel lavished with frosting and sugary details that look more like art than food. The wedding cake is a staple of any ceremony, and its cutting is often a highlight moment. Whether or not you shove a bite into your spouse’s mouth or not is entirely up to you, but the cake itself should be a reflection of you both. From elegant to geometric, cake designs and flavors are as numerous and varied as every couple is unique. Like the other elements of your wedding, the cake should also be a reflection of your style and your wedding’s theme. However, like all aspects of planning a wedding, one must take cost into consideration when exploring cake options — some elements are more costly than others, like sugar flowers whose individual petals must be created by hand. The time of year and venue also need to be considered.

A fondant cake (in the culinary arts, the word “fondant” refers to two types of sugar-based pastes used in preparing and decorating cakes, pastries and confections) would be a better choice than the traditional buttercream icing if you’re planning on an outdoor summer wedding. Fondant doesn’t melt as easily. With 30-plus years of experience and a genuine love of designing cakes, Jocelyn Lucero of Jocelyn’s Cakes in Taos has helped create the perfect cake for many couples. Finding out the wedding theme and feel of the day, how many tiers (tied to how many servings needed), flavors, fillings and exterior design are all covered during a consultation, which lasts about an hour, Lucero explained. “The first question I ask is, ‘During the last wedding you attended, do you remember the cake?’” she said. Over the years, she has noticed many trends, and those trends often change

final value or purchase price. Also, caterers may or may not include tableware and linen within their quotes, so make sure you run this past them, as it’s not something you want to have to find extra money for right before the wedding. 5. LET YOUR GLUTEN-SOYVEGAN-PALEO FLAG FLY HIGH … BUT DON’T MAKE GRANDPA WAVE IT The time to let your caterer know about special dietary needs or restrictions is the sooner the better. The sooner he or she knows about your peanut allergy or dislike of 48

cilantro, the more seamlessly your caterer can work around it. Besides, such information can help create a menu that’s a nice reflection of you and your partner’s personal style, whether quirky or traditional. This is not, however, a time or excuse to push your beliefs or restrictions on the rest of your guests. Thankfully, there’s a happy medium. Skilled caterers will work to make the food reflective of the couple’s tastes and style, while ensuring it’s also widely palatable. 6. CONDUCT THE TASTING IN SEASON Many caterers won’t conduct a formal tasting until they’ve been booked and the

contract is signed —this is less a chance for them to woo you than it is for you both to create the menu of your dreams. And don’t be shocked if your caterer charges for the tasting. Conducting a full-scale tasting without cutting corners is one of the most important parts of the process, so both the customer and the caterer should take it seriously. It’s also a good idea to conduct the tasting in or as close to the season in which the wedding will take place. Your caterer’s to-die-for heirloom tomato salad may be the best thing on the menu, but you’d never know it if you taste it in December. If that’s

not possible, at least try the basic elements of a dish. The fresh basil pesto may not be as good as it will be on the day of your wedding, but at least you’ll know if he or she can roast a chicken thigh to perfection. 7. DON’T SETTLE A good caterer will listen and thereby should just get you. Seriously, you waited for years to find your spouse-tobe, so don’t settle on the first caterer you meet (unless it’s true love at first taste). practicing traditional families. During the ceremony, it was customary to tie a faja (sash) around the couple, who knelt before the altar. This signified that they were now symbolically enfaciados (belted together). At the reception, it was customary for a male relative to sing the entriega, verses explaining to the couple their responsibilities to each other. Kneeling humbly before the troubadour, the couple sometimes had to listen to many verses. If the singer was talented at composing rhyming lyrics, the entriega could go on for a while. Then it was typically time for La Marcha, a type of wedding march where all attending danced in two intertwining lines and concentric circles honoring the bride and groom. The music then changed to a waltz and all the men and women took turns pinning a dollar to either the bride or the groom signifying a dance with them. But it’s the tradition of el trivilín that Jerry said was the “most fun” and likely made for a “nervous” groom. In some parts of the country, this is known by other names similar to “shiveree.” Once the bride was abducted, it was the job of the best man and ushers to ransom her back. Usually, this was done before the couple left on their honeymoon. The price was the promise to provide for a dance, food 34

TIME-HONORED NEW MEXICO WEDDING TRADITIONS

o understand the traditional Hispano way of bringing about a fun, culture-driven and time-honored wedding, you have to start at the beginning — the courtship. As told to me many moons ago by Jerry Padilla — my late friend and longtime Spanish section editor at The Taos News — once relatives got wind of a romantic relationship, elder males in the boy’s family, such as a father or grandfather, were enlisted to start the formalities. A polite letter was written to the girl’s family, inviting them to dinner. Often the elder would hand deliver the invite, promptly leaving to give the family time to consider the union. This was known as pedir la novia (to ask for the bride-to-be.) Praise of the potential brideto-be was a main focus in such a letter and should her family agree it was a good idea to become relatives by allowing their beautiful princess to be wed to a humble, hardworking, etc., prospective groom, to please reply by coming to dinner. If no was the answer, the girl’s family would find a large pumpkin and discreetly leave it at the boy’s family’s door-

sent an equally polite letter back stating they would be honored to have their humble daughter become a part of such a distinguished family. Once a date for dinner was agreed upon, the happening often became an engagement party, or prendorio. After that, the wedding details were worked out, allowing time for the pending nuptials to be announced at church on three consecutive Sundays, known as correr tres banas. As the big day drew near,

the groom was required to give the novia a ride in a wheelbarrow from her home to the church. This was done to prove he could handle the load (responsibility) he was taking on. Even in remote rural areas, there was likely a capilla (chapel) where the wedding would take place — and with any luck, she didn’t live far from it. I remember Jerry telling me that he had never heard of any groom failing to fulfill this expectation, among ~CONTINUED ON PAGE 34
